CAPT HOOP -- OUR FREEDOM Lou called me up and asked if I took kids fishing. He has an 8 year old son, Cooper, that requested he has a day fishing with his dad before Lou gets deployed again.

He has already done 2 deployments in Afghanistan and is scheduled to be deployed again to who knows where. This entire trip was for Cooper.

My niece, Trina, had come in for the weekend with her mom, sister Tracy, and Tracy’s son and husband to visit for the day. When Trina heard I was fishing the next day she wanted to go with us. Lou and Cooper said it would be ok.

All morning long cooper had my assistance casting or dad would help him out if I was doing something else. At one point Cooper had a good battle with a 5 t0 6 pound sheepshead, It was going crazy and I was worried the fish might spike him so we did not get a picture of him holding it.

Cooper said very little and concentrated on his fishing. The smile on his face told us he was having doing just what he wanted to do with his dad. They bonded together all day as a father and son should. With the entire morning going slow dad asked Cooper if he wanted to go in and have lunch. This boy wanted to fish. We had a snack at the spot where we were and headed off to another location. This move paid off and we finally put a nice redfish in the boat to go with the sheepshead we had iced.

We met about 6:15 and launched at Joshua’s Marina. I had gotten some good trout lately near by so I headed straight for that area. The water was very low and falling with little tidal range. A new moon is not good for fishing and shallow dirty is also a downer. Although very slow we did manage a few trout to get warmed up. Not a one was worthy of a cool ice bath.

TONY’S TIGER REPORT EARLY SIGNING PERIOD SHOULD

PROVE BENEFICIAL FOR THE TIGERS

The NCAA allowed an early signing period for colleges to sign high school seniors to a binding commitment this year and it is proving beneficial for LSU. Following the successful signing of the number one junior college (JUCO) offensive lineman earlier this month, Coach Ed Orgeron says he feels confident most, if not all, of the 20 Tiger commitments will ink their agreements this week. The advantage for schools with the early signing is that those who don’t commit will have a double sword over their heads: scholarships may not be available in February, the normal signing date and schools may feel these players are not serious enough to commit and thus the schools will open up their recruiting for other high school and JUCO players.

sanctions handed down this year against Patterson’s old school, Ole Miss. Geez, maybe Miles should have gone there years ago. But I’m sure Patterson doesn’t have the “chest” that Miles desires in his players. Myles Brennan and Lowell Narcisse are unproven quarterbacks and the rest of that position is manned by squad players at LSU. Both players, especially Brennan, could have had meaningful snaps during the final four games this year but again, stubborn head coaching decisions rear their ugly head. You’d think Orgeron would have learned at least to go through the motions of preparing Brennan for 2018. Now we can only hope for a miracle signing or transfer to seriously consider the Tigers’ chances of unseating Alabama in 2018….or Auburn or Georgia. I’m not feeling it.

Many schools dislike this new signing period because it interferes with preparing for a bowl game, which is almost a participation game, like giving a ribbon to everyone in a grammar school class because you don’t want to make anyone feel inferior. Bowl games, except for the top ten to 12 match ups, are a joke anyway, like the NFL’s Thursday and Saturday football games. I don’t have any problem with the early signing. Get it out of the way and let the schools replace their coaches earlier as most of them did this season. College coach replacement in the post-holiday period has always been an excuse for some high school players to de-commit in February. Now that shoe has hit the floor and players can go into their spring semester of school with the signing pressure off of them. Let Santa visit and the Grinch as well. Schools will have more time to find replacement players from the faint of heart or gamblers who ignore early signing and want to play the drama card as far as it will take them. Fine for a few four and five-star players but not good for the vast majority of these 17 to 19 year olds who hope to find a free ride and a two to four-year football home starting next summer at a college near or far from them.

LSU needs to find skill position players quickly as their stable of running backs may be gone after this spring’s NFL Draft. Their quarterback position is tenuous at best as Orgeron is no better at developing quarterbacks than Les Miles. His is a Cajun stubborness; Miles was an upper Midwest hardheadedness. Either way, the Tigers are not in good shape in the backfield for 2018 and they also better find some wideouts to come to a school that treats quarterbacks as shabbily as any top tier NCAA school in the country. There may be a new offensive coordinator in Baton Rouge before spring as Matt Canada didn’t exactly set the world on fire and his relationship with Orgeron leaves something to be desired.

JIMMY G HAS NINER FANS SHOUTING “GEE - A REAL QUARTERBACK AGAIN!” When Jeff Garcia was traded away by the San Francisco 49ers, it began a quarterback drought that has effectively lasted for more than 12 years. Garcia, who had Terrell Owens to throw to, was a top five to seven NFL quarterback during his years following Hall of Famer Steve Young.

