Tony’s Take One of the greatest World Series ended in Cleveland resulting in a multi-generational frustration thrown to the sideline. The Chicago Cubs used superior starting pitching, better defense and a more flexible roster to come back from an improbable 3 games to one deficit to beat the Cleveland Indians on the road at Progressive Park. Two of the top four managers in baseball traded strategies for more than a week but the deeper Cubbies prevailed with a final 9 to 8 win on Wednesday night.

The Cubs were favored to do just that. Thus they ended a 108-year old Series winning drought and a 71-year old absence from the Series, which they last lost in 1945, right after the end of World War II. Tremendous defense was the big difference…and the awakening of the Chicago bats, making the last two games ones to remember for their excitement. Play-by-play announcer Joe Buck is more passionate than his famous father, Jack…and sometimes more tedious. But his command of the language of baseball along with former pitcher and color analyst John Smoltz made the entire Series entertaining and informative to a degree not witnessed in prior series. It’s apparent Buck loves the game and his knowledge of its history and records is Bob Costas-like. He and Smoltz almost made the average listener feel they could call pitches and make managerial moves. No trite phrases, no tired cliches’…just a continuous flow of informative dialogue without the cutesy banter so often found in today’s media booths. More Vin Scully-inspired announcing which was more like a conversation than play-by-play. it was refreshing.

So was this Series. Lots of reviewable plays, lots of tremendous defensive gems, dramatic home runs, trend-setting use of both bullpens, especially Cleveland’s. Unlike the Samsung 7 and the presidential election, this series did not disappoint. It was all it could be and except for the walk-off home run by Pirate Hall of Fame second baseman Bill Mazeroski in 1960 against the Yankees in old Forbes Field, few Series has been this exciting and few have ended so dramatically. And certainly none as historic. In baseball or any sport, at any level, in any country in the world. Old school baseball, using old school players and new school managing. No prima donnas, no shoo-in Hall of Famers, just a ton of a mix of young and experienced players. An instant classic, like last year’s Cavaliers/Warriors NBA Championship or the New England Patriots/Seattle Seahawks Super Bowl from two years ago. Both teams scored 27 runs. The seventh game was the first seventh game World Series contest to go into extra innings, following a 17-minute rain delay to boot. And the Cubs gave their props to the weatherman for providing that hiatus that gave manager Joe Madden time to right a teetering Cubs ship late in the game and produce the dramatic results. As a result, the biggest sports crowd in the history of the world - 5 and a half million Cub fans attended the team’s parade last week. Congratulations, Cubbies - with the most loyal U.S. fans in the professional sports world, even more so than Saints fans, and that’s saying a lot.

Not that many attended the latest Alabama/LSU contest Saturday night, but lawdy, they were loud. The first three plays of the game had to register 135-140 on a decibel scale, comparable to the Legion of Boom sound in Seattle’s football stadium. The crowd was just under capacity and the weather just perfect for this annual slugfest. Nearly 102,000 fans watched as neither team could score for the first three quarters. It was the longest scoring drought during the first three quarters for Alabama in nine years and the first time for Nick Saban. Saban once again showed why great recruiting for need, combined with a 24/7 mantra of consistency and discipline leads to great things. Such as another likely national championship, this one a probable revenge game against Ohio State or perhaps Michigan. LSU looked impotent on offense and some of the game clock management reminded us of the great Les Miles. So did the offense. The statistics for this game were eerily similar to those from the national championship game following the 2011 season. It’s not like the Tigers didn’t prepare: they didn’t have the scheme offensively to penetrate perhaps the greatest front seven in college football history. And so the running game was nonexistent while the passing game deteriorated in the fourth quarter. However, credit Coach Ed Orgeron and his staff, especially Defensive Coordinator David Aranda, for creating a plan to frustrate and bottle up the Tide for more than 45 minutes. The main difference was that ‘Bama’s freshman quarterback had more plays with the opportunity to read the defense than did LSU’s quarterback. And he was the more athletic quarterback. Alabama’s Jalen Hurts had a great fourth quarter but little else as the Tiger defense constantly stopped his read option and forced him to make some true freshman throws. And credit Saban and Lane Kiffin for keeping their offensive plan in place and finally wearing down a valiant LSU defense. Finally, credit the athleticism and strength of Hurts, who used his few opportunities where he was protected and not harassed, to move his team down the field.

