up tight to the canes. Don was the first to hook up. This was his first ever redfish. A nice way to start off. It was 33 inches.

My friend Don P. came down from Connecticut for a few days of fishing.

This trip was planned for a while. It was to be a weather or not trip. He was coming here to fish. Inshore, nearshore, or offshore. What ever we could do.

A few weeks before me friend Tony Nelson from Arkansas called and asked about a trip so I set up these two guys.

I knew they would fish good together.

This was planned as a 3 day fishing adventure.

The first day we had high winds and had no choice but to fish inshore and tuck back into the canes to get some protection. At my first location we found some good reds. It was difficult as the fish were pushed into the canes and the only ones we found were right

We let this guy free to fight another day and maybe breed again. There was dirty water moving in and the bite was very slow. With the wind gusting well over 25 I just kept in my comfortable small pond. It was a while before we had another fish on the line. Once again Don had the hot hand. This one tapped out at 22 inches. It swallowed the hook son we put it in the fishbox as it was bleeding very bad before I even attempted to remove the hook.

It was a tough day but we were getting a few anyway. Don was the only person getting any action. After what seemed like an hour Don once again has a bent rod with a drag screaming and a smile on his face. All 3 of these fish were 32 to 33 inches.

We also let this lucky guy or gal, I did not check, get a free pass for a better life.

Welcome to our very first Pearl River Ramblings column. This is where you will hear all about current events, receive updates straight from Town Hall and find out fun facts. Like did you know?

Before Pearl River was called Pearl River the name of our small community in 1859 was actually Halloo. Some say that this name originated from the loggers that would Holler out back and forth Hello from the train upon their arrival. The name was changed to Pearl, later Pearlville, then in 1888 Pearl River.

What a great month to start our River Ramblings, we have plenty to” ramble on” about March.

As we head into spring, the next few months will be jam-packed with family fun events that you will not want to miss.

We kick it all off starting March 10th with Pearl Rivers 2nd Annual 5K Run/Walk. If you’re not registered for the run, don’t worry-it’s not too late. Your $23.00 Registration fee will go toward scholarships and classroom supplies for Pearl River High School . This event is being sponsored by the Pearl River Lions Club. For more information check out the event page at https://www. facebook.com/RuntheRiver5/ March 17th will be our Community Easter Egg Hunt at the Pearl River Park. Our Egg Hunt which is sponsored by Jubilee Foods will be sure to be a huge success. Come early, registration will begin at 9am, the egg hunt will start at 10am. Refreshments will be served and there will be many prize eggs to be found for each age group.

March 24th will be election day in St. Tammany Parish. Please remember to exercise your right to vote. That Saturday is also our Annual “Polishing the Pearl” spring clean-up event.

Please join us starting at the Town Hall at 8am. You and your group will be assigned a street to clean. For the past 3 years, Pearl River has taken first place in our district in the cleanest city contest. Last year we also won 1st place in the state. Gloves and trash bags will be provided.

All volunteers will meet back at the Town Hall for 11am where a complementary lunch will be served. Our Polishing the Pearl t-shirts are being sold for $10 each, all proceeds will go into our Beautification fund. Thank you for helping our beautiful Pearl to shine.

I’m not sure if everyone has noticed but our calendars this year show April Fools day is the same day as Easter. No fooling! Here’s “hopping” your Easter will bring extra fun times with your friends and family.

While April showers may bring May flowers, May also will bring our 2nd annual Mayors Prayer Breakfast. This year’s prayer Breakfast will be held at the Pearl River Sheriff’s complex on May 3rd with the doors opening at 7:30am. You may purchase your tickets online at Eventbrite.com for $10 or pay at the door; also many churches will have tickets for sale before this event. All proceeds from this event go to the Pearl River Ministerial Alliance for their Benevolence Fund which helps those in our community in their time of need. We’ll have more on this in our April 12th column.

Mr. Davis answers our questions as the third candidate of four running for this position. Davis has served on the state level as Homeland Security Department Head. He was also a long-time Slidell businessman. The final candidate will have his views expressed in our March 15th issue, the final one before the March 24th election.

1. What is your number one priority for Slidell?

Protecting citizens and ensuring their livelihood through flood protection and crime prevention is priority one. Streamlining government access: creating an online city hall for citizens to request work and obtain permits. Listening to citizens, establishing the platform for citizen input and ideas as well as their response to government.

2. Your number two priority?

Developing jobs which give our citizens the opportunity to have career’s here in the city of Slidell. This means long-term jobs which enable job growth. Our citizens are our greatest asset. Career making industry and business keeps our citizens living and working in the city.

3. How can we bring good paying jobs here?

We need to bring new business and create jobs here at home as well. Working together as a community and nurturing community entrepreneurs enables our community to build business from within. We must also actively seek out industry leaders in manufacturing, engineering, space, and distribution to create career jobs.

