BITTERSWEET BALLADEER WILL REMAIN GENTLE ON MY MIND

The passing of Glen Campbell at 81 was a peaceful ending for a troubled Arkansas performer who took the confused musical scene of the late 1960’s and opened up a new wave of crossover sound that remains with us today.

Glen Campbell never learned to read music but with the help of songwriter Jimmy Webb and others, Campbell rode supreme from 1967 until 1975, performing on stage, in the studio, in a John Wayne classic (I missed meeting him in 1969 because of a toothache but that’s another story) and during a five-year television variety show. He was much like the subjects of his songs, a man who began his career making others such as Frank Sinatra, The Fifth Dimension and the Beach Boys sound good as part of the Wrecking Crew, one of the two greatest collections of studio musicians in American history, along with the Swampers.

Campbell’s songs were bittersweet love affairs. His five greatest hits all addressed a different part of the man’s persona. In By The Time I Get To Phoenix, Campbell told of the inevitable end of a love affair in Los Angeles as he makes his way out of the Southern California city one evening, reaching the Arizona city as his lover wakes to find him gone. Her reaction is a smile, “ ’cause I’ve left that gal so many times before…” But by the time Campbell approaches his native Arkansas “ by the time I make Oklahoma…” it is obvious this time Campbell’s alter ego (perhaps himself) has finally had enough or reached the level of sufficiency to walk away, leaving “the note I left hanging on the door…” In Galveston, Campbell is a soldier in Vietnam, thinking about a carefree teenage and young adult life with his girl “on the beach where we used to run…” He admits his fear “I am so afraid of dying’……. as he deals with the minutiae of war. Rhinestone Cowboy is his career statement. It’s Hollywood and Vine, wrapped up in Broadway with a little Midnight Cowboy thrown in.

“There’ll be a load of compromisin’, on the road to my horizon, but I’m gonna be where the lights are shining on me….” Campbell showed little effects of the compromising during his career but broken marriages, affairs and drug use preceeded his ultimate fatal battle with Alzheimers.

business….”I know I need a small vacation, but it sure looks like rain, and if it snows that stretch down south will never stand the strain….” Campbell as Everyman, which I truly believe he was, blessed with an incredible talent level and good looks. My final Campbell favorite is the one he started his show with every week….”It’s just knowing’ that your door is open and your path is free to cross…..’Hi, I’m Glen Campbell!’….that makes me tend to leave….” Gentle On My Mind will remain my favorite Campbell song for many reasons. It was his first big hit and despite Rhinestone Cowboy, it never got any better than that…sort of like Conway Twitty and It’s Only Make Believe, which Twitty told me in 1973 was the best song he ever did and was his favorite and his biggest hit. Like Campbell, Twitty had monster success with crossover songs, starting with Make Believe in the late 1950’s. Two, it was the happiest Campbell song, a man at peace with himself as a carefree wanderer, a hobo in fact, not tied to conventionality “and it’s knowin’ I’m not shackled by forgotten words and bonds and the ink stains that have dried upon some lines…” Three, it was the most poetic song ever written for Campbell “….It’s not clinging to the rocks and ivy planted on their columns now that bind me… Or somethin’ that somebody said because they thought we fit together walkin’…. And my favorite lines of lines, all of which are the very best ever penned for Campbell…. “I dip my cup of soup back from some gurglin’, crackin’ cauldron in some train yard, my beard a roughenin’ coal pile and a dirty hat pulled low across my face, through cupped hand, ‘round a tin can, I pretend to hold you to my breast and find, that you’re wavin’ from the back roads, by the rivers of my memory, ever smilin’, ever gentle on my mind…”

Though Rhinestone Cowboy was his biggest crossover hit, two songs remain my favorite Campbell pieces. Wichita Lineman is a simple song, similar to Galveston. However, Campbell is a blue collar utility worker in this song, laboring at a trade in an unforgiving section of the country, southeast Kansas. His concern over an unmentioned love “…and I need you more than want you, and I want you for all time…” is tempered by his need to take care of

REPAIR OR REPLACE WITH NORTHSHORE PLUS!

