The decline of what most of us would consider an adult atmosphere in Tiger Stadium continues in 2017. Now it apparently is affecting the student base for which it was created over the past 15 years. I’m talking about what Saint fans would call “crunk” music but basically its nonsensical, in-your-face audio played at levels physically painful to anyone over 30, which happens to be about 95% of the people sitting in the stadium and paying for this experience.

This year, LSU has added screaming, jumping up and down videos of select players urging fans to make some noise. But the vast majority of LSU paying fans don’t want this crude, juvenile approach to the game experience. One can’t even hear stadium announcer Dan Borne’ anymore.

The pregame buildup has even taken a hit. Much of the video is dated and the new stuff is meh. The timing of Dan Borne’s routine before the team comes onto the field has been messed up for the past three years, with either the team not waiting for his verbal cue or the person holding the Tigers back from their rush to the field is not with the program. In either case, it’s like a misfired missile and the effect is underwhelming. Fireworks and cannon notwithstanding, the pregame routine needs to dust off some effective audio/video from a few years back, create some goose-bump causing new video and build drama.

The band’s routine also has gone flat and is so predictable with no toe-curling moments that it is just “ow!”, not “wow!”

I mean the new condiment dispensers, the clearedout southwest corner of the stadium, the marked improvement in many of the restrooms and keeping those restrooms supplied with necessities are all good things. What’s not is the total ignorance of what the fan wants for their non-football game entertainment and food. An ambitious menu as promised for fans has not been implemented although at least one ethnic cuisine booth has been opened on the south side.

Speaking of the south side, how are fans in the south end zone seats expected to keep up with statistics when they are flashed primarily on scoreboards behind them? And with all that horizontal video, why aren’t play-to-play statistics shown on that video instead of a constant LSU-LSU-LSU flash? Referring to videos, many of the school spokesmen and women on the video board are hard to understand and many fans may not know who they are. Why not run a text identifier not only for them but for the dozens of on-field athletes and others shown live?

Hey, we would like to know and it is not always easy to understand Borne’ with a p.a. system that hasn’t been upgraded, apparently, for some time. None of these changes would cost much, if anything, and perhaps the loyal LSU fan will give leaving the game early a second thought before bailing in the second half. They’ll at least have enjoyed the first half’s non-football activities and the school does have complete control over that aspect of the Tiger experience.

Back to the football matter at hand. The LSU Tigers began this season with the sketchiest numbers of quality offensive and defensive linemen in many a year. Academic, behavioral and skill set issues leading to attrition in these ranks have set the Tigers up to fail unless everything else works nearly perfectly. Forget it. There are so many problems on this team that even the Saints look better at this stage.

1. There are no leaders on offense, few on defense. Your senior quarterback is just realizing this? There are no “jersey grabbing” fanatics willing to head knock a teammate into being more aware, more disciplined, more passionate. This has been a problem for several years as leadership just hasn’t been part of the Tigers’ fabric since 2011. Defensively, it should be Christian LaCouture, Donnie Alexander and Corey Thompson but the leader seems to be Devin White with his ten quieter compatriots. The secondary’s lack of leadership (except for Greedy Williams) is so transparent it hurts.

THIN NUMBERS, THIN DISCIPLINE, WILL SINK TIGERS IN ’17; OFFENSIVE AUDIO, BORING ROUTINES WILL DECIMATE THE ADULT FAN BASE EVEN FASTER

A regular newspaper sports reporter said it best: LSU is a collection of talent, but not a team. It’s not the first time this has been true over the past several years but in 2017, the lack of numbers on both lines is exacerbating the problem even more. And more ominous these days is the lack of spirit and the attrition of students at the games by halftime. In years past, you could always depend on at least 90% of the students staying to the final gun for virtually any game, no matter how gruesome. Not any more. The Chattanooga game attrition of 80% of the students by the 3rd quarter I attributed to fall-like weather and a reversal of spring fever among feverish LSU students. However, last Saturday’s similar exodus by the student body was just that. Even so-called music targeted to the 18 to 25-year old may be falling on bored or perhaps even deaf young ears so they are no longer entertained enough to stick around for a lousy game.

