Walking the Nile and right into the history books... Levison Wood holds many titles, explorer, photographer, writer, soldier and now first man to walk the entire length of the Nile, from source to sea. Not satisfied with just watching the documentary, we caught up with Levison to find out even more about his epic journey. Photography by Levison Wood & Tom McShane

I’ve done lots adventures and expeditions in the past but this was basically the biggest and most ambitious project I could think of. Levison Wood In December 2013 Levison, who spent a number of years as an Officer in the British Parachute Regiment, where he served in Afghanistan fighting against Taliban insurgents in Helmand, Kandahar and Zabul in 2008, set out on a walk along a river. Sounds lovely? Well unlike the sunny weekend stroll you might take with Arty, the family lab; Levison’s walk was 4,250 miles long, took 9 months to finish and the river in question just so happened to be the longest river in the world, the River Nile. Cool, calm and charismatic are three words that sprung to mind when I first spoke with Levison. I almost felt a little fangirl about the whole situation, here I was thinking wow this is the man I’ve been watching on the TV, he’s incredible and he walked so far and yet he sounds so relaxed about it all, like it’s no big deal. But of course it’s a very big deal. No one had ever completed the journey before Levison and so really he’s kind of a big deal. It would be fair to say that with a world record as big as being the first person to walk the Nile under your belt, you’re

bound to be regarded by some as an inspiration and so I wanted to know who inspired him, “For the Nile I was inspired by the great explorers of the 19th Century like Richard Burton and David Livingstone, reading their diaries was what got me really fascinated with the Nile and that part of Africa. But a great and constant source of inspiration has to be Sir Ranulph Fiennes who is brilliant and is still going strong in his 70’s.”

“The Nile is the longest river in the world and arguably the most important. It’s where civilisation began and so it’s an exciting and really important river and it’s still important today. Millions of people live along its banks and it’s the life blood of Africa. I wanted to explore what the river means in the 21st century and nobody has ever walked length of the Nile. I wanted to push myself both physically and mentally. I’ve done lots adventures and expeditions in the past but this was basically the biggest and most ambitious project I could think of.”

You can hear the passion in Levison’s voice when he talks about the Nile, clearly his fascination with the great river is deeply rooted within him, and an exploration of the regions surrounding it was inevitable, so asking “Why the Nile?” seemed a little silly but really I wanted to know, because Levison didn’t just visit, take a couple of photos, tweet that he’d been and then come back home. No, he took in every single mile of the great river, camped in the wild, foraged for some questionable food, faced multiple dangers from man eating predators to civil war and all the while being thousands of miles from friends and family.

Whilst physically Levison felt there was little he could do to prepare for the challenge, “It’s a long walk, I can’t really walk any further”, the real preparation lay in the logistics. Crossing seven very different countries, some facing extreme political unrest and civil war, doesn’t just happen without serious advance planning and even then Levison still faced his fair share of issues, having run ins with the police and a close call with gang of armed thieves, “One of the biggest challenges was 23

the different environments. I found myself caught up in civil war in Sudan, there were times when the question was definitely raised – is it even possible to be carry on?” For most of his journey Levison camped but on reaching Egypt, where it was too inhospitable along the river he luckily had people who put him up. When you’re asking someone what the hardest part of a 4,250 mile walk is, you couldn’t blame them for saying all of it, but for the sake of a good interview, I asked him to be specific, “Crossing the desert in Sudan, the Sahara in summer was definitely the most physically difficult part of the journey”. Tragically though, it was not just physical exertion and political unrest that Levison faced. In March, Levison lost a walking companion he had met whilst on his epic journey who sadly succumbed to the heat in the remote Ajai Wildlife Reserve in Northern Uganda and died, “emotionally and mentally, dealing with the loss of Matt Power, who tragically died, that was tough carrying on after something like that.”

I couldn’t help but ask Levison about the food, often he would have to forage for food and we certainly witnessed him sample some unusual

cuisines during the four part documentary. When I asked him to pick the worst he said “it would be a tossup between Bush rat stew and maggot bean soup… the rats were rubbery and not very pleasant at all, the hairs were still on, and in one place maggot bean soup was the only thing we could get. They intentionally let the beans go rotten and they eat it because it’s extra protein!”

