THE CANE MUTINEY - PART 2

ROSEAU CANE CRISIS MAY HAVE ANSWER ON EAST COAST Roseau cane is an African strain brought to South Louisiana in the mid-1800’s. The cane found a robust home and proliferated. No numbers about the maximum spread of acreage are available, but today’s Louisiana cane covers about 170,000 acres or roughly 275 square miles. That’s not quite enough to cover the state’s 397 miles of coastline figured without tidal inlets. With those inlets, Louisiana’s mileage increases dramatically to more than 7,700 miles or more than seven times the mileage of Hawaii. There’s only so much area this cane can protect and its concentration in the southeast, protecting the Mississippi bird foot delta and areas immediately east and west has proven to be highly effective.

The problem is stark: we have more than 7,700 miles of coastline and inlet land exposed directly or indirectly to tidal surges either natural or through a gauntlet-inspiring hurricane season. This cane is being compromised probably at a 1% per month rate through the invasiveness of the mealy bug.

The compromise takes the shape of dead or dying cane and the resultant land loss when the dirt can no longer be kept together with enough hardy vegetation. This eliminates rookeries where at least two species of local birds can only survive, habitat for small to large game such as feral boar and rabbits and a source of sportsman construction endemic to this area for the past five generations. This problem has federal and state wildlife and interior resource experts rubbing their heads together to try and find answers. If the cane is sprayed, what do you use?

What works without compromising the waters and habitats of our wildlife and the soil composition necessary to produce our agricultural products.

Maryland has tried burning, smothering, cattle grazing and mowing their cane to little or no avail.

But that cane is not infected with the scale we have here. It’s a different cane - from Europe, we believe - and its causing Kudzu-like problems by taking over areas necessary to the upper Chesapeake basin’s survival - marsh birds and oyster and crab harvesting.

But the Chesapeake doesn’t have the direct contact with an ocean or gulf that Louisiana does. So its growth is barely diminished by a violent Mother Nature as we have here in South Louisiana. Maybe this strain would work here - at least to give us the protection we so desperately need. Only Florida and Alaska have more total coastline than Louisiana but Florida’s coastline has no major delta region and oil field pressures are a mere fraction of what have helped decimate the Louisiana coastline.

I have a feeling that transplanting this cane will give Louisiana at least five years to work on a more complete and precise plan. It has no disease; there’s plenty of it available and we’re running out of time. Money through the GOMESA funding arm that could help Louisiana fight this battle is being threatened by the Trump administration’s wanting to cut back funding on this project. I have joined others in this region to have the White House reconsider this move. Its most active and influential proponent is congressman Steve Scalise, who has been taken off the critical list and moved out of ICU since his shooting three weeks ago. It will take a Scalise-led effort to get these funds to stay where they are needed and ratcheted in place to stave off this threat to our roseau cane.

Duck hunters have made the transfer of this cane from one side of the state to the other a reality. It doesn’t seem a stretch to think the similar cane on the east coast can’t be transplanted here. Dr. Jim Cronin of LSU tells us that roseau is the most common plant on the planet, found from the arctic to the tropics. Moses was probably found in roseau cane, not bull rushes. It protects erosion along lakes, streams and riverbeds and gives guidance to navigation by physically outlining these moving bodies of water.

In Louisiana, the cane reaches into the metropolitan areas of lower New Orleans. The scale has infected cane as far north of Belle Chasse, just a mile or two from downtown New Orleans.

Other Louisiana crops have not ben affected so far by the scale, but sugar cane is a close relative and corn and soybeans have similar plant structure as the cane with layers of vegetation wrapped around the core. Expert researchers are keeping on top of the situation as it evolves.

What can we do as outdoors people and sportsmen? We could make sure our boats don’t become unwitting carriers of the mealy bug scale by washing down our crafts at the launches we use once we come back to shore. We could report areas where we see dead or dying roseau cane or the scale beginning to cover the bamboo-like outer layer. We could hose off our duck blind clothing following a day on the water, under blinds made of this cane. We could make sure none of the cane winds up in our wheel wells or in our boats when we leave the coast.

Unlike most ecological crises, the roseau cane situation needs action of some type this year. We don’t have the time to find out if we can find a disease ending cure for this problem. Other factors causing cane die-offs include salinity levels, water depth and marsh subsidence. But this cane grows in almost any depth, any salinity and is a major factor in fighting land runoff. No other plant can take its place. That’s the hardest fact in this two-episode story.

