SHOW LITTLE TEETH IN LOSS TO FLORIDA STATE
My local satellite provider was blocked from showing the LSU-FLORIDA STATE game Sunday night over a contract dispute. I should have listened.Instead, I took in the game at a local watering hole where the contest was shown in all its ugly entirety.
It began with two explosive offensive plays that brought the Tigers inside the five yard line of Florida State. Then the next four plays indicate what the game would turn into when the Tigers could not penetrate the Seminoles defensive seven on three tries and then lost 13 yards on a fourth and goal.
The Tigers only had one advantage in the game: they had two penalties to seven for Florida State. But State’s penalties sent a message which LSU ignored: we’re big and we’re mean and we’ll take a few 15-yard penalties if they effectively let you know we are here to kick your ass. LSU played a watered-down badass first half, taking a three-point lead into halftime. But it was obvious that the Tallahassee players were much more focused on winning with an attitude than the Tigers. The Tigers spent most of the second half trying to remove the sand from their eyes, kicked there by the Seminoles. By the fourth quarter, there was as much quit on the Tigers’ side of the field as there was passion.
To the Tigers’ credit, LSU mostly controlled FSU’s All American defensive end Jared Verse. But it didn’t really matter since they rarely dominated against the FSU defensive tackles. And the LSU offensive line was….well….mostly offensive. Unable to control FSU’s pass rush, Jayden Daniels was forced to scramble more than he should have as the line could not keep him protected. And they were more than anemic in the running game, outside of Daniel’s runs. The Tigers’ defensive line? Where was the quality depth and the ability to allow their heralded linebackers to bottle up the opposing offense? Except for LSU’s Mehki Wingo, the front four was a sieve against the Seminoles, especially in the second half. The linebacker play was also underwhelming, becoming curious with the apparent disappearance of Harold Perkins.
Both teams’ receivers showed bad hands several times in the passing game and the LSU secondary was outclassed by size and position. Defensive depth was a huge issue. And where was Harold Perkins? Except for a call where Perkins avoided touching a punt, this All American leader was rarely seen on the field and I cannot remember one call mentioning his name.
This game reminds me in many ways of the first game coached by Nick Saban in 2000 against Virginia Tech and the pathetic second half provided by Les Miles in a Monday night game against Tennessee in 2005. Both coaches won national championships but not in their first year. Coach Brian Kelly won’t win one in his second year either.
Again….look at Alabama and Georgia. They don’t look like LSU looked Sunday night - ever! If LSU is going to become part of this level of SEC play, they cannot play a game like they did in Orlando. Apologists popped out of the woodwork on the Tigers’ broadcast network but a top five team does not perform physically or mentally as LSU did in Orlando. End of story.
One Postscript: Clemson’s performance against Duke Monday night took some of the sting out of the LSU loss to Florida State. It appears the Clemson Tigers have even more problems than LSU and a major difference in quality athletes. -0-

PINK MUHLY GRASS SHINES AMONGST OTHER ORNAMENTAL GRASSES
Ornamental grasses are a division of perennial landscape plants commonly overlooked by the casual gardener. They add a wonderful contrast of texture in the landscape when used near plants with large, coarse leaves. The leaves move easily with the breeze, creating motion in the landscape. The sheer diversity in color, size, and shape provides the industry with many exciting selections. One of the best attributes regarding the use of ornamental grasses in the home landscape is their care and maintenance requirements. Relatively pest free, there isn’t much that will attack our ornamental pest plants and with their fibrous roots, they develop extensive root systems that can support the plant during times of environmental stress. All of these added together make for quite an impressive plant!
One of these ornamental grass plants that can be seen all over St. Tammany parish and throughout South Louisiana is pink muhly grass, Muhlenbergia capillaris. Sometimes referred to as gulf muhly, pink muhly grass is native to North America with a region of origin from the United States of America down to Guatemala and the Caribbean. Within the U.S., it occurs in prairies, pine barrens, and open woodlands from Massachusetts to Kansas and then down to Texas and Florida. The genus is named after Gotthilf Muhlenberg, an American botanist from Pennsylvania. The species name, capillaris, is of Latin origin and is defined as “of or resembling hair”, which is vindicated after seeing the plant for the first time.