For the most part of his journey, Wood was accompanied by local area guides, all of whom he is still in touch with, including Boston Ndoole (my personal favourite of Levison’s companions), “I actually flew Boston out to London in January, he’s never been outside of East Africa before so it was great to get him out here and we watched a couple of the episodes together, I go to return the favour and act as his guide instead!”. His guides were often Levison’s only company and were invaluable when it came to helping Wood cope with the long stretches of barren and difficult terrain, “You just had to keep going, head down. I just made conversation with my guides; it definitely helped for coping with the boredom and isolation”.

Clearly his journey was a challenge of monumental proportions in every sense but inspiring others to take part and see new places is something that Levison feels strongly about, “I set up the Secret Compass five years ago with another friend from the army and the idea was to try and challenge people’s perceptions and take individuals and groups away to amazing places that you wouldn’t normally go to. It’s about inspiration and achieving extraordinary 24

things.” They accept applications from all sorts of people from all walks of life, “some challenges are harder than others, but it’s open for anyone to apply, there’s an adventure to suit everyone” but don’t panic, I don’t think maggot bean soup will be on the menu. On his return last year, he spent the autumn writing his book, which came out in January 2015, to coincide with a four part documentary commission by Channel 4, which gave us (the mere non Nile walking mortals that we are) a glimpse of just what an extreme journey Levison undertook. So after nine months of near isolation, with just a local guide for company, Levison has returned to a whirlwind of public speaking appearances, parties and publicity opportunities, but it hasn’t bothered him, “it’s great to share the story of my journey with other people, it’s exciting” says Levison when I ask about his hectic schedule as a speaker at various expos and events.

Now home in London, he is enjoying spending time with his family, occasionally escaping to the Peak District whilst preparing for the next top secret adventure. “I’ve got something lined up, hopefully for this year, it’s a bit of everything but I’m not giving anything away!” So it’s certainly a watch this space situation, will it even be on foot or has the man simply walked enough? Whatever it is, there’s no doubt it will be big, he’s set the bar high and we’re all eager to hear what’s in store for Britain’s favourite adventurer. It’s the Final Countdown The winners of The Earl of Doncaster’s ‘Win a Wedding’ competition are just days away from tying the knot! We take a look back at their journey! Last year we introduced to you Amanda Brown and Robert Wright, the lucky couple who walked away as winners of The Earl of Doncaster ‘Win a Wedding’ competition. The prize? A dream wedding package worth over £20,000. Now the happy couple are counting down the days until they say ‘I Do’ in the fabulous Doncaster Art Deco style 4 star hotel. Amanda and Robert who won the multi stage competition, which saw them challenged with a fundraising for charity task and Mr & Mrs themed live final, were thrilled to win the fantastic prize but also to know that their efforts to achieve victory in turn helped others. Choosing to support ‘Cash for Kids’ during the competition, they successfully raised £1,176.18 which went on to buy equipment for sick and disabled children living in South Yorkshire, “finding out the money we raised

helped buy a little girl a wheelchair, gave us immense pride” said Robert of the experience. Hosted by The Earl of Doncaster Hotel, a fabulous four star art deco style venue, which recently unveiled a range of luxurious and boutique suites, Amanda and Robert’s dream wedding is being made possible by the generosity of local businesses. They merge design movements from the 1950s and 1970s, the Americas and Scandinavia, and all with a touch of Parisian flair. Each piece in the collection tells a story, and it is through their unique universe that Hamilton Conte imposes itself as an international design brand. The key word for designer Fabian Pellegrinet Conte is eclecticism. For him, this means an intelligent mixture of objects, whether of

different origins, materials, epochs or style. While avoiding conformism, Hamilton Conte cultivates and eclectic combination of materials: precious wood, resin, stone, metals such as cast iron, brass, a luminium…. On observation of the Hamilton Conte collection, it is clear to see that the brand identifies with 20th century design movements, most notably the period from the 1950s to 1970s in the Americas and Scandinavia. The talented design

duo bring together these different styles throughout the range, while remaining firmly rooted in the present. Hamilton Conte creations are the fruit of an alliance between designers and artisans, all of whom are passionate about their craft. Products are manufactured with great care and adapted to the individual needs of each client. “For me, luxury today is about being able to work with craftsmen, taking the time 47

