TONY’S TIGER REPORT THIS YEAR’S CPS FIELD IS STRONGEST YET

For the first time in playoff history, the top three teams at the end of a regular season football schedule are poised to meet in a three-game playoff. Clemson, Oklahoma and Georgia all earned their way into the championship bracket by beating their closest league competitors by more than impressive margins and winning big games against big opponents out of their league.

Clemson was the most impressive, beating two number two teams ranked so in late November - Auburn and Miami. They only lost to Syracuse, an underrated passing team which the Tigers would normally run out of the stadium. But LSU barely beat the Orangemen back in September.

Oklahoma was next, beating Ohio State in Columbus and TCU twice, losing only to Iowa State by one touchdown during the regular season. Georgia was embarrassed by Auburn by 23 points in November but more than atoned for that stumble with a 21-point edge in a rematch with Auburn last Saturday. Three teams, three unexpected losses, three rebounds. Three teams that can both stop their opponents and score quickly and often.

Whose number four? Well, it had to be an underperforming Alabama team, led by a spectacular sophomore quarterback. But this isn’t your invincible Tide squad. This team doesn’t have the quality linebackers of yore, even though many of them were injured this year.

They also don’t have a secondary nearly as good as its press clippings and their defensive front four is really a defensive front nine, so this bastion of first defense pales in comparison to last year’s team, led by Jonathan Allen and Tim Williams. Offensively, the line is as good as it usually is for Alabama, but the receivers are overrated except for Calvin Ridley, who is no Amari Cooper or Julio Jones by any means. The running backs are ’Bama good but not ‘Bama great. The big difference in this Tide version is Jalen Hurts. But that’s bad news for Alabama because the Tide has never depended on a quarterback to take them to the Promised Land as their ultimate savior. Alabama’s holy trinity is the defensive lineman, ‘backer and the hole-y roasted opponent’s line that the Tide usually shreds to pieces. Not so much this year. The Great Saban wouldn’t have beaten LSU or Mississippi State without Hurts and the invincibility of ‘Bama has taken a bit of a hit in 2017. The Tide will have to face Clemson in the first round of the Championship series in New Orleans and this isn’t your Les Miles group of nervous Tigers they’ll be facing; this is a team that beat Alabama’s best last year after losing the prior year against Alabama in another close national championship. These Carolina Tigers don’t give a damn about the diminutive West Virginian Process Man and his Roll Tide mantra; they know

they can beat him when the chips are down and Saban knows it as well.

Georgia looked like dog poop against Alabama in Athens last year when it looked like the Bulldogs were going to be someone to be reckoned with. They looked the same against Auburn three weeks ago. But you know something? Kirby Smart got smart and Gus Malzahn got dumb and Georgia now knows they can handle a team that handled Alabama recently as well. So, they will face Oklahoma, a team with much more firepower than the Tide and even more consistency and if they win that game, they should present the Clemson vs. Alabama winner with a fine national championship battle. But it won’t be Alabama. My choice?

Oklahoma vs Clemson and score another for the Tigers.

Meanwhile, LSU will stand in line behind Auburn for the bowl selection and again, dear fans, another trip to the Florida peninsula. A rematch against an overrated Notre Dame team once again. Last time they met in a major game (in the Sugar Bowl), the Tigers won behind Jamarcus Russell’s best game and the worst by the Mighty Quinn (Brady Quinn) who could only hope to be half the quarterback as the New England player whose last name is Quinn’s first name. Notre Dame and LSU met three years ago in the Music City Bowl (you all remember that classic, right?) and the Irish won, 31-28.

