TRUMP NEEDS TO HIRE ED ORGERON TO PROTECT THE BORDERS

New Tiger Football coach Ed Orgeron recently made a major move along the northwest border of Louisiana when he secured the verbal commitments of three Evangel teammates who are all among the top 20 players in the 2018 football graduating class. With the commitments of linebacker Micah Baskerville, at 6-2 and 220 pounds, Davin Cotton a 6-2, 275 three-technique defensive tackle and Ar’Darius Washington, 5-10, 180 cornerback or safety, the Tigers already have two defensive linemen, two linebackers and two defensive backs in their corner - all six among the top 20 players projected - and Kenan Jones, a 6-3, 210 wide receiver who possibly projects as an outside linebacker similar to Kwon Alexander at LSU a few years ago. LSU will definitely pick up a couple of the top wideouts from the 2018 class, where six of the top 14 players reside and four remain uncommitted. But the big news was the Evangel connection, where LSU has been ignored for more than 25 years with the exception of Jacob Hester and a couple of other, less impactful players. Arkansas, Texas, Oklahoma and Mississippi are as close or closer than Baton Rouge and the wealth of football talent in the Crescent City area and Baton Rouge has been overwhelming in the past dozen years or so for LSU. Three of the past five seasons have had the Tigers shut out north of Alexandria and the economic demise of parts of the northeast section of the state has also hurt.

But even more telling has been the intensive recruiting by Alabama’s Nick Saban, who has pulled about a half-dozen top ten players out of the Monroe and Bastrop areas, including All American Cam Robinson at offensive tackle, a player the Tigers could have used following the graduation of La’el Colllns after the 2014 season at the pivotal left tackle position. With the recent transfer of Parkway quarterback Brandon Harris from the program, the Tigers needed to not only strengthen their position in the Ark-La-Tex but do damage control at Parkway High School in Bossier City, the yin to Shreveport’s yang in the northwest area of Caddo and Bossier Parishes. It looks like Coach O has done that. The school also needs to address its inability to recognize quarterback talent in its own back yard (think: Haughton’s Dak Prescott, who went to Mississippi State and now starts for the Dallas Cowboys). Now the program needs to revisit West Monroe, a long-time Tiger hotbed for recruits, and shut the back door to Saban and others who would poach from the Tigers. One other area, however, has nothing to do with borders.

The Tigers have a ‘Bama mole in their midst. They’ve lost better players from within their own community, including linebackers Dylan Moses and Charles Allen from Baton Rouge, defensive lineman Tim Williams from University High on the LSU campus and Landon Collins and Eddie Lacy from Dutchtown High, just south of the capital city, to the Crimson Tide. No Tuscaloosa or Birmingham four or five-star recruits have come to Tigertown in my memory and all five of these Louisiana players are either in the pros or should be following their college careers at Alabama. With the intensity of Orgeron and his two like-minded coordinators,

this leakage should trickle down or stop altogether. If the Tigers can keep their stars at home, the Alabama-LSU matchup will have a tremendous shift towards the Tigers. Meanwhile, the Tigers continue to successfully raid Texas, where state teams have been badly damaged by the exodus of players to LSU, Oklahoma, Alabama, California, Florida and up north.

Those borders will never close because few people respect the Texas Longhorns’ ability to attract players and the other schools have virtually turned their backs on defensive players, including Texas A&M, even though the Aggies have the best defensive prospect in this year’s draft and had the best one when linebacker Von Miller went pro many years ago. LSU and Florida have the best high school players per capita in the country and the Tigers do very well in the Sunshine State as well.

MILLY

Milly was a alone and frightened, living on the edge of a wooded area behind some houses after her former family moved away and left her. Another family started feeding her but they were not able to give Milly a home. They did take her to a veterinary hospital when an accident or an attack by another animal caused her to lose her tail.

Surgery was required to close the wound and at the same time she was spayed. Perhaps because of all she has been through, Milly is a shy cat. She does enjoy attention and is very sweet! Spaghetti is a lovely blue tabby with white on her neck and paws.