to care about details as well as pleasure in doing so,” – Fabian Pellegrinet Conte. The collection offers all elements of an interior space: furniture, seating, lighting, objets d’art… The creations are an extension of the lives of the two founders and reflect their passion for storytelling. Some models, for example, carry the names of inspirational people while others are nods to anecdotes or places from their lives. “My father’s name was Enzo and he loved to take his cognac in a comfortable and enveloping chair. Our wing chair with the same name was designed bearing this memory in mind,” comments Fabian. Before he went into the antiques trade, Tim’s father was a Major in the British Army. It’s from him that Tim got a taste for military pageantry (and a bit of a thing for drums). Famous for repurposing antiques and vintage pieces and breathing new life into old items, we caught up with the man behind the eclectic brand. Looking at the collection, your aesthetic comes across as quite masculine and eclectic. Who do you visualise the Timothy Oulton customer to be? What we make is not like anything you’ve experienced before. It’s bold and British and ballsy. Our target customers are people who want that. They care about the authenticity of the things they use, and they value that quality of what we make. Basically, our customers are as passionate as we are about living with things that are beautiful, authentic and useful. Do you have a standout Timothy Oulton piece or collection that you absolutely love? This changes but at the moment I love the Axel range – we took what nobody had a use for, and made beautiful cabinetry pieces for the living room and bedroom. The wood is reclaimed from decommissioned Chinese junks, decades old, imbued with all this rich character from being exposed to the high seas and elements. We spend hours and hours removing each nail individually from the wood and then sand it down by hand. It’s very important to me to preserve the original marks and scars of the boat wood because that’s what gives each piece its authenticity.

You often refurnish and repurpose vintage and antique furniture and items; do you ever feel guilty about changing classic pieces? I love antiques. My dad had an antiques shop and I grew up around them, they’ll always be in my bones. But for a long time I’ve felt that antiques, as beautiful as they are, are just not relevant for how we live our lives today. What we’re doing is taking inspiration from these classic pieces and repurposing them into things that can actually be used. For instance, I have a great affection for our Drum collection, inspired by 19th century military drums. We’ve repurposed these drums into tables, lamps, shelving. They’re not just pretty pieces that gather dust in the corner, they’re pieces to be used every day and really enjoyed. I always say “be relevant or be dead”. What is the best piece of advice you can offer our readers when it comes to choosing furniture?

How would you describe the Timothy Oulton brand in just three words? I would have to go with daring, authentic and handcrafted. As this is The MAN Issue, who would you say is a male figure that has truly inspired you? I would say Ralph Lauren and Axel Vervoordt. Ralph Lauren maintains a front of house impeccability that is always completely relevant and evolving with the times, and manages to blend luxury with simplicity in a way that is extremely unique. Axel Vervoordt has always been a huge inspiration for me, he was originally an antiques dealer who has guided his company to become a global entity in antiques, design and art. The mega wealthy and design-elite love him for his ability to mix styles and periods in an unexpected way.

Go with your instincts – if you like a piece, there is a reason why you like it, even if no one else does. On the other hand, if you don’t like it, but everybody else does, that’s fine, but don’t get it just because it’s the latest trend or award winning piece. Think with your heart when you decorate your living space and you can’t go wrong.

Vintage and antique markets are my biggest source of inspiration, they’re always full of exquisite one-off pieces. I might love a piece simply because of a small design detail, a colour, a shape or a material. You often just unexpectedly stumble across something special. The green card for carnivores Green for go, red for stop; a language of colour which is universally understood whoever you are and wherever you may be. It is no different at Fazenda, although utilising this language as a method for how we are served in a restaurant is completely unconventional it is also utterly brilliant. Fazenda is a unique experience and one which must be experienced to gain a full appreciation of what is on offer. This popular Brazilian style eatery is all about the meat and once seated the waiters explain passionately just how it all works. With beer mat style flash cards given to each diner to display beside their plate, simply show green side up for being ‘open to more meat choices being brought to the table’ and red side up for ‘a cheeky breather’ – as Al says. Al is looking after us and he goes on to clarify that any of the meat choices can be cooked exactly to our liking and we can have as much or as little as we like; much is encouraged by Al! This is great for my dining partner as he is certainly the carnivore among us and is delighted at the fact he doesn’t have to wait for me as he’s literally given the green light –couldn’t resist. The experience in fact begins with a feast of gourmet sides of which some are brought to the table and even more are available from the central

island of amazing accompaniments. Delicious salads, fresh cut vegetables rice and potato dishes, breads, oils, cured meats and continental cheeses just to name a few are all waiting to be devoured. A must try for me was the traditional Brazilian Feijoada; a stew of black beans with meats which was exceptional with a dunk of fresh artisan bread. To say all of this is included within the set price, I could have just feasted on the gourmet sides and have been completely satisfied due to the quality and amount of dishes available. Try though, to leave some room on your plate for the meat and once back to your seat, go green. This is the signal that will summons the waiters to your side who will most certainly be eager to and on a generous mission to please. Each are each armed with a carving knife and a different prime cut of meat which has been rushed fresh from the Goucho chefs in the kitchen to ensure diners get it at its best. There are lots of choices consistently available, so there are lots of waiters with these 62

