With the People Speaking, Let the Grownups Take Over Again

The liberal extremities of the United States recoiled in shock two weeks ago when the flawed Donald Trump won perhaps the most improbable election ever in the history of the United States. The win was pre-ordained by the few pollsters who knew what they were doing. Folks, it’s not about the personality of a man who normally would be shunned by responsible American voters. It’s about a person who touched the pent-up feelings of this country’s working class, which has felt helpless and nearly hopeless for the past forty years and had the energy and resources to give voice to those feelings. It’s about empowering the disenfranchised middle class and it could have been Donald Duck leading the way as well as Donald Trump.

The effete elite, with their condescending attitude and feelings of entitlement, have been set back, at least politically, for the next four years. They join those Millennials and Gen-Xers who share the same sense of entitlement, fostered by “buddy” parents, lack of consequences and an indifference to developing personal relationships face-to-face, not on Facebook, who are about to get a swift kick in their collective astronomical attitude. Too bad. Grow up. On the whole, you’re not part of the citizenry aided by the Civil Rights Acts from the 1960’s. There’s still work to be done there by realistic and responsible parties. No, the loss on November 8th belongs to the bigoted liberals who saw no reason to reject a pathological liar and borderline criminal whose lack of people skills and whose personality gave witches a good name in comparison in favor of dumping on a man who is also deeply flawed but saw the need to reinforce the working class skeleton of this country. Clinton wanted the money; Trump not so much.

The odor of this election may never go away. Trump has a truckload of proving, changing and implementing to do, while maintaining this fragile psyche that is America 2016. But it won’t include the dismantling of the Constitution or the appointment of advocacy Supreme Court justices. I don’t want to hear what decisions Trump wants to retain or implement; I want to hear that the justices are guided by our Constitution and will craft their decisions to stay within the brilliant guidelines of our Founders. There is room for interpretation and tweaking in our laws as the country advances in age but there is no room for wholesale threats to one or more of the cornerstones of our country.

It’s time to do what Hillary Clinton said in her concession speech: Give Donald Trump a chance to do what he said he would do as our President-elect. It was a courageous presentation by a woman who has not had many such moments in her life. President Obama, too, was conciliatory in his invitation to Trump to meet peacefully in a transition process. The gloves may come off soon enough, but Wednesday’s speeches, along with Trumps’s masterful acceptance speech early Wednesday morning, might have been the best trifecta of such talks in our country’s history.

The so-called riots and protests after the election? Staged garbage, mostly by children and advocacy profiteers, who couldn’t accept the results. So many of our protests are of this genre.

Spoiled, pampered, Time Out children, living in virtual co-ops or with their undisciplined parents, with little to show for their adult lives, even after eight years of Barack Obama. Sad and pathetic.

But we raised these petty souls. And now its time they began to grow up and start showing respect where respect is due as well as politeness, learn this country’s heritage (along with geography and how to really do math) and quit spending half their time inventing excuses why they can’t or won’t do something. So much discipline - societal as well as personal - has been left in the lurch.

Knowing how to implement social media and electronic devices is important but without the knowledge of what you are looking for and how to use it, all that thumb-swirling and digital dexterity is just that. It’s not all about entertainment and mindless chatter or hacking someone else’s electronic devices.

So, suck it up, kids. It’s a real world out there, where you actually can have a voice and can make a difference, if you start acting like an old school adult from time to time. Most of us didn’t have the luxury of being allowed to become a serious part of the real world at your age. We should have given you more of the backbone we were given by our parents and grandparents. But it’s not too late. Quit feeling sorry for yourself, stop the entitlement b.s., realize the advantages of living in these times and seize the day. Listen to someone over 30. We said “don’t trust anyone over 30” because of the feelings of exclusion we sensed in the 1960’s. But we got over it (and over 30). You guys need to get over it, too. In 30 years, the Chinese aren’t going to give a damn about your feelings. While you’re tweeting and texting, they’ll be terrorizing and taking over. But they’ll let you keep your X-Boxes, to play with at night.

Start using your common sense to temper what you hear, marching in lockstep to what media and professors dish out. Figure out that opinions are just that, but that some of them are worth questioning. Examine. Don’t just parrot talking points. Be gracious and open-minded, which means you are willing to listen to other points of view and see where some or part of those views have validity. Be better than your elders but don’t disrespect them. Become knowledgeable and trustworthy of running this republic so we can get some rest and reduce the stress and anxiety coming after 40 or more years of labor. Give us a reason to help you overcome your real fears and barriers by being civil and human. Don’t shout at us. Grow up. And grow better.

