I had dad and son out looking for bull reds. I got out on the outside but there was not a bird in sight. I headed down the beach looking for birds or bait. The water was not looking good. There were other boats in the area and there were no rods bending at all. I was getting ready to move to another place all together but before I left another captain told me he had heard of one of the guys hooking up. I really did not want to run 20 miles away so I moved a bit north and found much better water. There was a little bait now so I felt better.

Dad was the first to hook up. He was wondering how the bite would be. I told him to just hang on to the rod.

The bite of the first fish was very slow and casual. It was almost like the fish were full and not interested in eating at all. This was going to be a long slow day. I was watching another boat within casting range hooking up and we were just casting. Once I found the right color we had a rod bend. This time it was Cory’s time to hook up. It was still another lethargic type of bite. Something was not quite right. Maybe they had so much bait there they were just swimming around with their mouths open and taking what ever entered it’s mouth.

At least they each had one and we were getting some action. It seemed the fish had moved out to deeper water. This could also be the reason for a much different bite. Now that I finally had the right color bait it was getting much better. We were into the studs they were looking for.

The second day with the 3 generations started out with only 2 of them. Grandpa Jerry’s legs could not take another straight day on the boat. In a way this was a good thing because he was having issues fighting 22 to 25 inch redfish. They are all red headed fair skinned guys from Illinois. Today they had the sunscreen and were putting it on. I think the very strong winds of the day before also got to them.

This went on for a while as long as we could keep up with the school of bait.

Unfortunately all good things must come to an end and reality check comes into view. The fish had moved. We were 3 to 4 miles out in 25 feet of water. I picked up and started heading into the shallow water near the beach. About half way there I notice some bait popping and quickly throttled down almost forcing one of them off the seat. I told them to get the rods and cast quickly.

This paid off as they both hooked up right away. So much for sneaking up on them. It was more like a lightning attack. Unfortunately dad had his throw the hook. These fish are so big and fight so hard it is not unusual for them to throw the hook, straighten the hook, or break the line.

No matter what it worked. I called one of the guys over and I had 7 boats show up. The power of the radio.

Nobody was listening though.

We all fish with each other and know each other. The waters are open and belong to no one. As long as you do not interfere with the other boats fishing. You have to respect the other boat.

This ended rather quickly and I continued on. I moved into the shallows along the beach and did not stay there long. The waves were pushing me onto the shore too fast. I headed into the shallows of a cove. This area is dangerous because the oyster beds are just under the water. Before you know it your boat can be on them and the bottom of your boat can get ruined by the sharp hard oysters. This is where we finished our day. We had a good bite going and another double hookup. A pleasant surprise.

Tony’s Take IS THERE REALLY ANY DIFFERENCE BETWEEN MILES AND ORGERON?

January is normally the time of year that LSU football fans wait with bated breath for the signatures to line up for High School Player Signing Day, the first Wednesday in February. However, new rules brought nearly 90% of the class in the fold last month including last week’s defensive back signing of Scotlandville’s Kelvin Joseph, the state’s top-ranked player at his position and a former LSU commitment who turned down Alabama among others to go with the Tigers. LSU has three more scholarships to give, including one for top defensive back Patrick Surtain, who should be a Tiger in February.

This still leaves major work to do on the offensive skill side of the ball and frankly there’s not much out there to excite Tiger fans for this year. LSU’s offensive side has always gone begging, compared to the pampered defensive side and recruiting linemen of all stripes. It’s one thing to lean towards one side of the ball or the other as a head coach. In the Big 12, offense rules the day. But it’s another to be so obtuse towards the game’s most demanding and focused position of quarterback that no real prospect wants to sign or transfer to a school that has been a top ten program for the better part of this century (latest example: Shea Patterson of Shreveport who left Ole Miss but not for Louisiana).

