ESPN”S PROFESSIONAL SPORTS FRANCHISE RANKINGS SHOW HOW FAR THE 49ERS HAVE FALLEN. ESPN, The Magazine, has been ranking sports franchises by their relationship, trust and value to their home fans for the past 14 years. Three years ago, the San Francisco 49ers ranked 27th, in the top 25% of all franchises in the United States and Canada in the NFL, Major League Baseball, NBA and NHL. In 2015, they dropped to 103rd and in 2016 hit rock bottom at #122. A storied franchise does not disintegrate that quickly without good cause and the good cause is the total inability of Jed York to run a professional sports organization. When Levis Stadium opened three years ago, there were problems with the turf and parking, traffic and social media and what can only be termed the criminal element of so-called sports fans. The team has abandoned paper tickets in favor of everything electronic. They charge their season ticket and license holders fees to view their museum…which is the only place where 49er greatness lives today. They’ve created an upscale, gentrified edifice where thousands of what the team terms “The 49er Faithful” have been financially shut out by overcharging for everything. The 49ers complete sellout to Siiicon Valley has alienated thousands more fans, which can easily be viewed when the team is on television. It’s so bad that they assigned a marketing vice-president last year to call those, like me, to inquire why they haven’t renewed their season tickets. A private plane has been chartered, twice, for flyovers during a 49er game, calling for the ouster of York and the removal of their General Mangler, Trent Baalke. Apparently, the second plane banner worked; Baalke and Head Coach Chip Kelly were both fired following the 49ers last game of the year New Years Day, a valiant losing effort at home to the Seattle Seahawks, 25 to 23.

What began as a glowing beacon upon a hill has turned into what could easily be called the NFL’s number one disaster. A team which was five yards away from winning its 6th Super Bowl is the second worst team in the NFL this year (barely ahead of the hapless Cleveland Browns) and won the number two selection in this year’s May NFL Draft. This team needs a lot on the field, beginning with a quarterback. But nothing will work there as long as York remains behind the scene. If the NFL were to publish attendance figures, the 49ers would also lead the league in the fewest fans in the seats. A purposely under built 68,000 stadium is barely half full for any given game and upwards of 10,000 tickets are available on Stub Hub or any similar ticket venue for any NFL contest. The New Orleans Saints visited Santa Clara the first weekend of November. I have a standing bet with a friend over the results of the game and I told him to make his restaurant reservations in advance, knowing the Niners week would lose badly to the Saints. It’s a shame about the 49ers, because the stadium is a jewel and offers amenities not found in any other stadium. However, these amenities were not supposed to be the main reason to attend a game. Candlestick was a disaster but it was the fan’s disaster and the team’s greatness was built and fostered there. Now fans have to drive up to two and a half hours south to get to the stadium, which features a hot eastern sidelines. We’re used to that in the South but Niner natives have never had to sit in a professional sports stadium where the temperature can reach 102 degrees for an early season game.

And then there’s the cherry on the sundae. Colin Kaepernick continued to show why those who can, do and those who can’t, teach…or protest, in this case. Kaepernick took a knee every game this year in his courageous fight to end oppression, hatred and injustice once and for all, for ever and ever, amen. Kaepernick, who still has not seen the working side of the ‘hood or the inside of a police precinct building, shows what ignorance on top of inability can produce. The man admitted he didn’t vote and is not even registered to vote (anybody check his green card?) And the 49ers are letting him do it. Fans don’t attend games to be held hostage to a political point of view. It’s neither the time or place for protests of any kind. That thought was made public by his mother! And now the team has bought into this bulls…. by voting him the winner of the Len Eshmont award for “inspirational and courageous play” as a 49er. This is what a once proud franchise has been reduced to. And even though Kaepernick’s final two games were productive from his end (compared to the rest of his past three seasons), it was too little, too late and too obtuse for the 49er faithful. The NFL is complicit in their silence as well. NFL attendance is down at least 11% and viewership even more dramatically. 49er attendance is down below critical and now the new Mayor of Santa Clara has a war going with this team over revenue and other issues and may take over the stadium’s operations. The league has its problems but the 49ers truly are in trouble with major issues of their own creation.