She is less than a year old and has never met a stranger! Her rescuer started calling her Spaghetti and the name seemed to fit her. Spaghetti has a lot to tell you when ever she sees you. She does not understand why she ended up without a home, wandering in a strange neighborhood. She wants a home with a person who will listen to her and give her lots of love and attention. In return she will be that person’s loyal, adoring friend. Spaghetti is spayed, tested and vaccinated. An online adoption application is available at Start’s website.

SIERRA

Sierra is a seven month old tortoise shell kitten with an amazing story. When she was only about 6 weeks old Sierra was found injured at a lumber yard. The workers were afraid she would not survive, but they contributed to get vet care for her. Fortunately her injuries were only superficial and she recovered fully. Sierra went to live in a foster home where she had other cats to play with. She does well with adults and children. Sierra loves to play with toys and watch TV. There is nothing more comforting to the body than a bowl of hot soup. MY Crawfish & Pork Wonton Soup with Baby Greens is that soup and it will not only warm your bones on those chilly days, but it’s a nutritious soup that’s full of flavor.

This is an easy soup to make and many of the ingredients are found in your local supermarkets in the Asian or ethnic section. Mixed baby greens, wonton wrappers, ground pork, peeled crawfish tails, soy sauce and chicken stock are just a few ingredients to make this soup doable for anyone to attempt.

When shopping for crawfish tails look in the frozen seafood section of your supermarket.

Chinese crawfish tails are the cheapest and Louisiana crawfish seem to be the highest priced. Certainly you get what you pay for. Purchasing the better quality crawfish tail will provide a better result in flavor and texture. Recently, I found wild caught Spanish crawfish (yes, Spain), and they were priced more middle of the road, but the flavor and texture were high quality.

The small wonton wrappers are made from wheat flour and water. They are usually in the refrigerator section of your local market. When making the dumplings, no liquid or contents should be showing. When sealed tightly, the wonton will have a better chance of not coming apart when boiling in the soup. These tasty dumplings can also be fried and used as an appetizer. When making the mixture, you will usually have plenty for enjoying them another way with a little variety. If you decide to use in the soup only, simply dust each dumpling with corn starch and place in a zip-lock bag and place in the freezer. When ready to cook and if frozen, allow dumplings to lightly defrost before cooking or simply allow more cooking time for each if frozen. When frying wontons, defrost and pre-heat oil at 350 degrees and fry till they either float to the top of the oil or they are golden brown. Dip with my Cajun Asian Sweet Chili BBQ Sauce for some flavor variety if frying.

When I use mixed greens for this soup, I actually purchase baby salad greens, baby spinach, red leaf lettuce, green leaf, arugula and kale that usually comes in one package in local western markets. These greens are simply added to the soup when all other flavors are balanced at a rapid boil for a couple of minutes.

When frying the chopped garlic, the trick is to place the garlic in a skillet with cold oil.

Heat the oil and pay attention so the garlic doesn’t burn. When it starts to all become golden brown, remove it quickly out the oil to parchment paper or any other cooling surface. If you don’t, it will over cook quickly. Garlic will bitter if it goes too dark and will bitter the soup. ENJOY! Makes about 4 servings

Dumpling Ingredients: 1 pound ground pork 1 pound crawfish tails, minced 1 tablespoon garlic, minced 1 tablespoon unsalted butter 1 tablespoon olive oil Salt and pepper to taste 1 tablespoon Chef Paul’s Seasonings 1 tomato, medium – diced 2 green onions, sliced thin ¼ cup chicken stock 2 tablespoons Thai basil or Italian basil, chopped fine 3 tablespoons heavy whipping cream (8) 3” wonton wrappers 1 teaspoon corn starch or tapioca flour For Soup: • 4 cups rich chicken stock • ¼ cup light soy sauce • 1 tablespoon fried garlic • 8 wonton dumplings • 3 handfuls of mixed baby greens • 8 fresh cilantro leaves and stem

4 green onions, sliced thin ¼ teaspoon fresh black pepper Pinch of sugar 8 Crawfish and Pork Dumpling

METHOD: 1. In a medium pan, heat butter and oil and cook off pork and crawfish for about 3 minutes adding garlic halfway through the process. Add chicken stock and tomatoes and cook for another minute.