TIGERS PREPARE TO FACE 2017 WITH FINGERS CROSSED With just two weeks to go before the LSU Tigers fly “home” to play their second “home opener” in Houston, the Tigers have a number of issues facing them. The most important is whether Matt Canada’s offense will really work and do the Tigers have the offensive tools to make it function smoothly. An experienced but paper-thin offensive line will be called on to perform more intricate blocking schemes than under the tutorship of Les Miles. Tight ends and fullbacks are learning a new hybrid position. Wideouts are unproven and a true deep playmaker has not emerged from this group. Quarterback is in the steady hands but on the gimpy back of Danny Etling, now a senior who last year at this time never thought he would be the starter in Baton Rouge. LSU’s best hope with playmakers begins in the backfield, where Derrius Guice has already made most Tiger fans put the exploits of Leonard Fournette in the history book. Guice has the bounce and the body to surpass Fournette’s numbers and should be the best runner in the conference and perhaps the country. Darrel Williams and others back his play and LSU should not worry about packing the pigskin. Defensively, you really need a program (and an app) to keep up with David Aranda’s schemes and positions. Suffice it to say that the haul of younger players coming in this year leans more heavily towards the stop sign squad. This team has more young talent at linebacker and in the secondary than they’ve ever had and if Arden Key comes back to his All American form and the Tigers can muster some blocks of granite on the defensive interior, these Tigers could be special. This defense will definitely key itself (no pun intended) to stopping gains over three yards with the talent and muscle in the middle, on the edge and in the backfield. This might not be your father’s defensive tackle talent, but it’s definitely not your father’s linebacking talent either. How ironic that teams wanting to move on LSU will try the middle of their defense more often than any other mode of attack. The beef is not there in spades as per usual but there could be enough on hand to keep all but Alabama guessing and frustrated. Speaking of Alabama, this could be a relatively down year for them…. sort of a rebuilding time, if you will, if indeed, ‘Bama has to rebuild ever as opposed to reloading.

Their defensive line should have taken a step or two back but with Nick Saban, you never know.

This is a strange scheduling year for LSU, with only six true home games and only three league contests October is a disaster if you want to see LSU in person; only Auburn comes to town while the Tigers must visit Ole Miss and Florida while having the last weekend off before the Alabama game. Four of LSU’s five September games are non-conference, with only Mississippi State hosting in the first month, while the Tigers play BYU, Chattanooga, Troy and Syracuse, all “home games”, including home away from home Houston at NRG Stadium, where the Tigers re-energized their alumnus fan base in this vital petroleum-based city with a win over the Wisconsin Badgers. Unfortunately, the Purple and Gold don’t go to Lambeau Field this year. Last year, that road trip was the best my wife and I have ever taken. The first major college football game in Green Bay ever…and 30,000 of the 78,000 in the stadium that day were Tiger fans.

In other Tiger news, former coach Les Miles is rumored to begin a play-by-play and color analyst career with Fox Sports or some other charitable sports organization. If he goes to Fox Sports, they will have to adopt their mother network’s news credo, “Fair and Balanced” but change it to “Fairy Tales and Unbalanced”. Whoever offers Miles this type of gig is doing LSU’s accountants a favor because, ostensibly, he will be paid to do this thing and thus his silly contract with LSU will be no more. Miles said “I’m a guy who knows a lot about football.

Certainly the situation and adjectives that describe college football are going to be something I’m easily accustomed to. I’ll be able to tell you after the first quarter what thoughts are going through the coach’s mind…..but I’d like to be very accurate.” Cool it, Les! There’s a thousand comedians out of work and you’re going to try to top them? Les, you don’t even know what an adjective is! You’re “easily accustomed to the situation and adjectives that describe college football?’” But not verbally, huh? Maybe you can tweet your thoughts, Les. Birds tweet. And you’re certainly a strange bird if one ever walked onto a football field. We can hardly sit still in anticipation of you telling us “what thoughts are going through the coach’s mind” after the first quarter. For a guy who can’t time manage a team, you’re telling us you’ll be able to figure out when the first quarter is over? And what the coach is thinking? “But I’d like to be very accurate.” That’s the knee-slapper, Les. Accuracy in all things verbal. Coming from a man who questioned the “chest” of a recruit. Stop it, Les….you’re giving me a chest attack! And Les….the color man during a game has to have a great deal of verbal dexterity to go along with an ability to reach into the past and the smarts to describe various offensive and defensive schemes. You’ll have to say more than “this reminds me of Bo Schembechler’s scheme at Michigan where I was a lineman and we pounded the rock 85% of the time.” Network sports television must be in dire straits to consider you as an answer to a serious sport fan’s prayer. No kidding, Les. And back to coaching? As a position, non-verbal assistant, maybe.

