Springtime has arrived to Pearl River. When I think of Spring two words always seem to appear in my mind, fresh and new. Here in PR we are constantly getting fresh and new things. Our little town is doing fantastic! It’s not a one-horse town or in this case restaurant anymore. Used to be, back in the day, we would have maybe one or two good places to eat and back then it was mainly only for lunch and possibly an early dinner. Well I’m glad to say those days long gone! Pearl River now serves breakfast, lunch, and dinner. You will not go hungry for sure with the choices either. You have your choice of seafood, Chinese, chicken, Cajun, Mexican, hot dogs, burgers, smoked brisket, sandwiches and let’s not forget our doughnut shop and snowballs stands.

Man, all this writing is making me hungry. Two brand new restaurants that have opened recently. Big D’s, located behind the big chicken, on 41 and Roux 41 also located on Hwy, 41.

Big D’s is owned and operated by Daryl and Debra Singletary. Some of you may remember they were located by Lock One in Sixthward but now have moved closer into the town of Pearl River.

They are ready to bring their great food and friendly service to us in Pearl River. Roux 41 owned and operated by Gus and Stacy Bordelon is in the very same spot that they had operated Rotolos from and yep their Fun Zone is still up and going for the kiddos. I went in for breakfast the other day and had a seafood omelet that had crabmeat in it …… oh my my…..so very good! Other items on their menu I loved was their crawfish nachos and seafood salad. Also their Thursdays are “Smokin”, yep smoked meats YUM! Check out their website for hours of operation.

So on to something maybe not so new to our town but most defiantly Fresh, our Honey Island Art and Famers Market. I was able to go to the Farmers Market for their opening day. Let me just say, a girl could go broke with all the” pretties” they have to buy. Don’t get me wrong their prices where great it’s just I wanted to buy everything! Good thing I’m not the “real spender” in the family, right? The market is located in the old Po-Boys parking lot, it’s open every Saturday 10am-2pm. They are always looking for local venders to come out and join them. Call Cindy at 985-640-5482. Hey, If you make it to the market this weekend look for Haylee and tell her I said Hi. Haylee is with the First Lego League and she makes Tissue Jars from old mason jars. They are beautiful!! She is raising funds for future trips with her Lego team.

Okay one more “New” to our town that I must share. If you are into Martial Arts, they are offering Kuk Sool Won classes on Tuesdays and Thursdays at Anytime Fitness. I was able to sit in as they showed a demo of all they will be teaching. I have got to say it is very exciting to have such programs being offered right here in our town. SLIDELL VOTERS GET IT RIGHT

Slidell voters Saturday decided to turn the city’s leadership over to a man who has had extensive experience in private and public endeavors. We’re just not sure which one will be that man.

Primary winner Kevin Davis has the longer public lineage with stints as parish councilman (police jury), three terms as St. Tammany Parish President and Director of the Governor’s Office of Homeland Security. Cromer, who passed two other candidates for Slidell mayor during his campaign and was second in Saturday’s voting, served as a Slidell city councilman and has been a popular incumbent as a state representative. Slidell voters got it right Saturday. They realize the crossroads this city is at, citing insufficient revenues, a surfeit of empty retail buildings, a need to attract jobs to keep our young adults home and the need to repurpose our decaying malls and strip centers to bring in visitors and locals alike. Slidell’s local retail is sick and that’s not the new term, meaning positive. I mean sick. There has been no vision out of city hall for years and it shows. April 28th’s winner needs to get it mainly right his first term. Both runoff candidates have the better chance of moving towards solving these issues than the two other candidates, who lost. And the voters sensed this and cast their ballots for hope and progress to go along with polished leadership.

