babe’s, bagels and belles

Here’s to another issue hot off the presses as we round out the hottest summer ever. And by ever, I mean since Southlake’s population surpassed 3,000 people. For casual historians, that’s sometime after the incorporation of the Emerald Belles and before the opening of Babe’s Chicken Dinner House in Roanoke — both of whom celebrate major milestones this year.

If you were at the newly-minted Bob Ledbetter Field at Dragon Stadium on Sept. 1, then you witnessed the diamond anniversary celebration of the Emerald Belles. Originally established in 1963, the Belles have been a part of Southlake’s history almost as long as the city itself, which was officially established in 1956. To learn more about the early days of the Belles, we spent some time with Dina Mathews, a member of the original drill team 60 years ago.

With a history half the time of our half-time heroines, Babe’s Chicken Dinner House has been offering homestyle fried chicken dinners and sides for 30 years and counting. At the heart of Texas’ Unique Dining Capital in Roanoke, Babe’s now boasts 10 locations and a loyal base of foodies who can’t wait for their next fried fix.

For those searching for their morning bagel fix, look no further than Dan’s Bagels in Trophy Club. There’s more than sourdough on the rise at this two-time Southlake Style Readers’ Choice winner, so be sure to get in line before they sell out of your favorites.

Yours in Southlake Style,

BABE’S CHICKEN RINGS IN THREE DECADES OF FRIED CHICKEN AND FAMILY FUN.

It’s impossible not to leave Babe’s Chicken Dinner House with a full belly and a big smile. Babe’s has been delighting diners with southern comfort food and Texas hospitality since 1993. This iconic local chain started in a historic building in downtown Roanoke and has grown to 10 locations across the Metroplex. Paul Vinyard, who started Babe’s Chicken Dinner House with his wife, Mary Beth, says the goal has always been to give the last customer a meal just as good as the first.

“WHEN YOU CAN MAKE OTHER PEOPLE HAPPY, IT MAKES YOU HAPPY.”
— Paul Vinyard

If the line out the door and numerous accolades are any indication, they’ve triumphed. Babe’s has won awards like “Best Family Restaurant In Texas” from “Official Best of America” and been featured on Food Network’s “Best Thing I Ever Ate.”

As one of the first restaurants in Roanoke, Babe’s played a key role in the city being officially named by the Texas House of Representatives as “The Unique Dining Capital of Texas” in 2009. This past spring, Roanoke Mayor Scooter Gierisch issued a proclamation declaring April 25 as Babe’s Chicken Dinner House of Roanoke Day.

There are no menus here — you simply pick your main course of fried chicken, chicken fried steak or fried chicken tenders. Then, make room for dish upon dish of all-you-can-eat homestyle sides like mashed potatoes, cream gravy and Grandma’s corn. The golden-fried goodness and full-flavored fixings put Babe’s on the map 30 years ago, and this local chicken shop is still doing country cooking right.

A FRIED CHICKEN LEGACY BEGINS

Long before Babe’s, Paul had an appetite for business — specifically the restaurant business. Growing up, Paul remembers sitting at the dinner table talking with his dad. He learned from his father that if you do your job right, you can make a lot of people happy.

“The restaurant business can be complicated and demand a lot,” Paul says. “But it’s an addicting career. I love it.”

After graduating from Texas Tech University, Paul launched his career in the restaurant business, eventually opening several restaurants across Texas and Oklahoma. Today, he runs Babe’s and three other restaurant concepts with his children, Joel Vinyard and Tiffany VinyardWheeless.

Although Mary Beth — aka “Babe” — passed away in 2008, her legacy lives on in nearly every recipe at this eponymous restaurant, from the corn to the cobbler. In the restaurant’s early years, Mary Beth would be in the kitchen with flour-dusted hands, training employees how to make a good biscuit.

“She was such a great cook,” Paul says. “She’d make pot roast with hot-water cornbread and gravy. That was one of my favorite meals. A lot of what she knew she learned from my mother, who was another great cook.”

Getting Babe’s off the ground required Mary Beth’s cooking skills and a hearty helping of resourceful ingenuity. They opened Babe’s in a building on Oak Street constructed in 1908. The location had housed various businesses over the years, including a hardware store, grocery store and plant shop.

When Paul and Mary Beth arrived, they made the most of what they had.

“Most everything that went on the wall was either something we had at the house or something I created sitting at the table,” Paul says. “We mounted some pictures on old serving trays because I couldn’t afford frames for them.”

Paul got the restaurant looking good, but he had to resolve a pesky problem — guests kept swiping squeeze bottles of honey right off the tables.

“A friend in the restaurant business suggested I started selling the honey,” he says. “Sure enough, as soon as we started selling it, people stopped stealing it.”