Organic prices at Slidell’s or most community farmer’s markets are the same or less for truly organic fare than the prices you pay at a grocery or specialty store for less than organic produce. You may be inspired to try your hand at a small organic home garden as well.

Why eat organic? You may be wondering what all the fuss is about concerning overpriced organically grown produce when you can pay less to eat its conventionally grown counterpart.

I mean, they look basically the same except for that waxy coating. This may seem as if it is the only difference; however, let’s take a closer look.

The way foods are grown and raised can impact both your health and the environment. Organic produce must be grown with specific requirements being met and maintained to be labeled as organic. Organic farmers are not allowed to use synthetic pesticides, GMOs or GEs (genetically modified organisms), petroleum-based fertilizers or sewage sludge -based fertilizers. Avoiding these toxic chemicals sure sounds like a great reason to include organic produce in your diet.

Organic produce is not exposed to toxic chemicals that can negatively interact with the vitamins, minerals and organic compounds that make them viable for prevention of degenerative disease. By choosing organic produce, you increase

the intake of nutritionally desirable antioxidants. Since we live in the South, most of us need plenty of desirable antioxides” because they specifically help promote liver and kidney functions. Organic farmers rely on biodiversity to naturally reduce the habitat for pests. They also purposefully maintain and replenish the fertility of the soil. Being from Louisiana, we should certainly be able to appreciate the value of caring for our precious soil.

So why eat organic? Because investing in your health and our local environment benefits us all. Next time you’re out shopping at the Camellia City Market, talk to our local farmers about their farming methods. Spend some time with people like Ernie Berducci, an Amite area grower who has been working his fields for morethan 60 years. Even though they may not be certified due to cost,

Use both the farmer’s market and the local grocery to select your choices for organic products because neither one has everything that the other features and it will not only ease the cost of spending more for organic but also give you a chance to learn how you can have a healthier and tastier food lifestyle.

Listen to those who understand organic in the grocery stores as well. Try cutting out one comfort food boxed product and add one organic selection per month until you realize the benefits of doing so.

We forget about the wonderful taste of garden grown products, even those grown using some commercial fertilizers and pesticides. Think how much tastier and healthier these items would be coming from your organic garden and/ or by switching part of the relatively small portion of your weekly grocery spending on produce to organic. We grudgingly pay double for beef than we paid a year ago; produce, even organic, hasn’t gone up anywhere near that percentage. Everyone will be happier and it remains a win-win situation for all.

Here’s an easy-to-use guide on how to identify produce when grocery shopping at the store. Conventionally grown has a four-digit code, GMO or GE products a five-digit code starting with 8 and organically grown produce has a five-digit code beginning with 9.

Roses are synonymous with gardening culture and have been grown in gardens for hundreds of years. Some of the flower forms and color combinations available are truly remarkable. From the long stemmed hybrid tea roses to the multibranched floribunda roses, there are several rose types that can appeal to any landscape situation. Follow these easy steps to prepare your rose bushes for the fall.

1. Using a pair of sharp hand pruners, remove any broken or damaged branches from the bush.

2. On the second pass, look for and remove any branches that rub or cross.

3. You may lightly shape the top but do not remove more than one third of the bush height.

4. Remove old leaves and pruning debris from the garden bed. Dispose in a trashcan to prevent the spread of blackspot disease 5. Apply a light application of general all-purpose fertilizer. There are several products that include roses in the label. Some of which also include an insecticide if insect problems are of concern.

6. Apply a fresh layer of mulch and water everything in thoroughly to complete.

It is possible to transplant roses this time of year but it is advised to wait until later after the fall when the plants go dormant. Transplant survival increases and high temperatures decrease. If you find yourself looking to add a new rose bush to your garden then take the time now to review mail order catalogues and online plant nurseries for information on new and different roses for the coming year. Garden centers and plant nurseries have their best rose bush inventories right after the New Year when the bare root shipments start to arrive.