LSU was one of eight teams in the SEC retaining their coach for 2018. Ole Miss, Mississippi State, Arkansas, Texas A&M, Tennessee and Florida have or eventually will have, a new head football coach. However you want to parse the zoo that is LSU sports administration, you must admit that all of those teams except for Mississippi State, have at least a two-year rebuilding road ahead of them. Florida’s offense stinks as does its ratings in building character; Ole Miss will be lucky to see a competitive team by 2021 and Arkansas really should return to a less stressful football league where coaches don’t ride ho’s and Harleys or get fired with a letter handed to them by their AD while walking off the field for their very last time. Same for A&M; just leave the band and the bonfires. Florida is in the process of an exchange program with Miami for uniforms. Not the football kind; the incarceration type. Tennessee should hire Les Miles; against the background of this train wreck, he actually looks good. Sort of like Jack Nicholson in One Flew Over the Cuckoo Nest good. Mississippi State will have to contend with Dan Mullens raiding their signees for Florida but its not a given that Mullens has the gravitas to make Florida the team it was under Steve Spurrier. Yes, he turned Tim Tebow into the All American Choirboy but the problem in Gainesville (besides being Gainesville) is the fact that

Easy Holiday Sweet Treats

The holidays are about family, friends, giving, sharing, eating, and cooking. As much as the holidays are a joyous time of year, it can be a bit stressful depending on your level of entertaining. If you are an avid host it may be easier, but if preparing meals are only once a year during this season, the pressure can build. I’m here to give you sweets that will be a variety of wonderful creamy flavors, and mostly, easy to make.

MY Easy Holiday Sweet Treats are regular pralines, chocolate pralines and chocolate-pecan fudge. I promise these recipes, and methods are not only stress free, but inexpensive, and tasty.

I’m making this a very short article, and focus on these 3 unique sweets that are sure to please everyone you serve during this holiday season. ENJOY!

Regular and Chocolate Pralines Makes about 8-12 servings

Regular Pralines Ingredients: 6 tablespoons unsalted butter ¾ cup light brown sugar 1 ½ cup granulated sugar 1 ½ cup pecans, big chop ½ cup evaporated milk 1 tablespoon vanilla

Chocolate Pralines Ingredients: 2 tablespoons cocoa powder (Same ingredients as regular pralines)

Method: • In a medium pot heat all ingredients, except the vanilla.

• Lay parchment paper on a sheet pan for pouring out the pralines, and allowing them too cool.

• With a wooden spoon, stir constantly until the mixture comes to a rolling boil. Once the mixture is a lava boil, start your timer to exactly 3 minutes, stirring continuously throughout.

• Once the 3 minutes are up, remove the pot from the fire, and stir in the vanilla.

• Stir mixture for another 30 seconds off the fire, and begin scooping the mixture with a large spoon on to the parchment paper.

• Make pralines the size of your evaporated milk can, about 3 inches in diameter. You can make them bigger, but that will provide you less product for this recipe.

• Scoop and pour the hot praline mixture out quickly to get a thin shiny praline.

• Allow 15 – 30 minutes to cool.

• For the Chocolate Pralines, add the cocoa powder in the beginning ingredients, and follow the exact steps as the regular pralines.

Creamy Chocolate - Pecan Fudge Makes about 8-12 servings

Chocolate Pecan Fudge Ingredients: 3 tablespoons unsalted butter 1 14 ounce can sweetened condensed milk 1 pound dark chocolate 60% cocoa ¾ cup pecans, chopped Method: • In a microwaveable bowl, heat up butter and condensed milk for 2 minutes on high.

• Lay parchment paper in a 9” x 11” square pan.

• Remove from microwave, and stir in chocolate to the hot buttered condensed milk till all is melted. If the mixture cools before all chocolate is fully melted, return to microwave for an additional minute.

• Quickly stir in pecans once chocolate is melted and pour mixture into the square pan.

• Spread mixture out evenly so the fudge mixture is at least 1 inch thick. It can be thicker if you prefer going in a smaller pan.

• Refrigerate for at least 2 hours to harden.

• Flip the fudge over and peel away the parchment paper • Cut from the back of the fudge into 2” x 2” square size servings.

PANSIES THRIVE IN WINTER GARDENS In some circles, pansy might not be an admirable descriptor, but in the garden, pansies stand out amongst all other flowers in the winter garden. The pansy we know today, Viola tricolor var. hortensis, got its start back in England during the early 19th century. The daughter of the Earl of Tankerville, Lady Mary Elizabeth Bennet, collected wild specimens of V. tricolor and started a plant breeding project. The Will Afton resulting crosses were eventually presented to the Royal Horticultural Society and received great praise. Currently, pansies claim the title of most popular cool-season bedding plant and because of this they come in a variety of different colors including several bi-color combinations. You can find colors that match with almost any design scheme.