Now, guests can peruse a veritable country store at the checkout counter. Babe’s sells everything from honey to sorghum cane syrup and strawberry preserves. The restaurant also offers curbside pickup, a pandemic-era offering that still amounts to about 25% of Babe’s business.

“Our restaurants were not built to have easy curbside,” Paul says. “But our managers got industrious and figured out how to make it happen.”

GATHERINGS THAT RUN THE GAMUT

In addition to all of the fried chicken and sides, Babe’s is known for its lively atmosphere. With wait staff singing and dancing to the hokey pokey — and guests encouraged to join in — you can always count on a good time at Babe’s. The place is a great destination for any occasion, from birthday parties to dinners with friends.

Tiffany says the restaurant’s down-home cooking and relaxed environment remind her of her own childhood dinners, and she’s glad that Babe’s is a bright spot in the community.

“We get so much enjoyment out of having people have such a great time here. On a Friday night, it’s electric because the music is loud, kids are jumping up to do the hokey pokey and everyone is passing around food,” she says. “It’s wonderful to see such love between family and friends.”

Paul says Babe’s is also, interestingly, a popular place for groups to enjoy a meal together after a funeral.

“They arrive somber, but I’ve found they all welcome the opportunity to laugh again,” he says. “They might be seeing kinfolk they haven’t seen for years and remembering the person who’s not there. They have as much fun as anybody who comes in because it’s a release from what they’ve been through. They turn out to be some of the best guests.”

GUIDED BY THE GOLDEN RULE

When he reflects on Babe’s Chicken Dinner House over the past 30 years, Paul attributes much of the restaurant’s success to following the Golden Rule — “Treat others as you would want to be treated.”

“We try to emphasize this in everything we do, from how our employees treat our guests to how we treat our employees,” Paul says. “It has served us well.”

Paul is especially proud of his team members and has always aspired to help them grow.

“We’ve hired many young people,” he says. “Seeing them develop and become exceptional people is one of the greatest rewards.”

Most of all, though, Paul is proud of his family and grateful he gets to work with his son and daughter every day.

“So often, kids grow up, marry somebody and move away,” he says. “We all live locally and work together. It’s such a joy for me as a father.”

When he’s around town, Paul says people sometimes recognize that he’s with Babe’s. When they do, they gush about their fantastic experience, whether it was at the Roanoke restaurant or one of the other locations.

“They never tell me what a terrible time they had,” he says. “This goes back to making a lot of people happy. When you can make other people happy, it makes you happy.”

At the end of the day, that’s what it’s all a-bout.

Plushie Pride Carroll Dragon Raises Over $1,000 Through Crochet

Mo st people learn how to crochet for a hobby, but Awas Amin is crocheting to make a difference. Last fall, the Southlake Carroll senior started the Plushie Project to assist refugees transitioning to the United States and provide aid to countries in crisis. Creating and selling handmade plush dolls, Awas raised over $1,000 for the International Rescue Committee since the Plushie Project’s founding.

Working with the White's Chapel Refugee Initiative since 2021, Awas provides translation and tutoring services while assisting with residential placement and naturalization. However, she was inspired to expand her reach beyond the DFW area upon discovering the IRC humanitarian aid organization.

"I want to raise awareness to other people so they can know that these issues are happening and inspire them to

think of a way that they are unique and how they can incorporate that into something that they can help others with," Awas says.

Since then, Awas has been crocheting and selling her own custom dolls at events while fulfilling personal orders as well. Looking toward the future, Awas hopes to reach her goal of $1,500 in donations and establish a crocheting class for local refugees.

"That's the next step I see for the Plushie Project," Awas says. "To turn this into something where these refugees can become self-sufficient and use these skills to help support themselves, their family and make the transition easier for them."

You can purchase a plushie via Instagram @the.plushie. project or email AwasAmin2006@gmail.com.

CARROLL ISD DEDICATES ATHLETIC FACILITIES

Two Southlake Carroll facilities now officially have new names. On Aug. 21, the Carroll ISD Aquatics Center was renamed the Elise Cerami Aquatics Center in honor of the former Dragon who drowned in a swimming accident in 2016. Then on Aug. 25, the Bob Ledbetter Field at Dragon Stadium was dedicated in honor of Carroll’s former football coach and athletic director before the Dragons' season opener. Friends, family and community members were in attendance at both dedication ceremonies to celebrate the new names of the facilities and the legacies that they honor.

CITY PROPOSES 2024 BUDGET AND TAX RATE

The city of Southlake is considering reducing the tax rate to its lowest in the past 15 years. On Aug. 15, the city council presented its proposed budget for the 2024 fiscal year, which includes a four-cent tax reduction from $0.36 to $0.319, slightly less than the effective tax rate of $0.319375. Combined with the 20% homestead exemption, this makes the proposed tax rate the city’s lowest since 2009. The city held its first reading on the new budget and tax rate on Sept. 5 and will have a final reading and vote on Sept. 19.

