Shrimp Tacos

Since hurricane Katrina, Tex-Mex restaurants escalated throughout Louisiana more than ever. It’s not a bad thing, I love good Tex-Mex food, but there is nothing new, nothing authentic, and very little innovation. You may find a restaurant here or there that expands the menu slightly, but Tex-Mex food is standard, familiar, and not fancy.

Its food that is recognized by a large majority, and relatively inexpensive to produce such as tacos, enchiladas, fajitas, refried beans, rice and many other favorites. It would be nice to see a new concept create real Mexican cuisine from the different regions, but authentic Mexican cuisine is laborious and would become more costly for the restaurant, and patron.

Because fish has become costly, and many times not as fresh as I prefer, here is an authentic street style taco using shrimp, lime, onion, and cilantro rather than western ingredients such as cheese, lettuce, tomatoes, and sour cream.

MY Shrimp Taco recipe provides ingredients that are stress-free to acquire and easy to prepare. This is a great recipe to cook at home as a main course during game day or any other. The other components required are corn tortillas, salt, pepper, and olive oil. You will need 2 skillets and a bamboo steamer for softening the tortillas.

You can substitute chicken or fish for this recipe, but the cooking times will differ and freshness is always the most important. ENJOY!

Shrimp Tacos

Makes about 4 servings

Meat Filling: 24 shrimp, size 21-25 per pound • 2 tablespoons olive oil ½ teaspoon sea salt • ¼ teaspoon fresh black pepper 8 6” corn tortillas • ½ red onion, thin julienne ¼ cup cilantro, rough chop • 1 whole lime Method:

• Prepare 2 skillets for this recipe.

• First skillet, heat the olive oil and add the shrimp.

• Second skillet, add 1 cup of water and heat to a rolling boil to steam the tortillas.

• For the shrimp, stir and cook for 2 minutes adding the salt and pepper.

• If the shrimp stick for any reason, simply add 2 tablespoons of water and stir.

• Cook till the shrimp are pink and fully cooked. Set aside and covered to keep hot.

• Place a piece of parchment paper or aluminum foil on the inside of the bamboo steamer, but do not cover all the slots so the steam can penetrate through. Place 4 corn tortillas in the steamer and cover. Place the bamboo steamer resting on the rim of the skillet (high enough over the boiling water). Steam for about 3 minutes or until tortillas become pliable and soft.

• Repeat until all tortillas are cooked. Wrap them tightly once steamed to keep warm and soft.

• Once all are ready, simply lay out the tortillas and add 3 shrimp per taco.

• Sprinkle the chopped cilantro and red onion and squeeze fresh lime juice over each.

• Serve Hot!

Tony’s Takes RAYMOND VOTED OFF THE “I” LAND….AGAIN Area voters selecting a successor to 90th District State Representative Greg Cromer made it abundantly clear that the candidate taking the office would understand that “we” is more important than “me” and would be steeped in the everyday knowledge of that office gained through eight years of basically running it as Cromer’s executive assistant. Thus, Mary Dubuisson is in; John Raymond is out.

The man with the fastest heave-ho time in the 25-year history of Survivor stuck around a bit longer in this political race by conducting what was one of the most scurrilous political campaigns in recent memory. Raymond and his daughter played fast and loose with language and attitudes meant to mask a serious lack of local support for this self-acclaimed part-time pastor with no position income from his church. Fortunately, the majority of district voters don’t regularly partake of Kool-Aid and rejected Raymond’s distorted print and rhetoric.

For a man who was dismissive of attorneys in his early campaign (two opposing candidates were attorneys), Raymond has taken a 180 degree turn, employing his own attorney to handle the lawsuits coming his way. More are certain to follow, as Raymond continues to ignore calls for payment made by an honorable and legitimate Christian business more than five years ago that helped fund his then-floundering Christian radio station’s ability to go on the air. And perhaps he’ll have problems with another company which saved his bacon temporarily last year.

That company conducted a three-day on-the-air fundraiser for the station, netting nearly $6,000 which Raymond used to stave off, temporarily, demands to pay something to his biggest creditor.

The creditor said Raymond had not paid a single payment in more than four years and has not made good on repeated promises since the fundraiser to pay anything on the nearly $200,000 debt.

