Italian Shrimp with Buffalo Mozzarella

How many dishes can people create from that one amazing protein, Shrimp? Well Bubba from the movie Forrest Gump certainly came up with quite a few, but here is one I believe Bubba missed; Italian Shrimp with Buffalo Mozzarella.

This is a refreshing way to use ripe tomatoes, and buffalo mozzarella cheese. The shrimp I use are 21-25 which means there will be approximately 21 to 25 shrimp per pound. You could use a smaller shrimp if you prefer, but freshness remains priority to maintain the best flavor.

LOUISIANA WINTER DRIVING TIPS • GET A PRE-WINTER CHECK Before the temperatures begin to dip, take your vehicle to a mechanic and ask them to check the battery, brakes, antifreeze level, heater, defroster, and thermostat to make sure that all are in working order.

Buffalo Mozzarella is actually a soft milk cheese made from an Italian Buffalo. Mozzarella comes from a term that means “cutting by hand.” It’s a process of separating the curd into small balls. Buffalo Mozzarella is appreciated for its delicate flavor, and elastic texture.

The process I use to cook this dish is not complex. Fresh tomatoes and quality virgin olive oil are a must. I purchase my buffalo mozzarella from Rouses in their quality cheese section. You can actually purchase the ball already cut into bite size cubes which makes that final addition to the dish convenient.

The flavors of this dish are mild, and well balanced. Pasta did not accompany this tomato based dish, but rather toasted French bread on the side for dipping. You can substitute chicken if you have any seafood allergies, but shrimp is highly recommended if there are no health issues.

Topping each serving bowl with finely sliced (chiffonade) basil, drizzle virgin olive oil, and sprinkle a good parmesan cheese will enhance the first bite so the second is even more inviting. ENJOY!

Italian Shrimp w/ Buffalo Mozzarella 4 servings Ingredients: 1 pound shrimp • 21-25 fully peeled ¼ cup extra virgin olive oil for cooking 1 tablespoon garlic • chopped fine • 2 teaspoons sea salt ¼ teaspoon fresh black pepper 1 tablespoon Chef Paul Prudomme’s Blackened Redfish Seasoning 4 medium vine-ripened tomatoes, rough diced ½ cup chicken stock • 3 tablespoons butter, unsalted 1 pound Buffalo Mozzarella, small cubes

• BE FAMILIAR WITH YOUR ROUTE Be aware of road and weather conditions before you travel, as well as of any areas such as bridges or overpasses that may be particularly hazardous in inclement weather.

Method: In a medium pot turn on heat to high, and add olive and tomatoes Stir and add the garlic and mix well. Season with half the salt, pepper and Chef Paul’s Add chicken stock, and cook hard for 10 minutes. Puree with hand wand or food processor Preheat oven to 350 degrees Bring back to simmer, and add shrimp. Add the rest of the salt, and cook for 5 minutes or until shrimp are done Turn off the heat, and fold in the butter, stirring until all is melted, and combined. Taste to adjust seasoning to meet your needs Add the Buffalo Mozzarella to the sauce pot prior to serving. Stir gently to incorporate Slice French bread 1”– 2” thick which ever you prefer, and place in oven till warmed.

Warm each bowl slightly in the oven, and pour enough Italian Shrimp evenly in each bowl.

Top each serving with fresh basil, parmesan, virgin olive oil Serve Immediately with 2 pieces each of French bread

MORE DEMOCRATS ENTER A RACE THEY WILL NOT WIN By. Jeff Crouere Another day, another Democrat presidential candidate entered the crowded race. U.S. Senator Elizabeth Warren (D-MA) announced her candidacy in her home state of Massachusetts. She becomes the fifth woman to enter the presidential race, joining author and self-help expert Marianne Williamson, U.S. Senator Kamala Harris (D-CA), U.S. Senator Kirsten Gilibrand (D-NY), and U.S. Representative Tulsi Gabbard (D-HI). As of today, these women have competition from U.S. Senator Cory Booker (D-NJ) and former Housing Secretary Julian Castro, the only men in the field.

This field of seven may grow to three dozen or more before it is complete. There will be a historic number of candidates because the Democrats truly hate President Donald Trump and believe he is very likely to lose re-election in 2020. Unfortunately for the Democrats, in light of recent developments, they are engaged in political wishful thinking.

After a very successful State of the Union address Tuesday night, the latest Rasmussen daily tracking poll shows President Donald Trump with an impressive 50% approval rating. Virginia Democrats are not the only ones embroiled in controversy. While she officially launched a presidential campaign, Warren is once again having to defend her inaccurate assertion of being of Native American heritage. The Washington Post discovered that in her application to the Texas State Bar, she claimed to be an “American Indian.” After releasing DNA results that showed her Native American heritage that was possibly as low as 1/1024 percent, Warren has become the subject of justified ridicule.

