CAPT HOOP -- OUR FREEDOM Our Freedom Charters • This is the first year since I moved from Connecticut to Louisiana that my wife and I will not be spending Christmas together with his wife and his mother. It is because of unforeseen circumstances that we decided to spend a day on the water fun fishing. We had wanted to get a few trout but what you want and what you get can be two different things. In reality all we wanted was to find a few fish and spend some time together on the water.. I has been a long time coming.

We met at the dock on a very foggy morning. We watched a few duck hunters and inshore boats leaving without radar. Never a good thing. No fish or duck is worth what could happen running like that. A few of us spent almost an hour there just waiting for something to break. Eventually we eased our way out.

With the fog still dangerously thick in the river I chose to run down Grand Pass.

I hit a few places in the pass and found a rat on the first place.

I had wanted to go to Blind Bay but there was no way I was going to run the river under the conditions that day. We just had to do with the cards we were dealt. Our day was starting as a hunt. Another factor of the day was we had a few feet less water than normal. Some of the drains I wanted to fish were just a streak of mud between some grass. Eddie picked a small large mouth bass that we released.

Once I entered Dixon Bay I found out how much water was out. I veered to the left a bit and started kicking up mud. With no structure to follow I had to look at the electronics to see where I went wrong. This had to be done quickly without stopping the boat or I could sit down on a flat and be stuck there. I still had the option of the jack plate and trim which I used to assist me out of the potential mess. Out in the bay the fog had eased up a bit. I tried to go to one place I usually find fish. The low water would not allow me to go there so I made a big loop while Eddie watched the bottom go by. I had never seen that much water out of the area.

We settled for the first spillway. Our day was not going well at all. There were a few rats in the spillway but the water was not right. I went out in the river and started hitting the rocks. There were some fish there and I was able to put the first keeper in the box.

We still were not getting anything impressive. As much as I wanted for us to have a great day the fish were not jumping in the boat. I was thinking of going south east from there. Then I decided not to run further away. I still had some places near by without running all over. The tide still had not bottomed out. Although little to no water movement it would still be an hour before it would attempt to come in.

I had a good place near by that is fairly good if water is moving. At least this place has fairly deep water. Once there I only had 2.5 feet. So little water around today.

I eased into an spot and set up camp. The rats soon found where we were. We finally had a bit of action and it was Eddie’s turn to get the hot hand hooking a few keepers.

TIGERS HAULED ASPIRATIONS ON THEIR EARLY SIGNINGS LSU had a tremendous early signing period two weeks ago when they secured the services of three junior college players to bolster an undermanned part of their team. These three large men will replace either graduating Tigers or ones that may declare early for the NFL draft.

They included Travez Moore, a Yankee JUCO that should be able to step into the oft-injured shoes of Arden Key, yet another Tiger whose full potential was not realized in Baton Rouge because of injuries, intrigue and inflated weight issues.

Similar to Leonard Fournette, Key never reached the heights he should have conquered following his All American sophomore year. Fournette played injured thanks to Les Miles; Key sat out, thanks in part to his inability to follow the discipline he should have had to keep himself in shape.

Moore’s measurable are similar to Key’s at 6’6” and 250 pounds but he is a little more defensive end oriented than at linebacker. Nevertheless, Moore should become the hybrid position player Key never could completely be due to his physical and non-physical situations.

A second JUCO who should definitely step up to the starter’s plate is 6’7”, 310 pound tackle Badara Traore. Picked as the top JUCO player at his position group and the sixth best overall, Traore will be an early enrollee and should be ready to replace K.J. Malone, a senior who was injured most of his last year and never was a major force on the offensive line. The third lineman is Damien Lewis, a 320 pound offensive guard from Mississippi. These two highly regarded transfers will dovetail nicely with sophomores-to-be Edward Ingram, Saahdiq Charles and Lloyd Cushenberry along with Donavaughn Campbell and Austin Deculus to create a young offensive line core. If Garrett Brumfield and Toby Weatherby return for their senior year (center Will Clapp most likely will leave early and Weathersby is a 50-50 pro prospect for 2018, Brumfield less than that ), that will be nine experienced linemen plus several roster players such as Adrian Magee and Jacori Savage. The Tigers also have three early offensive line high school signees coming on board. The Tigers will then have three complete offensive line groups to go into next season with little fear of losing an impact lineman from this group as the Tigers had lost during the last four years of the Miles era and the first year of Ed Orgeron’s coaching.

