BALDWIN COUNTY, ALABAMA POISED TO DOMINATE WEST GULF COAST TOURISM

Our family spent a long weekend in Baldwin County, Alabama earlier this month, a favorite destination for us, especially my oldest granddaughter. Kaleigh loves the shrimp and grits at R Bistro Restaurant in Fairhope and loves to shop for clothes and stuffed animals for herself and her younger sister, Millie.

What’s great about Baldwin is its laid-back lifestyles - from the suburban Daphne and Spanish Fort areas to the quirky sophistication of Fairhope to the world class outlet shopping in Foley to the beaches of Gulf Shores and Orange Beach. Toss in self-absorbed Point Clear, historic Magnolia Spings and the magnificent bay front homes in Montrose along with the old-country charm of Elberta and you’ve got a vacation location for most tastes.

The heart of Baldwin is Fairhope, a “hippy town” founded in the late 1800’s that is ground zero for Deep Southerners who want to get away from it all - especially regional and national chains. Not that Fairhope doesn’t have them but the town is noted for its single tax colony founding, its beautiful, four-seasonal horticultural influence, visible with gorgeous hanging baskets of colorful flowers and its near-ban of any business in its downtown core area that has more than two locations and any that can be construed as regional or national in scope. Except for a Hampton Inn and a Broken Egg restaurant, everything else in downtown Fairhope is local - and much of it quaint or downright funky. The people are polite to a fault (even the ‘Bama fans) and the parking is free and generally available in front of most businesses.

Fairhope police are nearly invisible because they don’t seem to have much to do, law enforcement-wise. It’s not Mayberry because Fairhopeans are a little more uptown than the fictional North Carolina town from the 1960’s t.v. series. If you want to spend serious money, Fairhope knows how to help you do that. Between antique stores, furnishings establishments, jewelry outlets, boutiques and a couple of high-end men’s stores, you will need a healthy credit card line to survive a week here. It has several very good restaurants, a couple of fine dining places and its scenic roads lead to several outstanding restaurants traveling south and southeast towards the beaches.

There have always been these reasons to travel eastwards through Mississippi to Baldwin County. But now the icing on the cake is the scheduled summer opening of OWA, a family-oriented, affordable but upscale theme park and shopping experience on the southeast side of Foley. OWA, which means “big water” in Creek, is owned by the Poarch band of Creek Indians, a potent band of Native Americans who own several casinos in Alabama and several more around the country. And these folks are not sitting on their haunches to build: following a three to four year delay on a 520-acre piece of property which was supposed to be called Blue Collar Country, the tribe’s development authority last year purchased and immediately started site prep and building of a signature roller coaster and a couple of very nice hotels to accompany retail, rides and nostalgia. In this case, the Indians wiped out the cowboys and comedians that had their hearts in the right places but their resources apparently couldn’t keep pace. Besides a Marriott and a reported Hyatt Hotel, OWA will offer three roller coasters to make part of the development the best thrill-seeking venue in the region. One of the rides will be a wild mouse style unit with spinning cars and a second unit will be a kiddie one with a mid-course helix (a winding, twisting track for kiddie and scared adult tastes). The main coaster, designed and built by Zamperla, a company that created most of the rides at parks in Italy, Germany, Guatemala and at Luna Park at New York’s Coney Island, will be the white knuckle ride.

The marquee Rollin’ Thunder coaster will be a clone of the Thunderbolt at that famous East Coast amusement park. ‘Nuff said.

OWA is positioned to be a more affordable alternative to the pricier Disney properties in Orlando, Florida. They should be a heck of a lot cooler and less crowded as well, since flight service depends on either Pensacola or Mobile, each of which are a good hour away from the park. The region’s 6.2 million visitors will increase probably about another million or so, putting the area in a more competitive position against the Destin/Panama City Emerald Coast attractions. OWA will have 21 rides in the 14-acre park portion of the development, a 14-acre lake, a 90,000 square foot event center and in the future, more hotels, an island amphitheater in that lake and a water park.