CHAMPIONS CLUB ROLLS OUT FALL PROGRAMMING

Champions Club at the Marq is officially ready for the fall. Last month, the fitness facility unveiled a new lineup of programs for the family to take advantage of. Its new programs include Tech Club for STEAM-related activities, Snapology which features LEGO bricks, musical theater, chess wizard, yoga for children and the Dallas Magic Academy, which teaches children how to become their own magician. You can reserve a spot for any of these classes by visiting ExperienceSouthlakeTexas.com.

BACK TO SCHOOL BASH RAISES $3,800

Southlake Town Square’s inaugural Back To School Bash was a smashing success. On Aug. 6, students, parents and teachers were invited to an exclusive before-hours shopping spree for more than 20 retailers, including Aritzia, Tyler’s, Aerie and more. Not only did attendees receive a complimentary T-shirt, water bottles, drawstring bags and other fun giveaways, but they also helped raise over $3,800 for Carroll, Grapevine-Colleyville, Northwest and Keller Independent School Districts.

DRAGON HOMECOMING KICKS OFF SEPT. 20

Southlake Carroll’s homecoming is right around the corner, and it will have an epic carnival, parade and pep rally to celebrate the occasion. On Wednesday, Sept. 20, student organizations will come together at Rustin Park in Southlake Town Square for the “Welcome To Paradise” carnival filled with food, games and giveaways. After the carnival, the parade will kick off at 6:30 p.m. at Truluck’s and will run through town square before finishing its route at Corner Bakery. The pep rally will take place immediately after on the steps of Southlake Town Hall before the Dragons’ homecoming game against Haltom on Friday, Sept. 22 at Bob Ledbetter Field.

SOUTHLAKE NAMED SAFEST CITY IN TEXAS

Southlake was named the safest city in Texas, according to an analysis conducted by MoneyGeek. To get its findings, MoneyGeek analyzed crime statistics by “quantifying the cost of crime” in small cities and towns nationwide. With a population of 32,905, Southlake’s cost of crime per capita was estimated to be $64, the lowest out of the entire state of Texas. Nationally, Southlake was rated the fourth safest out of 660 cities behind Yorktown, New York; Mason, Ohio and Andover, Massachusetts.

CARROLL ISD ADOPTS NEW BUDGET AND TAX RATE

The Carroll ISD board of trustees adopted a new budget and tax rate for the upcoming school year. During the board of trustees meeting on Aug. 21, the board proposed a $1.0025 per $100 valuation tax rate for 2023, a 17.75% reduction from the previous year and the lowest tax rate in the past three years. The board also reviewed the 2023-2024 general budget, which totaled at $118,012,542 for both revenue and expenditures with 83% going towards staffing costs. The board of trustees unanimously approved both items that same evening.

A-CAST FILLS 300 BACKPACKS FOR BACK TO SCHOOL

Last month, the Association of Chinese Americans Southlake Texas partnered with DFW WeCare and seven other nonprofits to stuff backpacks for Lewisville ISD students. Over 200 volunteers came to Central Elementary School to fill over 300 backpacks, and after the event was over, A-CAST led a live cultural performance where students danced and performed martial arts routines. “I am amazed by the outreach and support we have received,” says Shaunna Buck, Central Elementary School principal. “I had no idea there were so many people willing to be a part of helping our community.”

WHAT TYPE OF LAW DOES YOUR FIRM PRACTICE?

I take all family law and estate planning cases. I am board-certified in family law and hold a master of laws in dispute resolution. I focus on keeping clients out of the courtroom as much as possible.

HOW ARE YOU INVOLVED IN THE SOUTHLAKE COMMUNITY?

Aside from having lived in Southlake for 20 years, I’ve also served on the board of adjustment and the planning and zoning commission. I was a board member for the Bob Jones Nature Center, the National Charity League Southlake chapter, a Leadership Southlake graduate and I am a member of the Southlake Chamber of Commerce.

WHAT SHOULD PEOPLE KEEP IN MIND WHEN SEEKING AN ATTORNEY?

Litigation is expensive and generally doesn’t result in a “win” for anyone. If you can resolve your dispute using collaborative divorce or mediation, it will save you time and money, and you can avoid the stress of being involved in the court system.

BAGEL STATE OF MIND

DAN’S BAGELS BRINGS A BITE OF NEW YORK TO TROPHY CLUB

From carriage rides in Central Park to the bright lights of Broadway and every pizza parlor in between, New York City is known for its larger-than-life buildings and personality. And when you’re looking for breakfast after a night in the city that never sleeps, the bagel has become as synonymous with New York as Sinatra himself.