Being a member of Poaceae, the main grass plant family in plant taxonomy, pink muhly grass shares many of the same characteristics of other grasses. It is considered a warm-season grass, like our common lawn grasses, due to its growth output during the summer months. Being perennial, it lives year after year going through dormant periods during the winter months. The real gossip begins with its attractive foliage and smoke-like flowers during late summer and fall months. The leaves are dark green in color, glossy, wiry, and thread-like. The panicles, loose multi-branched flowers, are pink in color and develop in late summer through the fall. They make for great individual specimens, but they really shine when used in a mass planting off in the distance. The plants themselves can get up to 4 ft tall with a width of about 3 ft.
There are a few cultural recommendations to follow to have a successful planting of pink muhly grass in the landscape. Like other grasses, pink muhly grass is going to require a decent amount of light for the plant to thrive. Choose a location that receives at least 6 hours of direct sunlight throughout the day. The area should have decent drainage. Pink muhly grass can tolerate a moist soil. However, if water collects regularly after rain events, I might reconsider. Lastly, take soil samples to determine soil fertility and adjust in situations where plant nutrients are showing “very low” and “low” levels. Comply with these conditions and pink muhly grass will thrive in your landscape.
Whether in the ground or in a mixed container with other plants, pink muhly grass is an excellent choice for Louisiana gardeners. It’s such a good choice that the LSU AgCenter has selected pink muhly grass to be a finalist in the Louisiana Super Plant Program. Well, here we are in almost the exact same place as we were a year ago. After Week 1 in college football the LSU Tigers sit devastated after a loss to FSU. The difference this time is that the loss a year ago was a slugfest while this was just a total knock-out! Unfortunately, not the one we were all hoping for with even more questions than a year ago.
The No. 5 Tigers had a 17-14 halftime lead but allowed No. 8 FSU to score 31 unanswered points in the second half. They had no answers for Noles quarterback Jordan Travis (342 yards passing, five total touchdowns) or Louisiana native wide receiver Keon Coleman (122 yards, three scores).
The loss marked LSU’s largest defeat as a ranked team in a season opener in the AP poll era (since 1936).
“This is a total failure from a coaching standpoint and a player standpoint that we have to obviously address, and we have to own,” Kelly said. “I know adversity is always going to strike at some time in this game, and this is our first real piece of adversity that we have to address. I’m confident our guys and our coaches will rally in the manner that they need to.”
LSU had plenty of opportunities in the first half to build a much bigger lead but squandered them. On the opening drive of the game, the Tigers had four tries from the 1-yard line but failed to score on fourth down after quarterback Jayden Daniels was sacked. LSU had another chance in the second quarter on fourth-and-goal from the 1, but Daniels was stopped again. We will talk about Daniels more later.
I agree with both the calls and Kelly said they were “standard fourth-down calls and decisions.” Despite the inability to score from the 1, LSU racked up yards in the first half and led 17-14 at halftime. As bad as they played in the 1st half, they garnered a C – in my book. But after the break, Florida State imposed its will and began to overpower LSU and the Tigers earned a big F the rest of the way.
“The buck stops with me, and I’ve got to get our football team to understand and recognize that you’ve got to play this game for four quarters with a mentality,” Kelly said. “We just did not, for some reason. We thought we were somebody else. We thought we were the two-time national champion Georgia Bulldogs or something. I don’t know what we thought, but we were mistaken.”
Whether they were reading the press clippings and believing they were better than they are, or we were given a load of fresh manure and told that it was just chocolate. This is exactly what happened with the quarterback position. We were told Daniels had made improvements and became an all-around quarterback homing in on his passing skills. But, what we got was the same ole qb who doesn’t trust his deep ball runs out of protection into oncoming defenses and decides to automatically run if his first wide receiver is not there.
Add that up with his continued staring down of receivers. Now, the blame does not all go on him. He had a ton of balls dropped mostly by Kyren Lacy who needs to be shown the bench for someone who can actually catch passes that hit him in the chest. After the 1st drive, the running backs were not existent with zero vision. There were holes albeit a few and far between but the runners kept going directly into defender hands and not moving or seeing the open spots. We should see some maneuvering in the backfield as well as the 2 true freshmen are too good to just sit and watch the older guys. Now, the line was also not perfect with Miles Frasier getting blown up all over the place as if he was wearing roller skates.
On defense, Mekhi Mingo looked great despite not having Maason Smith beside him. With having a mobile qb, FSU forced LSU into keeping Harold Perkins as a spy all night which ultimately made him useless on defense.