When the coach gets p.o’d at the media over another Frank Herron question, it’s time to realize that this overrated Memphis senior is just that. Herron may have other issues, but he’s just another dud on the defensive line recruiting assembly line. But others are not dressing out and when the coach lumps injury and discipline no-shows together, what are inquiring media folks suppose to think?

3. The offense is too complicated for this bunch. What else can you say? You don’t take some of the wraps off in Starkville when you lose a touchdown and the lead on a bum call? Hell, we just got rid of Mr. Conservative and we don’t need another round of playing scared on offense.

And then your offense is even more of a Keystone Cops exercise against Syracuse despite those three long passes leading to or resulting in a touchdown for the Tigers? Any response to that, Coach O? 4. The personnel package is not set up for a 3-4 defense. No big body nose tackle depth inside plus moving defensive tackles into positions they cannot handle well has hurt the team. In fact, unfortunately, this team’s personnel package isn’t set up for a 4-3 either.

5. The secondary is the worst in recent Tiger history. Name one leader not named Greedy. And he’s a true freshman.

6. The lack of spirit on this team is appalling.

7. Say - maybe these Tigers can set a new NCAA record for penalties per game…..nah, Miami’s records will never be broken. Maybe a league record? (At least they improved against Syracuse) 8. Can you say “consistent kicking game?” Didn’t think so. Now the starting punter sucks as well?

9. Ever notice how small and scared the team appears to be in road venues? This goes back at least 20 years. Guys - how about acting like you are Alabama and not Ali Baba?

10. Hey, coaches….earn your money! There were about 80-85,000 for the Syracuse game and probably only 65,000 will show for Troy. Fair-weather Tiger fans? For the money that’s charged, it’s not fair-weather anymore, it’s discretion. If you want to stink up the place and offer tired bromides for answers, well, too many older fans don’t want to spend 12 to 18 hours getting to the game, fighting for a parking space and then wait up to an hour to leave campus after the contest. You guys are spoiled and I, for one, am tired of the same old b.s. about student athletes and why we as fans pay so much when the players don’t share in the bounty. Your coffers are full and we do appreciate the changes in the venue, but honestly, that’s not school money, that’s TAF cash and vendor money.

So, can the crap and put out a product we can enjoy and be proud of. So far, it’s way too Les Miles-like and that’s a cuss word in my book.

If you think these are only my warped opinions, listen to the words of former All American Marcus Spears from his SEC Network show last week. “Thinking Out Loud”. The former LSU and NFL star has said he believes the LSU football program isn’t a football power anymore. Spears said the Tigers have become “a mediocre team and a middle of the pack, very average college football program.” Spears continued by saying “We have to stop believing that we are one of those teams that at the end of the year is going to be standing tall.” Citing LSU’s SEC record since the 21-0 loss to Alabama in the 2011 Championship game, Spears said the 25 and 16 record translates into a 61 percent winning record which may not be awful but “that’s average.

That’s mediocre.”

LSU Roster Analysis: Of the 110 listed players, only about 70 realistically have a chance of seeing the field this year. There are 16 offensive linemen and 18 linebackers listed on this roster - more than one-third of the roster for these two positions that are supposedly “thin”. And there are 17 listed wideouts as well….nearly half the roster for those three “thin” positions when added to offensive linemen and linebackers.

The truly thin position on this team is the defensive line and there’s no fixing that this year.

Converting defensive tackles to nose tackle is not working well and neither is moving them to the outside defensive end position. Is there any way of converting any of these non-playing offensive linemen to the defensive side? Has LSU’s strength program gone in the toilet after watching the team’s play against Mississippi State? If things don’t change, we’ll need to add another Coach Orgeron slogan to another weekday: Stink It Up Saturday.

Chinese Style Shrimp Toast

A few years ago, I prepared a particular appetizer for a charity event that turned out to be a huge hit; Chinese Style Shrimp Toast. Recently, I fixed it for 100 older guests, and after only one week these seniors are calling back my shrimp toast for an encore. When you find a recipe that works, and it becomes a crowd pleaser, stick with it.

