THE NEW MEANING OF THE NFL: NO FANS LEFT

America’s fascination with the stupidity of a protest that has no focused meaning anymore continues and with it the erosion of a multi-billion dollar industry that already has health and fairness issues.

The National Football League is no more. There is nothing national about an organization that cannot differentiate between freedom of speech and diversity among two opposing groups and fear of political correctness has turned the jellyfish known recently as Roger Goodell into even more of a jellyfish. My position on this issue has been made known and is quite clear and simple: don’t bring your protests into a workplace where your paycheck depends on giving the customers what they want. What they don’t want is controversy and politics and the continued division of teams, no matter what any talking head has to say.

There is a place for non-football symbolism at a football game or at any public venue for that matter. When a prominent person like President John F. Kennedy was assassinated, when a tragedy like Hurricanes Irma and Maria or the horrific shootings in Las Vegas last week occur, the country has every right to make a statement in the aftermath of these type of events. These are positive statements in support and in the memory of either positive national figures or helpless victims facing Nature’s fury or the clear as crystal insanity of one man and an arsenal of automatic weapons at a hotel.

It would have been simple to nip this in the bud, NFL-wise, if Goodell had told the 49ers and Colin Kaepernick “I support your right to protest and free speech, but you’re doing it in an arena where the person responsible for your livelihood isn’t there to support or pan your views.

They are there to watch a football game and its associated activities - period. You cannot force your opinions on paying customers in a venue that they have made possible. Do your protesting off company premises with whomever you wish and in any legal way you care to create. You are also disrespecting a symbol of freedom that unites this country.

If this spreads to other professional and amateur sports, congratulations! You’ve done a marvelous job of disassembling one of the most visible means of creating equality between the races - the sports arena. Millions of ghetto kids, poor farm children and borderline family teens will have one less huge venue to strive towards. But you six and seven, eight and nine income figure sports personalities, managers, writers and athletes will have won your Pyrrhic victory.

And the average American Joe will be free to fish, golf, spend time with his family, camp, visit museums, boat, ski, read, work around the house and engage in assorted other activities virtually forgotten with the rise of overpriced professional sports. America thrived for decades without professional sports; it just might do it again if this movement continues. And the talking heads will roll into oblivion.

I still believe part of Kaepernick’s kneeling was motivated by the fact that he realized he was no longer a viable starting quarterback option in this league. Racist apologists like Howard Bryant of ESPN Magazine finds racist subjects to cover each issue and he launched onto Kaepernick’s “protest” like a thirsty man embraces clean water. Others have followed suit, imagining that to oppose the trend was to be treated like a pariah. Hip me-tooism has always been an issue in

ONLY TWO LEFT; PETTY’S DEATH PUTS ENTIRE LOAD ON DYLAN AND LYNNE The premature death at 66 of Heartbreaker legend Tom Petty didn’t hit me all at once. I was a Petty fan; but the deaths of George Harrison and Roy Orbison impacted me immediately, especially Orbison, whose death forced me to take the only day off for a non-family tragedy in my life. However, I had to go to YouTube and hear their greatest song this morning, even though it was performed after Orbison’s death, for Orbison, in 1988. “They”, of course, were the Traveling Wilburys, a group concocted out of thin air. It featured four slam-dunk rock and roll hall of famers: Orbison, Harrison, Petty and Bob Dylan. Those men, along with Electric Light Orchestra constant Jeff Lynne, a brilliant English musician, wrote and sang more than a dozen of the craziest songs that were much more folk than rock. “Handle With Care”, “Last Night”, “Heading For the Light”, “Tweeter and the Monkey Man” and “End of the Line”, the final song on the group’s first album, honoring Orbison, were the best.

The group formed when Harrison decided he wanted to have sort of a casual group of like musicians sit around and produce songs that weren’t necessarily commercial hits, similar to the Grateful Dead. But unlike the Dead, the powerful creative forces behind the Wilburys brought fame again to five men who scarcely needed it. The name came from a slang term used in a recording studio by Harrison. Commenting on some recording errors made with less than stellar equipment, Harrison said the strength of the music in the recordings “will bury” the errors.

