Punched Campfire Filet Mignon

Recently, I was up in the great north woods of New Hampshire, and it was just about dinner time. My buddy and I purchased a couple of thick filet mignons, and the plan was to cook both steaks over the campfire. I was not going to use a grill over the fire, but rather a maple wood plank that came two to a pack and one plank would be used for this dish. The wood planks provide a cooking surface, but it also gives a smoky taste to the meat. You can use any wood planks sold, mesquite, cherry, apple, hickory or maple.

My Punched Campfire Filet Mignon was taking both steaks, and actually punching them straight down a few times with my fist on a cutting board. I must say it was a minor stress reliever, but my friend was more confused than anything by my actions, and by all rights he should be. I had a plan, and didn’t fill him in prior to my Rocky Balboa style meat beating. Punching a filet mignon is not a conventional way of tenderizing meat, but it worked better than both of us ever thought. Punching each filet broke down the fibers just enough, and made each filet a bit thinner; about 1 inch rather than 3 inches. This provided a faster cooking time working a fiery campfire.

The wood plank is porous, and so is the meat. This allowed each steak to stick naturally to the plank without sliding off. This will be crucial when cooking, and moving the plank over the fire.

Once the campfire is hot by using only wood to keep it going, it’s time to prepare the steaks.

Sprinkle each with salt and pepper then rub a little olive oil on both sides. The punched side faces up. Place on the plank, and have a pair of tongs with you for moving the plank around the fire. You want the wood to burn around the edges and bottom lightly so do not soak the plank in water as the directions state. Fast cooking is the objective. Once you find a level spot on the fire, leave it for a couple of minutes, and watch it. You want the plank and steak to get direct flame.

The fire will start coming around the ends of the plank, and over the top like a broiler. You will not need to flip this steak on the plank. Direct heat from the campfire is what you want to get your steaks cooking.

Move the wood plank to fit the position so the entire steak or steaks are being cooked evenly.

Once you see blood begin to appear on the surface of the steak that is a leading indication that your steak is medium-rare. Once you see this happen to both steaks evenly, pull the plank off the fire, and let the steaks rest so you can prepare the rest of your meal.

On the stove add 1 tablespoon unsalted butter, and 2 tablespoons of extra virgin olive oil to a skillet. Once the butter melts, but not burn, gently remove the steaks from the plank, and place both steaks in the hot oil plank side meat first for 30 seconds and flip for another 30 seconds.

Remove from heat, and allow your steaks to rest for 3 minutes. Serve the steaks plank side meat up. Tenderloins are known for having little flavor since there is not much marble and fat. That’s why a sauce usually accompanies a filet mignon in a restaurant. Add1/4 cup beef stock to the skillet, and scrape the pan for flavor for about 30 seconds with the pan on high heat. Pour the sauce on top of each steak. ENJOY!

Ingredients: (2) 8 ounce filet mignon • 1 tablespoon unsalted butter 3 tablespoons extra virgin olive oil • 1 teaspoon sea salt ½ teaspoon fresh black pepper • 1 hardwood plank for cooking ¼ cup beef stock from the supermarket Method: For the steaks, follow the directions that are written in the article. Please do not drop your plank with the steaks in the fire. That would not be good. You can cook the plank steaks on your grill, but it will take longer depending on the power of your grill, gas or charcoal. A blazing fire will always produce extensive heat. That’s the uniqueness of this dish having smoky Punched Campfire Filet Mignon. Remember, when the blood comes to the surface of your steak that is medium rare. Any cooking time thereafter your steak will becomes medium to medium-well or well done. You are looking for a perfect medium.

It was expected to be an 8 and 4 year, with losses to Georgia and Miami and possibly even Mississippi State as well as Alabama. Florida was up in the air.

The season should wind up 10 and 2 if the Tigers take care of business in College Station this weekend against Texas A&M. When you consider the stupidity of two former starters (Taylor and Ingram)who let violence end their LSU (and perhaps professional) careers and the season-ending injury of a third starter in the first game of the season, plus the transfer of two quarterbacks weeks before the season began, it wasn’t a bad body of work. It’s not the body of work, however, of a team who has a serious chance of reaching parity with Alabama.

Louisiana leads the country in producing top talent per capita and is one of the top four states outright in producing this talent along with California, Florida and Texas. ‘Bama can’t keep either offensive or defensive coordinators for very long. But the constant in Tuscaloosa is the culture, the coach and the Process. LSU doesn’t have any of this. What the Tigers have is a concession to younger, less affluent fans and pure tailgaters. They market in-stadium like minor leaguers and their promotional material in and around the stadium is markedly dated and worn or nonexistent. The Tigers pre-game routine is exactly that: tired, well-traveled highlight clips as old as the Eisenhower years, the same hackneyed Golden Band from Tigerland formations, really useless cheerleading efforts and the misuse of stadium electronics and timeouts that bore or turn off most fans over the age of 40.

The Tigers have an exciting new section called the Skyline Club that gets zero publicity. They introduced, in theory, at least a dozen new culinary offerings that got almost no publicity, no public relations, no point of purchase visuals and probably little real introduction into the stadium. Restroom care started off okay but then deteriorated into the usual “out of towels and soap” routine of the past 25 years.

