But sit back and enjoy what’s left of the two weeks of the Finals and what James will do once they’re finished. Because he’s not.

There are a few hibiscus species that are native to the United States including Louisiana. The most common is the crimson eyed rose mallow, Hibiscus moscheutos. It can be found throughout the state growing in ditches along the roadside. You will notice them by their large 4-6 inch flowers with white petals and crimson red throats.

The Confederate Rose, H. mutabilis, is a common tree-like shrub planted throughout the state.

It can reach heights of 10 and 12 feet. The species name “mutabilis” hints at the plant’s most distinguishing characteristic. The flowers open white in the morning and fade to pink later in the evening before they close. Even though Confederate Rose is considered a perennial plant a hard freeze might kill it back to the ground, but with proper mulching the plant should return the following spring.

Most of us should be well acquainted with the Rose of Sharon plant, H. syriacus. A native of Asia this hibiscus has been popular to gardeners dating back to the Europeans in the year 1600. Due to relative ease of care and lack of pest problems, it is not uncommon for Rose of Sharon to live many years in the landscape. There are many well-known cultivars grown in the nursery trade to choose from. Try looking for the LSU AgCenter Super Plant selection from the spring of 2013, ‘Aphrodite’. It is reach heights of 8-10 feet tall and produces beautiful rose red blooms with dark magenta centers.

Last and definitely not least, the most popular hibiscus is the tropical hibiscus, H. rosa-sinensis.

Some home improvement stores bring these in by the thousands as soon as spring weather arrives. Of all of the other species of hibiscus written in this article, H. rosa-sinensis is the most tender when it comes to cool weather. On the other hand, these bushes will bloom all during the warm season. After the first frost some die back will occur but when it does, go ahead and prune the whole bush to the ground and cover it with mulch. If you can protect the root system during the cold months there will be a good possibility of survival to enjoy it the following year.

Elderflower For The Princess Simply The Zest!

Kensington Palace announced the Royal Wedding cake flavors will be Elderflower and Lemon to incorporate the fresh flavors of Spring. So now everyone wants to taste this cake. You don’t have to be in London to enjoy this cake. Elderflower is blooming everywhere. Lemons are timeless and Elderflower liqueur is the rage in coctails now. The Royal cake was very large. Move over cupcakes, make way for baby cakes. You don’t need to get overwhelmed with a large layer cake. Just make a sheet pan cake, about 1/2 inch thick, use 2 or 3 inch rounds or square cutters to make mini layers. This is like a double stacked cupcake, giving you that extra layer of fluffy frosting we all love. Don’t forget to garnish the cakes with sprigs of the elderflowers and berries.

Place the frosting inbetween the layers and leave the cake sides exposed or frost the whole mini cake.

Elderflower is a lacey looking flower cluster that blooms in clumps. The bush grows tall and the flower clusters have a delacate flavor of vanilla and citrus notes. Elderflower fritters are a favorite as far back as the Victorian times. After the flower blooms for a while , the berries develop as bright, small, purple clusters. Don’t eat the berries raw. They need to be cooked.

They are delicious in pies and syrups. A simple syrup of the berries is great in cocktails . It is also used to soothe a cough.

So this plant is harvested two times. First harvest half the

flower blossoms to make an elderflower simple syrup. Just boil 1 cup water and 1 cup sugar. Shut off heat and add about 1 cup of elderflowers. Let them steep about 20 minutes or cool. I make a few batches and freeze the syrup so it doesnt spoil. Leave the rest of the flower blossoms on the tree to mature to the beautiful berries. Pick those to make your elderberry syrup. The birds love the berries and do a great job of dropping the seeds everywhere.

They will grow everywhere.

Look for elderflowers in your neighborhood. If you find one,

there will be more in the area. I just found a cluster down the block from me, while walking my granddaughter. I need to go get my clippers, a large shopping bag and collect some flowers to make my syrup. You really don’t want to steep the stems. Pick the flowers off the stems before you put them into the hot syrup. When you go back to pick the berries, place the berries and stems in a large brown bag. Place the bag in the freezer. In a little while, the berries will freeze and just fall off the stems. Discard the stems.

You don’t have to go hunting elderflower to make these baby cakes. Just buy a bottle of St. Germain Liqueur. But if you go and forage for your herbs, it makes it that much more herbal.