LSU has to find athletic linemen on both lines Not 356 pound blocks of underachieving, undisciplined lard butts like Trevonte Valentine, who most likely won’t be a Tiger after this year, but more like 293-pound Jonathan Allen, the Alabama defensive lineman who is a top 5 Heisman Trophy candidate. And they can’t continue to lose players like Tim Williams from University High in Baton Rouge to Alabama. Aranda is the Tigers’ best hope in attracting this type of athlete. He had them at Wisconsin and the high school talent pool in Louisiana is more favorable to finding these types of players.

We have to credit Coach Ed Orgeron with telling the truth and being transparent. It’s the first time since Bill Arnsbarger that the Tigers have had such a coach. Orgeron may not be here next year because the Tigers really need the type of mind that creates mismatches and options along with discipline and consistency. Ed is a huge improvement over Miles in the veracity and communications departments, along with discipline, accountabiiity and passion. But in the long run, Coach Orgeron may not have the skills necessary to finally put LSU on a consistently equal level with Alabama. That coach may not exist outside of Urban Meyer. But Meyer isn’t going anywhere. So that leaves under-experienced Tom Herman at Houston, Chris Peterson of Washington and Gary Patterson of TCU as my favorites to coach the Tigers. Forget Bobby Petrino, Jimbo Fisher, Art Briles, Lane Kiffin or Larry Fedora. The Red Bull-swigging Orgeron has provided a vastly needed dose of stability for the Tigers. But unfortunately, love for the Cajun coach may not make him the man with the plan to stare down the Tide and produce parity. Or eliminate the “blink first” mentality that ‘Bama creates, forcing other teams into errors and ultimately, losses. We need to find that driven man who will not stop with mere winning but find only satisfaction in a complete execution of a plan of discipline. Anything less is almost as bad as Les. If he’s not out there, keep Orgeron until he’s found. But if LSU Athletic Director Joe Alleva is the only one doing the search, then that’s whistling past the graveyard for Tiger fans. Find someone with the right package or leave Orgeron in place. In parting, I share the thoughts of an Alabama fan whom I met Saturday night after the game. He observed that Alabama has given as much to Nick Saban as Nick Saban has given to Alabama. That’s a profound and obvious thought and it’s true. LSU can certainly give its next head coach as much as he gives the school, in the way of tradition and spirit. It needs to be a partnership. Saban has it at Alabama despite his brusque demeanor. The Tigers desperately need it in Baton Rouge, where Louisiana’s natural resource of outstanding young football players need to be melded with a coach who can challenge their ability to perform efficiently, with discipline and with explosiveness and intelligence. Do that and “Roll Tide” will morph into “Fold Tide” on the first Saturday in November more often than not.

PLANT DIANTHUS

As the cool weather arrives so does our color selections for the new season. It’s always about this time that we start to think about what will replace those old, worn-out periwinkles in the front bed by the window.

Because as gardeners we know that with the new season, a whole new pallet of plants and flowers becomes available to us. One of the more well-known choices, but by no means a poor selection, is dianthus.

WILL AFTON Some of us may remember handing out carnations to our significant others back in school during Valentine’s Day. Well, the carnation is a type of dianthus and you can grow some in your backyard with ease. The ‘Telstar’ series of dianthus is probably the most wellknown by far and stay nice and short (about 8-10 inches tall). The flower colors come in a wide variety of pink, white and purple. ‘Telstar’ dianthus makes for a very low ground cover when planted in masses or border style plant when planted in lines. ‘Amazon’ dianthus is good choice for those who need a taller plant. They get get upwards of 2 feet and make for good choices in the back of flowerbeds. Back in the fall of 2010 the LSU AgCenter named the ‘Amazon’ series of dianthus a Louisiana Super Plant because of its dependability across all of Louisiana. ‘Neon Cherry’ and ‘Neon Purple’ are excellent single color choices and ‘Rose Magic’ is a multicolor option that starts out white and turns pink then rose.

To seed or not to seed ryegrass in the fall As our warm season turfgrasses (st augustinegrass, centipedegrass, zoysiagrass, and bermudagrass) start to enter their dormant state, many South Louisiana gardeners prefer to over seed their lawns with ryegrass in order to keep a nice carpet of green all winter long. I get asked all the time about whether or not over seeding with ryegrass is a recommended practice. The answer is not as easy as you would think. The major disadvantage of intermixing a cool season and a warm season grass is competition in the spring once the warm season grass comes out of dormancy.