This was as bad a game of football as I have watched LSU play and we saw a team with less than 40 kids play a bowl game with a WR as the starting quarterback. The good news is that we dealt with all this before just a year ago and there are 11 games left. If FSU is as good as they looked then we could possibly meet them again at the end of the year. As the first game of the season there is plenty of time to make things right and an entire conference schedule ahead. Or FSU is just okay and LSU is even worse. One thing is for sure..we have grown-ups leading the charge and trust needs to be with them to make the right decisions. Oh, the kicking was superb, so we have that and we still make it tough to field punts. Grambling will prove as a way to get better the only issue is it will not be a real test to se what type of team we have but some young players will get to show off their skills and should more than likely move up the depth chart.

I really like the way my “Come In and ....... Welcome” sign came out. This is a Tracy Moreau original design. I love the background work of this piece, so much so I am making four of these to bring with me to the school craft fair. This was such a fun piece to paint. I had to special order the wooden bees from Canada. I was told by three woodcutters here, the details were to intricate. Guess I will have to check the prices of the laser wood cutting machines. I hear they are simple to use. But, let me tell you about this piece.To begin with, the entire piece is painted, then with some very thinned warm white and an encaustic brush (a chip brush would do also) gradually pull long stripes across the board until you get the aged look you want. After that is completely dry add your design and enjoy painting the sunflowers.
I love learning new things from different artists. Next time I will share a new artist with you. I will be working on her design while waiting on my bees to come in.

Woundeed War Heroes
Every year for over 10 years I have sponsored and participated in this event. I actually gave up 2 trips in order for this to happen. These guys and gals are that special. We give these Wounded War Heroes a fully paid weekend here with ceremonies and trophies and other prizes.
While trying for our 4 red snapper we had to avoid the sharks. Sometimes we had to fight them all the way to the boat. I was using rod and reel setupsheavy enough that they could not break sobwe had to bring them to the boat. This was an unexpected treat for then. This shark was about 6 feet long.
After we limited out on red snapper we went looking for some more meat to take home. I went into an area where we would still get red snapper but they were all catch and release from here on. We found some nice mangrove snapper and bull croaker to add to our bounty
The next day a front came through so we could not run for snapper. We had to look for a place where there was protection from the winds. We also had to find clean water that was moving. There was a flip tide so our tide hight was only 0.6 feet with an hour of flat in the middle over a 13 hour span. Our first fish of the day was this beautifull bull red. He really enjoyed the battle this stud d gave him.
For a while it seemed like the fish were being attracted to this person. It did not matter as long as we were bring them to the boat.
We were getting a good mix of fish as you can see by this beautiful trout.
The winds were blowing a lot making for some difficult casting and limited areas to fish. My power poles were gliding through the mud with the wind pushing the boat in some areas. Only way to tell is by the wrinkles in his shirt. This was his first fish of the day. I felt sorry for him. He was a good fisherman but was just not getting the bites.
He had been watching these guys trying to school him on fishing. This was a nice double. The little one just made 16 inches so it also got a free ice bath on me.
We had a good flounder come in the boat. The picture and the wayvhe is holding it does not do it justice. This flounder took second place in the flounder division for the weekend.
It was a slow day as expected but I was able to scratch out a few nice fish once again.
Overall the weekend was another great success. These veterans had a well deserved weekend on us. God bless them all and keep them safe.

When someone mentions fried chicken, I instantly reflect back to my mother’s home-style fried chicken and suddenly I feel surprisingly tranquil. Coming home after a long evening playing with friends, I noticed the cast iron pot on the stove. That usually meant fried chicken was in its final stages of preparation. Fried chicken for dinner was a momentous occasion in our household, because I knew mom would always make chicken sandwiches for my school lunch the following day.
My favorite part of the chicken as a kid was the breast, but years later, wings won me over because they were my grandmother’s choice. Grandma educated me on the delightful tender meat of the wing, so close to the bone and to this day, wings reign over all the others. Through my years of culinary travel, I was fortunate enough to experience many culture’s fried chicken recipes handed down from generations of great home cooks simply feeding their families.