And to paraphrase the old Jack Nicholson comedy, last week was as good as it was gonna get until summer leaves the calendar in late September. Green spent his last seminar session wrapping up the summer phase of fishing knowledge, jumping from tackle to anchors, casting to choosing a body of water. Green’s advice on anchoring, using the rigs as a setting, was to use a number 8 anchor with a minimum 2 foot chain connector tied to at least double the depth you want to go. So, if 80 feet is your bottom, wrap on 160 to 180 feet of good marine rope. Green spent much of his time talking about reels. One, he likes to keep his reels water-free, so he greases them often. Two, he said to pay attention to the ratio numbers on your reel and wind line according to those numbers to maximize torque. To Green, casting might be the most important part of successful fishing. He’s like a quarterback coach, showing others how to hold their tackle and throw their lines to ensure maximum accuracy. Green believes the more accurate the cast, the better chance to harvest more consistent catches. He says once a big fish gets removed from its feeding spot, the other fish in the (ahem!) food chain line up to take his place, because Nature and fish estuaries both abhor a vacuum.

Discussing poles, Green says he uses a medium pole for saltwater fishing, because you need a little backbone. However, his bass pole is heavier action with a 65 pound braided line “because that line gets caught up in all that junk below the surface.” And Green wants to navigate his rig out of that maze as best as he can. One mistake many fishermen make is choosing a pole designed for crank baits and using spinner baits as well. There are poles for both and Green says fishermen should match their equipment up and make sure it is in top operating condition before they hit the water. He also says you can’t use a crank bait pole for worm fishing. Worm fishing requires a stiffer pole because of the vegetation fishermen encounter. Green likes to keep the “sporting” in sports fishing. “I make fishing enjoyable for me” is his credo, whether casting for food, trophies or the sheer fun of having a fish on his line. If that requires lighter tackle or loosening the drag, so be it.

Green says you learn fishing techniques when you’re NOT catching fish. “Catching fish doesn’t teach you anything unless you’ve used a technique you never used before.” Failure to net means you should take a look around at your surroundings and try to determine what’s working against catching your limit. Sometimes its the water clarity, sometimes its the lack of water flow, sometimes its the depth of your hook, sometimes you just cast to cast and don’t consider the cuts, holes, dropoffs and other natural variations under water that affect your fishing. Learn the banks and the feeder bands of water flowing into your area.

Green says its time for those who have been attending his weekly Thursday night seminars in Lacombe to show him a progress report on what they have learned. Green takes several of his attendees fishing or accompanies them in their rigs. Green favors fishing freshwater “because I love those bass and sunfish” but says his disciples will land “plenty of reds and specks” if they adhere to his advice. Green says he mentors fishermen of all ages because his time on Earth is limited and he wants to pass on his knowledge to those who will help others. Green believes in being nice to others first; the fishing success will follow with practice and observation.

Mr. Green, as we mentioned in the beginning of this article, feels that the last half of August and the first few weeks of September are times when things don’t change enough to continue to offer weekly seminars. Green will return to his talks at Bayou Adventure, on the east side of Lacombe, September 21st, the first day of fall. Meanwhile, Shannon and Jeff Bordelon, the owners of Bayou Adventure, are going to restructure their expansion plans for the back end of their fishing and convenience store to create a learning environment for more folks to gain fishing knowledge. We’ll be visiting with the Bordelons to flesh out their plans and will bring you that story either in our next issue or the issue of September 14th. Meanwhile, we will discuss Mr. Green’s love affair with the various branches of the Pearl River and perhaps get the opportunity to go out fishing with the man they call “The Fish Whisperer.”

On August 21, the entire US will be able to see at least a partial eclipse. The lucky people living along a 70-mile-wide streak of the country will be able to see a total solar eclipse – the moment when the moon crosses between the Earth and the sun, completely blocking out the sun’s light.

Here’s what that path looks like. The eclipse will start on the West Coast around 10:15 Pacific time, and then make its way east, hitting the East Coast around 2:45 p.m Eastern time. Cities that will get to see the total eclipse include: Salem, Oregon; Nashville, Tennessee; Kansas City, Missouri; Lincoln, Nebraska; and Columbia and Charleston, South Carolina.

If you’re interested in taking a road trip or happen to be near the totality area, the National Centers for Environmental Information listed some of the major cities that will get to see a total eclipse on August 21, what time they’ll see it, and how cloudy that day has been historically.

