Tony’s Take SMART PHONE ADDICTION IS REAL; GET READY FOR THE FALLOUT

Those of us who can make it through an entire day without romancing our Smartphones found out on 60 Minutes earlier this month that a handful of code programmers and marketers have turned this device into a Pavlonian nightmare. Speaking with a rogue programmer who left Google recently, the venerable CBS program outlined the ways the industry, primarily Silicon Valley, is using rewards and withholding of same as tools to create anxiety, nervousness and anticipation among the tens of millions of folks who think they cannot live without their Samsungs, Apples or other devices. Much like the famous Russian experiments of the early 20th century, companies are creating emotional chaos by withholding the release of information, most notably the “likes” generated through Facebook usage. Apps are being created for the sake of creating apps; they have become status symbols with little practical usage for most of their subscribers. Look at emojis. Millions of teens and pre-teens use these cartoon figures to communicate with each other. What’s wrong with that? Well, if you believe that mankind should continue to dumb down and make all communication devoid of human input, nothing, I guess. But to watch two teens or young adults text each other across a restaurant table in in a public place instead of putting their friggin’ phones away and actually exchanging words, emotions, subtleties, body language and ideas, they take the path of least resistance….and minimal intelligence, involvement and commitment. These are the people who will be our service workers, health care providers, mechanics, advisors, protectors and teachers in the next ten to 25 years. They are poorly versed in the history of the United States or western civilization, they know little of the arts, geography or social interplay. In a word, they are the real dumb asses made prominent in the 2006 movie “Idiocracy.” If you’ve never seen it (and I haven’t, but plan to soon), it’s a dark comedy starring Luke Wilson, the lesser comic brother of Owen Wilson, who lives as a military experiment in a world best described as “Beavis and Butthead Meet Bill and Ted’s Excellent Adventure’.” Substitute the word “awesome” and begin all sentences with the word “So” in place of “Dude” and Excellent!” and there you go.

Fifty three years after the Rolling Stones’s Mother’s Little Helpers, smart phones and social media have rapidly been replacing uppers, downers, synthetics, opioids and meth as the drug of choice. Cheaper than those other products, less damaging to the body and health of the addict and more socially acceptable (and legal) across the board, smart phone abuse nevertheless triggers a dopamine release similar to more traditional drugs. No wonder many parents have to pry the phone out of their kids’ hands! And many parents and grandparents are as addicted as the kids. Combine phone hypnosis with the proliferation of ear buds and the average selfabsorbed being becomes nothing more than a receptor for sensory overload. These souls are

attractive future victims for predatory types of all ilks. They are naive’ and under informed. They know social media and the Internet, phones and computers, but are almost 19th century ignorant in so many areas important and vital in keeping a nation on the cutting edge.

What can we do as a nation to curb this trend? For one thing, be smart about giving your child electronic devices. Yes, they can learn them faster than us because their minds are not challenged in most other disciplines and we need them to understand something we did not have as our birthright. But give them the challenge of learning traditions in a traditional manner. If a power source or battery system fails or doesn’t exist, could they survive with less than MacGyver skills?

Can they fix a sink, change a tire, cook a meal, sew a button, charge a battery, unclog a toilet, use a hammer, saw or screwdriver? Do they know anything about geography and the relationship between where things exist and their neighbors? Or the effect weather and topography have on the way we live and how we relate to others? Answers without research are fleeting examples of knowledge and the font of knowledge has to at least partially reside in the soul and brain of the individual. Since cell phones can be hacked and if all of your life and intelligence is in that phone, where are you in this world?

LILLY Mabel is a lovely pit bull mix with blue eyes that sometimes look a little sad.

She can’t understand why she was left alone in that house. Why did they leave and never return for her? She was always a good dog. She was devoted to her human family and took good care of her puppies that always disappeared, to where she did not know. At approximately four years old, Mabel was alone for the first time, no friends and no food. When found, still waiting there for someone to come back home, Mabel was very underweight. She has done well in her foster home, putting on weight and playing with the other dogs. Mabel would love to be adopted by a family that would take care of her and make her the center of attention. There were puppies and adult dogs. The people decided there were too many dogs. Dog food was too expensive! They called for help and someone came and took all the dogs. Jax went to a foster home and he went to see a veterinarian for the first time. Jax has his vaccinations now, has been neutered and is getting heartworm prevention. Patches is a neutered male with a fluffy black and white coat. Both are sweet and love attention, but Patches is more outgoing than Lilly. TREAT MOM TO AN AMAZING MOTHER’S DAY!

Mothers day is one of the most celebrated holidays and I personally think for a good reason. Mom deserves every bit of an attention on her special day and we always wonder what will make her smile , what does her heart desire , how can we show our appreciation for all those years of love and care she is giving us.