Aye, that’s the rub. Fools in Baton Rouge football, walking the halls of LSU, supporting loser AD’s like Joe Dean, Skip Bertman and Joe Alleva. The cards are stacked against another Nick Saban walking into Red Stick because the Fools think that their way is THE only way. This year’s Tiger team will be like eating meat without juice or gravy; seafood without spices, dessert without a sugar rush. There does’t appear to be an answer for this dry spell about to happen.

While some teams have gunslinger quarterbacks like Baker Mayfield, LSU doesn’t even let their quarterbacks carry a gun on their hip. Some old blunderbuss of a rifle is about all you can expect from the position at LSU….and most of the time it’s not even loaded.

In the last twenty years, only three LSU quarterbacks have had enough moxie that fans could feel a shiver of hope and excitement when they took the field: Ryan Perrilloux, Matt Flynn and Herb Tyler. The rest were either managers, overachievers with limited athletic abilities or talented robots with no imagination or football smarts. Those, of course, who actually were any good. In the past six years, you can count only a few under “the rest” category. Don’t look at the 2018 roster for any answers.

A quarterback to Les Miles was change received when he paid a dollar for a 75 cent item.

We’re not sure what a quarterback is to Ed Oregeron because, sadly, Orgeron’s coach speak isn’t much better than Miles’. Neither coach believes in changing out quarterbacks once the season has started or game conditions change. Both are incredibly stubborn and both avoid any serious analytic discussion of their chosen sport, perhaps because neither has the ability to verbalize such information.

That doesn’t play well with Tiger fans who are spoiled listening to former players and coaches who can parse the situation such as John Gruden, who last week returned to coaching after nine years. We don’t need a coach who claps like a seal nor one who caricaturizes Cajuns in demeanor, brevity and his favorite catch phrase, “Geaux, Tigers!” Nick Saban isn’t very articulate himself but his sardonic approach to childish questions and his unbelievable college success, along with his meat and potatoes explanation of “The Process” is more than enough grist to get him through another media lovefest before and after every game. Saban doesn’t suffer fools gladly as football’s reigning curmudgeon and he shouldn’t have to: he had plenty to suffer in his five years in Tigertown.

A highly recruited, left-handed, squat-built dual threat quarterback took the field at halftime in the championship game - a true freshman, barely recruited by LSU (what a surprise!) Tua Tagovailoa, a Polynesian Hawaiian cut from the same spirit mold of Marcus Mariota, late of Oregon and the 2015 Heisman Trophy, didn’t take over from all-SEC super sophomore quarterback Jalen Hurts because of injury. Tua came in because Coach Saban thought this confident, well-disciplined, mature and talented youngster could give the Tide something no other team but Georgia could take away - it’s mojo on both sides of the ball, Hurts, who was the difference in at least two Bama wins in 2017, took his benching well. And, you know the results.

Compare that to any other college quarterback changeover in a similar situation. No, wait….

Ohio State did it years ago and Georgia, among others, did it this year. At dear old LSU, where the past remains the future, Coach Ed Orgeron is dialing up the 2018 offense with a rotary dial land line, a recycled offensive coordinator and a receivers coach MY AGE, damn near as old as Pete Jenkins. Plus three roster quarterbacks, none of which are even a pimple on the backside of a modern dual threat quarterback, either talent-wise, intelligence-wise, maturity or disciplined.

And not one quarterback - talented or not - is coming to Baton Rouge this year.

What difference would it make? Orgeron is the new Miles, complete with fractured syntax and general English, lack of comprehensive communications skills with any fan or sports figure, downing high energy junk drinks as an answer to the Little Debbie-devouring Nick Saban. Ain’t working and won’t work. If a highly organized group in Athens can’t hold out in the 4th quarter against Saban, who will? It will take a person willing to work and motivate similar to Saban to make a difference and the offensive talent and maturity to buy into what Coach is selling. Do you REALLY think that Orgeron is anywhere close to that level?