Pansies are relatively easy to grow and don’t require an excessive amount of care. They prefer areas that receive full to part sun. This equates to at least 5 to 6 hours of direct sunlight.

Anything less will produce weak plants and few flowers. Pansies prefer an acidic soil condition with a range of 5.5 to 6 on the pH scale. Have your soil tested prior to planting to determine your current pH status. Ag lime can be added to raise soil pH or elemental sulfur can be added to lower soil pH. The soil test will also tell you what nutrients are deficient in the soil. This will be beneficial because pansies are considered heavy feeders and should be fertilized properly.

In order for any bedding to be successful, a proper amount of organic matter should be incorporated into the soil. Homemade compost is excellent but there are commercial options available at most garden centers. Work into the soil down to a depth of 6 to 8 inches. Even with all the different varieties, all pansies will eventually grow 10 to 12 inches wide and tall.

Place plants every 6 to 8 inches for maximum effect and remember to plant at the same depth as they were in their original containers. Finish them off will a layer of mulch like the fine textured pine needle mulch to really add icing to the cake.

All plants have particular pests and pansies are no exception. Several leaf spots including anthracnose, alternaria, and cercospora are common fungal pests. In most cases, they will cause unsightly spots on the foliage. The spots can be brown, tan, or transparent. Anthracnose in particular can produce spots with a concentric ring pattern. These pathogens obviously cause a decrease in aesthetics and should be treated upon confirmation. If anthracnose is determined then it is advised to remove infected plants and replace. Using mulch to prevent plant-soil contact and reducing overhead irrigation can help protect plants from the other fungal diseases. Fungicide sprays can also add another layer of protection. As far as insects pests go, aphids are the most important pest. They can become problematic during periods of vegetative growth because they prefer to feed on young developing leaves and stems. Small infestations can be controlled by natural ladybeetle populations but larger infestations may require the use of an insecticide. Neem and oil and insecticidal soap are effective as long as labeled instructions are followed properly. Snails and slugs can also be problematic on pansies.

Look to use a snail and slug bait to control these elusive night time feeders.

It’s easy to become overwhelmed when trying to decipher amongst all the different pansy varieties offered at the garden center. Upwards of more than 250 different varieties of pansies are available on the market. Most of these varieties are grouped into series where each series contains plants that very in color but share similarities in flower size, form, hardiness, heat tolerance, and so forth. Heat tolerance can be a beneficial trait for gardeners in Southeast Louisiana because of the frequent warm periods received during winter months. The ‘Majestic Giant’ series is one of the more popular available. They display good heat/cold tolerance and produce large 3 to 4 inch flowers in various colors. The ‘Crystal Bowl’ series boasts clear faced flowers that are smaller in size. For an interesting twist try the ‘Cool Wave’ pansies. They have a spreading growth habit. Use them in a winter inspired combination planter or hanging basket. The spreading growth habit provides a nice spillover effect.

On Christmas Eve morning the carp is killed and gutted (or some other kind of fish is taken out of the freezer!). During the day the supper is cooked. It used to be the custom to fast (not to eat anything) all through Christmas Eve. This was a direction given by the Catholic Church. It was said that if you manage to get by without food for the whole day, you will see a little golden pig in the evening (after the Midnight Mass service)!

The main Christmas meal is known as the ‘velija’ and consists of 12 dishes (the number of dishes symbolizes the number of Jesus’s disciples). The table is prepared with a white table cloth with straw and sheaves of wheat at each end.

Christmas dinner begins with Oplatky small bread wafers and a blessing.

Time does not stop running and Christmas is around the corner yet again. Not that I am complaining. Christmas is by far my very favorite most magical holiday and time of the year when I truly feel peaceful, which is hard to believe sometimes with the amount of preparations and stress a lot of people go through.

I say time management, in this case is crucial. I begin my preparation a long before all the madness in stores starts and you really start feeling stress, because it’s almost Christmas and they are out of turkeys and you have no present for aunt Josphina you did not see for so long.

Every family has it own special little traditions and so does mine. I love love love traditions and my country has a whole lot of those during the Christmas time .