We mentioned less than 200,000 acres of cane but there are actually 225,000 acres at risk. Besides protection, 1/2 million birds - at least two species only able to nest in roseau - are in danger of losing their rookeries. The scale has spread five and one half miles in two spring months this year. Our way of life, our fisheries, waterfowl, navigation and commerce, our busiest commercial ship channels, are all at risk. The inside waters oil structures could be compromised. Let your representatives understand the seriousness of this situation. If we don’t make a major move this year, there might not be much to talk about for the New Orleans Tricentennial next year.

Summer is finally here and it brings a lot of fun back to our

boring routine. I am very outdoorsy person and what I like the most about summer is warm evenings full of laughter with my family enjoying some good food. I especially love picnics and ever since I came to USA there is one occasion where everybody goes out together and together we make one big picnic party. Yes I am talking about 4th of July.

In our Slovakian-American family it is always full of all kinds of different food and of course , us women, are trying to impress each other and be unofficial chef of the picnic so we are trying to come up with delicious yet simple dishes we can share on this outside event.

It might be challenging because lot of times there are no tables or benches ,where you could comfortably portion your beautiful meals. If you are looking to impress friends and family with decadent desserts but you are afraid you lack the skills to pull it off or reaching for that packaged cake mix and can of frosting instead of whipping something up from scratch, fear no longer ! I have got the fix for you.

I would like to introduce you to several recipes and ideas that are going to make your picnic favorite food event .

First and the easiest desserts are nothing else than jar desserts. You can put any of your favorite cake in a jar and its going to taste just as good! Amazing thing is , that you will not make any mess and you can put them into one portion small glass jars (I highly recommend Ball screw jars)and even decorate them with a bow or colorful stickers. Another advantage of this for of serving your favorite dessert is that you can easily stick them into your ice chest with your favorite drinks so they are fresh cool and ready to eat.

I know you love this idea already, but let me tell you one more great 5thing about desserts in jar. Your kids can help!

I did this with my little niece this year while I was back in my home country and it was almost emotional when I was watching her running around all the picnic guests in her cute little dress proudly announcing that she is the one who made these delicious desserts.

As with many sweet creations sky is the limit so you can combine your favorite cakes, fillings , frostings , nuts ,candy, chocolates as your heart desire.

My favorite jar dessert is a simple one -dark chocolate mousse with chocolate sponge cake pieces ,berries and whipped cream. It is super easy , but fancy and delicious.

I used to sell these at the farmers market and they were always gone first !

There are lot of recipes for light and fluffy chocolate mousse , but the one im about to give you is going to change your life , or at least baking . It consist of only two ingredients: chocolate and whipping cream.

For every 8.8 oz of whipping cream you will need 3.5 oz of top quality dark chocolate with at least 60% of cocoa content. Remember.Chocolate mousse will be just as good as chocolate used.

You simply heat up whipping cream and bring it to the boiling point , then add your chocolate, turn down the heat and stir until all the chocolate is dissolved . You have to do this a day before you are planning on making your jars , because once its cool we move our mousse base to refrigerate and let it chill overnight. Following day you just simply whisk your chilled mixed and magic is done. You have amazing fluffy chocolate mousse ready.

Allow to set then dip the whole strawberry into the chocolate.

Make 5 balls and one snake out of the modeling chocolate.

Place them onto some non-stick baking paper, cover with another sheet and squash flat. Roll the snake up half way to form the centre of the flower. Cut off the bottom half of this spiral and then place onto the strawberry (see video). Wrap the remainder of the snake around the strawberry. Add one petal at a time and fan out at the top to look like they are open.

Take any remaining strawberries and dip a cake pop stick into chocolate end push into the base. Dip the top half of the strawberry into the chocolate and allow to set.

Arrange all the chocolate strawberry roses into a bouquet and wrap with cellophane and tissue paper. Secure tightly with ribbon.

And as always sky is the limit so you can actually make different colors or put your bouquet in vase and use any type of decoration.

Make your mom one of these and I guarantee you will see that well known warm smile on her face and unique satisfaction that only chocolate bring to us, women!

Chocolate Sponge Cake This recipe is very easy too. You will need: • All purpose flour • Salt • Sugar • Eggs

• Cocoa powder • Water • Baking powder

Mix egg yolks with sugar. Beat well. Sift flour with baking powder and salt. Add to the egg mixture. Add the vanillacocoa powder and water. Beat egg whites stiffly fold into the batter. Pour into lightly greased and floured baking pan. Bake about 20 minutes at 350 degree. Now you are asking yourself . But how much ingredients do I need? That depends on how many people you want to feed. For every table spoon of flour there is one egg , one ts of sugar and one spoon of water. As far as salt you only need pinch and baking powder I put one teaspoon for every 3eggs. Coca powder is more for color but just to give you an idea , for every 3 eggs I put 1tablespoon When you have your mousse and your sponge cake ready, you can just cut the sponge cake into squares and start layering. Sponge cake cubes, chocolate mousse , berries and again the same thing.