towering skewers eagerly awaiting every green card. The choice is amazing and the flavours, cuts and quality of the meat is on point. I have been to Fazenda both at lunchtime and this time in the evening. There is a plentiful selection during the day and lunch starts at a very reasonable £17.30 per person. Evening starts at £27.30 each and I am not sure I was prepared for just how much more choice was available for the price difference; huge! Choose from the signature Picanha, or cap of rump and honey glazed belly pork to minted lamb, black pudding or garlic chicken thighs aside every type of steak imaginable; my personal favourite being the rib eye for taste and tenderness. This honestly keeps on coming and when you feel the need to change your plate, the waiters just know. They don’t whip it away leaving you embarrassed to ask for another so you can just taste extra cut you missed, they replace it with another before you can get a look at the table underneath. Like I said, more is encouraged.


When you turn your card red for that final time and you think it’s time to go and (ahem) walk it off? A desert menu arrives. And this is no ordinary dessert menu. Each dish is a masterpiece so beautifully enticing they have more shares on Instagram than most of the cute pets vying for the same attention. They are rich, they are plentiful, they are unique and this kind of wonderfulness is completely irresistible... to me anyway. How nice too that as it was shrove Tuesday, pancakes were on the house? Touche. I opted for the utterly indulgent Marquis de Chocolate consisting of a gooey brownie topped with salted caramel and creamy cheesecake. Just writing these words makes me want it again, right now. I found Fazenda the Rodizio bar and grill to be welcoming with a great atmosphere which engages the diner with its core reason for being. I loved it. Oh, and I have to say I loved Al; what a star! He even offered to drive us home if we wanted more wine, such a fab spirit. There is a small downside. You do think you can try most of the meats that come to your table and it’s only when you get up to leave you realise you should have put on the red light oh so much sooner. But what a delightful way to get into such a state of fullness; I don’t think I’d ever learn, that’s for sure!

A taste of Brasil at Cabana After hearing great things about Cabana and its fried rice balls (seriously) we just had to see for ourselves what all the fuss was about. So we sent our Creative Director to sample what they had to offer and to find out once and for all why everyone seems so crazy for Cabana.

Greeted by fun, funky and haphazard decor we were seated near the open kitchen on one of the many quirky benches covered in denim jeans, all stitched together (rumour has it that there are sometimes hidden gifts in the pockets). We began with drinks, I opted for the Fresh Limonada Suissa, a refreshing traditional lemonade while my wife had the Red Tail Parrot, a strawberry, passion fruit and lime cocktail which I was told all went great together but I couldn’t really taste any of the prosecco top over the cachaca and the lime flavours which were quite strong but lovely all the same. To start, we shared the Pulled Pork Sliders which consist of warm doughy cheese balls topped with Malagueta (a type of chilli pepper) pulled pork and the aforementioned Crunchy Fried Rice Balls. The sliders were amazing, there was a little spice from the Malagueta sauce with more of a smoky taste but nothing overpowering and it was cooked perfectly so it melted in the mouth. The fried rice balls which my wife loved seemed a little on the bland side compared to the sliders but there was an accompanying Malagueta mayonnaise which had a subtle taste which went well the with rice balls.

fries, which although salty, had a sweetness that really came through, I would have been happy just having them! As we were finishing our mains the place began to fill as we had been on an early sitting and the atmosphere came into its own, there is none of this ‘hide people in the corner’ mentality instead it’s more open and communal allowing for a fun space to hang out with friends. I continued with the Malagueta and went for the Spicy Malagueta Chicken skewer which was cooked on the grill in the open kitchen next to us and served at the table, there was a little more heat than the starter but it tasted great with the grilled peppers. The second main we had was sticky BBQ pork ribs

with homeslaw, these were cooked to perfection and fell off the bone, the sauce complemented the meat well and the homeslaw, which was more like vegetables in a marinade rather than the American style that we’re used to, was deliciously tasty. The mains were made even better with a side of the sweet potato

For dessert we both went with sundae. My wife chose the aptly named Brazilian Overload, a caramel choc chip and white chocolate “Cupuaçu” ice cream, “Brigadeiro” chocolate truffles and doce de leith caramel sauce. Meanwhile I was too preoccupied with my own, the Peanut Butter and Oreo sundae, but she told me hers was delicious... My own sundae was divine. If you’re a fan of Snickers (or Marathon if you’re of a certain generation) then this is for you, they were both the perfect dessert to complete an amazing meal. Overall we found Cabana charming with a sense of fun, friendly staff and great food. It is the perfect place to relax and catch up with friends and as they say ‘tudo bem’... ‘everything’s good’.

