Tony’s Take Oh, My – How That Country Boy Could Play!

Of the more than 50,000 commercially aired rock and roll songs of all genres over the past 60 years, two stand out for their opening riffs. One is the Rolling Stones “Satisfaction”. The other, the epitome of rock and roll’s greatest opening chords, is Chuck Berry’s “Johnny B, Goode.” No one over 50 can forget either song or their artists. The Rolling Stones still perform; no one knows how they continue their energy level well into their sixth decade of performing.

Until Saturday, March 18th, Chuck Berry was in his seventh decade. The author of the “Duck Walk” movement on stage set the tone for hundreds of acts that followed in the 50’s through today.

Chuck Berry was 90 years young when he decided to headline in heaven.

His passing leaves a void never to be filled.

One of the original greatest rockers of all time, (Maybelline, School Days, Sweet Little Sixteen, Roll Over Beethoven, No Particular Place to Go, My Ding-A-Ling), Berry was one of a kind - like Elvis, Hendrix, Joplin and Michael. There’s still Little Richard and Fats Domino, Mick Jagger and Paul McCartney and many individuals and groups that followed in the 60s and later. But Chuck is gone, joining those whom the Righteous Brothers honored in 1974 with “Rock and Roll Heaven.” “You know they’ve got a hell of a band…band…band!!” Just a few vacancies left in heaven for these pioneers - Paul, Carol King, Jagger, Fats, Bill Medley and Little Richard. Chuck Berry is already missed and we’ll think of him the

next time we “drop that coin right into the slot!”

According to the Late John Lennon, speaking about Berry, “He was singing good lyrics and intelligent lyrics in the ’50s when people were singing ‘Oh, baby, I love you so.’ “ Lennon, Bob Dylan, Keith Richard, George Harrison, Bruce Springsteen and Pete Townshend - all rock icons - credit Berry’s incessant rockabilly licks and a delectable mix of country flash and rhythm and blues in shaping their careers. Changing one word of the lyrics of Johnny B. Goode made it the anthem that not only received unrestricted radio airplay but allowed the imagination of musicians of any genre to picture themselves as a star.

That word was “country” boy instead of “colored” boy and non-ethnic stations played the song and hundreds of rock, country, bluegrass, R& B and pop singers saw themselves as Johnny B. Goode. Berry melded social commentary with his advanced lyrics to the rising popularity of the new rock and roll music and left generations of pre-war babies, war babies and baby boomers moving’ and groovin’ to a beat much different than the Big Band and Hit Parade sounds of the ’30s, ’40s and early 1950’s. Because of him and a few others, the words of Danny and the Juniors ring true more than 60 years later: “rock and roll is here to stay, it will never die!”

Strawberries, Tomatoes, Cilantro...Oh My!!

This year Cilantro is Herb of the Year!

What does that mean? It means it is the chosen showcase herb for our gardens and in our cooking. But Cilantro has a bonus. Its seeds, Coriander, are prized in baking, pickling, spice blends, Latin & Indian foods. Coriander, the plant, more commonly known as cilantro in this country (and sometimes as Chinese parsley, even though it isn’t from China) has a love /hate relationship with foodies. Julia Child despised this herb and said that she would pick it out of a dish and throw it on the floor if she saw it on a plate. Why does this herb cause the outbreak of such great emotion? Love it or hate it? If you don’t like cilantro, your genes are to blame. The chemicals, Aldehydes, are chemicals commonly found in soap and in cilantro. Eaten raw, cilantro tastes like soap. Those who are a little less sensitive can enjoy cilantro with lemon or lime juice and/or tomatoes. The juices of the lemon, lime or tomato juice tames the cilantro.

Cilantro is commonly used as a garnish in many cuisines. In Europe, coriander seeds are highly prized in baked goods. Cilantro is an essential staple in Mexico, Southwest & Texan flavors. Cilantro has great importance in Asian cuisines.

Even the roots are used for flavoring in green curry sauces. The Indian culture uses cilantro and coriander extensively in curries, Gram Marsala and other spice blends. The first mention of coriander in an American cookbook was in Amelia Simmons’ American Cookery of 1796. Coriander, the spice, is also common in pickling spices. The cilantro plant is a fantastic pollinator plant. It attracts bees, butterflies and more to the garden and the pollinators are necessary to a gardens’s health. On our health, cilantro contains high levels of antioxidants in the fresh leaves, and is rich in calcium, phosphorous and vitamin A and C. If you have too much cilantro on hand, you can preserve it for later use in the kitchen by making an herb oil paste. Put clean leaves and soft stems in a food processor with a light flavored oil and process to a paste. Place in a quart ziplock bag, flat in the freezer. Break off pieces as needed.

Cilantro is a cool season herb. It is planted in the Fall, September through May or June. Snip the plant regularly to encourage route growth and a feathery green top. Make cilantro pesto. When the seed stem comes up, harvest seeds. A cute way to display your plant is to get a strawberry pot at the nursery. Fill the pot with strawberry plants or mini tomato plants and place a cilantro plant on the top.

When the cilantro goes to seed in the hot month of June, replace it with a low flowering plant or basil until the fall.