A word of warning for viewing the eclipse: don’t look directly at the sun. There are solar filters designed to let you see the eclipse in a way that will keep your eyes from getting damaged.

Happy Birthday, Julia Child

Augst 15 we salute and celebrate Julia Child’s birthday. She was driven to demistify French food and bring it in to the kitchens of American cooks. Julia Child demonstrated distinct techniques and culinary tips to guide home cooks through favorite French recipes. Her recipes are descriptive to the most minute details. She was passionate to provide the home cooks with inspirational learning experiences. Many of her recipes used lots of herbs, butter and wine.

In the early sixties, Parsley, Sage, Rosemary & Thyme were either words to a song or used dried in a Thanksgiving stuffing. Cooking was forever changed with her new show,”The French Chef” in 1969. Julia’s bold personality brought new herb flavors of French dishes to the American home. Her terms of endearment were, “ Herbs de Provence”, “Fines Herbs”, fresh tarragon, shallots, bushes of rosemary, lots of wine and butter. Lavish spreads like Pate’ and Herbal butters by any other name were just chopped liver and butter, mixed with shallots, wine and fresh herbs. Once she spread it on crusty French bread, they both became a delicious delicacy. No more boring chicken once Julia massaged herb butter around and under the skin and sprinkled with fresh herbs. She became more approachable when she dropped the chicken on the floor and applied the 5 second rule of no germs. She emphasized to leave the skin on the chicken. She said, “I don’t like looking at a naked chicken, the fat renders from the skin and gives so much more flavor.” Her mantra, “Always make extra for big appetites and lunch for tomorrow. It’s always wise to have a little too much rather than too little.” Because Julia’s show was so popular, more cooking shows appeared with different cultural influences and new herbs to explore.

I love this philosophy and use it daily in my cooking and gardens. Now is the time to plant your Fall herbs. The more plants, the better. You can’t expect to plant one parsley and keep cutting off of it every night for yor dishes and expect it to survive. You have to plant several and alternate picking from each, so they can rejuvinate and grow bigger. The more varieties of herbs, the more herbal flavors you can experiment with in your everyday meals. As Julia says,” The only real stumbling block is fear of failure. In cooking (and gardening) you’ve got to have a What the Hell Attitude!” So go ahead. Try to grow some herbs and use them in all your dishes. I like to suggest planting herbs in theme containers or raised beds. An Herbs de Provence container is a must for Fall cooking. Rosemary, sage, thyme, tarragon and lavender require little water and grow well together. And an aromatic bed of green onions, chives, chervil, parsley, cutting celery, sorrel, arugula ,cilantro, fennel and dill. Don’t forget the basil patch to make your pesto. And to inspire your soul, lemon herbs of lemon balm, lemon verbena, lemon grass, scented geraniums and mints will soothe away the fall chill in teas and soups.

JULIA’S POULET SAUTE’ AUX HERBS DE PROVENCE ( The name sounds fancy, but really a simple chicken thigh feast. It is nothing more than chicken saute’d in butter and herbs. You can substitute half buter & half olive oil. But really, why?)

1 stick of butter 2 1/2 to 3 pounds chicken pieces 1 Tablespoon Herbs de provence Salt & Pepper 3 cloves garlic 2/3 cup dry white wine 2 egg yolks juice of half a lemon 2 Tablespoons fresh minced basil 1 tablespoon fresh minced tarragon Heat the butter in a large skillet until it is foaming. Add chicken pieces, skin side down. Saute’ 7-8 minutes. Turn over a few times, not to burn, then flip chicken with skin up.

Season with dry herbs, salt & pepper and garlic. Cook another 20 minutes, turn chicken 2 or 3 times until juices run clear about 140* with instant thermometer. Remove chicken to a plate & cover. Mash garlic with the back of spoon. Add wine and reduce by 1/2.

Add in lemon juice, stir.

In a small sauce pan, beat egg yolks over low heat until thick & sticky to back of spoon.

Slowly add saute’ pan liquid to whipped eggs a little at a time, until a creamy maynnaise sauce begins to form. Beat over very low heat until warm & thickens. Remove from heat. Add fresh herbs and adjust to taste. Spoon sauce over chicken. Don’t forget the French bread to dip!!