Stevie Parle Announces

CRAFT LONDON Over the last few years he has developed a reputation as a culinary adventurer, discovering new ways to use everyday ingredients, and adapting ideas from his travels to create simple, easy-to-follow, exciting new recipes for Dock Kitchen in west London, Rotorino in the east and for home cooks. Now with a new project on the horizon, we wonder what it could possibly be this time. Stevie Parle, acclaimed chef, author, food writer and TV presenter, has announced Craft London, three floors of culinary surprise and excellence in collaboration with Design Research Studio, under the creative direction of Tom Dixon, opening soon at Greenwich Peninsula. Craft London kicked off with a café/roastery in October 2014 and a restaurant and bar will follow in spring 2015. The project focuses on quality in production, collaborating with modern experts, fanatics and obsessives, to craft world class products through the roasting of coffee, smoking of fish, bee keeping, meat curing, fermentation of vegetables and the creation of a contemporary kitchen garden. The menu will focus on bringing these products together in a simple, modern way; working closely with farmers to get ingredients that really show the best of British produce. Stevie is obsessed with highlighting unusual British ingredients, the ones often overlooked or ignored. English Lop pigs will be raised far larger than usual to make the best cured meat, black skinned silkie chickens reared just for their incredible flavour and beef far older than is usually commercially viable. The winter months will bring a selection of game. Traditional forgotten growing techniques like clamping and forcing along with the use of old-fashioned varieties used will bring interest and originality to the fruit and vegetables. The heart of the kitchen will be a huge hearth, where everything from

the Fireplace Potatoes to the Stitchelton Cured Hereford sirloin will be cooked over properly seasoned hardwood. There will be an a la carte menu as well as an ambitious tasting menu (£65) and set menu options for pre-show (£30/£40) and lunch (£28). Above the restaurant will be a beautiful bar with a great outdoor terrace and a view of the Thames, Canary Wharf and the O2 arena to one side and the Emirates Airline Cable Car to the other. At just 30 years old, Stevie Parle is one of the country’s brightest young chefs/restaurateurs and his menus demonstrate his creativity and individuality as well as his dedication and commitment to quality. Following on from the success of Dock Kitchen and Rotorino, Craft London will bring his clear vision to the next level allowing Stevie to have a closer involvement in the creation of the raw materials of his trade: the ingredients he uses whilst working closely with the unsung heroes of the culinary world, the top

quality growers and specialist producers. Craft London will be designed by Design Research Studio and form part of the Greenwich Peninsula development. The design reflects the approach to the food and drink, working with British craftsmen and women to create a modern setting. Craft London is located in a new building by Marks Barfield at the entrance to a beautiful new park designed by Alys Fowler with Design Research Studio. The development is set to be a new residential and cultural hub. The master plan for the site includes over 45 acres of gardens and open green space; an art gallery, and a commercial district with over 60,000 sqm of retail space, offices, hotels, schools and other public facilities. Freddy’s Ribs The Recipe Revealed... If you’ve watched “House of Cards” and longed to taste Freddy’s ribs, as so often enjoyed by Frank, then think of today as your lucky day. Freddy’s ribs have developed somewhat of a cult status in their own right and so when we heard news of Chef Curtis Stone teaming up with Netflix to bring viewers the recipe we couldn’t contain ourselves! Succenulet, sticky and saucy, sink your teeth into this and be sure to share with us evidence of your efforts online using the hashtag #MODELovesFreddysRibs. These ribs are served with a barbecue sauce more like the one you’d find in North Carolina (where Frank is from originally, don’t ya know..) — “one with plenty of vinegar, mustard, and a touch of heat,” Curtis explains.