Typically, we associate cilantro with salsa. I can drink salsa, yet I hate to smell or taste cilantro. Cilantro is great with fruits, such as pineapple, mangoes, and oranges in ceviche. Now think strawberry salsa. The combination of the strawberries, jalapeño, lime juice & cilantro is a fresh twist to salsa. Just substitute strawberries for tomatoes. It goes from savory to sweet. Another fruity dip is mango chutney.

This recipe uses the intoxicating fragrance and flavor of the coriander seed. Both of these are great served with crackers, served with cheese, or next to meat, like pork or chicken.

STRAWBERRY SALSA 1 quart strawberries, diced 1 medium red onion, finely diced 1 red bell pepper, seeded and finely diced 1 jalapeño, seeded and minced 1/2 bunch cilantro, finely chopped Juice of 1 lime a pinch of salt Mix all together, cover and refrigerate TOMATO SALSA 1 quart cherry tomatoes, red or yellow 1 medium red onion, finely diced 1 jalapeño, seeded and minced 1/2 bunch cilantro, finely diced Juice of 1 lime Salt & Pepper to taste MANGO CHUTNEY 1 medium onion 1 Tablespoon fresh ginger, finely minced 2 cloves garlic, finely minced 1/4 tsp. chili pepper flakes 1 teaspoon ground coriander 1/2 tsp. ground cumin 1/4 tsp. turmeric 3 cardamon pods, slightly crushed 1/4 tsp. whole cloves 1 star anise 1/4 tsp. mustard seeds 1/4 tsp. salt 5-6 mangoes, peeled and diced 2 cups white sugar 1 cup white vinegar In a medium sauce pan, heat oil and sauté onions to translucent Add garlic, ginger, and pepper flakes, stir 2-3 minutes Add the coriander, cumin, turmeric and salt.

In a tea ball or wrap spices in a cheese cloth- cardamon pods, cloves, mustard seeds & star anise, add in mangoes.

Add sugar and vinegar and sauté about 30-40 minutes to reduce liquids.

Mash mix if you want a non-chunky chutney CILANTRO PESTO 1 1/4 cup cilantro 1 Tablespoon fresh lime juice 2 Tablespoons olive oil 2 cloves garlic Salt & pepper to taste Blend in food processor

Strawberry Pots Forever…

Spring is here! Get your kids active in a cute garden project.

Let them know where the food they love comes from.

Plant a PIZZA GARDEN! Let’s see... the sauce comes from tomatoes. Basil, rosemary and oregano are the herbs. And we could add a chili pepper plant for spicy pizazz. Mozzarella and parmesan cheese does not grow in the garden, but I always have it in the refrigerator. There are two cute ways to plant your mini garden.

Place all the plants in a strawberry container or a small bucket.

Whichever container you chose, the rosemary and oregano need to be separate from the other plants because they require less water.

In the strawberry pot, place the oregano and rosemary on the top holes. The water will drain away faster from them. The basil, tomatoes and chili can handle much more water. In a bucket, place rosemary and oregano each in a separate pot and then place in the bucket with the rest of the herbs and tomato plant. You can water the plants and selectively water the Mediterranean plants less.

PLANT A SALSA GARDEN! Cilantro, tomatoes, jalapeño all hop into the strawberry pot.

PLANT A MINI HERB GARDEN !

Chives, parsley, basil, tarragon can be placed in the strawberry pot.

Trim these herbs to make a delicious herb cheese spread.

Don’t be picky which herbs you chose, just pick them. Use a good organic garden soil blend.

Have a watering can, because the kids love to water the plants. Get them their on garden gloves and spade.

This makes them feel like a real gardener. The more involved they are, the more they want to sample their own food.

It is incredible how there is almost Pavlovian link between special occasions and food. Try to play a game with your friends and name a specific holiday asking them , what is the first ingredient that comes to their mind. Before long people will begin to describe entire menus.

Christmas is almost always cinnamon and warm spice that morphs into imaginary gingerbread, cookies and pies.

New Years? I can bet you it is champagne perhaps with fresh juicy strawberry inside. And Easter was for long as I can remember chocolate.

Growing up in Slovakia we had a little bit different customs than here in America , and it is going to make you curious when I say from my own experience It can get you in a lot of trouble or perhaps embarrassment if you try them here.

Just to briefly describe what in the world I am talking about here, In the Czech Republic and Slovakia, a tradition of spanking or whipping is carried out on Easter Monday. In the morning, men spank women with a special handmade whip called a pomlázka (in Czech) or korbáč (in Slovak), in eastern regions of former Czechoslovakia Moravia and Slovakia they also throw cold water on them. The pomlázka/korbáč consists of eight, twelve

I soon discovered some Americans are loyal to traditional chocolate eggs , but an equally strong contingent will choose marshmallow chicks. Deciding between these two is as hard as the old-age question of the chicken or the egg. Neither of them can win over the other. I was trying to find the perfect Easter Candy for American-Slovakian family as mine is, and I came across unbelievably delightful treat from one of my favorite pastry chef which combines traditional Slovakian chocolate egg and American Easter marshmallow and he named this creation, inspired by Peeps.

MARSHMALLOW Sprinkle the gelatin over the water in a small bowl. Stir and let sit for Sprinkle the bout 20 minutes to bloom.
