Tony’s Take LSU’s QUARTERBACK SITUATION STILL UNDER THE SEC RADAR As LSU continues to improve defensively, with the potential of having the SEC’s best defensive front seven by September, the offense is still stuck in the 80’s with three quarterbacks who will have trouble putting the ball in receiver’s hands more than half of the time.

The Tigers face two of the top five teams in America at home this year. Georgia and Alabama come in during October and November and there is no reason to think LSU will have a credible offensive team to go against the two best recruiters in the league.

Take the information offered by Ed Orgeron last week about the Tigers’ latest spring scrimmage.

The ninth scrimmage produced a 16-play session, during which Orgeron said the offense “won” seven of the plays while the defense “won” nine. Then the Tigers were put into game-like situations, where the defense clearly won the day.

Players like nose tackle Tyler Shelvin and defensive end Breiden Fehoko had nine tackles, three sacks or tackles for losses and a forced fumble. These two are new to the Tigers and will definitely start alongside defensive end Rashard Lawrence and four very good to outstanding linebackers or hybrids, whichever scheme Dave Aranda goes with. The secondary will be less potent than last year but still returns a good corps of players, who will take a back seat to the guys up front this season.

LSU’s quarterbacks completed 43% of their passes with Myles Brennan hitting 10 of 15 for 178 yards and a pair of touchdowns while Justin McMillan was 3 for 11 for 20 yards and Lowell Narcisse also 3 for 11 for 65 yards. That means the two underperforming QBs completed less than 30% of their passes during a less than intense spring session. LSU has real problems here and if you think the last five years saw an exodus of top tier receiving talent after that talent saw the so-called quarterback coaching and performances in Baton Rouge, well, you ain’t seen nothing yet.

What do you think that Alabama’s two-headed quarterback situation and a true sophomore’s signal calling in Athens will do compared to McMillan and Narcisse? It boggles the mind to think that this program has reached what some are beginning to call a deplorable offensive showcase. It is so. Lightweight running backs, underutilized receivers, ignored tight ends…. it never seems to get better in Red Stick, where fans continue to get the short end of the stick every spring when they fork over more than $1,000 to be able to sit in Tiger Stadium and watch mediocrity. And still no leaders on the offense. Anyone want to step up? Anyone given enough confidence by the Orgeron brain trust to take the mantle?

LSU’s National L Club Spring Game will take place on Saturday, April 21st at 5 PM in Tiger Stadium. Admission, as usual, will be free. And I expect nearly 15,000 souls will file into Death Valley to see what Steve Ensminger and Orgeron have been able to cobble together with their “go” team. LSU never fills the stadium during spring games and has even less of a reason to attract people this season. Media will attend because LSU requires it and the August Media Day is no more, replaced with, we imagine, a Joe Alleva-inspired, washed-down, cheap-ass version of what used to be a pleasant day for the media. Keep messing with what success LSU has had, Joe. One day, the famed stadium just off the Mississippi might be in the same shape as the Roman Coliseum, where, in an earlier era, great things happened. By that time, you will have retired, soaking in the over generous golden parachute offered at LSU. And Duke. And wherever else you exhibited your wonderful magic.

Beef – Shrimp - Biscuit Beef stew is a dish that dates back hundreds of years. Traditionally, it’s a rough cut of beef or lamb that is cut into large pieces, slowly braised with onions, garlic, wine, and a good beef stock.

MY Beef – Shrimp – Biscuit is a twist on the customary beef stew, but still just as hearty. You could almost say my recipe is a surf ‘n’ turf style beef stew.

Rice or pasta will not be necessary for this recipe as the biscuit is a starch – the filler. Carrots and potatoes are not added to this recipe, but they are standard ingredients to a good old Irish stew.

A wonderful early spring or winter dish, but light enough with the enhanced shrimp to enjoy any time of year. The green peas not only add color, but a light vegetable to balance the stew.

Shoulder or rump cuts of beef are used for this dish. Cut the beef into 1 ½ cube pieces, not too big. Ask your butcher, for a chuck roast, and they can easily cut it up for you.

I use red wine as the first braising liquid in its beginning stages. After that cooks down for a few minutes and reduces a quality beef broth or stock is the next important ingredient making this dish full bodied. I use a little tomato paste to richen flavors.

Once the beef has braised to a tender point, about 1 hour, you can begin the final process.

Add the shrimp, sautéed mushrooms, and peas at the end to assist in making this dish something unique. Beef – Shrimp – Biscuit is a variation from something old to something innovative. ENJOY!

Method:

• Put flour in a gallon zip lock bag and add the cubed beef. Toss and shake off excess flour • In a medium pot heat ½ the olive oil and add the onions, celery and garlic

• Stir and cook for 2 minutes. Add the beef, salt and pepper and cook the meat searing on all

sides by stirring after 30 seconds per side on high heat.

• Add the wine and cook for 5 minutes on high heat. Add the beef stock and stir

• Return to a light boil, and add stir in the tomato paste. Add herbs and simmer for 1 hour.