2. Add seasoning and cream and stir cooking for another 2 minutes on medium heat.

3. Add green onions and basil and mix together.

In a small bowl add 1 teaspoon water and 1 teaspoon corn starch and mix together. Add to mixture stirring on low heat till it lightly thickens, but not a paste.

4. Remove from fire and spread thin on a sheet pan or plate to cool. Let cool in the refrigerator for about 30 minutes.

5. Add 1 large teaspoon of mixture in the center of each wonton wrapper or gyoza wrapper.

6. Brush with the egg or water around all edges and press gently while making a triangle shape.

7. Dust a little corn starch and place dumplings on the parchment or plate so they do not stick.

8. Heat a medium soup pot and bring stock to a boil.

9. Begin adding all ingredients slowly except dumplings, mixed greens and fried garlic. Cook for about 3 minutes on medium heat.

10. Add dumplings gently and cook for another 2 minutes.

Do not stir rapidly so the dumplings don’t break apart.

11. Add mixed greens and cook for another 2 minutes.

Add 1 teaspoon garlic to the pot for each individual bowl of soup.

12. Taste to adjust flavor of your soup.

13. Add cilantro and green onions on the bottom of the soup bowls and pour hot soup in bowl.

LIQUOR IN CHOCOLATES? WE SAY YES! Saint Patrick ’s Day is almost here and I have something amazing just right for this occasion that is going to bring your favorite liquor to the next level. I am talking about amazing but yet not very common combination, at least here in United States, liquor chocolates.

I found it quite challenging to buy these wonderful adult treats made with real liquor and not just flavorings here , in the states, which is a shame because you don’t know what you are missing until you try these and holidays are never going to be the same. Not only that but you will no longer have a problem deciding what to bring to your friends when you go over to visit. Chocolate? Bottle of whiskey? Good news.

Now you can bring both and be fancy at the same time.

Let’s talk more detail. We know several basic techniques of incorporating liquor in a chocolate candy : With sugar crust or without… both have advantages and disadvantages.

1. Without sugar crust – liquid The main disadvantage of this technique is that alcohol is directly touching the chocolate and causes it to erode with time. Since there is no protective layer between the chocolate and the alcohol , the chocolate starts to turn soft after three to four weeks, the aroma changes , the chocolate loses its gloss and the pralines slowly start to collapse.

The higher the alcohol content, the faster the ensuing breakdown .

For this reason and also because liqueur is too liquid, too expensive, and sometimes tastes too strong when combined with chocolate , the liquor is usually slightly thickened with sugar syrup . The sugar syrup can also help to crystallize any cracks resulting from any potential minuscule leaks.

2. Without sugar crust – creamy This technique is combining creamy panache and alcohol or your choice so the center is nice and creamy with a wonderful liquor aftertaste. One of the many popular ones is Bailey’s Cream Ganache , Whiskey Ganache or Caramel Crown Royal Apple Ganache.

I would like to share a recipe that is one of my favorites since I am very big fan of the Irish cream liquor, Baileys.

If you don’t feel like making it from scratch, you should definitely stop by my little store in the East Slidell Chamber of Commerce building on Front Street and try one.

You will not regret it, that I can promise!

Directions: Melt white chocolate(make sure you stir it frequently or it may burn) mix in baileys and fondant and mix well. In a separate bowl mix butter until fluffy and add the baileys mixture. Stir well and fill your chocolate shells with ganache. Let shells sit in refrigerator overnight to firm and close with liquid chocolate following day.

Basic Recipe: 1500g sugar 500g water 50g glucose 150g liquor concentrate 60% alcohol content 150g alcohol (everclear)

3. With sugar crust- afterwards dipped in chocolate PRINCIPLE

Directions:

As a result of moisture loss but also through cooling the sugar syrup becomes oversaturated .(Saturated sugar syrup means that whenever sugar is dissolved in water, and more sugar is added , the syrup will inevitable become saturated. No more sugar can be added as it wil no longer dissolve. Saturated syrup contains a maximum of soluble sugar. Whenever temperature is raised , more sugar can be added) To correct this ,part of the sugar crystallizes. You have to carefully follow your recipe because if the sugar concentracion is too high crust is too thick and if too low crust wont form or is too thin.