But the star of this class so far is Terrace Marshall of Parkway High in Bossier City. The same school that gave LSU Brandon Harris produced the best high school wideout in the country this year. The 6’3”, 195 receiver likely will be an instant starter in 2018, much as Odell Beckham Junior and Jarvis Landry were in the beginning of 2011. Now the Tigers have four more slots open, ostensibly for the nation’s top cornerback, Patrick Surtain Junior, a 6’2” Florida product

with a strong football pedigree. Surtain is as much of an LSU lock for February as any player can be without signing. The others, according to need and LSU desires, include Alabama quarterback James Foster, tight end Glenn Beal from Curtis, another running back and perhaps another tight end. In other words, LSU seems set on the defensive side of the ball, returning a plethora of linebackers and defensive backs with adequate experience in SEC play.

The LSU weaknesses next year begin at quarterback and kicking. This is the worst kicking situation for the Tigers in many a year and quarterback experience is virtually nonexistent.

Why would a top-tier quarterback seriously consider LSU when something in the water in Baton Rouge prevents smart QB coaching and development, no matter whom the head coach is? I don’t know either and if Orgeron wants to be around in two years, he’d better get off his stubborn keister and play his backup signal callers as though his life depended on it. Because when it comes to his coaching life, it does. Alabama doesn’t play for another chance at a national championship this season without Jalen Hurts under center. They don’t defeat LSU or Mississippi State during the regular season. Look at what an inspirational quarterback can do for a team. The San Francisco 49ers went from the second-worst team in the NFL in November to a top 15 team out of 32 because of the play and inspiration of one man - quarterback Jimmy Garoppolo. LSU hasn’t had a quarterback that inspires others to play better or rally behind him since Matt Flynn ten years ago. Pretty sad for a top 15 college football program. They still don’t have one and only one quarterback that has transferred from another college program to LSU has ever seen the field for meaningful play, let alone had a chance to lead this team.

That was, of course, the Purdue transfer, Danny Etling. LSU is called “DBU” but is also “QB - PhewU!”

THE LEGEND OF JIMMY G IS STARTING TO CREEP OVER THE NFL After four games and four wins, the legend of Jimmy G is growing. This movie-star looks quarterback was the bounty for the San Francisco 49ers - an early Christmas gift from a franchise not willing to ease out the best older quarterback in the league’s history. While Tom Brady plays like a 28-year old (so does Drew Brees), any backup quarterback behind such stars as these two has a lengthy tenure to fight much as Steve Young did waiting for Joe Montana to leave (which he did via a trade). So the New England Patriots decided to part ways with the best backup quarterback in the league for a fire sale 2nd round draft pick and the 49ers have the best trade player perhaps in their history (or at least since the aforementioned Young).

Now the Niners have won four straight games. Looking back to the early season, a fully offensive scheme indoctrinated Jimmy Garoppolo might have been the difference in the Niners’ second through sixth league games. In those contests, the Niners lost by 2, 2, 3, 3 and 2 points, including to the Rams and a healthier Seahawks team. Add a touchdown and remove a field goal in each game and those losses are all wins, giving the 49ers ten wins and five losses and an outside shot at making the playoffs at 10 and 6 or 11 and 5. No quarterback in league history has come to a team as morbid as the 49ers and made such an instant impact. Now the San Francisco franchise can seriously look at a return to its place as one of the better league teams.

They still need more offensive team pieces and a lockdown defensive back and linebacker but a team that jettisoned every member of their last Super Bowl team except for two offensive linemen and one tight end has rebounded remarkably. I’m really surprised.

This doesn’t begin to cure the ills of this greedy franchise, however. The Niners may be the first championship caliber team to attract less than 65% capacity to their flawed stadium. This would be a good thing, because the players still get most of their income from broadcast rights, not from ticket sales. Owner Jed York is still an idiot and is unwilling to correct things he could change. The franchise would do much better under a new, more local ownership group willing to concede things like overpriced season licenses and tickets and make financial restitution to those who were caught up in the bogus marketing of this new venue. The stadium itself needs major alterations to alleviate oppressive heat and better security and parking, along with continued efforts to improve traffic in the Santa Clara area. I hope the Golden State Warriors are learning from this train wreck of a so-called professional operation and don’t repeat the obvious mistakes and injustices that the 49ers created not that long ago. Otherwise, they could lose their league-leading fan base, which is used to watching this team in Oakland at a less than awesome venue. So what? Two NBA championships, another close loss following the greatest single season performance in NBA history and the league’s best record through Christmas this year is in the books.