I take back my earlier predictions. LSU will not score 20 points in any one game this year. 540 cases of Red Bull will be consumed by and 10,00 hackneyed “GeauxTigers!” rah-rahs will be uttered by Orgeron before the year is out. Joe Alleva will again make beige look like the new, exciting color of 2018. Orgeron’s cutesy names for each day of the football week will ring hollow - only Stubborn Saturday and Screwed Up Sunday will remain. Are the Tigers poised to repeat the Mike Archer/Curley Hallman/Gerry DiNardo trifecta from the late ’80’s until the day Nick Saban was hired? Notice: the days of LSU sellouts are over. Send your sympathy cards to Myles Brennan as he possibly, just possibly ( no promises here, now….the guy probably needs another year on the bench and another for spot situations before he’s deemed mature enough to run this team) gets a chance to START for the Tigers. Isn’t that neat-o, boys and girls? Hope he has enough chest for this coaching staff.

Basil-Crusted Salmon

Salmon has come a long way in the past decade regarding popularity. To many times salmon was considered having a fishy taste. It’s a fish that has always been construed as a healthy fish with plenty omega-3; good fat. That is the positive side of salmon. Any fish with a strong scent is usually due to a lack of freshness. It’s simply not as fresh as it should be. Nowadays, salmon is better cared for from its stages of fabrication, cryovac packaging, and shipping to supermarkets.

My Basil Crusted Salmon was always a favorite for parties when cooking the whole half side of fish. I crust only the top side with basil. Chop the basil just before using so it doesn’t turn black. After you season the salmon with salt and pepper, rub it down with hand-softened unsalted butter. This will provide the perfect sear and sticky surface for the basil. Sprinkle the basil on like the photo shows. The butter makes an excellent adhesive and flavor balance for the salmon.

Once in Seattle, Washington I had the best tasting salmon ever. I suddenly realized what real salmon was supposed to taste like. It was so fresh. Salmon does have a blood line that runs down the middle of the back, but when its fresh fish, you will not taste anything strong. Salmon also has long pearl color bones so feel around when purchasing the side of salmon.

The trick to searing the whole side of salmon is having a long enough pan or a roasting pan. You will need to have a long spatula and a second smaller one to assist when flipping and transporting the long fillet to a cutting board or carving station.

If you like this recipe and want individual pieces, rub and sprinkle all the required ingredients on the whole side of salmon first and then cut into 5 ounce pieces as desired. Either way, salmon is delicate and deserves the extra time it takes to cook it properly for the best result.

Never overcook salmon, it becomes dry. A little under cooked is best. If your salmon came out a little dry because it was slightly over-cooked, that’s okay; salmon salad or in a pasta is wonderful. The moisture from the salad and dressing or a cream sauce pasta will cover any dry areas. Salmon does take a bit more effort to learn how to cook it properly. ENJOY!

Basil-Crusted Salmon Makes about 8 servings

Ingredients: 1 salmon side, whole ¼ cup unsalted butter, softened 1 tablespoon sea salt 1 teaspoon fresh black pepper ½ cup basil, freshly chopped 3 tablespoons virgin olive oil

Method: • Dry the salmon with a paper towel.

• Sprinkle with salt and pepper on both sides, and rub only the front side with butter and basil.

• Heat up a flat-top griddle or roasting pan that will fit the salmon side comfortably.

• Once the pan is smoking lightly, add the olive oil and gently lay the salmon on the hot pan basil side down.

• Cook for about 1 minute and prepare to flip the salmon.

• A long spatula will slide under the thick side and the small spatula will assist in flipping.

• Always flip the salmon away from you so no hot oil splashes on you. No burns please.

• Once flipped, lower the fire to medium heat and cook for 2 minutes.

• Thin areas will be cooked so when transporting. You will want the long spatula on the thin side and the smaller spatula on the thick. (If you have 2 long spatulas that will work better).

• If the salmon breaks apart a little when transporting from the pan to the cutting board, never worry, it will taste delectable, and your guests will enjoy the colors.