Celebrate like a Royal. As Marie-Antoinette said,”LET THEM EAT CAKE.” Linda Franzo, Passionate Platter ELDERFLOWER LEMON BABY CAKES 3 1/2 cups cake flower 2 1/3 cups sugar 4 teaspoons baking powder 1 teaspoon salt 3/4 cup unsalted butter, cold & cut into cubes 1 1/2 cups whole milk, room temperature 2 teaspoons lemon extract zest of 1 lemon 7 lightly beaten egg whites, room temperature 1/2 cup elderflower syrup or liqueur juice of the lemon

Preheat oven to 350* prepare two 8 inch round pans or a sheet pan with butter and flour. Whisk the flour, sugar, baking powder and salt into a large mixer bowl, with a paddle. Turn mixer on low speed and add each cube of butter and beat until flour mix looks like fine cornmeal, about 5 minutes. With mixer running, add 1/2 the milk and lemon extract. Increase speed to medium, add the rest of the milk and the beaten egg whites. Spread batter on to prepared sheet pan.

Bake about 20 minutes or until toothpick clean. Let cool, cut out squares or circles. Poke holes with a toothpick. Mix the lemon juice and elderflower liqueur and drizzle or paint the tops of the cakes. Don’t make them too soggy. Let the cakes stand about 30 minutes while the syrup infuses the layers.

BUTTERCREAM ICING 2 cups unsalted butter, softened 8 cups of powdered sugar 2 Tablespoons lemon juice 1 Tablespoon or more of St. Germain zest of 1 lemon Heavy cream for the desired consistency

In a large mixer bowl, beat butter untill creamy.

Add sugar to incorporate. Then add lemon juice & St. Germain. Beat again, and add 1 Tablespoon at a time the cream, until mixture is fluffy and spreadable.

Add the lemon zest. Scrape down sides to make sure everything is mixed properly. Using an off-set spatula or a piping bag, spread frosting in between layers, free form and slightly bursting out, or smooth sides to have a more formal look.

Tony’s Take TIGER TRACKS Burrowing In With Joe It’s a breath of fresh air for the LSU Tigers blowing in from central Ohio in time for a critical 2018 football season. This 6’3”, 215 pound son of a coach and former Mr. Ohio Prep football player is bringing his intelligence, his legs and his physicality to Baton Rouge, where high school quarterbacks usually come to be frustrated. Joe Burrow has the name (Jeaux Bereaux) and the moxie to actually lead this team of highly anticipated receivers and less than pretty running backs to a solid winning season. It won’t come from any real coaching, because the Tigers still don’t believe in hiring a position coach for the most critical player on the team. But Burrow enters with perhaps more coaching coming to Baton Rouge than most quarterbacks receive during their years with the Tigers.

If I were any of the three amigo underclassmen manning the position for LSU, I would be more than concerned that a recent college graduate in three years will have two years to lead the Tigers back into the respectability taken from them by years of mismanagement by the Les Miles Band. I don’t see any of the three seriously challenging Burrow for the starting role, since none of them could beat out each other. Narcisse, McMillan and Brennan are not the stuff with which to build a legitimate threat to Alabama, Georgia or Auburn. Whether Burrow can convert étouffée into ecstasy remains to be seen. But Burrow has seen the Horseshoe in Columbus, Ohio and college football doesn’t get any more intense than the cradle of coaching and Big Ten dominance. And more important, he has posted more than decent statistics in the limited action he saw there.

Is he the Bengal Savior? Well, unless the Tigers can create the nasty, physical defensive linemen from the past and offensive linemen with the ability to protect a passing quarterback, it will be difficult to tell. The Tigers are set at linebacker, in the secondary and at receiver but the rest of the cast is still auditioning for 2018. This should be the best defensive Tiger team since 2012 but the worst rushing team in the past two generations. It’s a good thing that Miles is gone, unable to lament the lack of “pigskin pounding” he was so adamant about. If the Tigers don’t want to be pounded this year, it will take a major upgrade at quarterback and Burrow has the chops for that upgrade. His arm won’t dazzle like Jamarcus Russell but it should find more receivers for effective yardage than LSU has seen in recent seasons. We’ll see in September at Jerry’s World in Arlington, where the Tigers meet the Miami Hurricanes to kick off the season. Win in Texas and the Tigers may be back in the top 20 conversation. Then Tiger fans won’t have to “burrow in” to survive 2018.