Since then, the list of proven quarterbacks is almost as comical as the Cleveland Browns draft selections of the same. It began with the overlooking of Tom Brady in the late 90’s, with the Niners selecting some dude out of a California school who never took an NFL snap. It continued in 2005 when the team flipped a coin and decided Alex Smith was a safer choice than another local quarterback legend-to-be, like Brady, a guy named Aaron Rogers. It reached a pinnacle with the one decent year of Colin Kaepernick, he of the kneeling Kaepernicks, protesting the fact that he is half-white and his adopted parents were well-to-do honkies. That doesn’t play well in the ‘hood and the only “hood” for Kaepernick growing up was the hood on his designer sweatshirts. Kap is gone, mostly forgotten, and those quarterback journeymen who followed number 7 in San Francisco for the past two years are also forgettable.

But like Garcia, another quarterback has arrived with the initials JG. His name is Jimmy Garopollo and unlike the unknown Italian from another era whom the 49ers chose instead of Brady, this Illinois Italian learned his NFL trade for three years under Brady and Bill Belichick in New England. Jimmy G is a “gee-whiz” under center. His ability to read the defense, find an open receiver and deliver one of the most explosive and tightly spiraled passes in the league is impressive. Garopollo has lead this team to three straight wins after he replace a rookie and a journeyman this month. He’s not as mobile as Russell Wilson or as strong in the pocket as a Brees, Brady or Rogers but he has that something that San Francisco fans can grasp and even recount the glory days of Montana, Rice and Lott more than 25 years ago. He also has the looks that challenge the female fan to rethink their allegiance to Brady - looks a little more mischievous, perhaps. But Jimmy G will be the next Joe Cool on the West Coast….except he will be Jimmy Cool. Look out, Matty Ice! Careful, Southern Brees. This isn’t your 6’5” stud on the field but a guy who is a quick and effective study. Games against the Jacksonville Jaguars and Los Angeles Rams may bring this guy (and his fans) down to Earth a bit, but remember, Joe Montana didn’t set the world on fire when he began with a team about as bad as Garopollo finds himself part of today when Montana became a 49er back in 1979. Three years later, the first Super Bowl champion appeared at Candlestick with Montana and “The Catch”.

Maybe there is hope for this proud franchise after a miserable period interrupted by Jim Harbaugh and one great season not so long ago. But that team had star power on both sides of the ball not dependent on Kaepernick. This one is starting to get there. The Niners may be on their knees this year and during the previous two seasons but they are not kneeling on purpose, except for Eric Reid and a few others who still don’t get it. A lousy owner and a crappy marketing plan can be overcome as well as a poorly visualized stadium, climate-wise. Maybe the fans won’t return to the stadium en masse (and they shouldn’t, given the problems this franchise self-inflicts) but they will at least watch the team on television with a certain amount of pride and entertainment value. The old NFL is no more; despite the childishness of millions of adults wearing $150 jerseys as part of their wardrobe everywhere they go, the feeling of a great, growing industry is dead. The owners won’t suffer but the stadiums will. Enjoy what you can of the NFL for the next few years but remember: it is only entertainment now, without much of a sense of civic pride.

Chef Keith Kornfeld Since hurricane Katrina, Tex-Mex restaurants escalated throughout Louisiana more than ever. It’s not a bad thing, I love good Tex-Mex food, but there is nothing new, nothing authentic, and very little innovation. You may find a restaurant here or there that expands the menu slightly, but Tex-Mex food is standard, familiar, and not fancy. Its food that is recognized by a large majority, and relatively inexpensive to produce such as tacos, enchiladas, fajitas, refried beans, rice and many other favorites. It would be nice to see a new concept create real Mexican cuisine from the different regions, but authentic Mexican cuisine is laborious and would become more costly for the restaurant, and patron.

Because fish has become costly, and many times not as fresh as I prefer, here is an authentic street style taco using shrimp, lime, onion, and cilantro rather than western ingredients such as cheese, lettuce, tomatoes, and sour cream.

Shrimp Tacos

MY Shrimp Taco recipe provides ingredients that are stress-free to acquire and easy to prepare. This is a great recipe to cook at home as a main course during game day or any other. The other components required are corn tortillas, salt, pepper, and olive oil. You will need 2 skillets and a bamboo steamer for softening the tortillas.

You can substitute chicken or fish for this recipe, but the cooking times will differ and freshness is always the most important. ENJOY!

Shrimp Tacos

Makes about 4 servings Meat Filling: 24 shrimp, size 21-25 per pound 2 tablespoons olive oil ½ teaspoon sea salt ¼ teaspoon fresh black pepper 8 6” corn tortillas ½ red onion, thin julienne ¼ cup cilantro, rough chop 1 whole lime

Method: • Prepare 2 skillets for this recipe.