Bad pun, great group. Each man took a pseudonym for a member of the imaginary Wilbury clan: Orbison was Lefty Wilbury. Harrison was Nelson Wilbury, Petty was Charles T., “son” of the imaginary founder of the group and Dylan was Lucky. Dylan’s nickname was prophetic; he’s the last of the Big Four left standing (and of course, Lynne as well). The group produced two albums; the first more memorable than the second, which was done after Orbison’s death.

Petty’s passing removes one more pillar of the second and third generation of rockers, men such as Orbison, who took their crossover roots and created songs and sounds not easily re-created for generations that followed. Bruce Springsteen might be the patriarch of this type of music. His E Street Band continues to roll on. Meanwhile, call up YouTube for the amazing performances of men who decided to truly enjoy their second careers as a band of successful brothers with nothing more to prove except they were in it to have fun. Grilled Red Fish with Aromatic Herbs Grilling is a fun way to cook fish. It might not be as exciting to eat compared to deep fry, but you will taste all the flavors rather than being covered up by oil and flour. When grilling red fish, it will be moist on the inside as long as you don’t over-cook it. Adding fresh herbs will enhance the taste, and the light smoke from the barbeque will blend nicely. Before it gets too cold outside, grill your red fish, and by all means, leave on the scales.

The scales create a cooking surface. Placing the fish high enough above the hot coals or heat from a gas grill will penetrate the scales without them burning. Once you close the grill it becomes its own oven so the heat inside will cook the red fish perfectly.

Red fish is part of the drum family. Drums are known to be bottom feeders which to some people would be considered a trash fish. Chef Paul Prudhomme made red fish successful back in the 1980’s with his blackened red fish and seasoning. Red drum or red fish have since become popular. A younger red fish will have delicate meat.

The older-large red fish will have tougher flesh. Cooking a large red fish in a stew is best or as we do in the deep south, Red Fish Courtbouillon.

Red fish can be fried, baked, grilled, steamed or cooked in a stew. Either way, it will be delectable as long as it’s fresh. Like I wrote in a previous article, keep your fish packed on ice before its ready to cook. Using ice to keep it cold in your refrigerator will not allow bacteria to grow so the fish will have no smell, but rather a mild scent. After a few days of refreshing with fresh ice, I recommend freezing. A busy refrigerator will always lose its cool being opened and closed so much. Ice packed fish will remedy that problem for a few days so you don’t have to freeze, and defrost.

Grilled red fish is flavorful, and easy to prepare. I mixed fresh thyme, flat leaf parsley, rosemary, oregano, and basil chopped all together. This is extremely fragrant. A little salt and pepper on the flesh side of the fish, a lemon wedge, and place scale side down on the grill. Depending on the heat of your grill, it could take 15-20 minutes for the fish to cook depending on the thickness of the fish. You can always tell by sticking the tip of a knife in the flesh, and putting it gently to your lip. If it’s cool, it’s not ready, but if it’s hot, it is usually cooked. Another way is when you begin to see white protein start to slightly ooze out from the flesh, the fish is almost done.

Method: • Pre-heat the grill.

• Pat the red fish meat side only with olive oil. Sprinkle salt and pepper on each along with the fresh herbs, meat side only.

Place the lemon wedge on each fillet.

• When the grill is ready, place the fillets scale side down on the grill. You will not flip the fish. Grill for about 15 minutes depending on the height and heat of your grill.

Chef’s Note: All grills are different when using gas and charcoal so pay attention to heat and cooking time of your red fish.

With some grills, the fillets may need less time to cook or longer. It also depends on the thickness of your fillets. You are looking for light flaky fish that is fully cooked, but not dry. Dry is over-cooked.

As you walk through the garden it’s easy to point out that each plant blooms during a specific time of year and they all work together to produce a year round experience. The month of October is the start of the blooming Will Afton season for Camellia sasanqua, or what most gardeners simply refer to as sasanquas. There are several other species of Camellia available in the trade. The garden camellia, C. japonica, produces large leaves and large rose-like flowers. C. reticulata camellias produce very large flowers. The tea plant, C. sinensis, is a little-known evergreen shrub that grows well in the shade and is the same plant cultivated in China for centuries. The sasanquas, like all other camellias, are evergreen plants that produce attractive dark green foliage and bloom late fall through the winter. The one characteristic that sets sasanqua camellias apart from the rest is the fact that they can grow in the full sun. Due to their perennial nature, hardiness, and longevity sasanquas are seen all over Louisiana landscapes.