Now there is a strong movement by Levi Stadium license holders in the Bay Area to withhold further payments on those licenses because the team, by their actions, has violated their contract. Six percent of those license holders have forfeited their SBLs and the 49ers have not taken any legal action against anyone who has done so to enforce paying the remainder of their ten-year financed fees. Every since I was a little girl my favorite time of the year was December. Not only Christmas, but the whole month and into the New Year. It’s a time when everything slows down, the family gets together and you enjoy nice cold weather with a cup of hot chocolate snuggled under a warm blanket.

However the main reason why I am so anxious for this season is food. This time of the year our tables bend under all kinds of delicious foods and treats and you feel like there is some kind of food anarchy with no limitations of what and how much you can eat . The preparations start in early December with my family making traditional Slovakian Christmas cookies ,fancy chocolates and desserts.

I would like you to give you some good tips from my own experience that I gained over the years, but also introduce you to some traditional Slovakian Christmas and winter treats. It may be a little late for Christmas this time but there’s alway the end of this year and the years to come, so file this story away for those times.

Always plan ahead of time and decide what you want to make for the holidays long before you go grocery shopping. Trust me, this season is always going to be full of joy not only for your family , but also for you.

Let’s face it , this time of the year can also be little stressful, if you do not organize your time wisely. It’s not too late for this season when you already have your winner recipes. So, make a grocery shopping list with all the ingredients you need and places where you can buy them. I personally go to different stores to get the best quality and price. As far as ingredients , really go for the best. I always use fresh , organic ingredients and if I can

prepare something at home I do not waste my money for ,, ready to use , just add water ‘’mixes. If you want to be a star this year , making from scratch is a “must do”. Start with treats that require time to “rest’’ , like ginger cookies for example. I found out that longer your dough rests the better the cookies will taste.

Also chop all your nuts , cut your chocolate and dry your fruit in advance .

Always start with dry cookies which have the longest shelf life . You want to do all your creamy desserts last. My husband would tell you I am crazy this time of the year. I make more than ten different kinds of Christmas and postholiday cookies , all kinds of pies and fancy dessert , not to mention my favorite , chocolate truffles and bon-bons. Of course we would never be able to eat that all ourselves so we share with friends and family, because as people say sharing is caring and love really does go through your stomach, especially nowadays.

Something made with love from scratch is very rare and appreciated.

Do not worry if you experiment and try out new recipes and different techniques, but give yourself enough time because things may not go the same way as with a recipe that has been created in your family for generations. Involve your kids!

There is nothing better than spending time with your kids decorating and getting ready for these holidays, including the Mardi Gras season. It’s so special for them. It means a lot for your kids , if they can be a part of the ,,whole thing’’ , giving them a feeling of importance and involvement .You can give them a piece of your dough, letting them use their own fantasy , creating

their own masterpieces. It is also great for you because giving your child an activity gives you more time to focus on other things that lets you as a Supermom to get necessary things done. As kids we were always involved and I can not thank my Mom enough for that. Since I have made these treats for so long, it really is relaxing fun for me even now , when I make tons for sale.

I would like to share a recipe of my favorite chocolate/ cinnamon cookies , that are guaranteed on every Christmas and holiday table in Slovakia.

These are also known as ,,Bear Paws’’ Ingredients: 2 sticks + 4 tablespoons softened organic unsalted butter 2 1/4 cups raw cane grounded sugar 3 cups all-purpose unbleached , unbromated flour 1/4 teaspoon organic cinnamon 1/8 teaspoon ground organic vanilla bean 1/2 cup organic cocoa powder 3/4 cup ground organic walnuts 8 ounces good-quality chocolate or powdered sugar (optional)

1. Preheat oven to 350 degrees.

Thoroughly coat 3 bear paw molds or madeleine pans (or make them in batches) with cooking spray. In a large bowl, cream together butter and sugar. In a separate bowl, mix together flour, cinnamon, vanilla, cocoa powder, and nuts. Add to butter-sugar mixture, mixing thoroughly.

2. Press dough into prepared pans and bake for about 20 minutes or until a toothpick tests clean and the edges are

turning slightly brown.

Cool completely.

3. If you want you can melt some good quality chocolate and dip tip of the cookie in chocolate or sprinkle all of them with powdered sugar.