The number of voters selecting the two At Large council seats was considerably larger than those who voted for Mayor. Of the 17,800 registered voters in Slidell for the March 24th election, 7,240 or 40.7% voted in the At Large race and 5,252 or 29.5% voted in the Mayor’s race. The runoff is April 28th. Chicken Fried Chicken

We have all heard of chicken fried steak, but this is my version of Chicken Fried Chicken, Italian style. Usually, chicken fried steak is a tenderized rough cut of beef that is dipped in egg, flour, deep fried, and served with white country gravy ladled on top. My Chicken Fried Chicken recipe is pounded out boneless-skinless chicken thighs, soaked in egg and water, dredged in flour then pan fried in virgin olive oil. The base of the sauce is fresh tomatoes, virgin olive oil, and garlic. Fresh parmesan cheese is sprinkled generously on top. And no folks, this is not chicken parmesan.

Boneless-skinless thigh meat is sweeter and less dry when fully cooked. Once the chicken is fried to a golden brown, remove from the skillet, and place on a pan into a pre-heated 400 degree oven till fully cooked, about 7 minutes. When cooked, place on a plate, and spoon the tomato sauce directly over the chicken. The parmesan melts almost instantly once on the hot sauce.

Chicken fried chicken is not necessarily a southern dish. The facts are not clear, but possibly it was invented by someone who simply enjoyed fried chicken or bored with chicken fried steak.

Serve this dish with white wine or a cold beer with fewer hops. They will both compliment the flavors. A red wine might be a bit heavy even though it’s a red sauce, but that’s up to you.

Angel hair pasta will make this dish complete, but extremely filling so I am not excluding it. I serve it with a nice side vegetable keeping my Chicken Fried Chicken simple, yet satisfying.

Chicken Fried Chicken serves 4 persons

Ingredients: 4 chicken thighs, boneless-skinless, pounded out 2 eggs, beaten ½ cup cold water 1 cup all-purpose flour ½ cup extra virgin olive oil for cooking, ¼ cup for frying – ¼ cup for tomato sauce 1 tablespoon garlic, chopped fine 2 tablespoons Chef Paul Prudomme’s seasoning 4 large vine-ripened tomatoes, rough diced ½ cup chicken stock ¼ cup white wine 3 tablespoons butter, unsalted 3 tablespoons fresh Italian parsley, chopped 3 tablespoons, parmesan cheese

Method: • Cover the bottom and top of the chicken with plastic wrap or parchment paper and pound out gently.

This will provide a larger flattened piece of chicken thigh • Add the eggs and water in a medium bowl and beat • Add 1 tablespoon of Chef Paul’s seasoning to the chicken and soak the thighs for 10 minutes in the refrigerator • In another bowl add the flour and dredge the chicken thoroughly. Place in refrigerator till you are ready to fry and everything else is ready for service • For the sauce, heat a medium pot to high, and add olive and tomatoes • Stir and add the garlic along with 1 tablespoon of Chef Paul’s seasoning • Cook for 10 minutes and add white wine. Cook for 5 more minutes and add chicken stock. Cook for an additional 5 minutes and puree with hand wand or blender. Be very careful using a blender. This is liquid is very hot. A hand wand is safer to puree • While sauce is hot, fold in the butter and adjust seasoning • Preheat the oil to 350 degrees and begin pan frying the chicken • Golden brown is the color you need for both sides before finishing in the oven • Lay each chicken on parchment or absorbent paper towels • Place chicken on a plate and ladle sauce over ¾ of the chicken and add parmesan cheese • Sprinkle a little fresh parsley on top and serve immediately

The spring vegetable season is one of the most popular times in the garden. Everyone has a memory to share regarding their first experiences with spring vegetable plants. Some of us tell stories of mothers growing food to feed a large family, and for many of us, we tell stories about grandma and her ability to grow absolutely anything.

Finish harvesting the remainder late winter vegetable garden. This would include cabbages, collards, lettuces, mustards, spinach, and turnips. If no report is available for review, use a general rate of 1.25lbs 8-8-8 fertilizer for every 10ft of planting row. Use a scale and plastic cup to weigh out correct amount of fertilizer and apply to see the row. Cover the fertilizer granules with soil and water them in well with water. Some gardeners try to time this step with a good rain shower.