Gingerbread People

The Oldest Man in the World

There are a lot of things that “define” the holiday season. For the last two months of the year our senses are overloaded with sights and sounds of the transitioning seasons- changing foliage, front doors and yards littered with festive decorations, and holiday music everywhere you go. Yet, nothing lets you know it’s the holiday season more than being wrapped in a blanket of warmth created by the smell of hot cinnamon, ginger, and nutmeg filling the air. There are so many things spice filled goodies that we bake for the holidays- pies, cakes, cookies; but I believe the most iconic of all of them is the gingerbread man.

Granted, gingerbread comes in many forms- round fluffy cookies, thin crispy cookies, gingerbread cakes and even lattes! Something about these warm spiced little cookies cut into the shape of small people just speaks to the spirit of the season. They put a smile on anyone’s face, young or old, especially when made by hand and decorated by someone you love. But did you know that these little guys originated back in the 13th century? Gingerbread was first made in Europe during the 13th century where it was believed to carry medicinal benefit.

It wasn’t the 16th century that it became a man… that makes the Gingerbread man over 500 years old!

It is recorded that Elizabeth the first had gingerbread people made in the likeness of her important guests, and would present them at feasts and ceremonies that they would be attending.

Today we make gingerbread men with our friends and children to look like ourselves and others as a gesture of kindness, love, and appreciation. Some feel that the overall gesture in addition to the warm spiced flavor-profile is a well rounded representation of love and affection towards others. There are stories about the Gingerbread man that we have been telling for centuries. It’s not like you know any good stories about a pumpkin pie… I think it’s safe to say that we all love the gingerbread man as a bringer of holiday cheer.

So stop reading, and start sharing! I’ve included this recipe so that you can share some holiday warmth and cheer with your own loved ones. I hope you enjoy it!

Ingredients: 3 cups all-purpose flour 1 1⁄2 teaspoons baking powder 3⁄4 teaspoon baking soda 1⁄4 teaspoon salt 1 tablespoon ground ginger 1 3⁄4 teaspoons ground cinnamon

In a small bowl, combine dry ingredients: flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves. Use a whisk to gently incorporate them.

In your mixer bowl beat butter, brown sugar, and egg on medium speed until well blended.

Add molasses, vanilla, and incorporate dry ingredients in small additions.

Divide dough in half and wrap each half in plastic and refrigerate for about an hour.

Preheat oven to 375 degrees Fahrenheit.

Grease or line a few sheet pans with parchment paper.

Lightly flour your surface before placing a portion of dough onto it. Sprinkle the top with flour and lightly coat your rolling pin of needed.

Depending on how big and thick you want your gingerbread men to be, roll the dough to between 1/3 and ¼ in

1⁄4 teaspoon ground cloves 6 tablespoons unsalted butter 3⁄4 cup dark brown sugar 1 large egg 1⁄2 cup molasses 2 teaspoons vanilla

thick.

Use additional flour to avoid sticking while cutting your cookies. You can dip the cutter in flour in between cuts.

Place your men on the baking sheet, but leave enough space in between them so that they do not become Siamese twins. Bake each sheet of cookies for about 8-10 minutes. For thicker cookies, an additional few minutes make be required.

Gingerbread is sometimes hard to judge as far as the done-ness because of it’s already dark color, but the less time you bake them for, the softer they will be. When the cookies are done, allow they to cool for a few minutes so they can stiffen up slightly, before removing them from the trays.

This will ensure that we don’t lose any arms or legs.

After cookies are cool you may decorate them any way you like, or just eat!

Lorenzo’s has closed but it’s now taken form as Lorenzo’s in

Pearl River at the old Mama’s Kitchen with the original Lorenzo’s owners. It makes sense to reactivate this venerable eatery, which was reopened late last year under a cutesy bayou theme and never made it very far. The new location Lorenzo’s is closed on Sundays but open 5am-3pm Monday through Wednesday, 5am8pm Thursday and Friday and 8am-8pm Saturdays. Thursday is Steak Night and reservations are suggested.

Nay Nay’s is the newest place to dine in Pearl River. Located in the old Big Easy diner on the Highway 41 Spur, this new operation offers breakfast, lunch and dinner seven days a week, with hours from 9AM to 4Pm on Sunday and 5AM to 9PM the other six days. The expanded dining area is welcome and owners Nay Nay and Mike Brewer promise you a great meal at an affordable price no matter when you come in. Look for Jim’s Feed’s big white chicken as a landmark.