I think the most popular choices would probably be flowers, chocolate and last but not least , very popular combo of chocolate and fruit – chocolate covered strawberries. But what if I tell you, you can combine all three of these into one beautiful and very tasty present?

I am talking about chocolate Chocolate Strawberry Roses Bouquet!

This is honestly so far my favorite irresistible and very elegant chocolate treat and I will share my secrets with you , so you can surprise your mom with something truly extraordinary this year .

Before I reveal my top secret recipe I would like to talk a little more about one specific ingredient we are going to need. Plastic chocolate. Now you are asking yourself, what in the name of god, is plastic chocolate? Let me explain how the magic works.

Plastic Chocolata also known as modeling chocolate, chocolate leather or candy day is a soft, pliable confection made from chocolate and sugar syrup. It can be used in place of fondant for nearly every existing decorating technique. Although it requires more patience and finesse than fondant, it is far superior in flavor and versatility. Sweet and creamy, it melts on the tongue like soft, candy bar nougat. Slow to dry, it is the ideal substance for modeling shapes and figurines.

From scratch, modeling chocolate has only two ingredients: chocolate sugar syrup. There is no tempering of chocolate involved; however, the technique and handling requires a similar level of care and understanding of chocolate. Note that the quality of modeling chocolate is only as delicious as the chocolate used to make it. Additionally, the proportion of sugar syrup to chocolate in the modeling chocolate formulas may require adjustments depending on the brand/quality of chocolate used.

So yes, you can replace all the fondant with something with equally good properties but much better taste.

Items Needed - microwave - chocolate - organic corn syrup - 1 medium-size glass or ceramic bowl - clean and dry small microwave safe bowl for heating the sugar syrup -spatula -plastic wrap Zipper close freezer bag 1. Chop the chocolate, if necessary, and pour it into a clean, dry glass bowl.

2. Microwave the chocolate, uncovered, for 20-30 seconds on high (microwave times may vary.) Remove the mix the chocolate with a firm spatula or a spoon.

3. Repeat for another 15-20 seconds, stirring immediately afterwards. Continue with in the microwave followed by stirring until all the chocolate has melted and no hard bits remain. It is critical that the chocolate not be overheated point or it may seize (hard or worse, scorched.) If the bottom of the bowl grows too hot to touch, the chocolate is in danger of overheating.

4. Pour the warmed syrup over the chocolate and stir with the spatula until just blended. The chocolate will quickly stiffen 5. Pour the mixture onto a sheet of plastic wrap. Flatten it into a patty and seal it well. Rest it on a sheet pan or cool tabletop at room temperature for 1-3 hours or until it begins to resemble a soft Roll in consistency. If the environment is warm, it may take up to 24 hours for a batch to set to a workable consistency.

6. A fast set can be achieved by placing the wrapped chocolate in the refrigerator for half an hour, but a slow set at a cool room temperature yields the most stable product.

7. Once is semi firm, knead the modeling

chocolate with the palm of the hand for 10-20 seconds or until smooth. Those with hot hands may opt to work the chocolate with a bench scraper instead. Transfer the finished modeling chocolate heavy-duty, we sealed bag for storage. Store it in a cool place out of sunlight.

Now we can get to even more exciting and easy part.

What do we need?

-cake pop sticks -200g (7.05 ounces) chocolate -modeling chocolate -fresh strawberries washed, dried and hulled How is it done?

Dip the cake pop sticks in the chocolate and then push into the base of the strawberry.

Allow to set then dip the whole strawberry into the chocolate. Make 5 balls and one snake out of the modeling chocolate.

Place them onto some non-stick baking paper, cover with another sheet and squash flat. Roll the snake up half way to form the centre of the flower. Cut off the bottom half of this spiral and then place onto the strawberry (see video). Wrap the remainder of the snake around the strawberry.

Add one petal at a time and fan out at the top to look like they are open.

Take any remaining strawberries and dip a cake pop stick into chocolate end push into the base. Dip the top half of the strawberry into the chocolate and allow to set.

Arrange all the chocolate strawberry roses into a bouquet and wrap with cellophane and tissue paper. Secure tightly with ribbon.

And as always sky is the limit so you can actually make different colors or put your bouquet in vase and use any type of decoration.

Make your mom one of these and I guarantee you will see that well known warm smile on her face and unique satisfaction that only chocolate bring to us, women!

Why Pies Are So Darn American-and Southern

Written by Carolyn Heneghan I’ll never forget the first time I walked into my high school best friend’s family home and saw pies covering every surface of the kitchen and dining area, from tables to countertops to windowsills. I could smell the feast’s third apple pie crisping in the oven. It was the day before Thanksgiving.

And yet, I was confused. Also salivating.

“Why in the **** are these seemingly sane people making 10,000 pies for one occasion?” I wondered. My New Orleans suburban family could certainly appreciate a quality dessert spread, especially during the holidays. But this just seemed ridiculous.