The man known by some as Pastor John will be remembered by others as the man who constantly wore Democratic Party Blue in his ultra-conservative political ads. Ironic, don’t you think, for a man who painted his opponent as a Democrat because she wasn’t in lockstep with his thinking. By the way, John, when did President Trump announce his “spiritual awakening” of America? The Trump supporters I talked to don’t remember any such message. Not that Trump would oppose such a move, done in a Christian and Western civilization manner, but part of the problem the President has is with people putting words into his mouth that he hasn’t spoken.

Et tu, John?

Well, at least Pastor John did accomplish one thing in this race. He wasn’t voted off the island on the first go-round this time as he was on the Survivor: Thailand episode, where fellow contestants handed Raymond his pink slip after only three days. Ultimately, informed citizens can thank the three voters in the primary who chose Raymond over those lawyers he was so dismissive of, squeaking by with the narrowest of margins, finding himself facing the experience and character of Mary Dubuisson and her overwhelming number of actual, local conservative political endorsements. It is a fact, John, that your Democratic Party competitor received as many endorsements from conservative Republican groups as you did…..none.

It seems the island community was not ready to hand Raymond a state office and it showed.

Pastor John still may be carrying a torch for political office after this last runoff election, but for now that torch has been snuffed out.

CARING FOR CHRISTMAS CACTI

Some of the most commonly gifted plants at the end of the year are holiday cacti. Even if the name is not familiar, most people recognize the characteristic look of holiday cacti. They are seen all throughout the houseplant sections of garden centers and home improvement stores during the holiday season. Perhaps you have been given one as a gift or given one to someone else. Keep reading to learn more about them how to care for these easy to grow plants.

All cacti are members of the family Cactaceae, which contain about 127 different genera and over 1,750 different species. The vast group can be broken down into two different types. When most people think of cacti they think of the desert dwelling plants loaded with spines. These cacti are correctly termed “desert cacti”.

However, there is a second group of cacti that grow on trees in tropical and sub-tropical forests.

“Forest cacti” are known as epiphytes, which are plants that grow on other plants for support but are not parasitic. Because of this nature, forest cacti prefer partial shade locations. Holiday cacti are member of the forest cacti group. Both groups are native to the Americas.

Holiday cacti include both the Christmas cactus (Schlumbergera truncata) and the Easter cactus (S. gaertnerii). The orchid cactus (Epiphyllum ackermanii) is also grouped together with the holiday cacti. To distinguish Christmas cacti from Easter cacti, look at the flat stems that make up the shoots. Most of us may call these flattened stem segments leaves, but botanically speaking, cacti do not have leaves. The modified stems of cacti are filled with chlorophyll, hence the green color. They act just like the leaves in other plants. The flattened stem segments of Christmas cacti have a distinctive toothed-edge whereas Easter cacti exhibit a scalloped edge.

The two virtually look the same except for time of year when they flower.

To properly care for a Christmas cacti it is important to understand their native environment.

These plants originated from the jungle region of the western hemisphere. Like previously stated they grew within the canopy of large trees. Do not place your cacti in an area that receives a lot of direct sunlight. Choose a location that receives bright but filtered light. An area with an eastern or southern facing window should work well. Watering these cacti will be a little different that watering a desert type cactus. Christmas cacti will need more water, but be careful not to keep the soil wet. Wet soils will contribute to root rot and poor plant health. Instead, irrigate the plant until water drains out the bottom of the pot. Check the soil from time to time until you feel it completely dry from the tip of your finger to the first knuckle. This will indicate when to water the plant again. Use a water soluble fertilizer in the spring and summer to provide essential plant nutrients. A few insect problems may arise during the growing season.

Applications of horticultural oil will provide adequate control.

One of the biggest issues facing Christmas cacti is second and subsequent year blooming.

The plants available for sale at plant nurseries come out of commercial greenhouses and are forced to bloom heavy at the holiday season. The new owner of a Christmas cactus will need to do a few things to ensure blooms in the following season. The typically flowering season for Christmas cacti is from November to January. Once flowering has finished let the plant rest.

Keep it cool and back off on watering. After about 8 weeks you can start treating it like normal, providing water when the soil becomes dry. During the summer months you can move the plant outside to a filtered light location. Early fall is a crucial time for flower bud production. Back off on watering and keep it cool. You might even want to move the plant to a cooler location. When flower bunds form you can return to regular watering practices. Be careful not to overwater during this time. Stress conditions may result in aborted flowers. The plant should start blooming again late fall through the first of the year. Enjoy and show it off for all to see. Then start the process over again Merry Christmas and Happy New Year!