• First skillet, heat the olive oil and add the shrimp.

• Second skillet, add 1 cup of water and heat to a rolling boil to steam the tortillas.

• For the shrimp, stir and cook for 2 minutes adding the salt and pepper.

• If the shrimp stick for any reason, simply add 2 tablespoons of water and stir.

• Cook till the shrimp are pink and fully cooked. Set aside and covered to keep hot.

• Place a piece of parchment paper or aluminum foil on the inside of the bamboo steamer, but do not cover all the slots so the steam can penetrate through. Place 4 corn tortillas in the steamer and cover. Place the bamboo steamer resting on the rim of the skillet (high enough over the boiling water). Steam for about 3 minutes or until tortillas become pliable and soft. Repeat until all tortillas are cooked. Wrap them tightly once steamed to keep warm and soft.

• Once all are ready, simply lay out the tortillas and add 3 shrimp per taco.

• Sprinkle the chopped cilantro and red onion and squeeze fresh lime juice over each.

• Serve Hot!

Words to GREAUX by THE KING OF HOLIDAY PLANTS, THE POINSETTIA There are several different species of “holiday” plants used in the trade but none are more recognizable than Euphorbia pulcherrima or more commonly known as the poinsettia. Whether revived from the previous year or recently received as a gift, the poinsettia reigns Will Afton supreme as the most iconic potted plant during the Christmas season.

The bright colored leaves, actually modified leaves referred to as bracts, attract pollinators to the small yellow flowers near their center. Traditionally, the bracts of poinsettia plants are red but through the introduction of plant breeding techniques, several color combinations have been produced. Currently, there are several shades of red, pink, and white available on the market along with a few multi-colored combinations.

The poinsettia plant as we know it today is native to Central America. The Aztecs were the first people to utilize the plant for its herbal properties. The white sap, botanically termed latex, was harvested and used to help control fevers. The bracts were used to make a red colored dye. Poinsettia plants belong to Euphorbiaceae, the spurge family, which includes other plants like copper plant, croton, crown of thorns, and the infamous tallow tree. Joel Roberts Poinsett, while acting as the United States Ambassador to Mexico, discovered the wild flowering plant during an excursion in the Mexican countryside. He took cuttings and sent them back to his estate in South Carolina where the story of the poinsettia plant would eventually take off and become what it is today.

So, what do you do when you bring a poinsettia into your home? Well, the first thing to think to think about is a place to put it. Poinsettias prefer full direct sunlight. If they don’t receive enough sunlight, they will grow taller and thinner as they stretch to find more light.

A south facing window is a perfect location for a poinsettia in the winter time. Move to a western facing window during the spring time as summer draws near. Irrigate the plant thoroughly so that water flows through the bottom of the pot. Repeat the process when soil completely dries. Irrigation frequency may vary from situation to situation. Fertilize plants in the following spring with a complete fertilizer. Many gardeners find ease using liquid products like Miracle-Gro Liquid Plant Food. Whichever type of fertilizer is used, be sure it’s applied at the labeled rate for maximum effectiveness.

Like all other plants, poinsettias can have their fair share of insect problems if left unnoticed.

Mottled leaves can be symptoms of several different insect problems. Aphids will feed on young tender growth along with white flies and mealy bugs. Spider mites are another common pest that can be problematic on poinsettias. Use a horticultural oil or insecticidal soap to control these pests. The key is to make follow up treatments as per label instructions. Fungus gnats can develop if plants are grown in shady areas. Reduce watering and move to a brighter location to help prevent their growth.

Poinsettia plants can easily be saved and grown for year after year. Some gardeners have even grown medium sized shrubs out of container grown poinsettias. This can be done in areas with little frost potential. Potted plants are easily grown indoors but need a little extra care to help recreate the proper lighting needed to time the color change for the month of December.

Poinsettias are short day plants which mean they initiate flowering when the amount of day light is less than 12 hours. Place the plant in a closet at 5:00 pm and remove it every morning at 8:00 am to help stimulate the natural flowering sequence. This should allow enough time for proper coloring of bracts for a holiday time display.

The older I get , the faster the time flies. At least that is what it seems like to me. I can clearly remember going to the new millennium not long ago and very soon we are going to be buying new calendars for 2018.

Ever since I can remember every New Years I used to spent with my grandparents as a kid , because they were cool enough to let me pick what I wanted to eat and let me stay up until midnight fireworks , which I missed most of the years , because I fell asleep watching television anyway. Thinking back I wish I would enjoy being able to sleep for so long, matter of fact a lot of times almost forced to go to sleep. I am lucky if I get five hours and I secretly wish someone is going to come to me and make me go to bed.