Ingredients Serves 8 - Cooking & Prep Time: 7 ½ hours Spice Rub 1/4 cup packed light brown sugar 3 tablespoons sweet paprika 2 teaspoons black pepper, freshly ground 2 teaspoons kosher salt 1/2 teaspoon cayenne pepper 1/2 teaspoon ground cumin Barbecue Sauce 2 tablespoons canola oil 1 yellow onion, chopped 3 garlic cloves, finely chopped 1 teaspoon smoked paprika 1/2 cup whiskey 1 1/4 cups cider vinegar 2 cups reduced-sodium chicken broth 1 1/2 cups ketchup 1 cup honey 2 tablespoons Worcestershire sauce 2 tablespoons yellow mustard 1 teaspoon kosher salt 1/2 teaspoon black pepper, freshly ground 1/4 teaspoon cayenne pepper Ribs 4 racks (2 1/2-pounds each) pork baby back rib

Directions To prepare the spice rub: The day before you cook the ribs, make the spice rub. In a medium bowl, mix the brown sugar, paprika, black pepper, salt, cayenne pepper, and cumin together. Place the ribs on 2 large baking sheets, and rub the ribs all over with the spice mixture. Cover, and refrigerate for at least 4 hours and up to 24 hours. To make the barbecue sauce: In a large saucepan, heat the oil over medium heat. Add the onion, and cook, stirring often, for about 5 minutes, or until tender. Stir in the garlic, and cook for about 3 minutes, or until the garlic is tender. Stir in the paprika, then stir in the whiskey and vinegar, bring just to a simmer, and cook for 3 minutes. Stir in the broth, ketchup, honey, worcestershire sauce, mustard, salt, black pepper, and cayenne. Bring the sauce to a simmer over high heat. Reduce the heat to medium-low, and simmer uncovered, stirring often to prevent scorching, for about 30 minutes, or until the sauce reduces and thickens slightly. Remove from the heat.

To bake ribs: Position the racks in the centre and upper third of the oven, and preheat the oven to 375°F. Cover the ribs on the baking sheets with foil. Roast the ribs for 45 minutes. Rotate the baking sheets, and baste the ribs with barbecue sauce, and re-cover them with foil. Roast an additional 1 1/2 hours, or until the ribs are tender and the meat has shrunk from the ends of the bones. For the last 10 minutes of cooking, uncover the ribs, baste them with the barbecue sauce every few minutes or so, allowing the sauce to set before applying the next coat. Using a large sharp knife, cut the racks into individual ribs. Arrange the ribs on a platter, and serve with the remaining sauce on the side. Feeling spirited The Wild West Atlantic facing coast gave birth to this third release in Bruichladdich’s uber-provenance Islay barley series. Harvested in 2006 and distilled in 2007, the grain for this iconic whisky was grown for Bruichladdich in the minister’s field at Rockside Farm by Mark and Rohaise french. Bruichladdich distillery was revolutionary when it was built in 1881. Created by the Harvey brothers – enthusiastic and entrepreneurial young members of a Glasgow whisky dynasty, who had the aim of producing the purest, lightest, most floral spirit possible, it is the only major distiller to bottle spirit on the island itself. Now under the guidance of Master Distiller, Jim McEwan, Bruichladdich never add colour or chill filter, retaining the vital natural oils which give the spirit its complex flavour profile and unctuous mouth feel. With a reputation for producing cult single malts that challenge the malt convention, Bruichladdich produce three different brands – Bruichladdich – always unpeated, Port Charlotte, heavily peated and Octomore – the most heavily peated spirit in the world.

they’ve done it well. Straight out of the bottle, it has a malty but astringent, saline nose, evoking images of a barley crop ravaged by winds blowing in from the coast. However, given a few minutes in the glass, it evolves into fruity and herbal n o t e s ,

This is an easy-drinking (almost too easy!) whisky to be enjoyed with friends. Hailing from Islay, many would expect it to be a peaty, medicinal monster that you would associate with those island drams however, Bruichladdich take pride in being the only non-peated Islay distillery (their barley is air rather than smokedried) and their attitude of defying convention shines through in expression. Try their Gin, The Botanist – it’s exceptional.

The Islay Barley 2007, with its golden hay and warm honey colour is honed, muscular and lithe. To create this exceptionally complex whisky requires a painfully slow distillation process to gently coax the delicate oils and flavour compounds from the barley, coupled with casks carefully selected to preserve those flavours.

Wine aficionados will speak for hours on the importance of terroir but you don’t find many whisky fans talking along the same lines as generally, the water, the drying and the maturation process defines the results. Things might be about to change...

