Wow, I am really starting to feel like a southern girl! Can you believe it? Two years here now! Anyway…. With Valentine’s Day just around the corner, I thought it fitting that I talk about Blood Sugar and how to keep it in balance, but first, let’s talk about statistics…

29.1 million people in the United States have diabetes, however, there is at least 8.1 million undiagnosed and unaware of their condition. One in every 10 adults who are 20 or older, have diabetes, so you can see what an epidemic this is. If it’s not you personally , I am certain you know someone who does.

Before we get started with tips to balance your blood sugar, I want to cover some basic blood sugar terms that I will be using in this discussion.

Blood sugar/blood glucose – Glucose is the form of sugar that is in our bloodstream. Glucose is the body’s preferred source of fuel.

Insulin – the pancreas secretes insulin, a hormone that shuttles glucose from the blood into body cells. It knocks on the cell and says, “Open up, I’ve got some glucose that I need to get out of the bloodstream so take it and use it for energy.”

Insulin resistance – When we consume a large amount of refined carbs with very little fat and protein, our blood sugar spikes very high and the pancreas frantically overcompensates with insulin release. This overcompensation of insulin eventually causes insulin resistance, which leads to Type 2 Diabetes if poor dietary practices are continued. The good news, however, is that it can an be reversed through a healthy diet that balances your blood sugar.

Glycogen – Glucose that doesn’t enter body cells is taken to the liver where it is converted to glycogen. This is a form of stored sugar that is broken down to stabilize low blood sugar levels between meals and during the night. It is healthful for the body store of glycogen, but stress and hormone dysfunction deplete our ability to store glycogen and this can contribute to blood sugar imbalance.

Hyperglycemia – Hyperglycemia is another term for high blood sugar. It is normal to have a spike in blood sugar after a meal, but chronically high blood sugar causes severe health issues.

Due to issues beyond my control I have been off the water until now. I had Thursday thru Sunday, 4 days in a row, booked. The first 3 were offshore and the fourth was to be inshore. The weather canceled the first 3 of them and it looked like the fourth was going to be rained out. On Friday night I decided to go to China Sea for supper. Chandler was eating so instead of getting my order to go I decided to join him and his deckhand. He reassured me the canceling of my first 2 trips offshore was a very good move. He asked to take a friend of his from Georgia inshore on their boat. Although I do private boats I do not do them inshore. We decided on going for a sheepshead trip. I had to avoid the main river because of foggy conditions and no radar on his boat. This boat is a 2017 Tidewater. As we started out I mentioned his VHF radio. He told me they do not need one where he fishes in Georgia. Seeing we were already underway I made the decision to continue. Just wanted to help my buddy out. Once out of the pass I was greeted with aa wall of very thick sea fog. He had the Empire rigs marked so I headed that way. It did not take me too long for me to tell myself it was a dumb move to continue under these conditions. As I got right in front of the pass the air cleared up just enough for me to target a rig. I headed there and made it just in time. When I tied up we were once again engulfed in dense fog.

It took a while for us to let the fish know we were feeding them some food. I was getting ready to go to another rig close by but I got the first bite. This bought us some extra time here and we were soon putting some nice sheepshead in the box. We also landed a nice redfish to add some color to our fish box.

All my trout and redfish rods have 40 pound power pro slick braid on them so if I accidentally hook into a big shark, cobia, King Mackerel, bull red, or any other monster of the deep we have a chance of landing it. Today was the day to brace for a fight and a half. After a very long fight with this fish doing what ever it wanted we were able to see a very large, bull nosed, manta ray. I was busy with other fish so no picture was taken. After a while we hook on to another Monster. This fish also let the angler know it was going to swim around and do what ever it wanted to do until it got tired which would be a while. Once we were able to net it we took a few pictures and returned it to the sea.

There is no way we would ever want to keep a black drum this big.

Tony’s SHAKEY TIGER TEAMS IN 2017-18 GOING DIFFERENT Take DIRECTIONS IN THE FUTURE The LSU Tigers finished a recruiting year with a grade of B- when you figure they lost out on a “lock”at safety with Patrick Surtain going to Alabama and the only quarterback they sought (from the state of Alabama) going to Texas A&M. Only two additional scholarships were given in early February and the school did get the wideouts they needed to compete. However, either an underweight, under-utilized pro set quarterback, an oft-injured left-handed option style quarterback or a roster body for the past two years will be the delivery system to these players. LSU has been down this road before: they signed the nation’s top-ranked receiver two years ago but that player never saw the field as a Tiger. He’s gone now, just like the chances of LSU actually entertaining fans in overpriced seats with an offensive display of football. This is the worst skill set team the Tigers have had in the modern period. The only two new quarterbacks are a transfer from a lower division 1 and 10 team and a 2A kid with no legitimate offers, both basically walk-ons.