As I was growing up and turn into a teenager making my first money , I chose to work every New Year’s eve. My friends were always getting upset with me not going to the events with them, but I was smart.

Working on New Year’s meant, at the time, a lot of money, and you got to enjoy celebrations with the guests too, because by midnight the atmosphere was very relaxed and all the guests wanted us to celebrate with them.

I used to work for catering company ever since I was fifteen, and almost every weekend I was a part of some big event going on. We came to work early in the morning of the event and were usually leaving late in the morning the next day, because Slovakians love to celebrate until the sun goes up.

We used to come to work and get everything ready for the weddings, funerals, big company parties or birthday parties. We did everything from sweeping the floor, decorating, setting tables, cooking to serving the guests when they arrived. What my friends called slavery at the time, became priceless experience for young Hotel academy student.

New Year’s was always different from rest of the venues. It looked like people really wanted to leave the old year behind in style and maybe Slovakian saying ,, as you do on new Year’s day you will do all year,, people went big with their party. Especially food. The most favorite for New year’s party is ,,jednohubky,, which is equivalent of American passing food. It is one bite sized food, which can be pretty much anything. The most popular in my country are something cold cut sandwiches and it is a slice of a white bread called ,,rozky,, similar but thinner around than French baguette.

Usually people put a butter or some spread on the bread (garlic, red pepper ,cheese…) and top it off with ham, salami, slice of sausage , cheese, egg and vegetables.

As far as I am concerned rule for making jednohubky is – the sky is the limit, so you can really let your imagination wild.

Other food can very . People eat potato salat, sliced ham, fried chicken tenders, kapustnica – sour kraut Christmas soup I told you about in my previous article , with one difference , you don’t put any or just a little bit of meat in this soup, and it usually is eaten at midnight.

So many different drinks , foods and desserts are served on New Year’s eve and people go big.

It may be similar to Thanksgiving day here. People already know they are going to loosen their belts.

Another good thing about this glaze is that since it seals your cake , you can store it in your refrigerator uncovered or at the room temperature.

Ingredients: (PREP TIME: 5 hours) Makes glaze for a dozen 10-inch cakes. You can halve or quarter the recipe for a smaller yield.

From Fishing, pg. 2 From there I attempted to get into a pipeline canal that gave me access to some back water marsh. I hit a silted in bar out front and had to plow mud in order to get access. Once inside we had about 2 to 3 feet of water. This place can hold fish at low tide. Once into the four way intersection Lou casts to a point on the right. As soon as the bait hit it was engulfed by a very good redfish. He puts cooper on the rod and we all enjoy the sight of this young man doing battle with this beauty in very shallow water. We were lucky because this fish attempted to get out of the area through the shallows we had just came through. This left everything in front of us basically in disturbed and did not run off other fish holding in there. Trina even videoed some of the fight. This few minutes of battle was the highlight of the day.

Once an airboat passed the bite ended so Lou decided it was time to head in so they could get back to Mississippi at a reasonable time. We brought the fish back to my place and cleaned them.

I asked Cooper if this was what he wanted. The look in his eyes and his smile answered that before he even said yes. Cooper wants to come back with his dad when dad gets back from overseas. I wish him as well as all our servicemen and women a safe journey. Life is Good!

Method:

Bloom the gelatin in cold water. This is quite a bit of gelatin so rather than sprinkling it on top of cold water, quickly stir them together. It should be a thick slurry.

Heat the water, sugar, and condensed milk in a saucepan. Bring it just to a boil and turn off the heat. Stir in the vanilla and bloomed gelatin until it is fully dissolved.

Place the chocolate in a bowl and pour the hot liquid over it. Let the mixture sit for a few minutes until the chocolate is fully melted. Using an immersion blender (or poured into a blender), process until it is very smooth. Be careful not to introduce too many bubbles since every minor imperfection will show on the surface. For the same reason, strain the glacage through a sieve to remove any stray particles.

When the glacage has cooled to 90°F (32°C), it is ready to pour over your entremets. Use a stand or cooling rack to position the entremet and collect the excess below. You can save this and use it for future pours.

At 90°F, pour the glacage over your frozen entremets to form a beautiful layer of glaze Once poured over frozen entremets, the glacage will cool quickly. It will take about 15 minutes until it is fully cooled and solidified. It should be more like a soft ganache-like gel than a hard shell.

You can try many different variations(put mousse in silicone domes , pour glaze over full sized cake…) , play with colors, flavors and you can use different types of chocolates. But always remember , your creation is going to be only as good as the ingredients used. So once again choose quality over quantity. Enjoy!