Dan’s Bagels isn’t in New York, but this successful Trophy Club bakery was born from the love of the quintessential New York bagel.

A44 • SEP 23 SOUTHLAKE STYLE MAGAZINE

SOMETHING TO CHEW ON

Dan Hilbert never imagined he would enter the restaurant business. As a marketing executive working with Fortune 100 companies including Coca-Cola, Anheuser Busch and State Farm, Dan spent 30 years working on the East Coast before moving to Texas in 2015. But it was while he was living in New York that he discovered and fell in love with New York-style bagels.

“It’s boiled and baked,” Dan says. “A true New York-style bagel is crispy on the outside and chewy on the inside, sometimes to the point where you’re really working the jaw. The boiling process is really what makes the difference.”

When Dan and his family moved to Trophy Club, he sorely missed the firm, chewy textures of a New York-style bagel. He wouldn’t taste them again until 2020 after his hours were cut from his corporate job. That was when he made the decision to replicate the method himself.

“It was a lot of trial and error,” Dan says. “Anytime our New York friends were in town, we would have them taste our bagels and give us feedback. It really just came out of wanting to have that kind of bagel again and making our own at the house.”

Eventually, Dan found success in using sourdough as the base, which coincidentally enough, harkens back to the bagel’s origins in the 1600s.

“Bagels were traditionally sourdough when they were originally made in Eastern Europe,” Dan says. “By bringing that back, we’re essentially saying that sourdough is where it started, and that’s where we believe it should be.”

After Dan finalized his process, he started posting in local Facebook groups, informing them he was selling homemade bagels for delivery. It quickly became a word-of-mouth hit, with customers ordering half a dozen to a dozen at a time.

“What we were finding was there were a lot of transplants from the East Coast living in this area,” his wife and business partner Jennifer says. “Most folks that were ordering from us were transplants looking for the New York-style bagel like we were when we first started making them. We got so busy delivering them that we eventually turned it into pickup.”

The “watershed moment,” as Dan and Jennifer describe, happened in November 2020 when Dan set up a Facebook page and an online preordering system.

“After we went live, we sold 1,000 bagels in seven minutes,” Jennifer says. “We were sitting in our living room, and our phones were beeping constantly — like ‘ding, ding,

SEP 23 • 45 SOUTHLAKE STYLE.COM
46 • SEP 23 SOUTHLAKE STYLE MAGAZINE

ding, ding.’ That was our ‘aha!’ moment. That was when we knew we were onto something.”

IF YOU CAN MAKE IT THERE…

Shortly after their successful online launch, Dan and Jennifer left their corporate jobs and looked to open a brick-and-mortar store. Honing in on a spot in Trophy Club Plaza, Dan and Jennifer were intentional about making the space feel like an authentic New York bagel shop with all of its hustle and bustle. Before customers even open the door, they’re greeted with a friendly reminder on the front — “Be nice. It’s just bagels.”

Upon entering, guests will notice there aren’t any tables or chairs set up. Instead, there’s a speedy checkout line where people can grab and go or pick up their preorders. A chalkboard hangs on the wall that shows all of the shop’s offerings, including lox, shmears and egg sandwiches. And on their way up to the cashier, customers will pass by a drink fridge, as well as a display case of all of their favorite bagel flavors, from plain and poppy seed to jalapeno cheddar and cinnamon sugar.

“We designed it very specifically to the layout that we knew,” Jennifer says. “It’s very cool when someone walks in who has never been here before and is from New York, and they’re instantly like ‘Oh my God, I’m back home.’”

In another nod to New York’s graband-go culture, the store’s walls host a whimsical black-and-white mural of a city skyline complete with busy people making their way through a typical day in metropolis.

“We had this vision of depicting 19th-century New York City,” Dan says. “We wanted it to be modern-looking while harkening back nostalgically.”

It took about nine months to complete the entire storefront, and in August 2021, Dan’s Bagels opened its doors for the first time.

“A lot of the community already had our bagels, so there was already this pent-up excitement,” Dan says. “That was great, but it also put a lot of pressure on us to do the same level of service as we did in a controlled environment.”

Despite neither Dan nor Jennifer ever working in the restaurant industry, the first day of business was an overwhelming success.

“We actually opened two minutes late because we wanted everything to be perfect,” Dan says. “We made 700 bagels, and we sold out in two-and-a-half hours. It wasn’t nearly enough.”

Since then, they’ve made it a standard to produce at least 1,000 bagels a day. Even then, they’ll still manage to sell out on the weekends, usually within hours after opening.