I put whipped cream on the top and decorate it with strawberry or leaf of mint.

CRUST • Your favorite prepared double pie crust I prefer crust made from scratch but if you really are in hurry , King Arthur flour has one of the best I came across • Coarse white sparkling sugar, optional BLUEBERRY FILLING • 1 pint (or 2 cups) fresh blueberries • 2 tablespoons sugar • 2 tablespoons Pie Filling Enhancer* • 1 1/2 teaspoons lemon juice • *See baker’s tips, below.

STRAWBERRY FILLING • 2 quarts (or 8 cups) fresh strawberries, hulled, and cut into 1/2” to 3/4” pieces • 1/2 cup sugar • 1/2 cup Pie Filling Enhancer* • 1/8 teaspoon salt • 2 tablespoons water • 2 tablespoons lemon juice

• *See baker’s tips, below.

INSTRUCTIONS 1. To make the bottom crust, stars, and stripes: Divide the pastry in half. Roll one piece into a generous 9” x 13” rectangle, and place it into a lightly greased 9” x 13” pan, pressing it to the edges if necessary.

Refrigerate for at least 30 minutes.

2. Roll the other piece of dough into a 6” x 13” rectangle. Cut six 3/4”-wide x 13”-long strips; these will be your flag’s white stripes.

Use a star cookie cutter to cut 9 to 12 small (about 1 1/4”) stars from the remainder of the dough. Place the stars and stripes, spaced 1” apart on a baking sheet, and refrigerate for at least 30 minutes.

3. Preheat the oven to 425°F while the crust is chilling.

4. Prick the bottom crust all over with a fork. This will help keep it from puffing up too precipitously. If desired, for sparkle and crunch, brush or spray the stars and stripes

with water, and sprinkle with coarse white sparkling sugar.

5. Place the bottom crust on a middle oven rack, and the stars and stripes on a lower rack. Bake the stars for 10 to 12 minutes; the stripes for 18 to 20 minutes, until set and barely browned. You want them to be fully baked, but still be fairly light-colored.

Remove them from the oven.

6. Bake the bottom crust until it’s a light golden brown, about 20 to 22 minutes.

Check it several times; if it’s puffing up, deflate it with a fork or the sharp tip of a knife. Remove the baked crust from the oven.

7. To prepare the blueberry filling: Place half the blueberries in a saucepan and crush them a bit with a spoon. Stir in the sugar and enhancer. Cook over medium heat until the mixture starts to thicken, about 5 minutes. Remove from the heat, and stir in the remaining blueberries and lemon juice.

8. To prepare the strawberry filling: Place

half the strawberries in a saucepan, crush them, and stir in the sugar, enhancer, salt, and water. Cook until thickened then remove from the heat and stir in the remaining strawberries and lemon juice.

9. To assemble the cobbler: Spoon the strawberries over a bit more than 3/4 of the bottom of the pan, leaving a rectangular space in the top left for the blueberries.

10. Spoon the blueberries into the bare space.

11. Lay the six stripes atop the strawberries, leaving a long edge of berries showing at both the top and bottom of the pan. Trim the stripes where they meet the blueberry filling.

12. Arrange the baked stars over the blueberries.

ALONE AGAIN (NATURALLY) The LSU Tigers took the high road last week in not trying to force a stellar senior pitcher to perform with inadequate rest.

However, the Florida Gators took the Tigers’ seventh national baseball championship quest away from them by out-pitching them and playing more consistent defense. The Tigers reached out to a seldom used senior to start the first game in the series instead of trying to pitch one of their two aces with less than necessary rest. This was another move by Paul Mainieri that his distractors jumped on early in the week. But say what you will of Mainieri’s decisions, the man can coach as well - maybe even better - than his predecessor, who didn’t have the level of competition or athletic skills then to face year long, nor the gauntlet of postseason play that is more than rivaling the March Madness road to college hoop greatness. LSU played 16 games in the postseason, losing only one to Oregon State in the winner’s bracket two weeks ago and the two games to the Gators. But the Gators didn’t have to face Oregon State, especially coming out of the loser’s bracket as the Tigers did. Advantage: Florida.