A New Orleans area street side tamale stand company has opened an enclosed location in Slidell with reasonable prices for quick tamale takeout. After 40 years exclusively on the West Bank, Old Style Tamales has taken the outparcel building on Pontchartrain across from the old Lishman’s Grocery in Slidell.

Look for the garish yellow building that has been everything from an ice cream stand to a coffee shop. They promise to open seven days a week and offer very spicy tamales, boudin, nachos, sausage, homemade chili and a host of other things sweet and salty. Either Momma Joy Buwe or son Don are always there.

Whispers closed on Front Street. Wow - is anyone surprised?

Nothing makes it for long in the old Icehouse location and as long as there are people out there with more money than sense, they’ll always be a restaurant of some type at that location.

Amazing Italian Meatloaf Sandwich…

Well folks its me again. Hoping that you have been enjoying the recipes that I send your way. I know that I like cooking them and eating the results. I have been trying to keep them simple to follow and easy to cook. The one that I have coming up has an interesting story to go with it. My father, for a time in his life, was a New York City fire fighter. The way the schedule was set up, he ended up with quite a bit of time on his hand. As with most FDNY firefighters that meant he had a side job. For my dad that was being a general contractor. He used quite a few of his work mates, who had their hands into many of the building trades, as subcontractors. Every now and then the men he hired were independents.

One of the was Joe Amole, a first generation Italian who spoke very little english but was quite the accomplished carpenter. I really enjoyed working on days that Joe showed up. The main reason was that his wife, also just over from Italy, made him the greatest lunches in the world. You can’t imagine the dishes she would send him to work with. That I am not going to get into, but what I remember really standing out, was that everyday that lunch included a meatloaf sandwich. Now her meatloaf was something to behold. On most days, Joe never got to the sandwich because he had so much else in his lunch box. On some of those days I would be the lucky one who got that sandwich.

There was a line-up of others who loved to get that morsel of heaven, but it was usually me. Over the years I learned that her meatloaf was not unusual in the Italian community. I am going to pass along this recipe and hope that you enjoy it as much as I have.

Start off with getting two pounds of 80/20 ground beef and one pound of breakfast sausage. Next mince one large onion, one large bell pepper two stalks of celery (the holy trinity}, six large cloves of garlic and two medium spicy peppers of your choice. Gather together four eggs, beaten, four hard boiled eggs, six to eight large spinach leaves, one and a half to two cups of Italian bread crumbs, two teaspoons of each sweet basil, thyme, oregano and dried parsley. You will also want one half to one teaspoons of crushed red pepper, one tablespoon salt, one half tablespoon ground black pepper, one teaspoon ground white pepper, one half teaspoon of each cinnamon, nutmeg, granulated garlic powder and onion powder. Next get four strips of bacon (your preference), one and one half teaspoon crushed fennel seed and one tablespoon of celery seed. You will need one half cup and one whole cup of catsup, three tablespoons of worcheshire sauce and two tablespoons of Kitchen Bouquet. In a large mixing bowl you are going to add every thing but the hard boiled eggs; the spinach, the bacon and one half cup of catsup. With your hands, mix everything thoroughly and set aside. Get a large deep dish baking pan and spray with pam or wipe with cooking oil. Start to form your loaf, and then using the side of your hand form a groove the length of the loaf. You will then line the groove with the spinach leaves leaving one third sticking out on both sides. you will then lay one strip of bacon and the hard boiled eggs end to end in the groove and then the next strip of bacon and the fold the remaining spinach over everything in the groove. Now continue forming your loaf while trying to completely enclose your “stuffing”. Try to make sure the stuffing is centered. Now place a small groove in the top, center of your loaf. On both sides of the groove lay down strips of bacon and then pour the remaining half cup of catsup over the top. Bake in a 375 degree oven for one hour and ten minutes. Let stand on a cooling rack for fifteen minutes and serve with mashed garlic/

parmesan mashed potatoes, string beans and stewed tomatoes. Now here is the hard part, try not to eat it all in one sitting. For lunch the next day slice half inch slices of meatloaf and put on your favorite bread with mayo on one slice and catsup on the other.

Mrs Amole always sent Joe a couple of slices of ripe red tomato and provolone cheese in case Joe wanted to fix up his sandwich as if it wasn’t a meal by itself.

Sorry that I don’t have a picture to accompany this recipe but if you make it I guarantee you will get the picture. Now here is something that people who bring their own lunches do not do, but Joe did on a daily basis. He always had a glass of red wine with his lunch and it was in a small mason jar. He couldn’t understand why everyone didn’t to the same. He usually had, as he called it, “a cheap table chianti” or at least a Gallo Bros. table wine. He said it was part of the flavor. A lot of times it was served on half a loaf of Italian bread in what he call a “hero” but down here it would be called a poboy. So go ahead and wrap your lips and mind around this meal, and enjoy.