Another great Christmas recipe is Vianocka or braided Christmas bread , which is sweet butter pastry with raisins . In fact, the name vianočka is derived from the Slovak word for Christmas, vianoce.

Ingredients : 5 to 6 cups all-purpose flour 1 cup lukewarm milk, plus a tiny bit for glaze 1 ½ package (not more) active dry yeast ½ lb organic raisins (or less or more, depending on your taste; I use a mixture of dark and golden raisins) dark rum ½ lb organic blanched slivered almonds 1 cup unsweetened organic butter ½ cup granulated raw cane sugar 3 organic eggs plus 1 yolk ½ teaspoon Hymalayan salt ½ teaspoon grated organic lemon rind (optional)

Dissolve the yeast in the milk and let stand for 5 minutes.

Add 1 cup flour and 2 tablespoons of the sugar; cover and let rest until light and foamy.

Meanwhile, cover the raisins in dark rum and let stand (can be done a day ahead).

In a large bowl, beat the butter with all the remaining sugar until soft and fluffy; gradually beat in two eggs and one yolk.

Add the salt and the lemon rind. To this add the sponge

and enough flour to make an elastic dough (it will be a little sticky). Gather dough in a ball, cover the bowl and put in a warm place to rise, about 45 minutes. It should be soft and no longer very elastic when its ready.

Preheat oven to 350º. Strain the raisins and toss them in a shallow bowl of flour until coated. Take out the dough from its rising bowl (it will deflate some, dont worry about that), knead in the raisins and more flour to make it un-sticky; knead a few times. Divide into nine equal parts. Put some parchment paper on a baking sheet and place it with the short side in front of you. Roll out each chunk of dough into a “snake” about 12 inches long; start with just four. Now take the four snakes and lay them lengthwise on the sheet.

Pinch their top ends together and start braiding. (If you know how to make a four-strand braid, great; if not, its really easy, try it with some strings first if youre not sure. What you do is this: Take the leftmost snake and lay it over the one to the right, then under the next one and again over the one at the end. Repeat with the snake that is now the leftmost strand: over, under, and over the rightmost strand. Repeat until you are at the end.) Pinch the ends together and tuck under.

Dont worry if its not perfectly even, and make sure to push back any raisins that might pop out.

With a French pastry pin or the side of your palm make a deep depression (a sort of ditch) along the middle of the finished braid, thats where the next braid will go.

the three strands, pinch their bottom ends together again and tuck under. Again, make a “ditch” along the middle for the top braid. Make a twostrand braid of the final two snakes and place them on top of the other two braids, again tucking the ends under. You can secure the braids in place by a few toothpicks, which can be easily removed after baking.

(The top braid sometimes likes to slide off to one side.)

Beat the remaining egg with a bit of milk to make a glaze.

Brush the entire surface of the vianocka with the glaze and dot with the slivered almonds (personally I not so much “dot” as cover the vianocka with the almonds, they are delicious as they toast); make them stick by pressing on them a little bit.

Bake in the middle of the oven at 350º for about 50-60 minutes. Caution! The vianocka will rise in the oven and expand by roughly half of its original volume. When done, the surface should be goldenbrown; if you are getting the feeling that the almonds are too toasted while the center is not done yet (test with a skewer), cover the surface with aluminum foil towards the end of baking.

Cool on a wire rack. When cool, serve fairly thin slices (about half an inch) sprinkled with confectioners sugar. Its traditionally eaten for breakfast with tea or coffee, as well as with afternoon tea.

Turn on your post-holiday music, relax and enjoy this sweet sweet time of year.

DELISH “DOG-GONE” YUMMMY TREATS!

Many families begin the New Year with new pets under the Christmas tree. The kids get so excited to feed their new pups all kinds of treats and bones.