I was hoping to link the name of Florida’s head baseball coach, Kevin O’Sullivan, to the all but forgotten Irish balladeer of the late 60’s and early ‘70s, Gilbert O’Sullivan. O’Sullivan, whose name conjures up a hybrid opera writer team (Gilbert and Sullivan) had two hits in the early 1970’s, Claire and Alone Again (Naturally). O’Sullivan’s efforts were not mainstream rock; they are best described middle of the road, safe, uninspiring numbers. Claire was about a girl and the message was never clear about Claire. The way the song was sung, I thought he was singing about Eu Claire, Wisconsin. Exciting, huh? The other song was a dreadful plea about feeling sorry for himself after being left at the altar and following the death of his two parents.

The kicker line, of course, was Alone Again, Naturally. It was a natural fact that the Gators had been bridesmaids in Omaha more than any other team except for Florida State and I’m sure O’Sullivan was thinking “O’,Shoot….LSU! Here we go again! Alone in second place (naturally).” Didn’t happen.

Florida thus becomes the first SEC team to win national championships in all four major men’s sports (football, basketball, baseball and track and field). The only other team that might have done this nationally might be Oklahoma but I’m not up to checking that situation out. Several, including LSU, have won three.

O’Sullivan is no Billy Donovan, Urban Meyer or Steve Spurrier in the coaching pantheon of great Florida coaches but he got the job done. All three of those other coaches took the Gators to new heights.

O’Sullivan finally didn’t have to hear the fat lady sing but his sophomore right handed ace Brady Singer heard the right notes long enough on Monday night to win the first game against the Tigers and game two was left to Fate, Kismet and an obscure rule about losing a run from third base when a runner does not follow the basepath on a slide into second base. Enough said. The Tigers took the season at least one more level more than they deserved in early April and now, unfortunately, have one of those second place trophies that longtime collegiate baseball legend Augie Garrido used for a doorstop. Now Mainieri has one as well. It will serve as a reminder of what might have been and look for the Tigers to challenge for Omaha in 2018.

The good news. Mighty? (Pat) Casey, the Oregon State baseball coach, did strike out and there is no joy in Mudville/Corvallis. And, hopefully, no room on the 2018 Beaver team for a multi-year sexual predator with a mean pitching repertoire and no takers from 40 rounds of the Major League Baseball Draft last month.

Over the past couple of months, I have heard the phrase “invasive species” quite often. When certain words or phrases start becoming popular, especially those involving my areas of expertise, I like to revisit the beginning in order to review and refresh my understanding of the terms. The phrase invasive species has a negative context to it, the same kind of context that comes along with a skull and crossbones label. You know that it is not a good thing, but what exactly is an invasive species and what does it mean for us?

To define what an invasive species is you must first start with defining several other closely related terms. So what exactly is a species? A species is the basic unit of biological classification. It is a component of the two part naming system, binomial nomenclature, which gives each organism its own scientific name. Not all scientists agree on an exact definition but most will tell you something along the lines of, a species is a group of living organisms consisting of similar individuals with the ability to exchange genes or interbreed. Native species naturally originated in specific areas or regions. Non-native species are those that have been introduced to new and different areas away from where their species originated from. Most of the time, this is because of both human activity and human involvement.

Different species interact with each other in an ecosystem along with non-living elements like air, water, sunlight, and the physical environment. Many observations have been made about the different interactions between living things throughout history. The food chain hierarchy is a good example of how different parts work together to make the system work. As energy continues to flow through the system, it will continue existing.

Invasive species can wreak havoc on ecosystems. An invasive species is non-native to the ecosystem in question and will likely cause economic, environmental, and human health concerns if left unchecked. There are many invasive species that are being discussed throughout the world. I’m sure you have heard about several. The cotton boll weevil is probably the most infamous invasive species in Louisiana but there are several others being discussed and reported on. The Emerald Ash Borer has infested ash trees in a few northern parishes. The nutria rat is destroying the marshes of South Louisiana. All of this while torpedograss makes its way into our lawns and bush killer vine chokes out the natural wall of shrubs. It’s important to understand the threat of what invasive species can have on our local ecosystems. The next time you stop to read an informational poster at the park about a new invasive pest, make it a point to learn what you can do help prevent the spread.

SLIDELL’S HERITAGE FESTIVAL HAS REALLY GROWN UP Twenty years ago, Slidell put on their first Fourth of July Heritage Festival along the streets of Olde Towne. I remember lots of craft and food booths, drinks and civic organizations…..and heat. Wow, so much heat emanating off the concrete along Fremaux Avenue and First Street, running along Front Street and Second. It started ‘way too early and featured “house” type bands that set up on the corners, in the middle of the heat. The fireworks were along the bayou where Heritage Park exists today. This was a more central location than the previous venues at John Slidell Park, but hotter.

Enter brand-new Heritage Park. A bandstand and a pavilion. Trees for shade. A bayou running along its western side. A children’s play park. Plenty of free parking less than a 1/2 mile away.