Shrimp toast by name might sound odd to someone who has never had the pleasure of savoring that crunch and flavor at their favorite Chinese restaurant. It’s not the number one item on the appetizer list when ordering from the menu, but next time order shrimp toast instead of egg rolls, spare ribs or crab Rangoon. I recommend fixing shrimp toast for your next gathering for game day. It’s easy to prepare, and I guarantee, young and old alike will devour them.

Shrimp toast was created over 100 years ago in Canton, China as a Dim Sum item. Dim Sum is an appetizer served in more authentic Chinese restaurants as a tea-brunch where carts filled with steamed or fried small plates go from table to table as patrons pick from a variety, and served with hot Chinese tea. I’ve ordered shrimp toast off the carts in Chinatown, and they are deep fried. I tried baking them at home as a healthier version, but I did not enjoy the final product. It was too dry. The main ingredients are bread, shrimp, egg and water chestnuts.

My version of Chinese Style Shrimp Toast does not include water chestnuts. I did not have any at the time, and I decided to cook without, and they turned out spectacular.

The good part about frying something quickly is that it doesn’t absorb as much oil as you would think. Shrimp toast fry up like a donut. Place the shrimp side down first and gently flip rolling each over. Do not fry the toast side as long as the shrimp side. Golden brown is the color you are looking for on both sides.

Sesame seeds sprinkled on top of the shrimp mixture after its spread on the bread prior to frying enhances flavor to the finished product. The trick for shrimp toast is using fresh oil at a stable temperature, a good recipe, cut the ends off the bread, and before you fry, cut the bread into two triangle pieces. I’ve tried frying the shrimp toast whole, and cut after, but the appearance is not as nice, and it simply tastes and looks more authentic doing it my way. ENJOY!

Chinese Style Shrimp Toast Recipe

Makes about 8 servings

Ingredients: 1 lb. shrimp, small, peeled puree 1 tablespoon green onion, finely sliced 1 ½ teaspoon ginger, freshly grated 1 egg white 1 tablespoon cornstarch 1 tablespoon dry sherry ½ teaspoon sesame oil ¼ teaspoon salt ¼ teaspoon sugar 12 slices white bread, remove crust 6 teaspoons white sesame seeds 2 cups canola oil for frying

Method: In a food processor, pulse the shrimp until it becomes smooth. You don’t want any pieces of shrimp. It should look like a paste. Transfer to a mixing bowl, and fold in green onions, ginger, egg white, cornstarch, dry sherry, sesame oil, salt and sugar. Make sure all ingredients are incorporated. In a small frying pan, make a sample patty to taste for balanced flavor. Adjust as needed.

Trim the crust off the bread. Spread a thin layer of shrimp mixture on one side of the bread. Repeat for all the slices and sprinkle a generous amount of sesame seeds on each slice.

Heat oil to 350 degrees and do not let the oil smoke. Once the oil is at desired temperature add shrimp side down, and allow it to fry for about 1 minute. Flip and cook the bread side for another minute then flip back to the shrimp side down for 15 seconds to make sure all shrimp is fully cooked. Remove from oil to drain, and so the bread does not get too dark. Serve immediately with Cajun Asian Sauce, Plum Sauce or Sweet Chili Sauce.

As we get closer to October, gardeners can’t wait to start getting ready for the harvest season. Soon we will start seeing hay bales, pumpkins, gourds, and cornstalks being put on display to officially signal the fall season.

One of the big highlights of the fall season is the annual celebration of Halloween. The kids get to dress up in costume while the adults stay back Will Afton and hand out candy on the front porch. It is a very exciting time of year for those involved. But what about the garden, how can we get it involved?

Black petunias have been around for several years now but their curiosity is still at an all-time high.

They perform just like other varieties of petunias but they bloom a different color. Like all other petunias, black petunias prefer a full to part sun location with good drainage. Start planting them now and they will flower through the fall into the winter. They might not flower much during the colder months but when pruned and fertilized in late winter, they will bloom again in the spring.