START volunteers care for many homeless cats every day. Some of the cats are in foster homes waiting to be adopted while others live in maintained colonies. All have been spayed or neutered and vaccinated. We are always in need of food donations to feed these cats. The biggest need is for bags of dry cat food. Cory is a 4 year old male classic gray tabby with white. Cory would love to have a home with another playful, active cat. He enjoys playing with furry mice toys and chasing after balls. Herbs and Spices

GRILLN’ & CHILLN’ with ZINGY CITRUS HERB MARINADES Make a blend of olive oil, balsamic vinegar, garlic, kosher salt , fresh cracked pepper, and herbs of your choice. Mix in about a cup of your citrus juice and maybe some extra spices to set the cultural theme of the dish. Place the chicken or meat in a ziplock add the marinade and let sit in the refrigerator for a few hours to up to overnight. Fish is very delecate, so only marinate 10 minutes, then cook. If you leave fish in the marinade a while, it will become a ceviche’. Whether you grill or bake, your chicken or beef will turn a nice brown color from the balsamic vinegar and it will be juicey and so flavorful.

The sweetness of the balsamic vinegar mixes great with the garlic, herbs and citrus. Your tastebuds will do a happy dance.

A great way to experiment with different flavors is to make different marinades and soak chicken wings in each marinade. Grill, then toss or dip in a bbq sauce. See how the flavors differ. Make a few varieties of BBQ sauces and now you have a hot wing bar. I can’t take credit for this great idea. My son, Bobby, made it for me on Mother’s day and I’m still drooling over it. Sweet Heat Inspiration! Grill some veggies and add a citrus Bagna Cauda over the cooked veggies to marinate, then serve. SMOKEY LATIN MARINADE

• 1/4 cup of olive oil • 1/4 cup of balsamic vinegar • Juice of 1 lemon • 2 shallots or 1/4 red onion, grated • 4 cloves of garlic, grated • A handful of basil chopped, about 2 Tablespoons • 2 teaspoons dried oregano or 1 Tablespoon fresh oregano leaves • 1 teaspoon Kosher salt & 1/2 teaspoon red pepper flakes

• 1/4 cup of olive oil or canola oil • 1/4 cup lime juice • 1/4 red onion, grated • about 3 Tablespoons cilantro, finely chopped • 2 cloves of garlic, grated • 1 teaspoon chili powder • 1 teaspoon chili flakes • 1/2 teaspoon cumin • 1 teaspoon Kosher salt

Combine all ingredients. Taste to balance flavors. Pour into a large zip lock bag. Add chicken, beef or pork. Seal and reffrigerate 2-24 hours

Break out all the garden herbs, gather a variety of citrus, mix in a good olive oil to conjure up the most creative flavors for your grill this Summer. There is a reason so many marinades include citrus juice: Its acid helps break down proteins, which both tenderizes meats and delivers flavor that you will notice in a finished dish. A single variety gets the job done, but a mix of different juices produces a more complex result. If you use the same citrus in a salad or rice to place your meat ,chicken or fish on, bring the rainbow of colors.

One type of citrus in a dish is pretty and a single note. Two is prettier and more complex.

When using slices or segments, pair multiples of varieties for an automatic showstopper.

Choose different colors and sizes, and aim for a balance of tart(such as grapefruit) and sweet( such as oranges or kumquats). Try some new and different varieties, like the meyer lemon. It’s sweeter and more fragrant, with hints of mandarin, than the standard lemon. Have you ever tried a pomelo? It’s like a sweeter, bigger grapefruit with a fat pith. Turn a surplus of citrus into a perky condiment of preserved lemons, that will last for months and is ready to add to any marinade or dish. Traditionally regular lemons were only used. Now all citrus can be preserved for new interesting flavors. If you want citrus sour flavor, but don’t want much liquid, use the spice sumac or tamar

• 4 cloves of garlic, minced • 1 2” piece of ginger grated • 2 green onions, sliced fine • 2 Tablespoons Thai basil, chopped • 1 Tablespoon cilantro, chopped • 1 cup mixed fresh citrus juice-orange, grapefruit, & lime • 1/2 cup soy sauce or ponzu • 1/3 cup Asian seasoned rice vinegar • 1/4 cup Asian sweet chili sauce • More salt if needed

• 1 cup Kosher salt • 1/2 cup sugar • about 5 lemons or other citrus, cut into quarters

Combine all ingredients.