What we thought... Most whisky as young as this has a powerful fiery character as the thing you generally need to achieve complexity is time in the barrel. Considering the Rockside 2007 has only had 7 years or so to develop, the results are quite astounding. Bottled at 50% ABV, the Angels haven’t quite had chance to take their full share either! Bruichladdich say that they have employed a “painfully slow distillation process to gently coax the delicate oils and flavour compounds from the barley, coupled with casks carefully selected to preserve those flavours”. Whatever they’ve done,

Many people would consider a drop of spring water with something as hefty as this considering it is so young and approaching cask-strength (I personally like to take cask-strength down to about 48%), but in this instance, I don’t think that it’s needed. The slightly higher ABV gives the initial mouth feel a wonderful drying sensation but then the fruit comes back, the slightly oily texture sticks to your gums and the same flavours experienced on the initial nose sit on your breath having grown up a little and rounded out to make your mouth water in anticipation of the next mouthful.

In the mouth, the strength of a 50% ABV is immediately evident but backs off surprisingly quickly to reveal a salty-sweet fruit sensation, again sitting above the barley. Think Shreddies with dried fruit when you’ve accidentally put salt on instead of sugar!

Mal the Wine Man Opening his own business and running a wine shop was something that Mal Potter had dreamed of doing for many years, and in the summer of 2013 an opportunity arose which was too good to miss. A few months later in November 2013, Helmsley Wines was born. Over one year on, we spoke with Mal to learn which grapes get him going and what it is that makes his shop so special... You worked as a graduate trainee for a wine company before gaining your WSET Diploma in Wines & Spirits and then going on to work for a Whisky company. But opening an independent wine shop has long been an ambition of yours, what is that you love so much about wine? One of the great things that I love about wine is that you never stop learning. There’s always so much to learn, with new and upcoming regions, and new countries to discover. It’s always great to try a new wine which blows you away from a previously undiscovered region. Obviously, tasting and drinking the wines is also a great perk of the job too! It seems that now you can pick up a bottle of wine from just about anywhere. What do you hope Helmsley Wine will offer that other retailers perhaps don’t? I’d like to think that I bring my passion of wine to Helmsley Wines and this is something that I like to share with our customers. We offer good service and excellent wines from smaller vineyards, and it’s always satisfying when our customers come back into the store to tell us how much they’ve enjoyed a bottle of wine that we’ve recommended. Whilst we all like to think we know enough about wine, what’s a surprising fact about wine that not many people know? When people think about wine producing countries, there’s probably about a dozen well known countries which come to mind, but what most people aren’t aware of is that wine is produced in over 40 countries around the world. We’re very proud of some of the wines that we stock from some less well known countries, including Bulgaria, Lebanon, Romania, and Sicily. One quick and simple thing to remember is that red wine gets lighter with age, white wine gets darker with age.

A customer comes in and says they’ve been invited over to a friend’s house for dinner. Do you have any advice for shoppers buying wine as a gift? If possible, try and find out what your friend likes to drink, even if it’s just red or white!! The more information you can give us, will help us to select with you a wine that will blow your friends socks off! If in doubt, choose a bottle with a nice label! You are often away tasting and learning about wine. What are some new wines that are really exciting you at the moment? There are some fabulous Spanish wines available at the moment, particularly from Ribera. These wines are bold, full of flavour, and are great value for money. For me these are really exciting wines coming out of Spain. Bulgaria are also producing some cracking wines too, they’re not so readily available but we’ve got a couple of fantastic lines in store at the moment. These are must try wines. Before opening Helmsley Wine you worked for several years with a whisky company. You now also stock a variety of spirits in the shop, so do you have any firm favourites? The fun about whisky is that each whisky is different. I can’t say that I have a favourite, all whiskies are completely different and that’s what makes whisky fun. I do prefer Scottish whisky, and if I’m in the mood for a smoky, peaty dram then Caol Ila is the malt I’d choose. Mortlach and Longmorn are two of my highland favourites. Different whiskies suit different occasions, and it depends what I’m in the mood to drink. 73

If you were trapped on a desert island and could only take two bottles of wine with you, what would you take? Such a difficult question, I love so many different wines! I love big cabernet based clarets so in a dream scenario I would love to try a bottle of Chateau Lafite Rothschild 1959, and to quench the thirst, a nice bottle of vintage Dom Perignon would go down a treat... wish I could afford them!!!! The Verdict: The RS6 is a truly remarkable car. It’s understated if seen at a glance but when you take a closer look all the clues are there of what this could be capable of. It could easily be mistaken for a normal big luxury estate unless of course you’re standing by the roadside and hear its V8 roar. This car is far from a normal big estate. Top Gear Live, in association with Live Nation is about to embark on its first ever UK-wide arena tour, which kicks off in Liverpool. The presenters are set to perform their latest and greatest stunts in arenas up and down the country including 5 shows at the Motorpoint Arena, Sheffield, Friday 5th – Sunday 7th June. PORSCHE 911 CARRERA GTS The new 911 Carrera GTS is a great car to look at but it’s not until you get out on to the open road that you really begin to understand what Porsche has done here. The GTS is an amazing car to be in. The GTS is one of the very best for driving experience and for the pure thrill of driving one. It’s a mixture of the best features that other Porsche models have to offer. It’s got the forward thrust of a 911 Carrera S and the temperament of a GT.