The black petunias do not get as big as the grandiflora types and thus should be planted four to six inches apart. You can help protect the foliage from developing issues by covering the soil with a layer of organic mulch. The irrigation needs of petunias are moderate but supplemental irrigation might be necessary. Fertilize using a general all-purpose fertilizer at the suggested rate.

The first all-black petunia was called ‘Black Cat’ and was marketed as “the world’s only black petunia”. Later it was marketed as ‘Black Velvet’ because of its dark color and velvet like texture.

The growth habit is described as being small and rounded with a diameter of twelve inches. Since the success of ‘Black Velvet’ two other varieties of black petunias were later released. The cultivar ‘Phantom’ introduces a two-tone variegation pattern to the flowers with a chartreuse yellow strip on each petal, collectively resembling a star. ‘Pinstripe’ is similar but has a thin white stripe with pink streaks. Both cultivars offer a unique eye-catching appearance in the garden.

Dark colors aren’t flashy in the garden but they can play a part in uniting the area as a whole. The dark blooms of ‘Black Velvet’ petunias may not immediately grab your attention by themselves, but pair them with a lighter flower or foliage color and both will stand out. Try mixing and matching black petunias with other plants in your landscapes this fall to see what the fuss is all about.

FISH IN THE GRASS ARE CATCHABLE. Notes from Forrest Green’s “Fish Whisperer” seminars in Lacombe every Thursday evening 5-6:30 When you are fishing a shoreline, you are going to encounter a lot of grass.

Most fishing trips on the Northshore are guaranteed that will happen. But you need to fish the grassy areas. How do you do it?

First, make sure the shoreline has enough irregularities to make the fishing challenging. By that, the shoreline needs points, cuts, indentations and perhaps flowing water connecting it to other water features. Second, while reconnoitering the shoreline, keep the sun to your back.

You are looking for grassy areas forming the shoreline and in those grassy areas an abundance of mullet. Now mullet, ladyfish and similar fish are not what you are looking to catch. In fact, they are a nuisance and have really no redeeming Mr. Green pointing out a features unless you like losing a lot of live grassy shoreline. bait and watching fish leave your hook mere seconds after they bend your rod.

What the mullet have is an incredible resemblance to speckled trout, and that’s what you want to catch.

So now you’ve found a promising grassy shoreline with a mullet population. What do you do? Well, the first thing is to have the head of any lure that you can change out flatter and more streamlined than the typical round-headed leads. Throwing these lures into grassy areas will rarely snag that nasty grass and you’ll spend less time cleaning your lures off and actually finding fish in the grass that might strike your lure. But the real challenge is to keep the lure along the shoreline’s varied topography. Scooting your lure out of the area next to the grass into the sandy areas found much of the time will result in more strikes from hungry or aggressive specks. Remember, all these fish have a lot more patience than we do. So we need to make sure we appeal to their stomach or their machisimo to get action on the end of our fishing rod.

Since you are usually fishing in water no more than 4’ deep, use as light a lure or jighead as possible, no more than 1/4 ounce if possible. You want the action to cut through the water or quickly clear the grassy areas without disturbing the vegetation. Fish these areas, alternating between shorelines close enough to reach from a central point. If the action is slow, find another spot. Cut across the grass if you have to. As outlined before, if you see something on your favorite lures that you think would improve its appeal to your prey, bend it, straighten it, push it, cut it or trim it to see what it might do. Someone did that before to design your lure and hundreds of successful fishermen alter their tackle on a regular basis: You just don’t know it.

To keep your treble hooks from hooking up everything, wrap them in aluminum foil until you’re ready to fish with them. If a spot does not produce for you, don’t forget to return to that spot when tide, water depth, clarity or temperature change. This mornings meh! spot could be the hotspot by 2PM. You as a fisherman must challenge yourself to make those decisions. If the tide stops moving, move with the tide that is moving. The fish move with the tide if they’re really hungry. Work a little. The tide doesn’t move the same in all areas. Find out the variables and be ready to follow the tide, no matter how subtle the change. Subtle changes could be the difference between coming home with a limit or returning home with a disappointed attitude.