It’s supposed to be fun to go to an LSU football game. But unless you are young, rather crude and don’t mind the possible encroachment of less seating area for your dollar, along with the steeply escalating prices of tickets, depending on the game, it’s not. In fact, LSU dropped its policy of no outside stadium seats allowed in Tiger Stadium a while back, yet the average fan never knew about it. Talk about a sweetheart deal for some friend of the Board whose company made out like a bandit for years. No more paying $60 for a fixed position seat that seems to be installed closer and closer each year and until recently, were shopworn and dirty.

Years ago, we spoke of the need for this school to reach out and make changes. It’s reached out but hasn’t grasped anything. There’s supposed to be a year-round fan-based advisory committee formed to help the school take care of things like this. When will that happen?

It’s just like the eleven advisors Coach Orgeron had this year to help him evaluate the visiting teams. Worked real well for the Crimson Tide preparation, didn’t it?

At least Saint fans had the entertainment value of the Keystone Kops routine for years when the team began its journey in the 1960’s and now they have the respect garnered from having the second-best combination of coach and quarterback in the league today (Belichick and Brady being the standard). No disrespect to Coach O, but the Tigers just can’t get there unless he has a lot more quality help from the higher-ups. He’s trying to live his dream; the long supporting fans deserve no less. However, if this team doesn’t show marked improvement within two years, I’m afraid former Tiger Marcus Spears evaluation of his former team will remain accurate. Either the Tigers get the cojones to face the future with some passion and purpose or Saturday nights at Tiger Stadium will continue to deteriorate and the chances of beating Alabama? NEVER!! Or, in other words, chances of rain…..or a meaningful LSU Tiger reign……

OUR AREA NEEDS A RENAISSANCE LADY LIKE MARY DUBUISSON For the runoff election looming in early December, its important that everyone continues to go to the polls and pick the survivors from the general election earlier this month. No one survived more tenuously than John Raymond, he of church and island fame, who won a runoff post by three votes. That’s the difference between two people changing their vote. Sean Morrison, the lone Democrat in the race, led most of the evening in second place to Mary Dubuisson, which must have created much consternation in the Reverend Raymond camp. A less demonic Democrat may not exist in politics these days than Morrison and Morrison, while requesting a recount, accepted the verdict professionally and calmly. We haven’t seen the last of Morrison, I believe; a politician more cut out from the J. Bennett Johnson cloth than that of the Nancy Pelosi types.

Back to the issue at hand. Mrs. Dubuisson is the type of person with the skill set and temperament to handle just about anything. Her professional, cultural and social life has been exemplary and she has quietly been involved in keeping the various community wheels turning efficiently. She had the advantage of having worked for the outgoing state representative, Greg Cromer, who held office in the 90th Legislative district. So she has the contacts and relationships to continue to represent our area effectively and diligently for years to come. She garners consensus; she doesn’t preach. And that’s important in an arena where hot air comes cheap and thoughtful discourse comes at a premium. I’ve personally dealt with all four candidates for this office and felt like Dubiusson was the strongest in the field. We certainly could have faced a much more watered down group. Like the lady from Norwood in East Feliciana Parish who showed us earlier this month in her surprising general election second place showing and runoff candidacy next month for the Secretary of State position, today it’s about the sincerity of the message, a provable track record in the generalities of the office you seek and a humble helping of humility that helps get you across the finish line first.

Mary Dubuisson deserves that finish.

One of the most memorable things about this time of year are the smells that fill the air. Fresh cut Christmas trees and hand woven garland are one of those amazing smells and the Friday after Thanksgiving is one of the busiest times of the year for Christmas tree retailers. Garden centers and nurseries that stay open year around will most likely bring in fresh cut Christmas trees for the holiday season.

Seasonal vendors set up shop on busy street corners to let everyone see their stock of Douglas fir, Noble fir and Fraser fir trees for sale.

So what exactly is the best type of tree to get? Well, believe it or not, if you properly care for the tree then you can pick out a tree based on its color, texture, or shape. ‘Frazer Fir’ and ‘Douglas Fir’ trees have a nice blue green color to their needles and when crushed have a pleasant flavor. ‘Noble Fir’ is as noble as you thought it was. These trees have gorgeous shapes and short stiff branches. This may come in handy if you have heavier ornaments to hang on the tree. ‘Colorado Blue Spruce’ trees have excellent pyramidal form and beautiful blue-grey needles. ‘Scotch Pine’ trees are bright green and are often sold as a value priced option.

The first step in properly caring for a recently harvested Christmas tree, so that it retains most of its needles and color throughout the season, is by making a fresh cut. Once severed from their root system, the trees lose their ability to effectively take up water and nutrients.

Remove ½ inch of the bottom of the tree using a sharp saw or chain saw. This cut is commonly referred to as a “fresh cut” and many businesses may offer to do this for you at no extra charge. This should be done right before you set the tree up in its location. If you have this done on location, then make sure you go home and immediately bring the tree inside for setup. Once adjusted to stand up straight and look good from every direction add water to the bowl and check it often in order to keep it full. Don’t worry with nutrient solutions, preservers and other type products. Just keep it full with plain water and you won’t have to worry about sweeping up many needles.