“The No. 1 challenge we had was educating customers that a bakery sells out,” Dan says. “It’s like barbecue. If it’s scratch-made, what we make is what we have. There’s no pulling from the back. If there’s no bagels, there’s no bagels.”

And it isn’t hard to see why Dan’s Bagels sell out so frequently. One of his most popular variations is the rainbow bagel, where he rolls several layers of colored dough to create bagels popping with red, blue and yellow colors. Sometimes he can mix in specific colors for occasions such as the Fourth of July, Halloween, Christmas and Dragon graduation parties.

“It’s at least seven different layers of hand-rolled dough,” Dan says. “It’s about three times the labor, but it’s so worth it. It looks awesome on the inside when you slice into it.”

TIME TO MAKE THE BAGELS…

Dan’s Bagels' prominence has only grown in the two years since it first opened. Not only was it named to bestof lists in “76262 Magazine” and “The Fort Worth Star-Telegram,” but it was also consecutively named the best bagel in Southlake Style’s Readers Choice in 2022 and 2023.

Dan attributes their success to three key factors — consistency, community and culture. Every morning at 3:30 a.m., Dan and his staff go into the shop to take the dough out of the coolers. Once near room temperature, the team then begins shaping and fermenting each one before the boiling and baking process begins.

“That day-to-day, hour-to-hour effort is essential,” Dan says. “We’re open six days a week, but we’re making dough seven days a week. We’re always working in the back of the house.”

Customer service has also been key to their success. Dan and his team always go above and beyond to satisfy any customer, whether that involves fulfilling special requests or fixing a wrong order. The high-quality bagels and service have paid off with a fiercely loyal clientele who often line up on weekends long before the store opens at 7 a.m.

“The one thing that’s always been consistent is the community,” Dan says. “The word-of-mouth is tremendous, and we’re proud of our customer response.”

But the biggest point of pride for Dan is the culture that his shop helps inspire. With a kitchen staff of 25 people, they emphasize inclusiveness and compassion while ensuring everyone feels equally appreciated. On those occasional weekdays when they don’t sell everything, they’ll donate the remaining bagels to local police and fire departments. Anything left over will be sliced thin and baked as bagel chips.

More than anything else, Dan appreciates the privilege of rounding out the culture with a taste of New York. To him, they aren’t just making bagels — they’re making memories.

“A bagel is such a humble product, but it elicits such strong nostalgia,” Dan says. “We have so many customers who take a bite and are reminded of being in [New] Jersey when they were a kid sitting at brunch and having these bagels. It’s unbelievable what kind of emotions a bagel can inspire.”

Remembering 60 Years Of Emerald Belle Sisterhood

When the Emerald Belles formed its first 26-girl squad in 1963, Dina Mathews was amongst the first to join as a freshman and continued to perform throughout her high school career. Little did she know her formative group became part of an extraordinary legacy that would only grow over the next six generations. Following the Belles’ 60th anniversary celebration on Sept. 1, a reminiscent Dina tells the story of how it all came together and blossomed into one of the largest, most renowned drill teams in the nation.

I WAS INSPIRED TO JOIN THE EMERALD BELLES BECAUSE… it was new, something that hadn't been done before, and it seemed like a nice way to represent our school and participate in Friday night football games. Never in a million years would I have imagined what the Emerald Belles would have grown into. I was so proud watching them on ‘America's Got Talent’ and thought they were so incredible and talented.

MY FONDEST MEMORY IS… the camaraderie between the girls, the team and their acceptance of me. We would go through practice working on everything, and then at Friday night halftime, I can vividly remember lining up and seeing the girls, captain and lieutenants in front of me and thinking ‘Here we go — this is what it's all about.’

MY BIGGEST ACCOMPLISHMENT WAS… setting the bar and getting things started so [the Belles] could develop into what they've become. Back then, there weren't many schools with drill teams, so it was special to have acceptance from the school and even the opposing teams. We felt pride, recognition and accomplishment every time we performed.

WHAT MAKES THE EMERALD BELLES SO SPECIAL TO ME IS… it gave me the groundwork to have confidence and be a stronger person for the rest of my life. One of the best gifts I received from being a part of the Emerald Belles drill team was the trust and respect I felt from each and every one of my sister Belles. I still wear a charm bracelet that's very

meaningful to me because it came from the girls. We were truly a family and loved each other as such.

THE ROUTINES TODAY ARE… so much more advanced. The original drill team was very structured and fun to watch, but it did not compare to how much it has matured. It’s more of a dance group, in my opinion. People still enjoyed watching halftime back then, so that hasn’t changed, but it’s far more evolved these days. Seeing how renowned the drill team is now creates a lot of pride and joy.

IT’S HARD TO BELIEVE… that all these years later, I’m alive and still kicking. While the kicks aren’t as high as they once were, the privilege and pride of being a part of the Emerald Belles will never grow old.