While working as a chef in Thailand, I came across an outside kitchen set up within the famous weekend market in Bangkok. Thai vendors cooked right out in the streets where people waited patiently for this delectable fried chicken while sitting on small wooden benches no bigger than a foot stool. Although at times the heat was unbearable, though no one seemed to mind while large batches of Thai style fried chicken rolled out all day from three large woks filled with hot oil. You could clearly see from the smiles and laughter that customers were pleased by the flavor.
In Thailand, fried chicken is usually served along with sticky rice and spicy papaya salad. After returning numerous times to this well-known chicken stand, I became obsessed with the taste and I simply had to get the recipe to share it with my friends and family back home. Most western fried chicken recipes feature seasoned egg wash or buttermilk marinade for a few hours as much as overnight. The chicken pieces are then tossed in flour and fried to a perfect golden crunch. Thai style fried chicken wings involve an oil-based wet batter. No additional flour is needed for the chicken once marinated. The chicken will go from the refrigerator straight into hot oil and will be fried to a crispy excellence.
My Thai Style Fried Chicken Wings is a unique recipe and made its debut on The Frank Davis Cooking Show in 2009 on WWL TV Channel 4. Frank raved over the flavor combinations, he stated, “If you never ever learn to cook another thing on this show, make sure you master this technique.”* Frank and TV crew truly enjoyed the Thai wings. Knowing they were sincerely appreciated by such a wonderful man and local New Orleans chef, brought joy to my day.
When I launched my Southeast Asian menu in New York City in 2010, Thai Style Fried Chicken Wings where an instant hit on Madison Avenue. My fry cook was sweating bullets trying to keep up with the constant demand. This authentic recipe will deliver crispy non-greasy Thai Style Fried Chicken Wings that you and your loved ones will enjoy unlike any other fried chicken you have ever eaten.
Thai Style Fried Chicken Wings (Makes
About 6 Servings.)
• 1 cup canola oil
• ½ cup all-purpose flour
• ¼ cup tapioca flour or cornstarch
• 3 tablespoons oyster sauce
• 3 tablespoons fish sauce
• 2 tablespoons minced garlic
• 2 tablespoons finely chopped fresh cilantro stems
• 1 teaspoon sugar
• 3 pounds chicken wings, cut at joint and remove wing tip.
• 8 cups canola oil (for frying).
• 1 ½ cups Cajun Asian Sweet Chili BBQ Sauce (as a dip).
In a large bowl or zip-top bag, combine canola oil, flour, cornstarch, oyster sauce, fish sauce, garlic, cilantro, and sugar. Score each chicken piece once on each side with a knife and add chicken to coat evenly. Cover the bowl with plastic wrap or zip the bag and marinate the chicken for at least 6 hours in the refrigerator or overnight.
In a large pot, heat canola oil until it reaches 325º F, using a deep-fry thermometer. Dip wings in the oil one at a time. DO NOT overcrowd the pot. Cook in two batches.
Let the chicken cook for 1 or 2 minutes before stirring. This allows the flour to become lightly cooked before separating. Make sure all chicken pieces are separated from one another. Allow the temperature to return to at least 300º F and maintain that temperature throughout the cooking process.
Cook wings until chicken floats to the surface or they turn a light reddish brown color, about 6-8 minutes. Remove wings and transfer to a paper towel lined plate and serve hot. If a dipping sauce is requested, I recommend Cajun Asian Sweet Chili BBQ Sauce.

Being a foster parent is one of the most rewarding volunteer opportunities at any animal shelter or rescue group. You can cuddle with adorable puppies, bottle feed infant kittens, care for animals during a medical recovery, and even help us find them a human to call their own!
Animals go into foster care for a variety of reasons:
• They may have medical issues and need a calm place to sleep for most of the day
• They are orphaned baby kittens and puppies in need of someone to bottle-feed them
• They are too small to make their adoption debuts– perfect for anyone wanting the puppy kisses and kitten cuddles without the commitment.
• They need a break from the shelter and time spent with humans
Around this time of the year, with each shelter across the country nearly full of animals, your help fostering will be most impactful. Foster programs are vital to both animal shelters and rescue groups for several reasons:
• When an animal is fostered, it opens up space for another animal to be rescued
• While in foster care, the foster family can see an animal’s true personality and learn so much about it. Leading to a better adoption placement.
• Some animals do not adjust to shelter life well and their behavior can start to deteriorate. Moving those animals into foster homes provides a much-needed break for those animals.