What is it about pies that makes them so American? And in some cases, so Southern?

Let’s find out.

“As American as Apple Pie” Like Thanksgiving, the American tradition of pie began with the earliest European settlers, the Pilgrims. The Pilgrims had brought with them apple spurs to grow fruit-bearing trees. Because apples were plentiful and easy to dry and store in barrels during the winter, it didn’t take long for apples, and thus apple pie, to become a common early American treat.

Practically Delicious Pies didn’t just serve Pilgrims’ taste buds—they had a practical purpose too.

Pies use less flour than bread (the filling replaces the extra flour needed for the middle). So settlers could bake them easily and, most importantly, cheaply. That made pie a more sustainable and ration-friendly food, which was necessary in the early (Read: hungry) days of the American colonies.

Why in the South?

Pies are a tradition in any part of the country, from Boston Cream Pie and blueberry pie in New England to cheese and cream pies in the Midwest (dairy country). But the South gave way to a few signature pies that are essential to regional dessert spreads.

French immigrants in and around New Orleans created the beloved pecan pie using the pecans shared by the local Native Americans. Another popular Southern treat is chess pie, a rich, drool-worthy mixture of sugar, cream or buttermilk, egg and sometimes bourbon. A few states over, Florida settlers made use of local citrus to create the oh-so-tangy key lime pie.

Once I was privileged to actually taste a few bites out of each of my friend’s 10,000 pies, I had a blissful sense of understanding (and stomach ache) as to why someone would surround themselves with pies galore. It’s an American thing. It’s a Southern thing. Now hush up, and eat your tradition.

Pruning too late in the season will interfere with their bloom cycle.

• Check evergreen plants for signs of insect pests. These plants can be prone to scale insects. It is best to scout these problems early in order to keep them under control. You can use a horticultural oil spray to control them this time of year. Make sure to get good coverage because scale insects tend to feed on the undersides of leaves.

Horticultural oil sprays need direct contact with the insect to be effective.

• Take advantage of the springtime weather to continue replacing and adding new shrubs into the landscape. Later in the summer, when temperatures start to rise, heat stress will set in and make it difficult for the new plants to survive. Be sure to

• Fertilize new planting plantings and existing perennials if you haven’t done so yet. Fertilizer will provide much needed nutrients to help plants grow. Quick release fertilizers will release their contents fairly quickly whereas slow release type fertilizers release nutrients over time. Use this as a guide to determine how often to apply.

• Continue planting warm season bedding plants to provide an abundant flow of color throughout the growing season. Choose plants like angelonia, lantana, marigolds, sunflowers, sunpatiens, vinca, and zinnias for full sun beds. You can choose from begonias, caladiums, and torenias for shadier spots.

• Add a fresh layer of organic mulch to your landscape beds to help prepare them for summer time weather. Mulch will help prevent weed growth, keep soil temperatures cool in the summer, help retain soil moisture during times of drought, and they also provide a nice finished look to the garden. There are many different kinds of mulches to choose from including shredded pine bark, shredded hardwood, and cedar.

One of the most common mulches in southeast Louisiana is pine straw. Color one with a color and texture that you prefer.

• Don’t forget about the lawn. As mowing season progresses, try to mow often enough that you remove about one third of the plant each time. It is also important to mow your lawn at the correct height. St. augustinegrass should be cut between two and three inches tall, centipedegrass between one and two inches, zoysiagrass between one and two inches, and bermudagrass at one inch.

How do you decide what sources you use for food?

Finding the right sources for the freshest ingredients is one of the most important things a chef or cook must consider when shopping for a recipe. Most people know that fact, but what I believe some people are unaware is that finding the local, fresh, INDIGINOUS ingredients produce the best results. I always shop local when I can, even when I have to make wholesale bulk orders I use local companies like F. Christiana for food or Pelican Wholesale in Slidell for paper products.

When it comes to cooking I try to use ingredients that are indigenou s to this region.

Animals and produce that live and grow naturally as a part of our eco system produce the best results. Mother Nature has a way of putting things in certain places around the world for a reason.

Sure you can get seafood from just about any body of water around the planet but why? Part of the reason our seafood is the best because of our proximity to the end of the Mississippi river. As the river flows it carries with it nutrients that flow from, Lake Itasca in Central Minnesota all the way to the Gulf of Mexico. It is a 2320 mile journey. From it, all manner of fauna and flora along the way receive nourishment.

These properties works thier way up the food chain. For this reason, our seafood especially, cannot be beat.

We are extremely fortunate to live in the area in which we live, and this is why eating, cooking, and restaurants are such a big part of every native Louisianian’s life. Cooking in a contempory Creole style affords me the ability to utilize these ingredients. After all Creole food is partially a result of French, Spanish, and Italian chefs adapting their cooking style to what was readily available at the time.

