What do you think of when you think of the 4th of July? Freedom, Fireworks, Food and Family Fun are some thoughts that come to mind I’m sure. I think of our Great Country and the amazing families that are right here in Pearl River. Pearl River enjoyed the towns 4th of July Celebration this year with attendance nearly doubling from last year. Thanks to the many local and generous sponsors, families enjoyed the all free event which included hot dogs, watermelons, popcorn, apple pie, face painting, games and much, much more. As night set in, the sky was lit up with an outstanding firework show. This was a fun evening had by all.

Speaking of fun events, my husband and I were able to bring two of our grandsons to the Lairs and Lunkers Annual Kids Tournament last weekend. Founders James Harris, Chad Hartzog, David Howell and Jimmy Howell were extremely happy with the turn out. They were 115 children ages 3-12 yrs. Old participating in this their 18th year of the tournament. The largest “catch of the day” was a 7 lb catfish. The strangest “catch of the day” was a Lady Fish. What makes this so strange is these fish spices normally only live in salt water. Well, welcome to Pearl River Lady After talking to two of the founders Chad and Jimmy, they both said one of the most rewarding parts of doing the Lairs and Lunkers each year is watching the generations that come through this tournament. Adults that now attend with their kids, started attending once as a kidss themselves. The founders agree this is so very special to see happen. I would have to agree too.

We use to bring my son that is now 21 yrs old but now we bring our grandsons from our oldest daughter. This is truly an “all about the kids” free event. Trophies in three different categories go out to 1st through 10th place winners. The top three winners in addition to their trophy also receive a brand new rod and reel and a tackle box filled with tackle. Not one child is left out though, even if they don’t weigh in, each child gets to go to the prize table and pick a toy. With at least 50 volunteers and over a dozen sponsors, this years kids’ fishing tournament was yet another huge success! You too can be apart of bringing smiles to these childrens faces and building memories that will last them a lifetime. Oh and the fishing stories they will have to tell!

Herbs & Spices Do The Tomato Tango With “Maters”!

Summer brings on beautiful gardens, abundant farmers markets with the freshest vegetables and a million tomatoes. The first batch you eat with salt. Then suddenly you have a bowl full.

Now I make my BLT TOMATO PIE. Then when we are getting to bumper crop numbers, I start to make batches of sauce, freeze small batches to preserve their fresh flavor. I want to share my best tomato sauce recipes, from rustic to simply slurpable. I say Slurpable because my sons can just pass by the stove and dip a spoon in the pot and drink it.

Let’s go from the simple to the most cooked. Try NO COOK MARINATED TOMATOES to eat as a salad or to dress over vegetable fritters, totellini, crab cakes, or over anything you want to add a fresh, light tomato saucey vinaigrette. CHERRY TOMATO & ONION BUTTER SAUCE is super simple and easy. I use this on everthing from grilled veggies, steak, chicken fish and pastas.

Just the other day, I sauted the tomatoes & butter, add the trinity( diced celery,onions,pepper), and shrimp and pilled it up on corn grits. I saute’ a small diced onion in 1/4 cup olive oil. As the onions get soft, I add the chopped tomatoes to get soft but not complete mush. Lastly, I add about a stick of butter to become a creamy pink sauce. Don’t forget to add a handful of fresh chopped Basil. This is perfect over ZUCCHINI CHEESE PACKETS. If I’m mixing this in with mussels or to top my grilled fish, I like a Basil & Tarragon combo. I do a ratio of 1 part basil /1/4 part tarragon. I like Basil & Parsley chopped together in the tomatoes with shrimp. Always add the fresh herbs in at the end. It’s like the perfume for the dish!

Next, we go to my GRANDMOTHER’S QUICK SAUCE. If you have a lot of tomatoes, you can puree about 8 large tomatoes to make a fresh puree or you can get two cans of crushed tomatoes and two cans of tomato sauce. You can also buy 4 cans of whole tomatoes and puree’ in the blender or crush through your fingers. Dice a clove of garlic per can, plus one for extra measure,1/2 teaspoon of red chili pepper flakes, 1 Tablespoon dried oregano, salt and pepper to taste. Bring to a low simmer, boil for about 15 minutes. Add sprigs of fresh basil, leaves and stems~Done! There are endless ways to use this quick sauce. Drizzle over fresh pasta or grilled veggies. This is perfect for a fresh steak pizziolla - seared steak swiming in the sauce. Don’t want meat? Make homemade ravioli with wonton wrappers. These are so light and fresh. One more perfect combination Basil & Mint. Together they infuse a tingle sensation. A traditional Friday meatless meal for my family was a frittata made with eggs, parmesan, riccotta cheese and a hint of chopped mint. Drizzle some fesh tomato basil sauce on the side.