Meanwhile, the hoopster Tigers aren’t going anywhere this year as they strive to wind up in the middle of the SEC pack. In a year where the Kentucky Wildcats field the weakest team in decades and the leading team in the SEC is under investigation, the Tigers don’t show much more pop than the Johnny Jones teams of the past few years. However, first year coach Will Wade has built an incoming class of players that has turned the heads of most of the nation and likely will wind up with a national top five or six incoming class - something not done since the early years of Dale Brown.

the nation’s top talent recruiter for 2017-18. Alabama was in the top ten but fell several spots, behind Ohio State, USC and other programs. This was Smart’s first season at Georgia and it took a miracle performance by a raw, Polynesian, left-handed true freshman quarterback to pull out an improbable win by Alabama against the Bulldogs in the national championship game last month. But Smart got the better of Saban in the signing game and now the hierarchy in the SEC goes through Tuscaloosa and Athens. It will be wait and see if Florida can build back up to its former glory, if Auburn can finally stay consistent instead of producing a four or five game win swing from season to season and if Jimbo Fisher can finally make something work at College Station. Honestly, if Orgeron can’t make better coaching decisions and can’t communicate any better than last year, he’s entering his final year as LSU head coach. But don’t worry. The LSU Board of Stupidvisors love to pay out dead money to the dearly departed coaches in Baton Rouge. It’s your money, not theirs, so…so what? Losses to Miami, Auburn, Florida and Alabama this coming season will probably mean that the highest paid college assistant coach in America will be running this team in 2019. David Aranda is everything Orgeron isn’t; measured, studious, quiet, well-spoken and he doesn’t need a caffeine jolt every 30 minutes. Can he lead a major program? Well, the pay increase, percentage-wise, won’t be as drastic as it would be for some other assistant coach or coordinator and the man knows the team, having, by that time, coached for three years under two separate coaches, each with fatal flaws in their demeanor and philosophies. One is long gone; the other may be soon gone.

Expect a top 25 team from Wade in 2018-19 as he prepares to give Kentucky a bit of a run for their recruiting prowess. He’ll have shooters, defenders and big men, passers and cutters.

He may not make the Sweet 16 in March, but don’t bet against the man who can recruit AND coach, a situation the Tigers have NEVER had.

The 2019 Louisiana football talent pool is supposed to be the deepest in many a year, with the nation’s number one player in a defensive tackle from Amite and three of the top 18 in the land, including the top offensive guard, who is a solid LSU commitment. It is incumbent on Ed Orgeron to find the rest of the class in Louisiana on his doorstep by next February and discover and sign at least two top-flight quarterbacks and two high-ranking running backs. If Orgeron goes with less than 9 wins this coming season (and odds are that he will), his job will be almost impossible. Don’t say the Nick Saban machine eats all the five-stars up; former ‘Bama coordinator Kirby Smart at Georgia secured the signatures of EIGHT five-star recruits and was

These boys along with their mother and two sisters were rescued from a different area, but their stories are similar. They were living in a neighborhood, on the street, and being fed by a neighbor who could not bear to see them go hungry. Their mother is a bobtail tabby and one of their two sisters, also tabbies, is a bobtail. So it is not surprising that Buddy is a bobtail too. It runs in the family! Their mother, Sadie, is young, playful and spunky.

The sisters, Sissy and Sassy, are sweet and cuddly just like Buddy and Buster. The whole family has been fostered and all five are now ready to be adopted into loving homes.

DD, LULU, SASHA & LILLY Contrary to what you have heard, black cats bring good luck!! Sasha and her three kittens, DD (black & white) Lulu and Lily were hanging out in front of a house on a busy street. They were strays that had appeared there one day and the homeowner felt sorry for them, and she started feeding them. Unfortunately she had no way to contain them and prevent their being injured in the street. She was very grateful when a START volunteer approached her about getting homes for all four of them.

All four have been spayed and vaccinated. They are living in a foster home while waiting to be adopted. You can meet Sasha and her kittens on Saturdays at Petsmart in Covington. Please come and see our lucky black cats!

SLIDELL MAYOR FORUM SESSIONS CONTINUE THIS WEEK

Experienced city councilman Landon Cusimano answers our questions in this issue, the second of four candidates for Slidell Mayor to participate in our forum, pertaining to the future of Slidell and his vision of the city under his possible administration. The other two candidates will have their views expressed in the next two issues of Northshore Plus Enjoy, one candidate per issue, culminating in the March 15th issue just nine days before the election.