BEING A BELLE MEANS… memories — they're way more important when you get a little older. You don't realize how much the things that you did, said or participated in would influence the rest of your life, and hopefully, you did a good job and you were happy. That's what I treasure about it, because it's all good memories. There was no animosity, and I don't have any bad memories.

TO THE NEXT GENERATION OF BELLES… be dedicated, and keep up the legacy. Be proud of what you're doing, and be a very positive part — always do your best. Superintendent Jack Johnson was quoted, ‘Once a Dragon, always a Dragon.’ For me, it's ‘Once a Belle, always a Belle.’

Ride On, Cowpoke Trick Rider Gallops Into Omni PGA Frisco Resort

It’s hard to miss the new Omni PGA Resort that opened in Frisco over the summer. At a whopping 660 acres, this $525 million resort has it all, including 500 guest rooms, 10 luxurious ranch houses and two 18hole championship golf courses that are on par with some of PGA’s best.

But the Omni PGA Frisco Resort isn’t just for golfers — it’s also a unique dining district with 13 exciting options to choose from. While its mix of bars, cafes and lounges can be found throughout the resort, Trick Rider is where you want to be for a truly Texan experience.

A new upscale steakhouse and seafood con-

cept, Trick Rider was inspired by Sydna Yokley Woodyard, a champion rodeo trick rider who founded the American Quarter Horse Association in 1940. Homages to the culture and history of trick riders can be found throughout the restaurant, including custom wall art that portrays beautiful Texas horizons and a 1,500-pound horse chandelier centerpiece made from 4,075 bohemian-cut crystal beads.

The restaurant is spearheaded by executive chef Joshua Hasho, who brings more than 24 years of experience to the team from resorts such as Omni Chicago, Omni Interlocken and Omni Barton Creek. Featuring a mix of premium dry-

aged meats and high-end seafood, chef Hasho ensures every bite pays tribute to Texan traditions with a modern flair.

“We are focusing on creating an authentic Texas dining experience through a thoughtful selection of the best cuts of meat available, including grand wagyu beef, an extensive raw bar selection, east coast oysters, select shellfish from Australia, Hawaii and other spots around the globe flown in fresh daily,” chef Hasho says.

Cozy up to the horseshoe bar and start the night off right with one of the restaurant’s premium handcrafted cocktails. Its drinks are divided into Old School and New School menus, each imparting their own unique flavor profiles. All She Wrote is made with a 93-proof Uncle Nearest 1884 small batch whiskey and Grand Marnier liqueur, while the Ride Or Die mixes Grey Goose Vodka and Trick Rider’s distinct olive brine and bitters alongside a caviar bump. And if you’re craving a champagne moment, the Champagne Bubble Bath complements its bottles with Monin strawberry rosé and fresh lemongrass.

When you’re ready to move onto the main course, its stable of meats and seafood stand ready to satiate any Texas-sized appetite. The Branzino is served with a helping of salsa verde and Aleppo chile peppers, while the half-shell oysters are delicately painted with a thin layer of hibiscus mignonette sauce. The Grand Wagyu Beef tasting comes with pickled mustard seeds, chimichurri and a cabernet gastrique sauce for different pairings, while the Lamb Rack Colorado is dry-brined in sumac spices and served alongside mint gremolata and labneh sauces. But the king of this menu is the 45-day dryaged prime tomahawk. At $229, it’s the priciest item on the menu, but every juicy and beefy bite makes it worth it.

Be sure to save room for dessert, because your Trick Rider experience isn’t complete if you leave without tasting at least one of its sweet delicacies. The Gone Bananas cake is mixed with bananas, rum and coconut for a creamy melt-in-your-mouth flavor, while the chocolate silk pie complements chocolate custard and biscuit crust with a coffee whipped cream. The cleverly-named 24 Karrot Cake is topped with cajeta caramel and candied black walnuts for a silky crunch, and the Holy Sundae is drizzled with brownie bourbon sauce and chocolate pop rocks for an extra crackling sensation.

From the cultural homages to the big and bold flavors, this exquisite culinary experience is a must-try for seafood and steakhouse fans. Couple it with the fact that it lives on one of the most premiere golf resorts in the area, and you’ll find that Trick Rider is a hole-in-one.

Bohemian Rhapsody New Burger And Beer Franchise Comes To Texas

Boho days await at Grapevine’s newest tavern and beer garden. An up-and-coming chain with six locations in three states, Bohemian Bull is a new American restaurant that emphasizes hand-crafted cuisine and local brews. Co-owned by Las Colinas couple Dennis Johnson and Sonja Singer, Bohemian Bull in Grapevine is the franchise’s first location in Texas.