4. What is your plan for Olde Towne growth?

Olde Towne needs to become a destination that brings foot traffic to small businesses. Citizens have given me many suggestions including athletic venues, entertainment, arts, museums, boutique shopping and restaurants. The city needs to find private partners to develop this area to its full potential.

5. What is the biggest problem facing Slidell?

Slidell needs to become creative and aggressive to spur growth. Our finances, our jobs, have become stagnant. We need to break the inertia. We need to acknowledge the e-commerce and technology of the future, and the transportation and service opportunities that support them. We need to move outside the box.

6. All four candidates have business or political experience – what sets you apart?

I am unlike any other candidate in terms of experience; leading our community through natural disasters and rebuilding. I understand the collective effort needed with regional, state, and federal agencies to plan and implement hurricane protection, transportation improvements, rebuilding efforts, and economic development. These relationships are essential to Slidell’s growth.

Italian Shrimp with Buffalo Mozzarella

How many dishes can people create from that one amazing protein, Shrimp? Well Bubba from the movie Forrest Gump certainly came up with quite a few, but here is one I believe Bubba missed; Italian Shrimp with Buffalo Mozzarella.

This is a refreshing way to use ripe tomatoes, and buffalo mozzarella cheese. The shrimp I use are 21-25 which means there will be approximately 21 to 25 shrimp per pound. You could use a smaller shrimp if you prefer, but freshness remains priority to maintain the best flavor.

Buffalo Mozzarella is actually a soft milk cheese made from an Italian Buffalo. Mozzarella comes from a term that means “cutting by hand.” It’s a process of separating the curd into small balls. Buffalo Mozzarella is appreciated for its delicate flavor, and elastic texture.

The process I use to cook this dish is not complex. Fresh tomatoes and quality virgin olive oil are a must. I purchase my buffalo mozzarella from Rouses in their quality cheese section. You can actually purchase the ball already cut into bite size cubes which makes that final addition to the dish convenient.

The flavors of this dish are mild, and well balanced. Pasta did not accompany this tomato based dish, but rather toasted French bread on the side for dipping. You can substitute chicken if you have any seafood allergies, but shrimp is highly recommended if there are no health issues.

Topping each serving bowl with finely sliced (chiffonade) basil, drizzle virgin olive oil, and sprinkle a good parmesan cheese will enhance the first bite so the second is even more inviting.

Italian Shrimp with Buffalo Mozzarella Serves 4 persons

Ingredients: 1 pound shrimp, 21-25 fully peeled ¼ cup extra virgin olive oil for cooking 1 tablespoon garlic, chopped fine 2 teaspoons sea salt ¼ teaspoon fresh black pepper 1 tablespoon Chef Paul Prudomme’s Blackened Redfish Seasoning 4 medium vine-ripened tomatoes, rough diced ½ cup chicken stock 3 tablespoons butter, unsalted 1 pound Buffalo Mozzarella, small cubes For Serving 4: 3 tablespoons fresh basil, finely sliced 3 tablespoons, parmesan cheese 4 teaspoons extra virgin olive oil 8 pieces of French bread

Method: • In a medium pot turn on heat to high, and add olive and tomatoes • Stir and add the garlic and mix well. Season with half the salt, pepper and Chef Paul’s • Add chicken stock, and cook hard for 10 minutes. Puree with hand wand or food processor • Preheat oven to 350 degrees • Bring back to simmer, and add shrimp. Add the rest of the salt, and cook for 5 minutes or until shrimp are done • Turn off the heat, and fold in the butter, stirring until all is melted, and combined. Taste to adjust seasoning to meet your needs • Add the Buffalo Mozzarella to the sauce pot prior to serving. Stir gently to incorporate • Slice French bread 1”– 2” thick which ever you prefer, and place in oven till warmed.

• Warm each bowl slightly in the oven, and pour enough Italian Shrimp evenly in each bowl.

• Top each serving with fresh basil, parmesan, virgin olive oil • Serve Immediately with 2 pieces each of French bread

According to the Herb Society of America, the definition of an herb is a plant used for flavoring, food, fragrance or medicine that dies to the ground after flowering and does not have woody stems. At first, this definition sounds like it meets our expectations but what about bay leaves and rosemary? Both will remain upright year around and both Will Afton easily display woody stems, which obviously contradict our definition.

Of course, rules are meant to be broken! Over the years, the definition was modified to fit all of our plants that we refer to as herbs. To me, the most practical definition of them all is: “In its essential spirit, in its proper garden meaning an herb is a garden plant which has been cherished for itself and for a use and has not come down to uses as a decorative thing.” We grow herbs on purpose. Whether it’s for their fragrance or flavor, there is a reason people put them in their gardens.