Back to Jimmy G. Teams like the Saints, Cleveland and Denver are mourning the loss of this talent. New Orleans is at least two years removed from needing Garoppolo while Cleveland can’t draft (or trade for) good quarterbacks and Denver has reached the bottom of the quarterback barrel following the retirement of Peyton Manning. Meanwhile, the 49ers will spend the money needed to keep Jimmy G in scarlet and gold for many years while reconstructing their offense and adding star power to their team. It may not be your father’s 49ers but they aren’t bad. It’s too bad this and other teams continue to protest before the games. They won’t stop, so hit them in the pocketbook. Watch on t.v. but don’t spend on them and especially don’t buy their merchandise. If they want to protest on the fan’s time and dime, at least take the dime away from them. They don’t value our time anyway. This includes all Who Dats as well if the situation gets any worse here. Love the team, hate the action. Fans have rights too. And we pay all the bills, no matter which bucket the dollars flow from.

Pineapple-Lemon Grass Jam

Since childhood, I can recall putting jelly or jam on waffles, biscuits or toast. As an adult, I realized that jams can also be used for savory foods like chicken, shrimp, pork or even a glaze on a holiday ham. Two items I also enjoyed using this jam on is ice cream, and yogurt.

My Pineapple Lemon Grass Jam is a winner. I served many guests on my breakfast buffet at the Outrigger on the Lagoon, Fiji.

You can create other fruit jams, but pineapple is meaty and holds up nicely. I do not use pectin for this recipe so you won’t have to concern yourself on that detail. The process is to simply get two ripe pineapples, four pieces of lemongrass, one lime and granulated sugar. Pineapple is a solid fruit so it won’t be too watery when it’s cooked and pureed down. Pineapple jam will hold up when it cools down.

The trick is half the weight of sugar to the weight of fruit. Cook for about 30 minutes per recipe amount and pull out the large pieces of lemon grass and lime halves before you puree.

When cooking with any savory foods, I suggest adding on last because of the sugar so it doesn’t burn. When using on the barbeque, brush on with a new paint brush or kitchen brush over chicken, shrimp skewers or pork chops.

You can even heat up the jam and create a sauce to go on top meat. Once the jam is hot, remove the pan off the fire and fold in one tablespoon of whole butter to richen the flavor and smoothen out the sweetness. My Pineapple – Lemon Grass Jam makes a wonderful gift for any occasion. ENJOY!

Pineapple-Lemon Grass Jam Makes about 12 Jam Jars

Ingredients: 2 fresh pineapples, cleaned and cut into 1” cubed pieces (about 6-7 pounds usable weight) 3 ½ pounds granulated sugar 4 lemon grass cut into 3” pieces 1 lime cut in half (lime juice and rind) ¼ cup water

Method: • Heat a large pot and add all ingredients.

• Once the sugar mixture begins to dissolve and boil, lower to simmer. Cook for 30 minutes.

• Remove all debris and discard pieces of lemon grass slivers and lime.

• Use a hand mixing wand for pureeing. BECAREFUL when using a food processor because when very hot, the mixture can splatter out the seams. Use the pulse switch if you decide on this method. Using a hand mixing wand is my safety recommendation.

• Place jam jars on a sheet pan and gently pour in each jar filling ½ inch to the rim.

• Seal tightly with jam jar covers and turn over for 1 minute. This process when using extreme heat at 180 degrees helps kill any bacteria between the air space. Turn jam jars over and wash off with hot water for any sticky spills. Dry off and always refrigerate after opening.

To get started you will need to purchase the seeds of whatever plants you will be growing.

The most popular transplant vegetable is the tomato but you can grow whatever you like cucumbers, eggplant, squash, peppers, etc.

Root crops like carrots, parsnips, radishes, and beets are better suited for directing sowing into the garden. Make use of those mail order seed catalogs to search for locally recommended varieties. Use the LSU AgCenter’s Louisiana Vegetable Production Guide as a reference to what varieties do well in Louisiana.

Now you will need a few supplies. Small plastic pots, egg cartons, or old six pack flower containers will work well to grow your transplants in. Properly wash them with a 10% bleach and water solution to eliminate any disease issues. Next you will need a soil mix. Any potting soil will work fine but they do sell special seeding mixes. It all depends on how much you want to spend. Fill your containers with soil and soak them with water. Add more soil as needed. Let the containers drip dry for thirty minutes and you are ready to start sowing seeds. Remember that while seeding, you want to plant the seeds at a depth of no more than twice the width of the seed. Be careful to not plant them too deep. Label as you go. It can get confusing if you are growing more than one variety of the same type of vegetable. Place the labeled containers in a bright window or out in the green house. Check them daily for water as needed. As the seedlings get bigger they will require more water and eventually a little bit of fertilizer. When they start producing leaves you can start using a liquid based fertilizer once a week until they are ready to go into the ground.