Now, If you have a little more time you can be dangereous. Try a MEAT SAUCE. I take a package of Italian sausages and brown the 5 links in a 6 qt. pot.(YOU CAN ADD 1/2 POUND GROUND BEEF IF YOU WANT). Add an onion, diced small. Saute’ until translucent. Add diced 5 cloves of garlic( 1 large clove for each large can of sauce plus 1 or 2 extra), 1/2 tsp. pepper flakes, 2 Tablespoon dried oregano. You can add a teaspoon of sugar if your tomatoes taste a little acidic.

Not more than that or you will make a very sweet sauce. Add 2 large cans of tomato sauce and 2 large cans of crushed sauce or all crushed, or 4 quart jars of home-made fresh tomato puree.

Bring to a low simmer for about 1/2 hour. Thats it. Add a few fresh sprigs of basil, before you are about to toss over pasta. I make double and triple batches and freeze in containers or bottle jars. Keep pasta in the pantry and you have a quick meal. Great to keep on had all season long.

Play all day, dinner in minutes. Let’s tango in the kitchen and make our “Maters” matter! Enjoy!

PARMESAN~RICOTTA FRITTATA 6 eggs, beaten well • 1/2 cup ricotta cheese • 1/3 cup grated parmesan or romano cheese 1 Tablespoons mint, finely chopped {increase to taste} • 2 Tablespoons basil, finely chopped Salt & Pepper to taste [cheese will add alot of salt flavor] Beat all ingredients together. Pour into a well greased black 6 inch skillet or saute pan. Cook on medium heat about 2 minutes to set, then place in a 400* oven to bake through , about 15 minute or until light springy touch. Remove from oven. Slice onto a plate and add a spoonful of sauce & great crusty bread.

Seasoned gardeners know that once daytime temperatures start averaging above 85-90°F spring planted tomatoes start going downhill fast. If diseases like southern blight, early blight, late blight, and bacterial wilt haven’t set in and caused severe leaf drop or plant death, then you have probably noticed flowers dry up and fall off without setting fruit. Blossom drop in tomato is not caused by a pathogen, insect, or Will Afton nutritional deficiency. Researchers have determined that the actual cause is closely related to day and night time temperature. When daytime temperatures reach above 85°F and night time temperatures above 72°, flowers will abort and drop off the plant before they have a chance to get fertilized. Older varieties like heirlooms tend to be a lot more sensitive than many hybrid tomato varieties but even hybrids will become susceptible once it gets warm enough. In order to help avoid this phenomenon it is recommended to plant a second crop of “heat set” tomatoes.

Heat set, hot set, or heat tolerant tomatoes are bred for their tolerance to high temperatures and perform well in Louisiana. More often than not these varieties show relevance to heat in their names. There are several of these varieties that perform in Louisiana growing conditions.

The varieties ‘Sunmaster’, ‘Heat Wave II’, Sun Master’, and ‘Talladaga’ produce smaller 7-8 ounce sized fruit while ‘Solar Set’, ‘Florida 91’, ‘Solar Fire’, and ‘Sun Leaper’ produce larger 9-10 ounce fruit. By planting heat set varieties at the end of the spring season, you can take advantage of the cooler fall temperatures to enjoy tomatoes well into November. Check with your local nursery or home improvement center to see what is available to you.

ZINNIAS PERFORM WELL IN SUMMER MONTHS When thinking about summer flowers in South Louisiana, it’s not hard to recall the beautiful yet resilient forms of Zinnia. The zinnia plant originated somewhere in Southwest America and Central Mexico. In South Louisiana, the zinnia is a broad statement when it comes to summer flowering and the long days of summer. These flowering plants will last from spring to fall in most landscape settings. They are easily distinguished by their daisy like flowers that perform best from June until September.

The ‘Dreamland’ series of zinnia features large heads over 3 inches wide and come in shapes of red, pink, and yellow with a mix variety option available. These plants perform well in full sun locations where they are occasionally used as cut flowers. The ‘Profusion’ series of zinnia flower has become quite popular amongst growers as of late because of its smaller form yet similar flowering habit. There are a few options to choose from. Look for Red, Purple, Pink, Salmon, Yellow, and White selections. ‘Zahara’ zinnias are similar in appearance to the ‘Profusion’ but have a slightly larger flower and come in even more color options. If you looking for a variety to plant in the garden in order to have fresh garden flowers from time to time look at the ‘Benary’s Giant’ series of zinnia. They produce large 3 to 4 inch flowers on long stems. With a maximum height of almost 3 feet tall, these zinnias can also be used in the back of bed to add some bright colors. Whatever your need is zinnias are excellent choices for South Louisiana. Get out to the garden center to see what varieties are available to you.
