Summer is here! Yay!! The kiddos are out of school, yay!! Wait, the kids are out of school...ummmm....What will they do all summer?

Fret not! Pearl River has plenty of family fun to be had while on summer break. To name just a few everyday fun spots, there is the river, James Laigvine Park and of course the splash pad that opens at 10am each day. Looking for inside fun?

You might want to consider bringing the whole family to our Pearl River museum which is open each Saturday or the Pearl River Library (opened daily). Many of our churches also have VBS fun to still be had too: June 18th-22nd starting at 9am St. Peter & Paul Church June 24th-28th 6pm-8:30pm United Methodist Church , July 23rd-27th 9am-12pm New Jerusalem Praise & Worship Church, July 23rd-27th 6pm-9pm River Life Fellowship Church.

Recreation District 7 is kicking off the summer with their “Kids Night Out” event on June 22 at 6pm for children ages 8 to 11 years old. The cost is only $7 per child. Other great places to visit this summer with the children are, Wilson’s Snowballs, Roux 41’s fun Zone, and Southern delights . One of my grand children’s favorite places to go is Jim’s Feed and Seed to see the bees, chicks and their talking parrot. Heading into July make sure to bring your entire family out to Pearl Rivers Annual Big 4th of July free event that will be held on July 3rd in front of town hall. There will be actives galore for the kids, along with games, prizes, face painting refreshments, and even a pie eating contest. Of course the town will have a spectacular firework show as well. Did I mention this is a free family event ? The festivities will begin at 6pm on July 3rd .

Tony’s Take ALS TAKES THE MAN WHO MADE “THE CATCH” He was never an imposing physical being. Not much over 6 feet and not particularly athletic, Dwight Clark was an afterthought his first year with the San Francisco 49ers. He was the safety valve, the guy you go to when your first and second receiving choices are covered. That was Clark, who played for Clemson in 1976 through 1978, two years before their first national championship. His rookie year was so-so, the first year under the Bill Walsh and Joe Montana era and there were other wideouts that found favor. Clark’s 1980 and 1981 numbers were much better but he wasn’t the deep threat the 49ers coveted. So it wasn’t surprising when the 49ers found themselves hosting the hated Dallas Cowboys for the umpteenth time in the league’s championship game in January, 1982, that Clark was not the primo target for the Niners. That was Freddie Solomon, who presented the 49ers their first legitimate deep threat since Gene Washington in the 1970’s.

But Clark was dependable and did catch one touchdown pass, as did Solomon, before the greatest moment in San Francisco sports history took place.

Clark was not the primary target when the 49ers drove from their 11-yard line to the red zone late in the fourth quarter against Dallas. And Joe Montana was not looking for Clark when a furious Cowboy rush had the diminutive quarterback scrambling for his life. But Montana, as he had so often done the past two seasons, found a way to throw the ball over desperate defenders and just low enough for Clark to stretch his body and with his fingertips cradle the ball in the end zone for what became known as “The Catch”.

For a San Franciscan like me, it was a catharsis moment never experienced before or since.

This West Coast city had only won one NBA title with a recycled team originally from Philadelphia. The Giants had failed in its only World Series, losing a seven-game heartbreaker to the Mantle and Maris Yankees in 1962. The 49ers, with my dad and I in attendance, had blown a 27 to 14 3rd quarter lead to the Detroit Lions in 1957 and lost 35 to 27 as Detroit went on to beat the Cleveland Browns in the NFL championship game, 59 to 14. The area’s college teams were regularly beaten in football by the Big Ten squads and an occasional out-of-conference team that would come to Berkley or Stanford for a home game. In short, Northern California sports usually took it in the shorts in the 50’s, 60’s and ’70s. So it was with a bemused and confused look that an Oklahoma City airport bar full of Okies and Texans watched me go crazy as Clark came down with the ball and the San Francisco lead, which weathered a last-minute Dallas offensive drive and sent the Niners to their first Super Bowl.

A few weeks before that moment, I was attending my first game in the SuperDome, in the press box as a member of the media. The 49ers were finishing a 13 and 3 season against the New Orleans Saints and I was on my way to the visitor’s locker room to interview whomever.

Montana was surrounded by media but secondary leader Dwight Hicks was available and he introduced me to his “Hot Licks” - rookies all, defensive backs all. Some guy named Ronnie Lott, another, Eric Wright (my favorite) and Carleton Williamson, the greatest rookie defensive draft of all time for one team. After interviewing kicker Ray Wersching, I looked around and spotted number 87. Clark was just kind of standing there. I congratulated him for his college team’s national championship the previous year and he was impressed that I was the only media person who had mentioned that to him. We spend a few moments together and then for some reason, I told Clark “I think you’re going to have a great moment in the playoffs next month.”

He smiled and thanked me. Three weeks later, that moment came.

I know not one soul on that Dallas-based flight out of Oklahoma City to New Orleans that January Sunday wanted to talk to me and the sign I made was definitely in the face of Cowboy fans. I was lucky not to get into a fight on the flight down to New Orleans and thank goodness it only lasted an hour because I knew every Cowboy fan was eating crow and no flight attendant would serve me a drink. In the Dallas airport, I bumped into a Cincinnati Bengals fan and we toasted our two teams, who were destined to meet in the 1982 Super Bowl in Detroit later that month. The 49ers won that game, stopping former LSU running back Charles Alexander at the goal line and doing just enough to capture a five-point win and the legend of Montana and the Niners was born.