It is for this reason that I do not do a great deal of ethnic dishes.

When I do cook ethnic food, like for instance Latin American, I will try to use ingredients indigenous to Mexico, Central, and South America. As I shop for ingredients I find the ones that are grown there. Everyone knows avocados are native to Mexico and Central America, so it stands

to reason that avocados imported from those regions are the best. I would much rather use a local produce merchant that carries avacados form their natural habitat than those imported from California for instance. With the advancements in shipping and refrigeration this is possible now more than ever. This way I get an authentic product and am still able to support a local business. Home cooks are lucky. They don’t have to worry as much about price a restaurant owner. When it comes to pricing I try and get the best prices I can without sacrificing the final product.

Good stuff in Slidell When I go out to eat I like to try a place several times until I find something that I, personally cannot do without. When I find it I tend to order it most every time I go. It is not necessarily the best thing they do by any means, but it is something that appeals to me personally and I cannot do without it. One such item is the Lasagna at Nathan’s.

I have known Ross Eirich since I moved back to Slidell from North Carolina where I lived for a few years. He pretty much helped me get started here when I decided to go into business on my own by offering advice, use of equipment, and good sources for fresh seafood. Chef Ross was the chef at historic Galatoire’s before he opened here which is about the pinnacle of chefdome. I like all of his food but there is something about the Lasagna that I just crave.

The sauce is perfect. Not too sweet or acidic. The layers of pasta are thin so you don’t feel like you are being cheated out of the awesome, gooey, fresh mozzarella and Parmesan. The Bolognese is meaty with tons of flavor and the whole dish is about as comfort food as comfort food can be. It is served very hot as I usually get it to go and by the time I get home it is still perfect.

Like I said I like all his food and by no means is this the best or only thing he does that is excellent, it is just my personal favorite lasagna anywhere and I wanted share. I like looking for hidden gems on menus that I think most people may miss.

Living alone is not without benefits -peace and quiet whenever you need it, undisturbed organization and order (or guilt-free sloppiness) and room to stretch out and relax.

But some things are just more fun when you have someone to share them with. Cooking is one of those things.

Cooking for guests usually evokes a sense of pride and accomplishment. But when you are cooking for yourself, it can feel more like a chore. On top of that, a busy lifestyle that includes any combination of work, school, child care and exercise can make it difficult to plan and prepare healthy meals. The following hints will help you prepare tasty, nutritious meals for one or two while saving time and money, reducing waste and keeping your healthy diet in operation.

USE YOUR FREEZER

Big batch cooking isn’t just for big families. If you’ve been avoiding cooking a favorite recipe just because it makes six servings, go ahead and cook it just for you. Portion the leftovers into containers, seal tightly, label with the date and what’s inside, including notes on what kind of spices, tastes, etc the item possesses and freeze for up to two months. Storing your food this way too will help with portion control, because you can’t have seconds when they’re frozen solid. Also take advantage of your freezer to reduce your product waste. Bananas, strawberries, broccoli and carrots can easily be frozen and used in things like smoothies and soups. Just wash, peel and chop if necessary and store in an airtight bag in your freezer. Again, limit your freeze time to 60 days to retain some semblance of freshness and taste. Strawberries taste more like straw if you keep them longer than two months.

INVEST IN SMALL APPLIANCES

Use some of that money you’ve saved by eating in and buy a few small appliances. A mini-food processor, blender and juicer with not only make cooking a breeze by shortening the preparation process but might also expand your menu options to include items sure to liven up any menu - pureed soups, smoothies, fresh juices, dips and more. Why go to Smoothie King when you can be the smoothie king or queen at home with a better, healthier consumable for a small fraction of the cost. And don’t forget about a toaster oven, which preheats in a flash and can be used to cook personal pizzas, salmon and other tasty treats, not to mention prewarming your mittens before going out (just kidding!)

TAKE ADVANTAGE OF BULK BINS

You probably didn’t know these existed or may have ignored them. But nearly every grocer has bulk bins for inexpensive consumables, such as grains, cereal, flour, granola, dried fruits, nuts, soup mixes, dried beans, legumes and other items. Choose your mixture, bag in to your specifications and store it in a dry, cool, dark place. Most bulks will last many, many months. Trial and error. Make your own trail or health mix. Have “Bulk” cooking parties, where you blindly choose items from multiple bulk bags and make a fun meal or two.

Now - how does all this tie into cooking with another chef?

Well, that chef also has time constraints, and since the meal is at your place, the more prep you do before the other cook arrives, the more actual cooking can be done quicker. Having manageable amounts of ingredients helps you organize the cooking environment and since most are pre-measured, that chore can be reduced or eliminated. Mixing pre-set products done to your specifications ensures freshness and familiarity as well. No pre-packaged surprises!