There’s not much going on in the garden once New Year’s festivities come to an end. The state of Louisiana recognizes the third Friday in January as Arbor Day and several communities will participate to help bring awareness about trees in the landscape and environment. If you want to add a tree to your landscape, now is a great time to research different tree species and learn about their different characteristics like leaf retention (deciduous versus evergreen), fall color, sun light preference, and water requirements. The most important characteristic to understand is mature height and spread. This should be a priority in the decision making process because choosing the right size tree for your area will help ensure that it has a long life. There are several different trees that work well in home landscapes. For narrow spaces, trees like the bald cypress, tupelo and swamp gum make for excellent native options.

Nuttall Oak, Shumard Oak, and Willow Oak are excellent choices from the oak family and all are deciduous. Some other notable deciduous trees are the American Beech, Sycamore, and Green Ash. The Southern Magnolia and Savannah Holly are good evergreen choices. As you can see there are many different options for you. It might be best to visit with a nurseryman and see what some of these trees look like in person to help make a decision.

In order to plant a tree or a shrub we must first dig a hole. There is no right or wrong way to dig a hole but we must think about the plant in question when we do it. The soil level in relation to the trunk (whether it is container grown or field grown) should be noted. You do not want to plant it any deeper than that. The width of the hole should be about two to three times the diameter of your root ball. Go ahead and remove the tree from the container. If you have a field grown tree, remove the wire cage and the burlap material holding the root ball together.

You may tease the root ball a little but be careful not to break any roots. Place it in the hole and backfill with the soil you removed from the hole. Lightly pack the soil and make sure the original soil line is visible. You might need to replant if the tree is too low. Thoroughly irrigate the freshly planted tree to help fill in any voids. Finish the task by adding a two to three inch layer of mulch around the base of the tree. Be sure to pull away the mulch from the base of the tree by a couple of inches to avoid volcano mulching. Give it a few years but soon you will be able to sit under that tree and be content will the spoils of hard work and proper planning.

Happy New Year All! I want to start this year off by going a bit deeper. I hope to teach more than just the basics this year and what a better way than starting with Acid and Alkaline. The ph in your body is critical for homeostasis and here’s why…

Although you may think that you’re pretty healthy and don’t seem to have any major health problems, it is fairly likely that you’re body is out of balance. I’m not referring to whether you can walk straight – I’m talking about your internal system. Some of the symptoms of overacidity are; bloating, eczema, psoriasis, muscle cramps, swelling, headaches, allergies, colds, flu & sinus problems to name a few. Chronic illnesses set in when all other possibilities of neutralizing or eliminating acids has been exhausted! It all comes down to one thing, how acidic you are.

If, like me you were too busy passing notes in Science class than to learn about pH balance, you might not remember that the pH scale goes from 0-14 with 7 being neutral. Below 7 is ACID; above 7 is ALKALINE with the optimal blood level being 7.365.

Yes, it’s true the Saints were the most improved team in the league in 2017 with perhaps their best draft class and a balance between offense and defense. But the Vikings were no slouches themselves. They’ve gone through two better quarterbacks in the past year lost to injury and still made the championship game against Philadelphia. Their offense and defense as a team was by far the best in the league. They are favorites to beat the Eagles this weekend and advance to the Super Bowl, where, if karma works, the Jacksonville Jaguars will meet them in the frozen north and the league will be assured a first time Super Bowl champion.

The Vikings are spared being the most pathetic Super Bowl losers of all time by the Buffalo Bills. From 1990 to 1993, the Bills won the AFC championship, something never done by any professional football team, The Bills then preceded to lose all four games, the last three laughers for the winning NFC team. If the Vikings win in Philly, they will be the first team to play a Super Bowl in their actual geographic market. Previously, the Los Angeles Rams lost one game in Pasadena while the 49ers won their second Super Bowl in Palo Alto, home of Stanford University and only 30 miles from The City. Both venues could be considered home fields but with the pathetic support of Los Angeles pro football (except for the USC Trojans), it was a stretch, even though the crowd of over 103,000 is and will remain a Super Bowl attendance record. The Niners had no trouble with the Dan Marino-led Dolphins, who lost 38 to 16 to one of the best pro football teams of all time in 1984-85.