Skip the boxes and bags and take your pup to the kitchen where you and your kids can whip up a batch of my tasty dog treats in no time. Homemade dog treats are easy to make, and a huge hit with the puppy pal. They are kid friendly, too! My sons used to sneak in the dining room and try to bite a dog bone to see what it tastes like. The other day, my youngest son, now a Yuppy with his own puppy, gave Barley Mae, two store- bought “cardboard” bones with peanut butter slathered inbetween the two bones. You won’t have to do this with these bones. This recipe is easy and healthy using a few real ingredients. Your dog( and maybe your kids) won’t be able to resist chowing down on these edible treats. Bacon blitzed, egg, peanut butter and pumpkin all rolled in one dough. I add more yum with mint and parsley for their breath plus oats and whole wheat for the crunch. All these ingredients are a staple in most kitchens. I save my bacon fat in a container in the freezer ready at anytime I want to make a batch of bones. The dough takes minutes to make and is so easy to roll out. It doesn’t stick to the rolling pin like regular cookie dough. Kids love pressing the cookie cutters into the dough. It’s like play dough. We make all shapes~ dog bones, paws, little gingerbread people, even animal shapes. They look adorable! The kids love to get creative. Roll them about 1/4 to 1/2 inch thick and bake to light brown. They will harden as they cool. Get a large glass container to store and display.

DOG BONES This recipe is simple and makes a very easy workable dough, not sticky and kid friendly ! Craft stores carries dog bone cutters.

Put all ingredients in a mixer bowl: • 2 ½ cups whole wheat • 1/2 cup pumpkin • 6 Tablespoons combination of fat- We use 2 Tbs. bacon fat , • 4 Tbs. peanut butter(1/4 cup) • ½ chicken or beef bouillon • 1 egg • (optional :2 tbs. chopped parsley or mint –freshens breath and/or 1 teaspoon) • turmeric – for joints Mix all ingredients to form a ball. Roll out dough to ½ inch thick. Press cookies and place on a pan with parchment paper. Bake at 350˚ until hard and golden, about 25 minutes.

Meanwhile, that greed snuck into this year’s World Series, where really stupid prices attract really stupid people with money. The truly well off don’t like to be inconvenienced or bored and if your team creates a venue where one or both situations exist, then your attendance drops. Check the empty or partially empty luxury boxes at most stadiums during a game. Those with cash generally are not that passionate about their teams and they won’t be there unless its fashionable or profitable to do so. The average fan realizes this more and more and its a hard thing to wean off of…but it’s happening. I used to say that radio was eating its young and now I see that professional football is doing the same. And the NBA is right behind, with Major League baseball starting to sniff the greed in the air.

Words to GREAUX by GROW YOUR OWN VEGETABLE TRANSPLANTS Get a head start on this year’s spring vegetable garden by growing out your own transplants to plant later in March. Growing transplants can be a fun and rewarding experience but there are many other reasons that make it popular amongst home gardeners. For one, it keeps the costs associated with buying plant material low. One of my favorite reasons is that you will have much better selection when Will Afton it comes to plant varieties because you will be looking for own seed. In a sense, you become your own nurserymen. Growing transplants is also an excellent way to recycle and reuse old bedding plant flats and containers.

To get started you will need to purchase the seeds of whatever plants you will be growing. The most popular transplant vegetable is the tomato but you can grow whatever you like cucumbers, eggplant, squash, peppers, etc. Root crops like carrots, parsnips, radishes, and beets are better suited for directing sowing into the garden. Make use of those mail order seed catalogs to search for locally recommended varieties. Use the LSU AgCenter’s Louisiana Vegetable Production Guide as a reference to what varieties do well in Louisiana.

Now you will need a few supplies. Small plastic pots, egg cartons, or old six pack flower containers will work well to grow your transplants in. Properly wash them with a 10% bleach and water solution to eliminate any disease issues. Next you will need a soil mix. Any potting soil will work fine but they do sell special seeding mixes. It all depends on how much you want to spend. Fill your containers with soil and soak them with water. Add more soil as needed. Let the containers drip dry for thirty minutes and you are ready to start sowing seeds. Remember that while seeding, you want to plant the seeds at a depth of no more than twice the width of the seed. Be careful to not plant them too deep. Label as you go. It can get confusing if you are growing more than one variety of the same type of vegetable. Place the labeled containers in a bright window or out in the green house. Check them daily for water as needed. As the seedlings get bigger they will require more water and eventually a little bit of fertilizer. When they start producing leaves you can start using a liquid based fertilizer once a week until they are ready to go into the ground.