The GTS is a sports car for those that wouldn’t be satisfied with anything less than perfection.

Exterior - The new 911 Carrera GTS is a pure unadulterated 911. Porsche has given it everything that typifies a sports car: a powerful front end, a broad rear and sharpened design elements. The sporty design of the front apron moulding is clear to see, yet pared down to the essentials. Excellent aerodynamics are thanks to the optimised front spoiler and a maximum supply of fresh air is thanks to the large air intakes. Typical of a GTS are the standard Bi-Xenon main headlights including

MOTORS Alcantara stands for motorsport. This functional and durable material provides a good grip. In short, it has proven itself in racing sport. It’s used wherever there might be a lot of wear. On the steering wheel rim and gear lever selector. Also on the door pulls, door panel armrests and centre console main storage compartment lid. The roof lining in the Coupé models is also covered in Alcantara, as are the seat centres on the standard Sports seats Plus. The headrests are also embroidered with the ‘GTS’ logo. GTS interior package - The optional GTS interior package highlights sports performance which this model had. The interior is enhanced by sporting accents in red. The ‘GTS’ logos are also embroidered on the headrests in a contrasting colour. Also – the various decorative

Motorsport minimalism is epitomised by carbon. This especially lightweight material is used in the dashboard trim strips and the doors, as well as the centre console. The GTS interior package lends the new 911 Carrera GTS models even greater functional and visual originality.

GTS teases out not only another tenth when accelerating, but greater performance overall. The engine has direct fuel injection and VarioCam Plus which develops a full 430bph at 7,500 rpm, and achieves a maximum torque of 440 Nm of torque at 5,750 rpm. With the optional PDK system (Porsche Doppelkupplung), the GTS takes a mere 4.0 seconds to sprint from 0 to 62mph, with a top speed of 189mph.

Performance - The drive unit is an aspirated engine at the highest technical level. That’s how the 911 Carrera GTS combines the considerable sporting ability of a 911 Carrera S with a performance that you would otherwise only see on the racetrack. With 30bhp more power than the 911 Carrera S, the 3.8-litre boxer engine in the new

Air intake system - The two-stage resonance intake manifold has six plus one switchable valves. It increases the intake in the engine by exploiting the fact that air oscillates as it passes through the intake tract, depending on the engine speed. Benefits of this include higher torque at low engine speeds and a more even torque curve. The intake manifold is made from lightweight plastic. The air filter uses a speed dependent switchable resonance volume to further improve the intake acoustics for a sound ranging from sonorous to biting. Sport exhaust system - The standard sports exhaust system delivers a racing sport sound at the press of a button. You can see it in the black chrome twin tailpipes, and hear it in the even more powerful 911 sound that changes according to driving style. When driving quietly, the sound is earthy but becomes increasingly racier as the driving style gets more sporty and aggressive. A button in the centre console activates the sports exhaust system, the hairs on your arms and the smile on your face. PDK (Porsche Doppelkupplung) - A piece of Le Mans, a part of Porsche motorsport history: Porsche Doppelkupplung (PDK). 7-speed PDK is available as an option for the 911 Carrera GTS models and in my opinion a must have. It facilitates extremely fast gear changes within milliseconds and with no interruption in the flow of power, while at the same time improving acceleration. Gears one to six are sporty while the seventh gear has a long ratio for better fuel consumption. 98

Driving experience – The GTS can be gentle when needed. On one of the days with the car we headed up the A1 into North Yorkshire to find some ideal roads to put it through it’s paces. Cruising on the motorway and main roads around Yorkshire the GTS is very comfortable and effortless to drive. The fuel consumption is surprisingly good. It’s when you find the right roads and engage the Sports Plus mode, that the racetrack engineering smacks you around the face and the fun begins. At the push of a button the GTS becomes a monster of a car that is unbelievably fun to drive. I’ve got to thank the guys at the Yorkshire Gliding Club for letting us gate crash their airfield and take some stunning photos with the sun setting with far reaching views of the beautiful Yorkshire countryside. I really love this car.