• Taste to adjust seasoning. Preheat oven to 400 degrees

• Bake biscuits for recommended time on label or if making from scratch, follow your own

recipe’s details for a quality biscuit

• In another skillet, add the remaining olive oil and sauté off the mushrooms

• When mushrooms are almost cooked, about 3 minutes, add the shrimp and cook till done • Check the beef is tender. If not, simmer covered for an additional 30 minutes • Add green peas, mushrooms and shrimp to the stew and stir • Simmer for 5 minutes and check for flavor and tender beef

• When done, place a biscuit on a plate and pour the stew directly over the biscuit.

Beef Stew: 1 pound chuck or rump, large cube ¼ cup flour ½ onion, chopped 1 celery stalk, chopped 1 tablespoon garlic, minced ¼ cup olive oil 1 ½ teaspoon sea salt ½ teaspoon fresh black pepper 1 cup red wine (good quality) 2 tablespoons tomato paste 4 cups beef stock 1 teaspoon fresh thyme, chopped 1 lb. shrimp 21-25 size, fully peeled ½ cup frozen English peas 1 cup baby bella mushrooms, sliced 8 biscuits, freshly baked

To begin the big warm season switch, start by cleaning up older plantings. Remove old plant material by pulling up dead plants and moving them to the compost pile. Any plant material showing disease should be separated and delivered straight to the trash can. Make a good effort to collect all remaining plant material in an effort to prevent the spread of disease. Weeds should be removed from the flower bed because they will compete with our landscape plants for light, nutrients, and space. Once the area has been prepped, it is now ready to add plants.

START is an all volunteer 501 C3 organization made up of members who rescue, foster and care for homeless cats and dogs. Our rescues are fostered in the homes of our volunteers until they are ready to be adopted. We are always in need of foster homes, especially for dogs. We greatly appreciate donations of dog and cat food, as well as funds to spay/neuter and provide veterinary care for the rescued pets. We can be contacted by email.

Sophia and her sister Fiona were raiding garbage cans and hiding in the woods after being abandoned in a place that seemed very strange to them. The people were not friendly and they even chased them away. They were quite happy when a animal rescue person coaxed them out of hiding and took them to a foster home.

These two sweet five month old puppies are now safe and have lots of food and a warm bed. They will be available for adoption soon after being spayed and fully vaccinated. Please email START for more information on Sophia and Fiona.

Stormy is an adorable black kitten in need of a home. She was one of a litter of eight, a very large family for her poor mother to care for while living on the street.

I tried another place north of Empire. Once again the holding in place was a big problem. The winds were getting stronger. I knew the boat would be going just about head on into the seas on the way back but my boat can handle that quite well once I can get on top of it. At this place we once again found some nice reds that we kept releasing.

This is an archived Fishing Story from 4.13.17 Jon (Tall 1) from CTFisherman came down here for what was planned as 2 days of fishing.

Unfortunately the weather did not cooperate. With the wind blowing I figured we could tuck into a canal where the bait and trout were the day before. The angle of the wind was blowing right down the canal and I had to beach the bow and set the power pole just to hold. Conditions were better than any other places I had traveled through but the fish were not chewing. We gave this a good half hour before picking up and running.

I made a long move to another place I knew the water would be flowing through. Once there I found the water stained but not as muddy as expected. Jon got the first bite and lost it. At least something alive here. It was my turn to feed one next but soon Jon had a bent rod. This was his first ever redfish and it was a good sized keeper. It had 4 spots on one side and 3 spots on the other.

At least the long run taking it head on turned into a positive note. As luck would have it we got the fish to feed. By 9:00 we had limited out on redfish.

We did some catch and release our best fish there. It was this 31 inch beauty weighing 11 pounds which we released after the pictures. These fish were gorging on pogies.

After landing well over a dozen the winds made me move. even with the power pole down and the Cajun anchor I was still being blown onto the reef. There was no way I could have stayed anywhere in that area. I made a long run across the rough open water and went to Joshua’s for a break. After about a 20 minute pit stop I headed back out for our fishing adventures.

Our next stop was the first place we tried earlier. With the bow back on the grass and the power pole buried we started drowning live shrimp. once again it was a no show. As I was thinking where to next Jon hooks up. I jump to the net and lands his first ever speck. There was no question about this beauty being a keeper. Jon is a big man at 6’10”. He makes all fish look small. This fish bought us more time at the spot and we managed a few rat reds.

Eventually it got unbearable and I decided to head in. It was around 1:30 and we still had to make the run across Bay Adams with the head seas. Just before hitting the docks I decided to try one sheltered corner. I thought it was sheltered but once again holding was a big problem. We did find a few rat reds and also a slot that also went back. Much to my surprise we also picked up another good trout.

This was definitely our last stop of the day. It was time to head in and have a fish cleaning party at my place.

As I reflect on the day it was an awesome day in very trying conditions. We caught a lot of fish and had a great time on the water talking about several of our many mutual friends back in Connecticut. Although we had to put up with adverse conditions in 80 plus temps our friends were getting snow. We were going out today but this monsoon front running through will not allow that to happen. At least we had a great trip for his first visit here. I have a feeling Jon, Medski, and ? will be back very soon.