1. What is your vision for Slidell?

My vision for Slidell is growth and prosperity. As Mayor is up to me and my administration to identify potential companies that will be willing to locate in Slidell with the potential of higher paying jobs. I also want to create an Economic Development Board consisting of non-paid volunteers and business leaders that have invested in Slidell to assist me in this undertaking. I will also seek out investors to redevelop existing structures in an effort to put them back in commerce.

Being close to the interstate system makes Slidell a perfect fit for distribution centers. Several have been built in the surrounding area that should have been developed here. As, Mayor I will find out why they did not develop here and take that knowledge to entice similar businesses.

With Slidell’s proximity to the Stennis and Michoud facilities I will work with investors and the business community in an effort to locate commercial spaces available to attract the smaller companies and contractors that work as “support” for these facilities. I will develop a partnership with directors of companies to showcase not only what the city has to offer but also the talented people we have living in the city that could be an asset to their respective company. Economic Development is a process and takes time but we have to start and now is the time.

With the addition of Economic Development and higher paying jobs comes prosperity.

2. What are two things you’ll be able to accomplish that will improve Slidell in some appreciable manner?

For anyone who knows me, knows that code enforcement is one of my pet peeves and I will take a strong stance on this. As a council person for the last 20 years, I have tons of experience with this. I have gotten the calls for high grass, cars parked on lawns, inoperable vehicles and businesses falling down and in need of repair. I will instruct my administration to enforce the existing codes. While doing this the public will be treated with respect, we will instruct the homeowner or business owners how they need to conform to the laws and educate them in the process.

I want to improve the efficiency of city government by challenging all department heads to provide cost saving ideas without reducing the quality of services that our citizens demand and deserve. Being irresponsible with our tax dollars for any reason will not be accepted when I am Mayor.

3. What steps will you take to make building renovation and/or opening a new businesses in Slidell less of a hassle?

I want to improve and enhance the permitting process to make it simpler, quicker and customer friendly. Throughout my campaign, when meeting with business owners, the number one complaint is the planning and permitting process. Since business owners utilize these departments frequently, I will meet with them to hear their ideas on how this process could be improved. I also think we need to make it more convenient by allowing business owners to complete as much of this process online. I am not talking about just having the ability to print forms to manually fill out, but have the ability to fill out forms and upload them with any supporting documents or required paperwork. The documents could then be forwarded to the proper department. If it has to go to multiple departments, the business owner could receive updates via email.

4. What are your priorities to keep or improve the integrity of the city and the quality of life here?

The Mayor and City Council must continue to provide the basic services that the citizens need and deserve. We have the money do that, but in addition we must conceive and articulate a vision for make Slidell and even greater place to live. The Mayor has to lead that effort and I will be that leader. We have wonderful parks and recreation facilities and we must continue to enhance and maintain these. You can catch a movie or concert in Heritage Park but it will be an even greater place to visit with the arrival of the long awaited Tammany Trace.

As Mayor, I will gain the trust of every citizen by operating the city in a fiscally responsible manner.

Beef Enchiladas

There are many recipes cooking with ground beef. A few that come to mind are hamburgers, meatballs, meatloaf, beef nachos, stuffed peppers, Shepard’s pie, and then there are the recipes using ground beef in a red sauce with pasta, like lasagna or add it to a wonderful soup.

MY recipe is for Beef Enchiladas. This is a familiar Tex-Mex recipe and seems to have been enjoyed by many fans throughout the decades having become a popular menu item in Mexican restaurants.

My fondest memory of my first encounter with beef enchiladas was at the infamous Taco Tico. Taco Tico was a chain restaurant opened by Dan Foley in 1962 in his hometown of Wichita, Kansas. Taco Tico’s ground beef enchiladas had the perfect flavor with a well-balanced tomato base sauce, and the cheese lightly melted on top. This was my all-time favorite.

Tacos were always okay, but to me, enchiladas had something special about them. Maybe it was the soft corn tortilla filled with ground beef and those years going through the Taco Tico drive thru that had me hooked. Once I learned this recipe, it became fun to cook for others. You can also use shredded beef or chicken, but for me, it had to be ground beef. ENJOY!

Beef Enchiladas Serves 4 persons

Ingredients: 1 pound ground beef 2 tablespoons olive oil 1 tablespoon garlic, chopped fine 2 teaspoons sea salt ¼ teaspoon fresh black pepper 2 tablespoon chili powder (not spicy) 1 onion, medium dice 2 cups beef stock 1 tablespoons paprika 1 teaspoon cumin, ground 1 pound cheddar cheese, shredded (8) 6” corn tortillas For Serving 4: 1 small container of Sour Cream 4 sprigs of cilantro

Method: • In a medium pot turn on heat to high, and add olive oil • Add the garlic, onions and mix well. Add ground beef and season with salt, peppers, paprika, chili powder and cumin • Add beef stock, and cook hard for 15 minutes.