PROTECT TROPICALS IN COLD WEATHER We all know that it gets cold in the winter time.

Plants, on the other hand, do not “know” this.

They respond to certain environmental cues that occur every year like the shortening of day light, the change in quality of light, and decrease in temperature. Things get a little interesting when you start growing plants from different growing climates.

We have all experienced plant death from freezing temperatures in our gardens. Those beautiful tropical plants like hibiscus, mandevilla vine, and bougainvilla are not native to southern Louisiana and therefore are not able to prepare for the winter time like our native trees, shrubs and flowers. They will need some assistance in order to keep them from freezing. You will need to cover tropical and semi tropical plants with something to help keep the plants above freezing temperatures. You can accomplish this by using several different types of material. Plastic visqueen, frost cloth, agribond, and household sheets are all effective. The trick is to make sure that you are covering them to the ground on all sides. The idea is to cover the plants late in the afternoon on the night before. By covering these plants we are actually making a temporary greenhouse and using the trapped heat inside to give tender plants some protection. Last but not least, remember to remove the coverings as soon as temperatures begin to return to normal, especially if you used visqueen or other plastic type materials. You could cause harm by leaving it on throughout the day.

BABY CAKES? Are you SERIOUS!?

With what is undoubtedly the most stupid name for a sports team ever, the brain-dead management trust of the New Orleans Triple A baseball franchise announced their team will be called the Babycakes.

Spouting a rhetoric that made Hillary Clinton and Donald Trump sound like sages In comparison, the general manager of the team, aptly named Cookie Rojas, came up with a name from over 3,000 entries - a name no one in this area uses for a King Cake or anything else. What a relief from a post-election fiasco but what an incredibly obtuse decision by an organization who obviously has more money than moxie. We now know what a half-baked enterprise looks like. It won’t take much to make this team fall as they cook in the oven known as a New Orleans summer.

Mark my words: this team will crumble under pressure. Watching their average abilities will get stale quickly. Instead of a bunt, we’ll have a Bundt. At least make them a Devil’s Food Cake. The team’s logo is a caricature of a 65-year old angry, bald man supposedly a baby, coming out of a King Cake, brandishing a bat. Nightmares will come from this “babycake” logo. This team will become the laughingstock of the league. And the icing on the Cakes will be the Mardi Gras colors they will wear. Maybe they can throw beads and become a mystic krewe by masking. Every other player will envy the catcher, who probably will retain his mask even while at bat. The team’s new theme song should become “MacArthur Park” (‘someone left the cake out in the rain, I don’t think that I can take it, ‘cause it took so long to bake it, and I’ll never have the recipe again…oh, nooo!! Oh, Nooooo!’)

Oh no! is correct. The old ‘Ain’t Bags will resurface at the baseball park as hundreds of baseball fans enter the Witless Protection Program against ignorant baseball executives. The meaning of baseball terminology will change (“the ball is slicing down the line, topping third base, the batter clinging to the bowl, icing the victory!…”) The owner’s decision goes to show you can have your Cakes and Edict too. The new mascot should be the Pillsbury Doughboy. Or, in a closely related field, Yogurt Berra. Maybe fans will boycott the stadium and the owner won’t make enough dough. Then he’d get his just desserts.

He should hire Dusty Baker as his manager. Consider calling the team “The Angel Food Cakes” to closely follow the California Angels of the American League and compliment the Saints with another celestial entity. But now a four-ball at bat will become a Cakewalk. The rallying cry at the field will become “let them eat Cakes!” or “I scream, you scream, we all scream for ice cream and Cakes.” Diabetic fans will have to take certain precautions and Jenny Craig will have to be consulted. Sponsors could include Randazzos and Gambinos. Instead of innings, there will be fillings. Wait ’til you see what the concession stands will come out with! Or sports headlines: “Other Teams Pan Cakes”. “Manager Plays Patty Cake With Bullpen.” A batter’s “sweet spot” will be all over the place. The team will record carbs, not RBIs. The Babycakes. Don’t that take the cake! The old ballpark will become The Field of Creams. Or The Cakebox.

There will be layers of management to run the team. I think I’ll finish this off and listen to my oldies “Sugar, Sugar”, “Sugar Shack”, “Brown Sugar”, “Baby Love”. Sweet dreams, Zephyr fans.