• 1/4 preserved lemon, seeds removed, chopped.

• 6 Tablespoons mild miso (white or yellow) • 1/4 cup olive oil • 3 Tablespoons honey • 2 Tablespoons fresh lemon juice

Cook anchovies & garlic, in oil.

Cook until garlic is just starting to brown & anchovy melts. Remove from heat & add zest, honey, juices , salt & pepper. Pour over grilled or fresh vegetable curdite’ Sprinkle almonds

Puree in a blender then add salt to taste

Guess Who’s Baaacckkkk! The Tigers Have The SEC By The Tale Three weeks ago, most folks would’t have given the LSU Tigers any chance to win the SEC title, let alone the SEC West. The best most could hope for was a spilt of the last four SEC series and a #5 or #6 seed in the SEC Tournament in Hoover, Alabama. Many had been calling for the resignation of Paul Mainieri, the LSU skipper who has continued the excellence of the baseball program for the past eleven years. Mainieri, who would be considered the best coach of all time at all but three colleges (LSU, Southern Cal and Texas) in college baseball history, has taken his soft-spoken and informative narrative to new heights with the regular-season finish of this team. In their last twelve league games, including two series against teams who were Western Division leaders earlier this season, LSU only lost one game to South Carolina. They swept a hapless Alabama team and swept both a pitching-strong Auburn team and a well-balanced, division-leading Mississippi State team in Starkville last weekend.

Now the Tigers face a chance to extend their SEC Tournament Championships under Mainieri to six - having won in 2008, 2009, 2010, 2013 and 2014 - to go along with four league championships, including a shared title this year with Florida. They’ve won the west six times, including this year. They’ve also fought their way back into the Super Regional Championship hosting conversation, already clinching a Regional hosting berth unless they completely blow the Tournament matchups this week.

Despite injuries, the Tigers have resorted to a few old tricks to get where they are this week. Johnny Wholestaff, Mainieri’s name for a bullpen that lacks consistent performances, is doing it again. Freshmen have stepped up in the field, on the mound and in the batter’s box to produce a keen eye and better than anticipated batting averages (second in average only to hot-hitting Kentucky) by being more patient on the plate and taking walks more often than usual. Their fielding leads the league, their base running may be the best they’ve had under Mainieri and they have their obligatory All American starter on the mound in Alex Lange.

Mainieri never hesitates to move players around, both in and out of the lineup and within the lineup as well. There may not be a better coach than this four-time Coach of The Year (Skip Bertman won six) than Mainieri in performing this duty. Bertman was a pitcher’s coach, first and foremost, but Mainieri is more rounded with his lineup.

Mainieri does not benefit from the sluggers LSU produced in the 1990’s under the Gorilla Ball era of springy aluminum bats but he has sent fourteen players to the Big Leagues.

It’s the same old tale (story). LSU gets down, gets sloppy, gets inspired, gets on track, gets right and gets going towards Omaha. Don’t doubt a moment that the Tigers won’t be headed back to Nebraska next month. The Coastal Carolinas of the world have taken their pound of flesh from the Tigers and I don’t think LSU will be caught napping again in post-season play. Their position as the best college baseball program of the past 27 years with one of the five finest baseball coaches of the past 27 years should take the Tigers to the CWS. Magic and Tiger tailgates always dominate the LSU appearances and don’t bet the farm that they won’t return in their quest to win Mainieri’s second national title and their seventh. They probably will never catch Southern California’s 12 titles but the era was different then, just as it was under John Wooden and UCLA basketball.

But no one probably will surpass LSU’s six titles, tied with Texas at #2. However, Texas baseball is in a recovery mode after Augie Garrido left last year. See you in the Midwest in June, Tiger fans!

Who says that since school is out that all of the learning goes on break too? Use the extra family time this summer to learn a little bit about the butterfly life cycle and use that knowledge to plan a working butterfly garden. Butterfly gardening can appeal to almost any kind of gardener. Whether you are the environmentalist gardener who likes to plant gardens in order to show support for endangered species or the mathematician gardener who likes to plant in patterns of 3’s and 5’s, there’s a butterfly garden out there waiting for you.