“Everything is made from scratch,” Sonja says. “The quality is noticeably better than a lot of other places that don’t take that kind of care in the kitchen. That was one of the biggest things that intrigued us about Bohemian Bull.”

Taking over the building that formerly housed Boba China, the restaurant has been revamped into a relaxed, carefree, Bohemian-style atmosphere. The interior is light and bright with chandelier lights and big and bold bull-themed art throughout, including a rainbow-colored bull mural, a longhorn skull at the entrance and a bull mount overlooking the dining room. The outdoor patio also has picnic tables and a patriotic color scheme that further complements the restaurant’s casual Americana vibe.

When it’s time to eat, Bohemian Bull has several hand-made delights to choose from. For starters, the Popper Deviled Eggs are stuffed with pimento cheese and pickled jalapeno and topped with bacon bits and blackening spice, while the Boom Boom Shrimp and the Fried Mac & Cheese Bites are lightly fried for a crispy and savory flavor. But it’s the burgers that shine the most with a Black Angus brisket and chuck blend served with a variety of sauces such as truffle mayonnaise, Thai chili aioli and bacon jam.

Regarding what’s on tap, Bohemian Bull is intentional in highlighting local breweries. With beers from Cowtown Brewing Co., Rahr & Sons Brewing Company and Grapevine’s very own Hop and Sting Brewing Company, Bohemian Bull’s bar specialties are as Texan as it gets.

“We knew this concept would fit in perfectly here,” Dennis says. “It’s become my home away from home, and we certainly hope it becomes that for all of our customers as well.”

Try These Chicken Salad Standouts

Chicken salad may have started as a variation of dinner leftovers or an obligatory snack, but it evolved into so much more. First whipped up by someone’s grandparent in 1863 (yes we checked), chicken salad made its way into hearts and households across the country.

Everyone has an affinity for their sacred family recipe, but we’ve noticed more than a few places where the chicken salad stands out. In Grapevine, lengthy lines form at poultry outposts like Mason & Dixie and Eatzi’s Market, where fresh breads and artisan ingredients come together in handmade goodness. This July, Chicken Salad Chick became the newest hot spot for the cool summer sandwich while other Southlake restaurants aim to please your chicken salad craving.

Chicken Salad Chick

Nothing tastes better than a sandwich made with love, which is why Chicken Salad Chick prioritizes taste and quality with each made-from-scratch order. Established in 2008, Chicken Salad Chick has grown from a door-to-door business in Auburn, Alabama, to a franchise with over 225 restaurants nationwide. Straight from the heart to the plate, the menu features a variety of chicken salad inspired by real people in founder Stacy Brown's

life, such as the spicy “Jalapeño Holly,” the traditional “Classic Carol,” the savory “Barbie-Q” and the sweet and nutty “Fruity Fran.”

Central Market

Packed with chef-made creations and delicious to-go meals, Southlake’s Central Market has a one-of-a-kind take on chicken salad. The classic is tossed with parsley, crunchy celery and a creamy dressing, while the tarragon chicken salad is made with pecans, grapes, red onion and a distinct taste of tarragon. If you’re feeling curious, browse more creative recipes such as the peach and almond chicken salad, rotisserie chicken salad or Chicken Salad Santa Fe, made with tomatoes, garlic cloves, shallots, avocado, hatch chilies and more southern ingredients.

McAlister’s Deli

This restaurant chain doesn’t fall short in its vast menu options, especially the Harvest Chicken Salad sandwich. A little more on the flavorful side, the chicken salad is made with cranberries and pecans, then topped off with spring mix and tomato on a flakey croissant — delicate and delicious. Chicken

Seamless Transitions

As cooler weather prevails, deciding whether to enjoy the indoors or go outside gets more complicated. But the decision is always easy when it comes to 108 Legacy Court in Southlake. Recently completed in 2022, this $4,150,000 custom house listed by the Robert Tyson Group has it all with five beds, a walk-in closet and a gourmet kitchen with a built-in wine cooler. But the backyard is the true showstopper, and this 6,754-square-foot home offers a flawless blend between outdoor and indoor entertainment.

GET THE PARTY STARTED

The open-concept living room is the most spacious spot in the house by far, so feel free to gather a big group and catch up around the modern fireplace and TV. Make your way to the marble wet bar if your thirst needs to be quenched with a drink. When it’s time to get loud, turn up the speakers with the in-home smart system. Having fun has never been easier with just the push of a button.

MADE IN THE SHADE

Stepping through those 9-foot sliding doors and outside onto the covered patio is a breeze. During those colder fall nights, warm up by the wallmounted fireplace and enjoy a peaceful outdoor setting. The fully stocked outdoor kitchen is also perfect for cooking sessions with a prep area, gas grill and minifridge to serve friends and family right.