DON’T GUESS, SOIL TEST

Anxious gardeners are always looking for something to do early in the year while waiting for the spring garden season. One very important practice that every experienced farmer will tell you is to have your soil analyzed for its current nutrient content. After reviewing the results you will know what nutrients should be added and you will be able to choose a corresponding fertilizer.

You will also find out valuable information on your soil pH status which tells you whether you have an acidic or basic soil type. The soil pH can be adjusted using different soil amendments.

The first step in getting a soil sample is to get your hands on one of the LSU AgCenter’s soil sample mail-in boxes. Check with your local extension office where to find soil sample box displays. Inside each box you will find written directions, three sample bags, and a submission form. To take a soil sample you will need a shovel and a large container or bucket. Take several samples from the area in which you want to analyze. Mix these “sub-samples” together and then place into one of the supplied bags. Make sure to label it so you know where it came from.

Fill out the submission form and list what plants you will be growing in the appropriate column.

Make sure to check off the box for “routine soil test” at the bottom. The lab fee is $10.00 for every sample you send in. You can enclose a check for the total amount. Go ahead and put everything into the mailer box including the completed submission form, soil-filled sample bags, and payment. Seal it closed and put it in your mailbox. It usually takes about two weeks to get results back and when they do you can give the county agent a call to review and help you make the best decision.

How to Survive the Holidays

It seems that when a footloose offensive coordinator meets a hardheaded, hard-working but very lucky Cajun head football coach, something has to give. By the time you read this, Matt Canada will be seeking his fifth coaching job in the past ten years. LSU is not a school given to making changes of any consequence without a long period of vetting those changes. That’s the biggest benefit but also the biggest folly keeping the Tigers between the headwaters and backwaters of college football success.

But Canada did not have the personnel to do what he wanted to do in Baton Rouge nor did he have the luxury of a coach with the tenure and confidence to let him tinker with the transmission in the Tiger’s offensive machine. Just like Les Miles sat on David Aranda defensively early in 2016, Ed Orgeron showed little confidence in Canada’s attempts to inject life into a less than average offensive scheme. And 2018 will be no better with the return of Steve Ensminger to the interim role of OC employing the average to less than average quarterback talents on this team.

Matt may not have been the answer but like Nick Saban at Alabama, LSU head coaches should stay far away from the offensive side of the football equation. The difference is Saban produces signees who can do more than a credible job under Bama coordinators while the Tigers still don’t know how to woo a truly talented and intelligent signal-caller to the campus. So it is written for the 2018 season and don’t kid yourself: there is no white knight in a shining transfer suit of armor ready to ride into the Red Stick and make fans think of……well, who do you think of when you envision great modern-day LSU signal callers? Jordan Jefferson?

So, expect two or three losses in ’18 and the same old, same old. This should be a stout team, line-wise, but with little skill set talent to utilize. It will be similar to a basketball team with solid players at the 3, 4 and 5 but a couple of pick-up players at the 1 and 2. Taste the foods offered that you really want but in smaller portions. At parties there is often much more food offered than at a regular meal with people still taking regular sized portions.

As a guest, tell the host/hostess that you are too full to eat all the food and ask if you can take some home for later. For example, take home a serving of a dessert you want to try.

During holiday gatherings don’t sit or stand next to the food table. This is where most people gather, and it is very easy to do a lot of mindless eating. Before you know it, you have eaten way more than you should have.

Sweets (candies, cookies, cakes) and other holiday snack foods (breads, cheeses, nuts) are temptations for snacking between meals. If you are given food as gifts, freeze some of the food to eat after the holidays.

When making holiday foods such as cookies, consider making just enough for gift giving and a little extra for you and your family. This way you will not have extra food temptations around.

When eating out during the holidays consider splitting some of the food with someone else.

Do not skip meals the day of a holiday party thinking that you will save calories! Instead, try eating smaller and lighter meals during the day.

Never go to a party hungry!

Eat breakfast or a snack before conquering the mall and bring a snack if you will be there for long periods.

For some, eating slower helps to cut down on the amount of food that they consume. Try sitting down and really tasting the holiday food.

DIRECTIONS: Preheat oven to 350°F. Lightly dust a large cutting board or flat surface with flour. Roll out a room temperature pie crust sheet, so that it becomes thin enough to cut off about 30%, so that your final crust is 5 oz. Place into a 9-inch pie dish, cutting off excess dough. (If you prefer to skip this step and use all the dough, increase calories and points+ to 6 per slice).