Butterfly gardening is easy to grasp once you understand two main parts. The first part involves the larval stage and host plant selection. According to the rules of binomial nomenclature, all butterflies are members of the order lepdoptera within the class of insecta. Lepidopterans are holometabolous, which means they display complete metamorphosis in their life cycle. There are four distinct life stages: egg, larval, pupal, and adult stages. The larval stage becomes important because of host plant preference. The larval stages of different butterflies feed on specific plants and by selecting different host plants, the gardener can focus his/her efforts at certain butterfly species. The Gulf Fritillary butterfly uses passion flower vine as a host plant and the Giant Swallowtail uses a citrus plant as a host plant. Any book on butterflies will include information like this. Check the LSU AgCenter website for more information on butterfly gardening and specific information on the different host plants that attract certain butterflies. http://www. lsuagcenter.com/ The second part of butterfly gardening understanding nectar plants and their role in the butterfly lifecycle. The role of the adult butterfly is to lay eggs and help continue the next generation.

They fly around in search of suitable host plants while relying on flower nectar to provide the energy needed to do so. The inclusion of flowering plants that produce nectar are essential to any butterfly garden. Butterfly bush, Buddleia spp., is a commonly used plant in many gardens.

It is highly regarded as a nectar producer and is almost necessary for any butterfly garden.

Be generous with space when using it though. Buddleia can get around six feet tall and just as wide. Lantana is another nectar source that is commonly found in the garden. The brightly colored flowers and almost perennial growth habit in South Louisiana make it a common choice for any southern flower garden. Salvia flowers are some of the best nectar producing flowers in the entire garden and should be included on any butterfly-related list of plants.

As you can see, butterfly gardening isn’t difficult. Once you understand the use of host plants and nectar plants, you can then start to develop specialized gardens to attract specific butterflies. So, the next time you want to start a new garden and to help bring awareness to nature, think about putting a butterfly garden together and teaching someone near you

THEY CALL HIM “THE FISH WHISPERER” For the past five years, we’ve featured a fishing section in our Plaquemines and Westbank Plus issue. The number of guides and marinas there brought us into contact with many fishing captains and marina operators. For the past two years, we have featured the inside and offshore adventures of “Hoop”, whose writing proliferation rivals that of his skills upon the water. For the Northshore, not so much. We didn’t want to feature just the usual fishing reports and the structure of the fishing environment on the north side of the lake favors local fishermen more so than the visiting out of state angler wanting to invest in bull reds or offshore trophy fish.

While gathering material for this week’s issue of Northshore Plus Enjoy!, I stopped by Bayou Adventure, the repurposed fishing and convenience store in Lacombe. The owners, Shannon and Jeff Bordelon, have created a unique operation featuring a complete line of freshwater and saltwater tackle and lures and live shrimp. They also rent bikes and kayaks.

But what sets their place apart from other similar locations is the daily presence of one Forrest Green, a retired School Board worker who probably knows more about how fish think than just about anyone else around.

Mr. Green, as he’s known to everyone, has been fishing for more than 60 years after his family moved from New Orleans to Lacombe in the 1960’s. Since his childhood, he’s been figuring out why fish do what they do, where they do it and when they do it. To Mr. Green, fish are everywhere and there are Mother Lodes of fishing to be found year round…if you know what you are doing.

What’s unique about Mr. Green is he dispenses his vast piscatorial knowledge every Thursday evening between 5 and 6:30 PM at Bayou Adventure on a gratis basis. Although he has been a champion fisherman and has successfully competed on more than one tour circuit, it’s not what he wants to do with the rest of his life. His is a casual, sit around the store atmosphere, asking questions, discussing options, giving examples. Even though Mr. Green is not part of the store ownership, his knowledge obviously helps the store merchandise its products.

But Mr. Green will tell you he would rather advise a fisherman to buy less variety and learn to use three or four lures successfully than to load up their tackle boxes with a dozen or so variations of many types of lures. Like anything else, success means using a limited amount of resources enough times to either achieve success or discard the resource to the “maybe again another day” or failure file. Not everything works for everyone and Mr. Green believes your tackle box should be your success box - not a general store for another fisherman.