When growing camellias you should consider having the soil tested in order to determine the current soil pH condition. Camellias prefer an acidic soil somewhere between 5 and 6 on the pH scale.

Agricultural limestone can be added in increase soil pH and elemental sulfur can be used to lower the soil pH. Look to provide a moist, well-drained soil full in organic matter. Homemade compost can be used or commercial compost can be purchased at a garden center. Camellias can be very shallow rooted. It’s important to note when adding new plants in the garden, to plant them slightly higher than ground level, especially if drainage might be an issue. As far as sunlight conditions, camellias prefer partial shade but sasanquas will grow in full sun under ideal soil conditions.

As with other plants, sasanquas have a few pests that can become problematic over time. The most common insect pests of camellias are scales, especially tea scale. Scales are piercing/sucking insects that feed on the undersides of leaves. They can cause a speckled leaf appearance and they also produce honeydew, a sugary substance that favors the growth of black sooty mold. Scales can be easily managed using oil sprays and systemic insecticides. Spidermites can be a problem during dry periods during the summer and early fall. The damage can be seen as infected foliage take on lighter color. Timely oil sprays made throughout the year keep spidermites at acceptable levels.

Sometimes camellias can be affected by a few different leaf beetles in the spring, but never really at alarming rate. However, permethrin can be used for control if desired. Be sure to read and follow label instructions before applying any pesticides.

Because of their popularity and stamina in the Louisiana landscape, you will find many different cultivars for sale at garden centers and home improvement stores. Some of the tallest growing cultivars can reach heights near fifteen feet tall. The cultivar ‘Alabama Beauty’ is one of the earliest bloomers and has beautiful rosey-red flowers. ‘Pink Snow’ is another larger growing cultivar and it produces lovely soft-pink flowers. The ‘Leslie Ann’ cultivar has been promoted as a Louisiana Super Plant due to its outstanding performance and it produces a white flower with pink edges on each petal. ‘Setsugekka’ is another taller growing cultivar but it produces a pure flower. For those looking for a smaller growing option look at ‘Stephanie Golden’. It produces a hot pink flower and stays around five to six feet tall to satisfy those smaller spaces. These are not the only choices you will see.

PUMPKIN TIME! NO GUTS...NO GLORY

Fall has arrived and with it , Pumpkin Season ! There are many pumpkins around Halloween time. Many families are opting to paint or marker their pumpkins to avoid the mess involved in carving a pumpkin. Yes, I will admit, each year , for just a few seconds think, maybe we won’t carve a pumpkin this year. But then I quickly decide, tradition wins. Maybe it’s because it brings back memories of my Dad carving a pumpkin with my siblings and I.A few days before Halloween, he would bring home a huge pumpkin for us. I insisted it have a great ,distinctive handle on top , and must be perfect orange and smooth. He carved the most interesting, gorgeous faces in the pumpkin and it was my job, to scoop all the seeds out. Then we would put a large candle in the pumpkin, fit the top back on, place it on our front porch and watch it glow. Magical ! After,we would go inside and bake the seeds. At first, we didnt save the seeds.

But as I grew interested in cooking, I started to save, clean and bake the seeds . So I carried this tradition on as I had my three sons and now my five grandkids. But we don’t carve one pumpkin, everyone picks their own and carves! We have lots of pumpkin seeds to roast. We use to carve on newspaper, but the wet ,gooey seeds stick to the paper. It’s best to spread out a huge vinal tablecloth. The seeds slip and slide, but don’t stick. Also, even the smallest child can hold one of the tools from the official pumpkin carving kits with the help of an adult. Each year my kids get more creative with their designs! My youngest son and daughter-in-”love” now host a pumpkin carving dinner party for their newly married friends Now there is a fun excuse to carve a pumpkin!