In Slovakia, Christmas celebrations begin with Advent. Many Slovaks are Roman Catholics so this is the start of the important spiritual preparations for Christmas. For the country so small you find many variations differing region by region.

My husband always says that Slovakians celebrate too much and Christmas time is not an exeption. We have many holidays that Americans never heard of . In december we celebrate also saint Nicolas day .

In some Slovakian towns and villages, St. Nicholas, or Svaty Mikuláš arrives in a horse drawn coach, accompanied by an angel and a devil who rattles a chain. While waiting, children fill the streets with singing and dancing. St. Nicholas has a present for each child and in some villages he visits each home.

On St. Nicholas Eve children carefully polish their boots to leave on the windowsill or at the doorstep. They hope to find a nice surprise the next morning and not the dreaded coal.

Traditional treats include apples, nuts, pears, or an orange.

The evening of St. Nicholas Day older boys dress up as Mikuláš with his companions, an angel and a devil who has chains and wears bells at the waist. The trio visits families with young children, giving more fruit, nuts and candies. Before receiving treats, the children say a prayer or rhyme. In Bratislava the devil might give a potato instead of coal.

Some schools have a special “Mikul Mail,” where children exchange greetings and small presents. There are small gifts for the teachers, too.

During Advent there are lots of preparations to be made for Christmas. This includes cleaning the house, baking, shopping and buying the Christmas Tree. My family always had a real tree and when it was time to get it , we had our own little tradition where me , my dad and my three sibling went tree shopping .

Slovak Christmas Trees are decorated with colored lights, fruits, hand-made decorations made of wood, baked goods made with honey in the form of Angels and other religious symbols and sweets. Christmas Trees are kept until January 6th, Feast of the Three Kings (Epiphany). Then the children are allowed to finally eat the candies and other sweets from the tree.

Christmas gifts are brought to children by the Baby Jesus in themost families. Family gifts are put under the Christmas Tree. A common tradition is that the children have to leave the room when the presents are being brought by Jesus. When they are there a bell is rings. The children

The main Christmas supper varies between regions and families. It normally has lots of courses including a fish dish and ‘Kapustnica’. Kapustnica is a thick cabbage soup with sausage, meat, dried mushrooms and cream. Every family has its own recipe. Some recipes include ingredients that might seem unusual such as dried plums and apples.

Other dishes might include a baked ham or a roost goose, ‘bobajky’ small pieces of bread mixed with butter and sauerkrat or sweetened with honey and poppyseeds, potato salad, pirohy dumplings, vegetables and plenty of walnut rolls or cookies.

Cookies are a popular dessert and treat at Christmas. Some favorites include vanilla ones made with poppy seeds and walnuts and apricot cookies. Sometimes people will make more than 10 different types of cookies. These are given to visitors over Christmas. There are also special thin waffles that are eaten with honey. Also there is a sweet dough braided bread called Vianocka a lot of families bake for Christmas morning for breakfast .

One of my favorite cake served during Christmas time is ,,Stedrak,, which you could translade as ,,generous cake,, and it really is generous .

This cake with multiple layers is also known in Gremeny and some people go as far as twelve different layers . The layers are made of leavened dough, and are filled with the traditional Slovak village home-cooking fillings: plum jam, poppy seeds, ground walnuts, and farmer cheese. Think of it as buchty, poppy seed rolls, and tvarožník all fused into one delicious calorie bomb.

This cake originated as traditional ceremonial holiday bread, similar to the Eastern Slovak kračún, which was believed to hold magical powers. This bread was prepared for the Christmas Eve dinner, and the many layers symbolized abundance, fertility, and good harvest. This is because the belief of first-day magic was prevalent in the olden days. Back when Christmas coincided with New Years, and as one did on Christmas, one was bound to repeat during the whole next year. There are also different versions of this cake, some containing ingredients such as hazelnuts, prunes, or apples. These days, it is prepared only rarely. Instead, it’s place at the Christmas table has been taken over by the poppy seed (makovník) or nut rolls (orechovník), or various assorted Christmas cookies (this info comes from Úľuv, Slovak Centre for Folk Art Production).