We had a very pleasant and productive meeting with Mr. Green and I am proud to tell you that starting with our first issue in June, “The Fish Whisperer” will be a regular column in Northshore Plus Enjoy! We invite our readers to drop by Bayou Adventure on Thursday evenings and on some occasions, during the day, Mr. Green will also be around. WHERE THERE’S A JAMES AND A JORDAN, THERE’S A WILL

Cleveland Cavalier mega star LeBron James has moved from receiving no consideration as a top 20 basketball player of all time to the exalted position of challenging the greatest old school players for the G.O.A.T. title. James was vilified during most of his first ten years in the NBA for several reasons, many revolving around the old adage that “today’s kids don’t have the chops of the old-timers”. Well, Michael Jordan did have those chops and he had no problem moving into the top position long before his career reached fourteen years as James’ has reached….and he was barely Old School. But he did attend college, stayed three years and paid his dues his first couple of years in the NBA before ascending into the realm of greatness. James was a megastar in high school; the most talented high school player to be NBA-ready in history. No one has come close to what he has done since Day One. Is James the last guy you want shooting a midrange or three-point jumper in a one-point or tie game with less than ten seconds left? Maybe not. But is James the guy you would give the ball to for a massive drive and lay-up or a last-minute pass to an uncovered teammate? I’d say yes. James has been everything an individual should be in this or any other professional league: a man who does what he is capable of doing and makes the others around him that much better. James is a model citizen and husband; except for a show offish move to Miami and some irritating pre-game routines (chalk, anyone?), James has been all that he can be. Is he better than Michael Jordan, Magic Johnson, Bill Russell, Kareem Abdul-Jabbar or Larry Bird? In some areas, yes. In other areas, no. Both James and Jordan could play any position, guard any position and impose their will on an opponent. Jordan was more the showman; James the facilitator. Both could assist and rebound and score, James in the high 20’s and Jordan around 30. But why argue the point? James is a force in a league of players obviously superior in athletic ability than the league produced in the mid-80’s to early 2000’s.

Jordan had better players around him who stayed longer and remained healthier than James’s teammates. Jordan also had much better head coaching with Phil Jackson than James has experienced . Yet James’ will produced teams that could compete and win championships, not with the frequency of the Chicago Bulls but championships nevertheless. There are more teams with championship potential in the NBA today than 20 to 30 years ago. And no one….I repeat….no one…..ever took a beaten team like the Cavaliers, down three games to one in the 2016 championship against the Golden State Warriors, to the heights James took Cleveland.

It stands as the greatest championship comeback in NBA history and no, as I said in a story last year, Golden State is my team and I hurt after that meltdown. Draymond Green’s mouth had a little to do with it as did Klay Thompson’s, but you don’t poke a wounded tiger in the eye and expect not to get clawed or bitten. So, start with James and Jordan and build the rest of your all-time NBA team. There’s your soul and inspiration. And to water down my argument a bit, I hope James does not repeat as NBA champion because the Warriors have some legend-building to do as well.

We won’t get into the Steph Curry legacy just yet. It’s ‘way too much fun to watch Curry enjoy the playing of the game of basketball. This is about LeBron. And Michael. And history. Historical chapter three begins this week in Oakland.

Six Flags never worked, its in a depressed, crime-active area and it was an old school amusement park done by a company that has not had many hits in this century. Its highly unlikely New Orleans would ever pursue anything remotely similar to OWA and you don’t have to ask OH-WHY? because you know better.

Yes, this sounds like a Baldwin County Chamber of Commerce pitch and it could be because we know the area well, having done one of our cartoon maps here in 2014 and traveled the county from one end to the other. Having spent much of my life along the beaches of California and the Gulf Coast, I don’t know of an area that offers beach life so close to under crowded and alternative vacation options for couples and families. With the financial resources of multiple casinos behind them, the Poarch Indians have done a marvelous thing by branching out into other entertainment venues. If this works in south Alabama, maybe something similar will work on the Northshore. All we need is a little more vision from our tourism folks and a willingness to promote an area that has been sucking wind when it comes to real tourism dollars. Forget New Orleans. Bring it here.