• Preheat oven to 375 degrees • Heat a little oil in another skillet, but do not let it smoke.

• Heat each tortilla in the hot oil for a quick second to soften, using tongs to flip quickly, and remove on to a piece of paper towel. Repeat till all are done. You can stack on top each other.

• Taste the beef and adjust seasonings if needed.

• Drain the beef liquid into another small pot and roll up 2 tablespoons beef in each tortilla • Place each enchilada side by side in a 9” x 11” baking dish. Pour sauce on top each and sprinkle cheese.

Cover with aluminum and bake for 10 minutes or till the cheese melts.

• Serve Immediately 2 per plate. Top with sour cream and cilantro for garnish.

Pruning should be thought of as a revitalization procedure aimed to remove old growth and allow for new growth to take over and flourish. Start with the hand pruners and remove up to 2/3 of the above ground growth from each cane. Try to make angled cuts directly above an outward facing bud without cutting into that bud. Examine these canes for health, good color, and spacing. The idea is to keep about 4-5 main canes coming out of the crown with fairly even spacing. This will promote good airflow later in the season when the plant begins to leaf out. Always remove broken and diseased stems during the pruning process. You can finish the process by watering in an application of a general all-purpose fertilizer. All that is needed now is time and patience. You will soon reap the rewards of proper timing and care as your rose bush puts on a show later this spring.

Prepare Spring Vegetable Gardens With Soil Testing It may be a little early to plant a spring garden but it’s never too late to plan and prepare for when that day comes. Unless you are growing out seedling vegetable transplants in your greenhouse there’s not a whole lot that gardeners think about during this time of year, but one can definitely benefit by having your soil tested and analyzed by the LSU AgCenter’s Soil Testing Lab. Farmers who make a living off growing and providing food, base their fertilizer programs off the results from a soil test. The routine soil test option is the most common and will give you precise information about the soil in your garden. It will give the soil pH and provide you with a range of some of the more important nutrients plants need to grow properly. Certain fertilizers can be applied to supply only nutrients that are deficient.

To take a sample you will need a clean bucket and a hand trowel. If taking more than one sample it would be advisable to have labels and a marking pen to identify each different sample.

To properly retrieve a soil sample for your garden, take the hand trowel and scoop out some soil from 6 inches below the soil surface. Using the bucket, collect several random samples throughput the bed and mix them together. Submit a sample from this mixture you have created.

This concept stems from the fact that there are living organisms in the soil that interact and change the fertility over time. By taking several samples and mixing them together it will give a good representation of soil fertility for the garden as a whole. Look for LSU AgCenter soil test boxes at feed stores, garden centers, or your local parish extension office. Follow the directions inside the box to successfully mail in samples directly to the lab in Baton Rouge.

Additionally, the presence of fat in a meal signals the gallbladder to release bile. A stint on a lowfat diet, be it months or years, causes the bile to become thick and stagnant. Since the bile contains hormones and toxins that need to leave the body, stagnant bile allows these things to be reabsorbed into the body. This can contribute to inflammation and blood sugar imbalances.

When it comes to choosing fats, opt to skip anything that requires a factory to produce it. Corn oil, soybean oil, safflower oil, sunflower oil and margarine are all highly processed and highly inflammatory. As a rule of thumb, enjoy fats that allowed your ancestors of 10,000 (and even 100,000 years ago!) to thrive. These include fats from grazing animals, like butter, egg yolks, lard and tallow. Coconut oil is another excellent option. For an example of what a daily intake of fat should be, contact me, I will be happy to help!

But wait a minute! You may be thinking. Won’t those fats clog my arteries? Nope, but blood sugar problems will! Science tells us that saturated fats does not cause heart disease, and neither does cholesterol clog arteries. Studies show that a low fat diet increases triglycerides and lowers HDL cholesterol. A meta-analysis in the American Journal of Clinical Nutrition shows that there is no evidence that saturated fat causes heart disease. Further, studies show that low cholesterol actually correlates to numerous health problems.

2. Don’t eat constantly to balance blood sugar How often have you heard, “It’s best to eat small, frequent meals to balance your blood sugar”? This is a debated topic. Many nutrition researchers whom I greatly respect, including Sarah Ballentyne who wrote The Paleo Approach, believe it is best to transition to larger, less frequent meals to help regulate hunger hormones. As a matter of fact, we do not have proof from studies to show that smaller, more frequent meals improves health.