Anyway, enough talking , let’s start baking! The recipe below is how I usually make it . It’s a variation on the recipes above. Feel free to experiment, especially when it comes to the fillings.

Dough: 500g flour, 70g sugar, 2 yolks, 3dl milk, 1 stick of butter, packet of yeast, lemon zest, yolk for covering.

Combine the ingredients, minus the yeast and milk, in a bowl. I decided to scald the milk. Scalding milk used to be required back in the days before all milk got pasteurized.

Nowadays, it’s no longer needed for safety reasons – and there is an interesting debate on About.com on this topic. The recipes did not call to scald the milk, but I figured it will improve the taste. The warm milk will also heat up the dough, aiding the fermentation.

Mix everything together, and only then add the primed yeast. Yeast likes it warm, but not hot. By adding the yeast to the hot milk directly your run the risk of cooking the yeast, which would be bad. To prime the yeast, simply pour little bit of milk into a bowl, microwave for 10 seconds, add a spoon of sugar and the yeast, and then whisk for 20 seconds with a fork to give the yeast air. Let sit for few minutes until it bubbles up. Knead together until you get smooth dough that doesn’t stick. Form into a ball, cover with a cloth, and let rise for 3 hours.

You can also do what I do, and that is after two hours deflate the risen yeast, knead for about 5 minutes, and let rise again.

Meanwhile, I was thrilled at the Texas A&M game that the Aggie band did perform. Every marching band in the world should take lessons from these young cadets on how to create an incredible formation and have fun while doing it. Yes, A&M doesn’t create new routines every game like most bands do, but when your routine is the best ever created in the history of marching bands, you go with it. You will need a poppy seed grinder to make the poppy seed filling. Coffee grinders don’t work too well. The blades simply slice the seeds, but you actually want to break them by squishing them. This releases the oil stored in the seeds resulting in a smooth paste. Poppy seeds ground in a coffee grinder end up looking like dust.

PLUM FILLING: 200g plum butter

Method:

Combine the seeds, butter, and sugar in a pot and heat on low heat. Bring to boil, stirring continuously. This will take about 15 minutes.

The walnut filling is made similarly, but you use ground walnuts. I ground the nuts by first chopping them in a food processor to get small chunks. I then ran them through the same grinder used to grind the poppy seeds.

To make the farmer cheese (tvaroh) filling, combine farmer cheese, two yolks, sugar, raisins, lemon zest, and vanilla sugar. Save the egg whites and beat them for about 10 minutes until you get foam, called snow (sneh) in Slovak. It shouldn’t be as stiff as when making meringue, whisk it until it resembles whipped cream. You don’t cook this filling. Just mix it together until everything is blended.

The layers are now done. Let’s assemble it all together. Roll out the dough and layer the cake. After the dough has risen, form it into a brick, and divide into five equal chunks. The recipe book said to roll out each section to the thickness of a finger (about 1cm). I had WAAY too little dough and WAAY too much filling for this – the cake would be as big as an index card, and tall as a small child if I did it like that. This cake is usually made in a rectangular shape, but I happened to have this convenient aluminum pie pan lying around.

So I rolled the dough out to the size of the pan. It ended up being about 3 mm thick.

Place one layer on your baking sheet or in the pan (make sure to grease it first). Then spread plum jam on it. Top with another layer of dough. I rolled the first layer bit too small so I made the second one slightly larger bigger than the pan and pushed the extra dough down to seal the jam in.

Gently flatten the dough with your palm, and spread the walnut filling on it. Then top with another layer of dough. Cover this layer with the poppy seed paste, and top again with another layer of dough. And then cover this one with the farmer cheese filling. Now, take the last piece of dough, and roll it out into a long rectangle (instead of a circle). Cut into stripes and arrange these in a grid on the top.

Try to arrange the strips so they alternate up-and-down to get a nice cross-stitch pattern.

Then beat one yolk and coat the top of the cake with this egg wash. Bake in an oven preheated to 350F for 40 minutes until the top gets nicely brown.

Let cool, slice into small squares (the cake is really rich and filling), and enjoy. A lot of work, but definitely worth it! Enjoy!