Dwight Clark played six more years in the NFL and then became a member of the team’s management and enjoyed a tremendous post-playing career. Until 2005, when the first signs of ALS began. It took years for the disease to impose its will but when it came it came quickly.

Clark did not have to suffer from the scourges of ALS like many of its victims did. But at 61, Clark’s body told him it had enough and earlier this month, Dwight Clark died.

Over the past couple of months, I have heard the phrase “invasive species” quite often. When certain words or phrases start becoming popular, especially those involving my areas of expertise, I like to revisit the beginning in order to review and refresh my understanding of the terms. The phrase invasive species has a negative context to it, the same Will Afton kind of context that comes along with a skull and crossbones label. You know that it is not a good thing, but what exactly is an invasive species and what does it mean for us?

To define what an invasive species is you must first start with defining several other closely related terms. So what exactly is a species? A species is the basic unit of biological classification.

It is a component of the two part naming system, binomial nomenclature, which gives each organism its own scientific name. Not all scientists agree on an exact definition but most will tell you something along the lines of, a species is a group of living organisms consisting of similar individuals with the ability to exchange genes or interbreed. Native species naturally originated in specific areas or regions. Non-native species are those that have been introduced to new and different areas away from where their species originated from. Most of the time, this is because of both human activity and human involvement.

Different species interact with each other in an ecosystem along with non-living elements like air, water, sunlight, and the physical environment. Many observations have been made about the different interactions between living things throughout history. The food chain hierarchy is a good example of how different parts work together to make the system work. As energy continues to flow through the system, it will continue existing.

Invasive species can wreak havoc on ecosystems. An invasive species is non-native to the ecosystem in question and will likely cause economic, environmental, and human health concerns if left unchecked. There are many invasive species that are being discussed throughout the world.

I’m sure you have heard about several. The cotton boll weevil is probably the most infamous invasive species in Louisiana but there are several others being discussed and reported on. The Emerald Ash Borer has infested ash trees in a few northern parishes. The nutria rat is destroying the marshes of South Louisiana. All of this while torpedograss makes its way into our lawns and bush killer vine chokes out the natural wall of shrubs. It’s important to understand the threat of what invasive species can have on our local ecosystems. The next time you stop to read an informational poster at the park about a new invasive pest, make it a point to learn what you can do help prevent the spread.

Backyard Burgers

There is nothing more summer-time than Backyard Burgers. MY Backyard Burgers are nothing fancy, but by adding a few extra ingredients, flavors build and the sandwich only becomes better.

The most important part is not grilling burgers too long, or flipping them too often. This can dry out the meat by losing too much moisture. Never push down on the patty with a spatula. That only draws out every bit of natural juices. These burgers were made from ground chuck.

Hot coals add a bit smokier aroma to the burgers than gas grills, but both are wonderful when you’re eating in the ambiance of your own backyard.

The other components I add to my burgers are fresh sautéed spinach cooked in virgin olive oil, and a smooth white aged cheddar cheese that melts perfectly all placed on grilled rustic bread.

I believe in keeping food simple, but slightly innovative rather than the same old lettuce and tomato on a sandwich. Add your favorite barbeque sauce to enhance the taste prior to placing the cheese.

Whole Foods is convenient for purchasing fresh rustic bread, but if you have a specialty bakery near your home that’s even better.

A perfect side dish is grilled corn. Leaving the husk on the corn creates a natural steam. First, soak the ears in water for a few minutes then lay them on the barbeque before cooking the burgers. Turn them every so often. Allow the corn to cook for at least 20 minutes. The husk will become slightly charred, but the inside should be perfect. Once the corn is almost done, start grilling the burgers. When you’re ready to eat, peel the husk off the corn, and add unsalted butter with sea salt and fresh black pepper, and your set.

Backyard Burgers

Makes about 4 burgers 1 lb. ground chuck, make (4) ¼ lb. patties 2 tablespoons sea salt 2 teaspoons fresh black pepper 8 pieces of rustic bread 8 slices of aged white cheddar cheese 4 ears of corn with husk 4 tablespoons unsalted butter 1 bag fresh baby spinach 3 tablespoons virgin olive oil

Method: • Preheat the coals or gas grill • Once grill is hot add the corn and cook till done • Season the burgers with salt and pepper and lay on the grill when corn is almost ready • Heat a medium skillet and add the olive oil • Sauté the spinach for 2 minutes with a pinch of salt, and drain the water from the spinach • Slice your rustic bread into 1 inch thick slices • Once the burgers are cooked on one side, flip and add your favorite barbeque sauce • Flip the burgers and add sauce then lay the cheese on top to melt • Add your bread to the grill, but don’t let it burn • Build your burger with your choice of condiment, I use mayonnaise • Grilled bread with mayo, burger with cheese and spinach • Serve alongside the grilled buttered corn

Kittens are so adorable, and this is the time of year when they are most plentiful. Too plentiful! Unfortunately there are many more kittens than there are homes available for them, causing many to be euthanized in kill shelters. Here are some of START’s rescued kittens. They will be ready for adoption soon, after they have been spayed and neutered. If you have been planning to add a pet to your family, a kitten is a great choice. In fact two kittens are even better because they can keep each other company when you are not home.