The most important decisions to be made at this time are deciding on what plants to grow. Start by looking at warm season vegetable crops. Next, start looking at weekly meals and common snacks in your household to help decide on what plants to grow. In Louisiana, we can grow a variety of vegetable crops. Growing something that works well in your particular situation has a big influence on the overall gardening experience. Choose crops that can be used in a couple of weekly meals or snacks.

I had a Saturday morning free and my friend Bobby from La 23 Bar B Q came with me for a few hours. It was a long time since he had wet a line. It felt good to him to put the first trout in the box.

We had a good morning and put some nice trout in the box. His partner Aron was also out there with his own boat and we had a fish cleaning party at my place around noon.

The next day I had Add and Shelly on their boat in search of tuna. It was very foggy and the ride out was not fun even though we waited for an extra hour before deciding to run.

Even with that I relied heavily on the Garmin electronics. There was a late bite the day before so we were not expecting much early. Once at the tuna grounds the action began. Sharks and kings were collecting hooks. We were fortunate enough to get a circle hook to work right and landed 3 kingfish.

The bonito added to the action and we were busy. Add was the first to hook up to a yellowfin. There is little doubt when a tuna hits the bait. After a brief but good battle we had our first yellowfin on ice.

It did not take very long before we had another tuna find our offering. This time it was Shelly’s turn to do battle. It turned out to be a good size blackfin.

As our morning went on the hook tying class was going well. We were getting bit off by toothy critters very fast as we continued our tuna quest. Shelly had the hot hand hooking kings and landing them but this time as soon as the line started screaming I knew she had a decent yellowfin.

She was soon to prove my suspicions right as I sunk a gaff into it.

The next day we wanted to get an early start. For some reason they were a bit slow getting to the boat. There was absolutely no fog. I was waiting for them enjoying the view from my office.

Once again we hit the tuna grounds we were in good shape with a lot of good bait but conditions had changed over night. Nobody was getting much and the seas were building as the day progressed. Seeing it was the last day for amberjack and they are one of Add’s favorite fish we decided to see if we could find one or two of them.

The limit is one per person and the season is now closed for the rest of the year. As it turned out the tuna bite was late.

With our slower boat it would not have been a good idea to stretch the time for some tuna.

We hit a few rigs looking for Amberjack. When we got to our second targeted rig we unfortunately found a monster red snapper. Add has one of those setups that drops the fish back down to 150 feet, stabilizes it, and releases it. The snapper was so bloated we had to add extra weight for it to go down. About 100 feet down the fish got revived and began fighting back very well. Before the setup got to 150 feet and released the fish I knew by the fight it was in good shape and good to go. I like that release tool.

On our very next drop we get one that is going for the rig and diving deep. I start pulling the fish out with the boat trying not to break it off. At times I had to slow the boat down to be sure I was not caught in the rig. This fish wanted back in the rig very bad and was determined to get there.

I came out well over a hundred yards from the rig before I was comfortable enough with the amount of line out and the angle to allow Add to fight this hog. Now it was his turn to get this stud to the boat. For some reason although the fish was a very good size it fought a lot harder than others that size have before.

We wanted to try for some others and a crew boat came in so we had to get away from there. We made a quick stop for state water snappers. We had to go through some shorts. Being in about 60 feet the ones we released were unharmed. Once we had our limit we called it and headed in.

A while later we lost a blackfin before I could get a gaff to it. The bite was slowing and they wanted to get a few state water red snapper so we packed it up and headed in for some bottom dunking. We first found some small snapper. I was holding the boat in place while they fished. Eventually we had our first keeper at 18 and a half inches. Once the guys found out we were dropping food down they all came out of the rig to feed to feed. We wasted no time putting our 6 in the box and heading in. Our 18.5 incher is next to our 31 incher that was our best snapper of the day.

On my 75th birthday my neighbor and I went out back in the Empire area for the morning. We found a few trout and 3 redfish for the box. My treat of the day was this nice 31 incher that I released after the picture. It gave me a great battle in 1 to 3 feet of water on light tacke..