Cajun Asian Fried Shrimp Burger Makes about 4 servings Ingredients:

We

are always searching for new and exciting dishes to sample or create to make meals more fun and interesting. I had never heard of a shrimp burger until I watched the movie “Forrest Gump” and his friend Bubba spoke of shrimp burgers. That inspired me to try my own, based on a Thai dish called Tord Mun Goong (Fried Shrimp Patty). The Thai patty is not served as a sandwich, but not long ago, I fried the Thai version for a party and decided to make a sandwich out of one. Voila, my Cajun Asian Fried Shrimp Burger was born.

With a recipe calling for garlic, oyster sauce, soy sauce, panko bread crumbs and cilantro stems, this is no ordinary shrimp burger. Rather than trimming with western ingredients like lettuce, pickles and tomatoes, I used julienned carrots, ribbons of thinly sliced cucumber and pickled red onions to create a nice balance of crunchy and cooling veggies. Another Asian twist is using my Cajun Asian sauce with mayonnaise in equal portions to create an aioli, a mayonnaise based sauce with garlic.

MY Cajun Asian Shrimp Burger will have people saying, “Now that’s a shrimp burger!”

I was inspired by the Vietnamese Banh Mi style sandwich that is so trendy today. I used

the original Thai Tord Mun Goong recipe and blended it with a little touch of Vietnam and western bread, a hamburger bun.

When I was in Hanoi, Vietnam years ago, I had an original Banh Mi sandwich that was being made right in the streets by a roadside vendor.

This Vietnamese lady worked beside her oven where she warmed small freshly baked French bread. She then added pork pate, a fresh scrambled egg, cilantro, julienned carrots, cucumber and mild chilies. A shop across the street sold the best French chicory coffee; it had a strong bitter edge that reminded me of New Orleans. I was in heaven.

This sandwich is fun and all the ingredients are found in western supermarkets. I thought I would try new flavors that are unique and trendy.

When deep frying use only fresh oil. I use canola oil; it works really well and is versatile for other foods like salads. Do not let the oil smoke. Use an oil thermometer when deep frying to know the exact temperature. Fresh oil will not only make your shrimp burgers taste better, but it will fry more evenly and provide you a crispy finished product that you will simply ENJOY!

1 pound shrimp, minced 1 tablespoon garlic, minced 1 egg 1 tablespoon sugar 1 tablespoon oyster sauce 1 tablespoon light soy sauce ½ teaspoon white pepper 2 tablespoons sesame oil 1 tablespoon cilantro stems, chopped fine ¼ cup panko bread crumbs for mix 1 cup panko bread crumbs for crust 4 cups canola oil for deep frying Sandwich Ingredients: Sauce: ½ cup Cajun Asian Sweet Chili BBQ Sauce and ½ cup mayonnaise mixed together in a small mixing bowl.

2 carrots, peeled and julienned 1 cucumber, peeled and sliced into thin ribbons Pickled Red Onion: 1 red onion, thinly sliced and soaked in ½ cup white vinegar in a mixing bowl and let stand for at least 2 hours.

12 cilantro leaves and stems, about 5 inches long 4 smaller hamburger buns

Methods 1. Place all ingredients together except the panko bread crumbs in a medium size mixing bowl.

2. Mix in a circle with your hand until the mixture becomes sticky.

3. Add ¼ cup panko bread crumbs and continue mixing in a circle till mixture becomes even stickier.

4. Scoop the shrimp mixture out with your hand and toss it back into the bowl with light force. Toss about 5 times, causing the glutens to tighten the mixture before making patties.

5. Make each burger at least ¾ inch thick.

6. Heat the oil in a medium pot or wok to 325 degrees. Do not let the oil smoke.

7. Once you’ve shaped your burger, use the remaining panko bread crumbs to coat each burger. Shake off excess crumbs and deep fry till golden brown.

Do not overcrowd the pot. Fry in small batches and flip to cook both sides.

8. When done, place on parchment paper or paper towel to absorb any oil.

9. Make your sandwich by spreading the sauce on the bun, place the shrimp burger and top with the veggies. ENJOY!

I Am Dreaming of a Sweet Christmas… by: Anna Mauldin Every since I was a little girl my favorite time of the year was December. Not only Christmas, but the whole month. Time when everything slows down, family gets together and you enjoy nice cold weather with cup of hot chocolate snuggled under warm blanket.