Bring the water and the sugar to the boil and carefully brush the edges of the bowl with water. Add glucose. Continue to heat the syrup to 106/107 Celsius (223 to 225 Farenheit).

This technique is one of the oldest ones and you can find several recipes on the internet. Liquor syrup is poured into pre dried corn starch impressions and let sit for overnight.

Following day you the syrup creates a crust from the outside so you can dip it in tempered chocolate.

Afterwards leave to cool to approximately 50 Celsius (122 Farenheit) before mixing the liquer and the alcohol by transferring between two bowls. (5 or 6 times).

It is important in the recipe to strictly follow temperatures because if the sugar syrup is undercooked, there is no crystal formation and if it is overcooked, the sugar crust is too thick.

The higher the degree of alcohol , the coarser the crystal formation. Sugar is not soluble in alcohol.

In order to avoid undesirable crystal formation, the syrup should never be stirred after sugar temperature exceeds 201 Celsius (215 Fahrenheit ).

4. With sugar crust in moulded pralines This is the fastes and simplest method and also my favorite .

The chocolate shell is protected against the alcohol by thin sugar crust .

PRINCIPLE The chocolate shells are poured and , after hardening, are filled with slightly oversaturated liquor syrup.

Overnight a slight crust appears on the edges and of the surface. The mould can then be closed with liquid chocolate.

I feel like I really should warn you ahead. Making and eating these is highly addictive! What can be better than making candies just like you always wanted when you were a kid by adding “adult’’ ingredients we all love?

Baileys Pralines Ingredients: 20g softened butter 40g home made cane sugar fondant 50g baileys 30g white chocolate + dark chocolate for shells

You can find a lot more recipes and information on the Internet.Of course, alternate your recipes, add flavors, essential oils, soak citrus peel in your liquor or add spices you like.

The great thing about making chocolates is this is one of those activities that will never get boring because as with many other things, the sky is the limit!

Restaurant Rendezvous

The sign says “Fantastic Subs and Wings” (FSW) at this new lunch place on Pontchartrain Drive in Slidell and they are partly right on. It’s hard to do another fantastic sub, given the number of great sub places on the Northshore that already do a more than credible job. But give this family restaurant its due on the wings. These wings don’t need a prayer; they’re heavenly just as they are and they come in six distinct flavors.

My favorite is the Sweet and Spicy, followed by the Garlic and the Lemon Pepper selections. There’s also a Honey BBQ, Original and Hot Wings, but I doubt I’ll need to try these flavors again because my favorites are so good. You can get 10, 20 or 30 wings a la carté or order with fries. You’ll have to try their “Ghetto Punch” - a sweet, strawberry-like concoction that looks a lot more sugary than it is. It’s a good thirst quencher with a different but pleasant aftertaste. FSW also offers daily specials Monday through Friday, good home cookin’ sides, five sub choices besides shrimp and oyster subs, burgers, seafood gumbo, seafood stuffed bell peppers (I’ll be trying those soon), specialty French fries dishes, salads, desserts, drinks and kid’s meals. They also deliver. 3011 Pontchartrain Drive, on the curve across from Winn-Dixie, Monday-Saturday for lunch and dinner seating.

CAFE’ LUKE BURNS; BUT THE SHOW (AND THE SUPPERS) WILL GO ON The tapping on my door at work Sunday was not unusual but the person doing the tapping was unexpected. Rickie Luke of Cafe’ Luke was standing there, looking sort of disheveled. He asked me if everything was okay and I said yes, why wouldn’t it be? He then informed me, since I hadn’t heard it, that his restaurant had caught fire early Saturday morning and was a total loss. Luke and his wife happened to be upstairs in the old Poole home when the fire broke out. This was a little too close to home for me, or should I say too close to business, as that venerable old Slidell three-story building is only ten feet from my building, specifically my office where I typed this story. A gas leak and cooking briskets did the deed but Luke says if the city lets him turn on at least one of his electrical services, he’ll have al fresco morning and evening dining on the brick patio and his dinner show will go on. It’s a murder mystery, entitled “Chef’s Surprise.” Ironically, a scene depicting a kitchen fire will be written in this play scheduled to begin March 10th.