A SPLASH OF LUXURY

Check out the backyard and witness an outdoor oasis that’s on par with most resorts. The heated pool is accented by a cascading waterfall and twin fire features that remain brightly lit at night. A three-hole putting green can be found a few feet away where aspiring golfers can practice their aim and strokes for more intensive courses. When you’re ready to wind down, the in-ground spa serves as the perfect spot to relax with its water jets. It also seamlessly transitions into the pool, just like the rest of the home, patio and backyard does.

SEP 23 • 69 HOME STYLE

Home to midway rides, livestock corrals and the very best deep-fried delights, the State Fair of Texas now attracts over 2.5 million people to Fair Park every year. While classics like candy apples, Frito pies and Fletcher’s Original Corny Dogs are all worth trying, you’ll definitely want to save room for this year’s Big Tex Choice Awards winners and finalists.

Held annually well before the fair kickoff, the Big Tex Choice Awards highlights 10 sweet and savory original recipes made by a handful of creative vendors. Many Big Tex winners go on to become state fair classics in their own right, including Chicken Fried Bacon, Deep Fried Butter and Texas Fried Cookie Dough. These 10 new foods making their debut on Sept. 29 are sure to leave their own mark on the state fair as well.

BOURBON BANANA CARAMEL SOPAPILLAS

Topped with vanilla-caramel-infused bananas, sweet bourbon syrup, crushed candied pecans, mascarpone and crumbled Nilla Wafers, this overindulgent take on the classic Mexican dessert is fitting for the state fair solely due to its sweet factor. Winning the Big Tex Choice Award for Most Creative, you’ve never had a sopapilla like this before.

DEEP FRIED PHO

Leave it to the ingenuity of state fair foodies to figure out how to deep fry soup. Spoiler alert — they do it by stuffing it inside a burrito. Made with all of the pho fixings such as noodles, beef slices and bean sprouts, the Vietnamese influence is further emphasized in this Best Taste Savory winner with jalapeno slices, cilantro, hoisin sauce, sriracha and broth for dipping.

BISCOFF DELIGHT

There’s only one way to make New York-style cheesecake even better, and that’s with an extra helping of Biscoff cookies. This Best Taste Sweet winner is covered entirely in crumbles of everyone’s favorite airline cookie, as well as a Lotus cookie butter spread that provides a smooth caramelized pairing.

DEEP FRIED CHEESY CRAB TATER BITES

The traditional tater tot is always a winner, but the addition of crab can make it even richer. This seafood creation mixes crab meat, cheese and shredded potatoes before dipping it into the deep fryer. Once golden brown, the tots are topped with a cheesy crawfish cajun sauce for a potent Creole kick.

OX’CELLENT SOUL ROLL

Like most cuts of beef, oxtails find a new height of flavor after slowly cooking for hours. It’s not just barbecue — it feels like a whole new thing when it’s deep-fried into a crispy spring roll. This twist on the southern staple is mixed with potato chunks, smoked gouda and mozzarella, then paired with garlic chili sauce for a spicy yet savory bite.

LOADED FRIES PIZZA

The quintessential fried food meets everyone’s favorite walkable fare in this Italian-American combo. Piles of fries, cheddar cheese and crispy bacon on top of a mozzarella and ranch pizza bring a fluffy and crunchy sensation to every bite.

TURKEY RIBS

While they aren’t actual turkey ribs, these deepfried turkey shoulders share a taste and a texture similar to pork ribs that justifies its namesake. Served with homemade giblet gravy, fries and a secret salsa, the Turkey Ribs can also be ordered Texas-style with barbecue sauce, pickles and jalapenos.

TRAIL-ADE

Don’t get overheated during your state fair visit — this sweet and refreshing beverage is made from a mix of fruits, cucumbers, fresh mint and homemade lemonade to keep your thirst quenched. It also comes in a souvenir cowboy boot cup. Some boots were made for walking, but this boot was made for sipping.

FERNIE’S FRIED CHERRY PIE IN THE SKY

While cherry pie is a popular Texas treat, the state fair elevates the classic dessert to a whole new level. After this cherry tart is topped with shortbread cookies, wrapped in pastry dough and plunged into the deep fryer, this crumbly concoction is paired with Texas’ own Blue Bell vanilla ice cream, whipped cream and dark sweet cherries, because everything is better with a cherry on top.

SWEET ENCANTO

Sweeter than a Disney movie, the Sweet Encanto is a light and sweet delicacy that is packed with flavor. With caramel dulce de leche, strawberry slices, kiwi, peach, raspberry jam and shredded coconut on top of a paper-thin wafer, the Sweet Encanto is the perfect way to end a day full of state-fair snacking.