With the coming spring season upon us, many homeowners will start preparing and planting their spring vegetable gardens. A small herb garden makes an excellent companion to a vegetable garden. Many of the herbs that gardeners are familiar with are culinary herbs and go hand in hand with cooking and flavoring vegetables. Herbs play an obvious leading role in kitchen gardening due to their usefulness to both the cook and the kitchen. Some herb gardeners do not even use their herbs for cooking. Sensory gardens look to engage the five human senses and herbs can stimulate the sense of smell. Certain herbs are the cornerstone of butterfly gardening. Herbs like dill, fennel, and parsley are host plants for black swallowtail butterfly and eaten by their caterpillars. As you can see, herbs play a major role in home horticulture. Find out what motivates your gardening spirit and start taking steps to grow your own herb garden.

When getting started with herb gardening it is important to find a good location. Look for an area that receives a lot of sun light. With all the picking, cutting, and harvesting done to herb plants, they prefer a full sun location to maximize the photosynthesis process. Access to irrigation water is another important factor to consider. Make sure the garden is in close proximity to a water faucet or, at least, close enough for short walk with a watering can. Place the garden in an area where it you can see from inside the house. This will help ensure that the garden is utilized and maintained.

Once the fear of frost has passed, sow warm season herb seeds into the garden. Sweet basil is one of the most popular herbs known to not only the gardener but also the cook. Holy basil is an exotic species of basil made popular in Thai cuisine. Mint plants such as spearmint and peppermint grow particular well in the Louisiana garden. Rosemary and lavender are very aromatic and work well in sensory gardens. Several other common warm season herbs include lemon verbena, lemon balm, Mexican tarragon, burnet, sorrel, society garlic, garlic chives, oregano, anise hyssop, mountain mint, French bay, pineapple sage, and rue. Garden centers, feed stores, and home improvement stores will also stock up on herb transplants. Those looking for a more instantaneous garden look may want to wait a few weeks to see what potted herb plants they will stock up on.

eventually I decided to make a move around the corner just out of the pond. As I turned the corner I decided against it due to the waves and wind direction. I decided to another place far from where I was.

Part way to where I wanted to go I decided to go to the west instead. I went up the river and across to the west. Once there it was the first time we saw any other inshore boats.

We picked away the rest of the day ending up with 8 fish in the box.

Could have limited out if we kept the other 2. The rest of our fish were like this colorful beauty.

Day 2 it was still windy and rough but we made an attempt to go long. We decided to abandon our tuna search and trolled for Wahoo.

After a few rigs we decided to tuck into East bay and look for a mix of nearshore fish. We made a trip out of it catching well over a hundred fish. The action was too hectic for a bunch of pictures. We got a limit of red snapper, some nice Mangrove

snapper, and a bunch of silver sea trout for the box. We threw back a bunch of red snapper both under and over size. They were in shallow enough water so they were not hurt. The trigger fish had to go back because the feds have a closed the season for the entire year. Thanks NMFS! We are in La. not Fla. Day 3 we sat at the marina and had breakfast while waiting for the fog to lift a bit. My radar was acting up so I followed Mike Jeffcoat out.

The radar would only work at 1/8 range which is too close for safety running the river. Once out of the pass Mike followed me around a sand bar just outside as he did not have a track around it. Once in the clear of any hidden dangers I let Mike go ahead as I could run in the open that way. My GPS tracks and his radar combo worked very well.

Out at the tuna grounds it was not long before Tony has his reel screaming and the battle is on. This fish ran up high as many big ones do. Late in the fight tony had to tap out because of a muscle in his left arm that was operated on. I knew something was wrong because I could see his arm twitching just before he passed the rod to Don. What a way to start our day.

Unfortunately That was all we were able to manage. The rest of the day we got bit off by kings and landed a bonito. This picture says it all. Thank you lord for this one!

From there we made a quick stop for a limit of red snapper. I never tied up. I just held in front and they dropped down and caught 4 good ones. As I was getting ready to roll Mike came by. He followed me around the sand bar into the pass then he went ahead. For those knowing this area new were not any where near the usual rigs or passes the offshore boats use or many other boats either. At the dock I was thankful for the fish we ended up with.

The following morning the winds came up again. We went for breakfast and let Jo Ann rest.

Once sending Tony on his was Don and I hooked up the bay boat and launched at Delta Marina. There was a strong North East wind and he had to catch a 5:45 flight so we only had a short time to play. Did I mention I hate the strong winds?

I went to some of my close by places but only found one rat red.

Everything was muddy. I was lucky to just get that one. I went to places I have never been before. I found a pipeline canal and started exploring. There were a few small ponds off the canal but with oysters out of the water due to low water conditions I was not exploring them. As we were fishing a point we notice a good redfish feeding or looking for food around the oysters along the bank.

We watched the fish work our way. I figured it was only a matter of time before the victim would fall prey to a Cajun Pepper Vu Du shrimp. All Don had to do was present the bait and get the fishes attention.

The thrill of watching this 23 incher work the bank then attacking the bait was the climax of an exciting 4 days.

Life is Good! Fishing is not a matter of life or death. It’s more important than that.