I’d like to see the Vikings win for a couple of reasons. One, they kind of look like LSU on the field and it won’t be in my lifetime that those Tigers will be returning to a meaningful college championship game. Two, Bob Lee. Bob, who was allowed to keep his name last year during the LEE hatred frenzy, was a tall redheaded classmate of mine in junior high in San Francisco.

He went to a different high school, where he made All-City as a quarterback and then to the University of Pacific after which he was drafted by Minnesota in 1968. It was Bob’s father who hired me to go to work for the Associated Press when he was bureau chief in San Francisco. I was a small-market radio newsman and AP “stringer” where I gained a bit of notoriety by being the first out-of-market reporter to get first-hand reports from Memphis the day Martin Luther King was assassinated and fed audio reports to San Francisco, Los Angeles and other major California markets. Bob’s claims to fame include the fact that he was the only NFL quarterback to have both a perfect quarterback rating and one of zero, both during games in one of his two seasons in Atlanta, when he was chosen to his only All-Pro team. Bob made his living as a punter, having to back up Fran Tarkenton as the Minnesota quarterback. He started two years in Atlanta, then returned to Minnesota and finished his career in Los Angeles. He has the distinction of having played on three Super Bowl losers (not the record; see the Buffalo Bills early 90’s roster). But it was enough for Bob and he called it quits after 14 years in the NFL. Now, after years in an outdoor freezer of a stadium and an equally crappy Metrodome, the Vikings finally have a modern stadium that keeps the elements outside and makes it worth the long winters of Norse country. That is, if the Vikings win in Philadelphia. If New England wins, they will be the Super Bowl favorites no matter what. But it would be a pleasure to see the Vikings win and remove the curse of the North. Even the Eagles would have my support. Of course, with Leonard Fournette on their team, it would be hard to cheer against Jacksonville, but either NFC team should have first dibs on this title. And there are former LSU Tigers on all four remaining pro teams. Again, condolences to the Saints. But they are looking good for the future until Drew Brees decides to hang them up. Then, all bets are off.

The pH level of our internal fluids affects every cell in our bodies. The entire metabolic process depends on an ALKALINE environment. FACT: The majority of the foods typical of a Westernised diet are ACID-forming; meat, bread, dairy products, alcohol, caffeine, sugar, refined carbohydrates, saturated fats etc. Chronic overacidity corrodes body tissue and can interrupt all cellular activities and functions. It is the root of ALL sickness and disease. It is also what’s keeping you fat! (I’m not saying you are fat, but if you’re struggling to lose a few pounds, then it’s very likely that you’re system is too acidic!)

Oh and by the way, cancer LOVES an acidic environment. Just one more very valid reason to stay away from the meat and the cheese and the dairy products and all that other refined stuff that we try to kid ourselves are not that bad. BOTTOM LINE – they are creating an acidic crack-den inside you and while you may be asymptomatic (not showing any sign of illness or disease) now, you are potentially setting yourself up for a shocker in years to come. Trust me – don’t wait until it’s too late!

Okay, so you’re probably wondering what you CAN eat if all the other “good” stuff is out of the question?!

If you were to guess the answer to that question – what would it be? Something green?!

We managed to get 5 of them. This would be enough for our evening meal cooked by Venice Marina. We had half grilled and half fried.

During our evening meal Cory started feeling bad. Two days in the sun and wind had taken it’s toll on the fair skinned redhead. He got quite sick that night. With Grandpa’s bad knees and Cory’s sun poisoning our third day on the water had to be canceled. Cory and Dad will be back again. Unfortunately that may have been the last trip here for Grandpa. At least it was a memorable one with a lot of action and good fish.