I believe that it may be necessary to slowly transition to less frequent meals if you have issues like adrenal fatigue, chronic fatigue, autoimmune disease, inflammation, and/or compromised digestion. A good starting point is three solid meals a day, if you are used to snacking all through the day. Intermittent fasting can be healthful, but, in my experience, not when blood sugar balance is severely compromised.

Next time we meet, I will talk about the importance of eating protein for breakfast for balancing your blood sugar Breakfast is an important part of the day to balance blood sugar. If you are not hungry for breakfast, it indicates that you may suffer slow digestion due to inadequate stomach acid. It can also be a sign that your stress hormones are out of whack.

When we skip breakfast, the body increases production of stress hormones and starts to break down muscle (not fat – muscle!) to use for energy. It’s a very stressful situation for the body and wreaks havoc on blood sugar balance for the rest of the day.

After a while it became evident the bite had dropped off. It was just after 11:00 and we decided to go in and get some ice for our fish. The 2 small bags they brought were almost nonexistent.

Unfortunately the fog still had not lifted. I followed my bread crumbs on the electronics all the way back to the pass and a few hundred feet into it. I was so glad to get out of the fog.

Once back, it is still early, we decided to go to one place and have a quick look for some redfish.

Unfortunately it was not a quick look but we managed to find a trophy redfish.

We finished off getting 4 redfish for the box and 1 largest of the day sheepshead to top off our catch for our efforts.

Knowing we were going to have a lot of heavy rain with some thunder storms for most of the day I attempted to talk my Sunday customers out of the trip. I had Mike, his girlfriend, his mother and father from Mass. They had rain gear and were ready to take on the challenge. On the way down to Venice marina I went through some heavy fog and was hit with heavy rain at the boat launch. Not looking forward to another day like this. I got there early and did not see any other boats being launched. What the heck was I getting myself into? We were soaked right from the start. I hit many places looking for some positive conditions. Every place was a bust. Along about 11:00 we had our first fish. A hardhead catfish for our only bite in over 3 soaking hours had me just about beaten down. I found the only other boat that was foolish enough to be out there. He had managed 1 slot. I moved around a bit more and finaly had a rod bend properly. This is what they were here for. After a very good fight we now had something for the ice. Usually the size I would want to put back but being the only one of the day it was being invited to join our family for supper tonight.

We picked up 2 rats that went back of course before landing a good yellow mouth.

I let the other boat know I found a few and he told me his area had started working for him.

Eventuly the place I was in had stopped but his was going well. He invited us to join him so we went around the corner just in time to see him land another keeper. We slipped in close by and started getting a bunch of rat reds. They were all 14 to 15 inches. Only one was close enough to measure and even that was short. It did feel good to be getting into some fish though.

There was another monster storm heading our way and as it hit us the other boat decided to call it a day. They had enough of this weather. He left with 5 keepers for the day. Once he moved

out I reset the boat and we managed to pull out 2 more keepers in the heavy rain before it was eident this area had changed. I knew this would happen as I watched the water color change creep into our area.

It was now about 1:00. With only 3 keeper redfish and 1 beautiful trout on ice I did not want to head back even though we were experiencing unreal conditions. My customers from Massachusetts just wanted to catch fish so I went back to the place we cought our first keeper.

I continued beyond that and slipped into a drain that does produce at times. The drain was not producing but we found the redfish just to the side in the cains waiting to ambush anything slipping out of the pond. The redfish were soon ambushing our dead shrimp we were throwing at them.

It is now almost 2:00 and I moved to one other place that my brother and I had fished a few years ago with great success. Due to all the dieing canes the place has changed a lot. We decided this would be the very last place for our day. Everybody was soaked so you know these people were troopers.

We managed to put a few more keepers in the box and around 2:20 another storm was heading our way. This one had lightning in it so I quickly picked up and headed to the barn. We could not escape the rain and running at 40 mph it pelted the heck out of my face. As I was running in the wheel and red pass the rain was just behind us but fog got real thick. If I did not have my radar I might have hit something there. Even though the wheel is narrow I was still running with radar and chart zoomed in close. At one time a pelican flew in front of me causing me to throttle back when it showed up on the radar. I never saw the bird but I figured that is what caused the solid blip on my screen.

Once at the marina Mike’s girlfriend had to go change her cloths so she did not get into the picture. Poor kid was drenched right through.

I was very thankful that we managed to put together a box like this under such adverse conditions. I managed to put together a good trip after all. These last 2 days showed me I can still fight the elements and get the job done.

My year is off and running.

Life is Good! Fishing is not a matter of life or death. It’s more important than that.