However the main reason why I am anxious for this season is food. This time of the year our tables bend under all delicious foods and treats and you feel like you there is some kind of food anarchy with no limitations of what and how much you can eat . The preparations start in early December in my family making traditional Slovakian Christmas cookies ,fancy chocolates and desserts. I would like you to give some good tips from my own experience I gained in years, but also introduce you to some traditional Slovakian Christmas treats.

Always plan ahead of time and decide what you want to make for holidays long before you go grocery shopping. Trust me , your this season is really going to be full of joy not only for your family , but also for you. Let’s face it , this time of the year can also be little stressful , if you do not organize your time wisely. When you already have your winner recipes, make a grocery shopping list with all the ingredients you need and places where you can buy them. I personally go to different stores to get the best quality and price. As far as ingredients , really go for the best. I always use fresh , organic ingredients and if I can prepare something at home I do not waste my money for ,, ready to use , just add water ‘’mixes. If you want to be a star this year , from scratch is must do.

Start with treats that require time to “rest’’ , like ginger cookies for example. I found out that longer your dough rests the better cookies will taste. Also chop all your nuts , cut your chocolate and dry your fruit in advance. Always start with dry cookies which have the longest shelf life . You want to do all your cramy desserts at last. My husband would tell you I am crazy this time of the year. I make more than ten different kinds of Christmas cookies , all kinds of pies and fancy dessert , not talking about my favorite , chocolate truffles and bon-bons.

Of course we would never be able to eat that all ourselves so we share with friends and family, because as people say sharing is caring and love really does go through your stomach, especially nowadays something made with love from scratch is very rare and appreciated.

Do not worry to experiment and try out new recipes and different techniques, but give yourself enough time because things may not go the same way as with a recipe being in your family for generations , making it every year.

Involve your kids! There is nothing better than spending time with your kids decorating and getting ready for this holidays so special for them. I means a lot for kids , if they can be a part of the ,,whole thing’’ , giving them feeling of importance and involvement . You can give them piece of your dough letting them use their own fantasy , creating their own masterpieces. It is also great fro you because giving your child activity gives you more time to focus on other things that you as a supermom have to have done. As kids we were always involved and I can not thank my mom enough for that. Since I am making these for so long it really is relaxing holiday fun for me even now , when I make tons for sale.

I would like to share a recipe of my favorite chocolate – cinnamon cookies , that are guaranteed on every Christmas table in Slovakia. These are also known as ,,Bear Paws’’ Ingredients: 2 sticks + 4 tablespoons softened organic unsalted butter 2 1/4 cups raw cane grounded sugar 3 cups all-purpose unbleached , unbromated flour 1/4 teaspoon organic cinnamon 1/8 teaspoon ground organic vanilla bean 1/2 cup organic cocoa powder 3/4 cup ground organic walnuts 8 ounces good-quality chocolate or powdered sugar (optional)

1. Preheat oven to 350 degrees. Thoroughly coat 3 bear paw molds or madeleine pans (or make them in batches) with cooking spray. In a large bowl, cream together butter and sugar.

In a separate bowl, mix together flour, cinnamon, vanilla, cocoa powder, and nuts. Add to butter-sugar mixture, mixing thoroughly.

2. Press dough into prepared pans and bake for about 20 minutes or until a toothpick tests clean and the edges are turning slightly brown. Cool completely.

3. If you want you can melt some good quality chocolate and dip tip of the cookie in chocolate or sprinkle all of them with powdered sugar. see

This can provide early season stress and may contribute to poor health. I would not recommend over seeding a stressed out lawn. I like to promote what I call “over seeding with a purpose” or just having a reason other than just because. Some people like to over seed to keep the lawn attractive for family events and other outdoor activities.

Some people like to spread some ryegrass seed over an area where digging had occurred to prevent erosion. Vegetable gardeners might even want to over seed the garden with ryegrass and use it as a cover crop if they want to tend to a fall garden. If done with purpose, over seeding can be extremely beneficial in the landscape.

Most people will typically use ryegrass to over seed the lawn. Ryegrass is a popular cool season grass that will grow during the fall, winter, and early spring. You will find annual and perennial varieties for sale at the garden centers and feed stores this time of year. This usually refers to the plants life cycle but in the deep south both annual and perennial varieties will not make it through the summer time heat. The biggest difference between the two is that annual ryegrass will grow tall and has a lighter green color versus perennial ryegrass that grows shorter and has a deeper green color. Another difference between the two is price.

Perennial ryegrass usually cost twice as much as annual varieties.