A more sophisticated selection of food and drink. A new LED Big Screen on the south side of the stage. Major sponsorships for the event. Major entertainment for the event. Heritage Fest has turned into Slidell’s premier party. From politicians to fundraisers, artists to civic groups, attractions like pony rides and giant inflatables, lots of consumables from booths, portables and food busses, this has turned into a major deal.

Entertainment featured the lovely Sweet Tea Trio, three Deep South ladies who wowed the sparser crowds last year during the ill-timed Festival Boufouca but had a larger and more appreciative crowd last weekend, Rckin’ Dopsie, Jr. and the Zydeco Twisters and my favorite, Caleb Johnson, the Meat Loaf look-alike and Blood, Sweat and Tears sound-alike, who brought his powerful presence and desire to jump-start a rather quiet Slidell crowd into a party mode.

Caleb wasted no time jumping off the stage and down the barricaded “run” towards his sound control team, mike in hand, singing, posing for selfies and just generally acting like this was the best thing to happen to him all year. Slidell followed a Baton Rouge and New Orleans pairing for Johnson, so the 2014 American Idol winner was expecting the energy level to at least approach those venues.

The weather cooperated by staying under 90 degrees and the humidity wasn’t oppressive during this, the coolest, driest early summer I can remember in Slidell. Dry is relative to the humidity, not the rains that set a June record across the lake. I’m sure we’ll have our blast furnace days before Labor Day but not to have them by this time of year is a huge blessing. Hold on, summer haters. Football season is less than eight weeks away. For me, I want my granddaughters to enjoy the pool for many more weekends to come to justify the bucks I put into it to keep it chemically balanced. Meanwhiile, thanks to everyone who had a part in this year’s Slidell Heritage Fest. Ya done real good!

Otherwise, why are you going? You can’t walk up to a fish tree and harvest a limit like you can pick fruit in an orchard. Fishing isn’t cheap. The guy building a race car is serious about his results.

He’s got a lot of skin in the game. If you just want to pass the time, pack a picnic lunch and leave the fishing tackle behind.

Those who fish casually aren’t fishing. They are relaxing and just happen to have a fishing pole and tackle in the water. It’s sort of like winning the lottery.

You really don’t expect a fish to hook itself on your setup, isn’t that true? You want a fish to come meandering by, look at your line and lure or bait, say to itself “Dang, that looks too good to pass up without taking a bite out of it. I’ll just mosey over to that sloppy setup and nibble on that goofy-looking bait or lure because I’m even more lazy and dumb than the guy breathing air on the other end of this line. If I get myself caught and lose my life, oh, well……it’s better than living in my fish parent’s basement for the rest of my days.”

Fishing is serious but it doesn’t have to last all day. If you have a quality hour, you can do relatively well fishing local structure. Most saltwater trips last less than four hours on the water.

The time wasters are: the trip to the launch, the pre-launch prep, the launch, the securing of all fishermen in the boat and then navigating your way to your first fishing spot, which could be contentious from the get-go. Make up your mind where you will head to before you get in the boat. Otherwise, this trip is more of a joyride than a fishing expedition. You have plenty of time to anticipate catches while under way. Don’t piddle at the launch site. Move your backside and go fish. And while you’re going in or having a slow day, note the things that made your day the way it was. Was the wind blowing and from what direction? Was the tide rising or falling?

Last dessert I am going to mention in this arcticle, and its hard for me , because I could go on and make this a book, is Slovakian sort of pound cake called Babovka. Its easy and can be used as dessert after you meal, sweet breakfast food or dessert with your afternoon coffee.

Its great for picnics , because its firm , so you don’t have to worry that you will arrive to your picnic with nothing but crumbs.

You can adjust the recipe based on what you like and add bits of chocolate, nuts or poppy seeds for example.

Get your oven ready and set the temperature to 170°C/340°F. Divide yolks and whites and whip the yolks with all of the sugar. Then add melted butter with the curd cheese and mix it gently and thoroughly. Put the flour in a bowl and mix it with the baking powder, then pour the mixture into the cream you prepared.

Whip the egg whites with your machine to create something we call “snow”, whipped egg whites. Be very careful and fold the snow into the dough to create an amazingly light dough. And - for the love of god - please don’t forget to grease your baking tray with butter.

And that’s it! Use a wooden skewer to check whether the cake is finished - if there’s no dough on the skewer, the cake is ready.

I know you are going to do great and will fall in love with these easy but delicious desserts after very firsttime you try them. Enjoy your summer picnics and be careful, because these are highly addictive.