With Democrats reeling, party leaders are hoping they will receive a lifeline from the Special Counsel. Words to GREAUX by FEBRUARY IN LOUISIANA February can be a little bland in the South Louisiana landscape. Our coldest month of the year isn’t known for anything spectacular. However, if you look closely you’ll notice a few trees stand out amongst the rest. See below for a list of spring flowering trees that can be added to your landscape.

Will Afton • Cherry and cherry-like trees such as Taiwan flowering cherry (Prunus campanulata - pictured below), Kwansan cherry (P. serrulata), and purple leaf plum (P. cerasifera) are all native to Asia.

They are some of the showiest late winter/early spring bloomers in the landscape. The Taiwan cherry blooms rosey=pink flowers in late January/early February depending on temperatures. The Kwansan cherry produces large, heavy rosey-pink blooms in early spring. Despite the name, purple leaf plum is actually another species of cherry. It is known for its dark marron purple that bleaches into a bronze purple later during the summer. All three trees will reach between 15-20ft tall and 10-15ft wide.

• Grancy Graybeard (Chionanthus virginicus) is a small native tree occurring throughout the Gulf coast. It averages about 20ft tall and produces white fringe like flowers starting in March. The Chinese fringe tree (C. retusus) has a similar habit but produces a darker green leaf and a slightly showier flower.

• Parsley hawthorn (Crataegus marshallii) and green hawthorn (C. viridis) are both native trees that occur from Virginia to Florida and all the way west into Texas. They both average around 20ft tall and 15ft wide. Both trees typically bloom in late March. The green hawthorn produces white flowers and the parsley hawthorn produces white to pinkish colored flowers. whereas parsley hawthorn flower are not fragrant but it is reported that green hawthorns produce an unpleasant odor.

• Eastern redbud tree (Cercis canadensis) is one of the most popular native trees grown in the nursery industry. It is known for its beautiful heart shaped leaves and tiny pea-like flowers. The magenta colored blooms appear in late February and March before the foliage. Redbuds are also known for their yellow fall color. The cultivar ‘Forest Pansy’ produces scarlet-purple leaves in the beginning of the season that eventually fade to green in the summer months.

• Deciduous magnolias, commonly referred to as Japanese magnolias, are extremely popular late winter flowering trees. The most popular cultivars are called the ‘Little Girl’ magnolias. ‘The Little Girl’ magnolias were bred from interspecific cross between lily magnolia (Magnolia liliiflora) and star magnolia (M. stellata). Some of the more popular cultivars and their flower colors are ‘Ann’ (deep purple-pink), ‘Susan’ (red-purple, and ‘Jane’ (light pink-purple). All three of these trees have a multi-branched habit and reach heights about 15ft tall/ • Serviceberry trees (Amelanchier arborea) are an understory tree that occurs naturally from Florida to Texas and all the way to Canada. The tree produces an abundance of white flowers in early/late March depending on temperature. It also produces an edible fruit similar to a blueberry. Make for a great wildlife plant.

START is an all volunteer 501 C3 organization made up of members who rescue, foster and care for homeless cats and dogs. Our rescues are fostered in the homes of our STARTCARES@HOTMAIL.COM volunteers until they are ready to be adopted. We are always in need of foster homes, WWW.STARTFOSTERS.COM especially for dogs. We greatly appreciate donations of dog and cat food, as well as funds to spay/neuter and provide veterinary care for the rescued pets. We can be contacted by email. Adult cats and dogs are wonderful pets! Please consider an adult when adopting an animal. They will bond with you and be just as devoted as a kitten or puppy will eventually be. There are several advantages to adopting an adult: 1) They generally are calmer and more attentive to you than a puppy or kitten.

2) They are often already trained.

3) You can know their personality from the beginning. With a six to eight week old pet it is sometimes not obvious.

4) They know what it is like to be abandoned and have to fend for themselves in many cases, so they love you all the more for giving them a home!

Brick is a playful, active and enthusiastic black lab mix. He is 8 years old and just wants a person to call his own. Brick needs a nice, securely fenced yard to run in and lots of inside time too. A single pet home is recommended for Brick.

Handsome, affectionate and playful, Leo is a four year old neutered male tabby in need of a home.

He seems to prefer women over men, but also gets along well with children.

Finley is a ten year old cat found at a convenience store where she had been for a few weeks. No one was looking for her. Finley would be a great companion for someone who is looking for a calm, gentle lap cat.