Roasted pumpkin seeds are an easy , healthy snack. I love to eat them shells and all. They are wonderfully crunchy. Pumpkin seeds have two parts: a crunchy white hull and a green seed inside. Both are edible. They are full of minerals, protein and fiber. Eat Up ! For years, I roasted the seeds in olive oil. But get creative and try coconut oil . Or for a lighter version, coat seeds in a beaten egg white for a light ,crispy finish. I used to just salt my seeds on the outside. But , if you boil the seeds in a pot of water with salt added to it for about ten minutes, the inside seeds will get a salty flavor. How much salt in the pot? Well, the water should taste like ocean sea water. a good ratio is for every 2 cups of water add 1 tablespoon of kosher salt.

Pumpkin etiquette~ Hold pumpkin on sides and cut a circle around the stem, about 3 inches away. This will give a nice size hole to get a hand in to scoop the seeds out. Use a metal spoon or a spoon from the pumpkin kit to scrape out the seeds and pumpkin guts.. Place the pumpkin seeds in a colander and run water to separate the seeds from everything else. At this point, you can boil the seeds for ten minutes if you want them flavored inside . If you are too excited, just dry seeds with a towel, oil, salt and bake.! Heres how: Preheat oven to 400* Coat a baking sheet pan with olive oil, about a teaspoon. spread seeds in a single layer, and toss them a bit in the oil from the pan. Bake on the top rack until seeds ar light brown, 5-20 minutes, depending on the size of the seeds. Don’t let them over toast. Take out and cool completely. Eat them, shell and all!

Purists will only want salt as a seasoning. If you are feeling adventurous, experiment & have fun with seasoning blends. A little seasoning will go a long way. Sprinkle herbs and spices with a light, even, dusting. Enjoy your autumn treat.

Sweet:

1 teaspoon each, cinnamon and sugar

Sweet & Spicey:

1 teaspoon sugar & salt, 1/4 teaspoon cayenne pepper

Indian:

1/4 teaspoon Garam Marsala[or more to taste] & 1 teaspoon salt.

Mix with raisins or currants after roasting

Spanish:

1 teaspoon salt & 1/2 teaspoon smoked paprika. Mix in almonds after roasting.

Italian:

1 teaspoon salt & 1 teaspoon oregano or Italian seasoning. Add grated parmesan after roasting

If your crowd is still squeamish about cleaning a pumpkin and holding pumpkin “guts”, You can still celebrate with popular autumn seeds. Pumpkin seed trail mix is just the fix! This is so good, you wil want to make this all year long. I like to keep small snack bags packed with this treat , ready to go. Munch a bunch all day long!

PUMPKIN SEED TRAIL MIX 3 cups pumpkin seeds[ pepitas] 1 cup raw sunflower seeds[no shells] 6 tablespoons maple syrup, Grade B, honey or brown rice syrup 1 tablespoon olive or coconut oil 1/2 teaspoon kosher salt 1 1/2 cups dried cranberries or cherries Preheat oven 300* Line a baking sheet with parchment or foil, Paint oil on parchment In a large bowl, toss seeds and syrup, evenly coat Spread mix evenly on sheet pan Sprinkle lightly with salt Bake the seeds, stirring several times with a spatula Cook about 15-20 minutes until golden.

Herbal bone broth is the new Green Juice! Bone Broth Bars are popping up around the country. By definition: Broth is a savory liquid made of water in which bones, meat, fish, or vegetables have been simmered. It can be eaten alone or used in the other dishes such as soups, gravies and sauces. I love to make big batches of broth and freeze it in 2 cup containers.

I pull out a container and heat it up with some fresh herbs, mini diced tomato and a squeeze of lemon or lime juice. If you want something heartier, just add thinly sliced oinions and some baby shrimp. Adding fresh herbs after the stock has been cooked, takes the broth to another level. You know international coffee? Well how about international broth. A base stock can be flavored to have Asian, Italian, Latin, Greek flavors, and many more cultures. It takes minutes. Perfect for on the go. Drink it plain as a aromacousine snack.

Bone broth is highly nurishing for both your body and your soul. There is nothing like homemade broth- rich, fragrant and glistening with droplets of golden fat. It is inexpensive and easy to prepare. Broth is a powerful food as it is easily digestible, helps heal the lining of your gut, and contains valuable nutrients that promote healing through the body. The combinations are endless. Broths are a staple all around the world. This can be a fun science or social studies project with kids! The prep takes minutes, then go off and let it cook all day in a crockpot. Your house will have a welcome aroma.