The much-venued Rickie Luke has opened Café Luke in the former Sunrise on Second location next to Northshore Plus Enjoy on Robert Street in Old Town. Luke, who began his career as a banker, has theatrical roots that go back to his teenage years when he played a 14-year old version of Captain Von Trapp in his school’s performance of The Sound of Music. He ran his East Jefferson High School newspaper for three Rickie Luke years after being rejected for a role in East Jefferson’s Oliver! back in the early 1970’s. He majored in theatre at UNO but chose banking for a professional for 25 years, while acting and doing occasional cooking during his formative adult years in the New Orleans and Slidell areas.

Banking gave Luke experience in running a business but theatre and teaching were his two driving passions. In 2001, Luke was working as a fund raiser at Azalea Estates, an assisted living facility on Robert Road in Slidell. He came up with the idea of a dinner theatre in the facility’s dining room to raise money and in 2002 for three weekends, the idea took root.

It was a success but obviously not the right venue for a commercial operation of this type. The nephew of one of Azalea’s patients, Frank Moss, introduced Luke to Joe Minacapelli, whose dinner theatre was a landmark in Slidell through most of the 1980’s. Minacapelli and another Slidell couple, Mike and Jan Sims, made it possible for Luke to open his dinner theatre on the west service road of I-10 in 2002 as Minacapelli’s. Four years later, under Joe Minacapelli’s urging, Luke renamed the popular venue Luke’s Brisket and Broadway. Meanwhile, Luke had returned to full-time teaching after Katrina and continued to teach after his dinner theatre closed in 2010. In 2013, he went to Tennessee to care for his elderly parents and once they passed, Luke ran the family restaurant there. He returned to Slidell in 2015, just in time to produce his first show at the short-lived Maison Blues on First Street in Old Town.

The Sims stepped in again last year when the operator of Sunrise Bistro was shutting down his operation, which was located in the old Poole Funeral Home on Robert Street and had been home to chef Michael Frederic and others over the past 16 years. Jan Sims mother had been a patient at Azalea, where she got to know Luke, and asked Luke if he would be interested in operating La Grande Maison and The Chateau, which became the names of the Poole facility once restaurants began operating in the building. Luke agreed and the rest moved rather quickly as Luke took the 1,200 square foot Chateau, cleaned and redecorated it to employ a French motif and began to set up the 6,000 square foot Le Grande Maison ballroom as a venue for an occasional theatrical production and for wedding receptions.

Open for breakfast and lunch, Café Luke will soon offer Jolson, a oneman performance with Luke in the role of the famous vaudeville icon and Karen Hoyt on piano. Luke is waiting for the playwright to release the rights for the performances, which will be scheduled for late January through mid-February. Luke also plans to produce What About Luv?,

DON’T GUESS, SOIL TEST Anxious gardeners are always looking for something to do early in the year while waiting for the spring garden season. One very important practice that every experienced farmer will tell you is to have your soil analyzed for its current nutrient content. After reviewing the results you will know what nutrients should be added and you will be able to choose a corresponding fertilizer. You will also find out valuable information on your soil pH status which tells you whether you have an acidic or basic soil type. The soil pH can be adjusted using different soil amendments. The first step in getting a soil sample is to get your hands on one of the LSU AgCenter’s soil sample mail-in boxes. Check with your local extension office where to find soil sample box displays. Inside each box you will find written directions, three sample bags, and a submission form. To take a soil sample you will need a shovel and a large container or bucket. Take several samples from the area in which you want to analyze. Mix these “sub-samples” together and then place into one of the supplied bags. Make sure to label it so you know where it came from. Fill out the submission form and list what plants you will be growing in the appropriate column. Make sure to check off the box for “routine soil test” at the bottom. The lab fee is $10.00 for every sample you send in. You can enclose a check for the total amount. Go ahead and put everything into the mailer box including the completed submission form, soil-filled sample bags, and payment.

Seal it closed and put it in your mailbox. It usually takes about two weeks to get results back and when they do you can give the county agent a call to review and help you make the best decision.

In any case, Slidell now has not only another breakfast and lunch choice with a light French flair but also its third theatrical venue, joining Slidell Little Theatre and Cutting Edge Theatre offering Slidell and other Northshore residents more options in the cultural spectrum.