The first step in the process to over seed the lawn begins with mowing. You want to make a final pass with the lawn mower, cutting at the same height as would during the regular growing season. Apply seed at a rate of 5-10lbs per 1000ft using a broadcast or drop spreader. Go with the higher rate for a dense planting. Ryegrass does not spread like our warm season grasses. It is described as a clump forming grass. Once you a have spread the seed you will need to apply a consistent amount of irrigation. Once the seedlings reach 1in tall you can adjust back to normal watering practices. You can add a fertilizer once your warm season grass gone completely dormant. This will require careful observation. Use 1lbs of Nitrogen for every 1000ft2.

This would equate to either 7.5 lbs of 13-13-13 or 12.5 lbs of 8-8-8 fertilizer. Continue with regular mowing as needed throughout the remainder of the season.

Sweet Christmas (continued from pg. 8) Another great Christmas recipe is Vianocka or braided Christmas bread , which is sweet butter pastry with raisins . In fact, the name vianoka is derived from the Slovak word for Christmas, vianoce.

Dissolve the yeast in the milk and let stand for 5 minutes. Add 1 cup flour and 2 tablespoons of the sugar; cover and let rest until light and foamy. Meanwhile, cover the raisins in dark rum and let stand (can be done a day ahead).

In a large bowl, beat the butter with all the remaining sugar until soft and fluffy; gradually beat in two eggs and one yolk. Add the salt and the lemon rind. To this add the sponge and enough flour to make an elastic dough (it will be a little sticky). Gather dough in a ball, cover the bowl and put in a warm place to rise, about 45 minutes. It should be soft and no longer very elastic when its ready.

Preheat oven to 350º. Strain the raisins and toss them in a shallow bowl of flour until coated. Take out the dough from its rising bowl (it will deflate some, dont worry about that), knead in the raisins and more flour to make it un-sticky; knead a few times.

Divide into nine equal parts. Put some parchment paper on a baking sheet and place it with the short side in front of you. Roll out each chunk of dough into a “snake” about 12 inches long; start with just four. Now take the four snakes and lay them lengthwise on the sheet. Pinch their top ends together and start braiding. (If you know how to make a four-strand braid, great; if not, its really easy, try it with some strings first if youre not sure. What you do is this: Take the leftmost snake and lay it over the one to the right, then under the next one and again over the one at the end. Repeat with the snake that is now the leftmost strand: over, under, and over the rightmost strand. Repeat until you are at the end.) Pinch the ends together and tuck under. Dont worry if its not perfectly even, and make sure to push back any raisins that might pop out.

With a French pastry pin or the side of your palm make a deep depression (a sort of ditch) along the middle of the finished braid thats where the next braid will go. Take the next three snakes, pinch their ends together and tuck under the top of the four-strand braid. Now braid the three strands, pinch their bottom ends together again and tuck under. Again, make a ditch along the middle for the top braid. Make a two-strand braid of the final two snakes and place them on top of the other two braids, again tucking the ends under. You can secure the braids in place by a few toothpicks, which can be easily removed after baking. (The top braid sometimes likes to slide off to one side.)

Beat the remaining egg with a bit of milk to make a glaze. Brush the entire surface of the vianocka with the glaze and dot with the slivered almonds (personally I not so much dot as cover the vianocka with the almonds, they are delicious as they toast); make them stick by pressing on them a little bit. Bake in the middle of the oven at 350º for about 50-60 minutes. Caution! The vianocka will rise in the oven and expand by roughly half of its original volume. When done, the surface should be golden-brown; if you are getting the feeling that the almonds are too toasted while the center is not done yet (test with a skewer), cover the surface with aluminum foil towards the end of baking.

Cool on a wire rack. When cool, serve fairly thin slices (about half an inch) sprinkled with confectioners sugar. Its traditionally eaten for breakfast with tea or coffee, as well as with afternoon tea. Turn on your holiday music, relax and enjoy sweet sweet Christmas time..

Ingredients : 5 to 6 cups all-purpose flour 1 cup lukewarm milk, plus a tiny bit for glaze 1 ½ package (not more) active dry yeast ½ lb organic raisins (or less or more, depending on your taste; I use a mixture of dark and golden raisins) dark rum ½ lb organic blanched slivered almonds 1 cup unsweetened organic butter ½ cup granulated raw cane sugar 3 organic eggs plus 1 yolk ½ teaspoon Hymalayan salt ½ teaspoon grated organic lemon rind (optional)
