MANAGER'S MESSAGE Dear Members, Fall has arrived and we are experiencing some very pleasant temperatures and sunny days. This is the perfect time to work with our Pros to improve your game for next year. With Christmas around the corner, we have plenty of great gifts in the Tennis and Golf shop for the special somebody in your family or for yourselves. Come on in and browse the new winter collection, you will be pleased! The culinary team is continuously working on a more varied menu and has created some very delicious new dishes. Enjoy a casual lunch or dinner in Preston’s or Table 16 and let us do the cooking and dishes for you. If you are planning to do some holiday entertaining, please contact Jessica and book your company or family Holiday party at the Club. We have a few dates left where we can make your holidays special. The calendar is also packed with many family friendly and adults only events and some of them are filling up fast. Please make your reservations so we can plan ahead to deliver the best possible experience for your family and friends.

Personally, I would like to thank the entire Providence Country Club team for their dedication to excellence and for their hard work throughout the year. We have seen some exceptional events and happenings and are excited about what we will do next year for those special days. Any contribution to the employee holiday fund is always very much appreciated and shows our team members that their efforts are recognized and welcome. December, we will have our Angel Tree put up after Thanksgiving. The Angel Tree donations go to the Thompson's Charity of Charlotte. Get to know your team MONICA HOFFMAN

RESTAURANT MANAGER I’m a restaurant manager at heart, with a background in working at Country Clubs. I grew up in southeastern Ohio and lived in Charlotte from 1999-2001 before relocating to Ft. Lauderdale for 18 years. I currently reside in Huntington, WV and I have five children, three boys and two girls, with my oldest daughter Adrianna attending Marshall University and my oldest son Brendan playing basketball at Concord University. My youngest children are Liam who is in the 7th grade, Austin is in 5th grade and Sophia is in 3rd grade. My family and I enjoy playing and watching sports, spending time together, watching movies, and participating in outdoor activities. I’m so excited to be a part of the PCC Food and Beverage Team. See you all on Tuesday, November 7th!

CRAIG OLACK EXECUTIVE CHEF

Originally, I am from Madison, Mississippi. I moved to Atlanta when I was 12 and began working in an upscale Italian Restaurant in High School. After realizing that I wanted to cook professionally, I attended the Culinary Institute of America in Hyde Park, New York. I returned to the South postgraduation, working in upscale/fine dining restaurants in Atlanta and Birmingham for the next 15 years. I had wonderful James Beard award winning mentors that pushed me to be the best chef I could. I moved to Charlotte in February of ’22 to manage all a la carte services at the Ballantyne Hotel. I was very excited to begin my career with McConnell Golf in May of this year as the Executive Chef of the Providence Country Club.

FOOD AND BEVERAGE MANAGER I have devoted my life to serving others. My inspiration for cooking and being in the kitchen began when I was 18, my mentor was Julia Child. I have continually watched the culinary world evolve over the last 30 years. The love of the industry has created several positions that I have had the pleasure to be a part of; from owning my own restaurant, to managing banquets and now, the Food and Beverage Manager for Providence. With my experience and the knowledge of the food and beverage industry, every opportunity I have, I like to mentor others and watch them grow in the field as I have. I give my all to whatever task I’m faced with. I truly enjoy taking the time to connect with you, so that I can get to know you better. I am committed to my work and it stems from my love for you, the Members. Outside of work, I love to spend time with my family; I have been married 18 years to the love of my life, Rebecca. We have two lovely children, Lilah and Caleb, we have a little pet dog named Misty. In my free time I enjoy gardening, fly fishing and I share a love for Model Railroading with my son.

Use the Winter months to hone in on your short shots. Chipping and pitching into the nets will greatly increase your touch/feel and clubface control around the greens. I like to start with a net 5-10 yards in front of you, hit shots that land in the net and continue to work further back. Using this drill will help you find the center of the clubface more often and help you get a better idea of types of shots you can hit around the green. Length of your swing will change based on the type of shot you are trying to play. We’ve seen with Operation36 how many good players become great when working closer to the hole and working backwards.

If you feel like you are struggling with scoring try playing up a tee or two during the colder months and put pressure on your short game. Guys, playing the Red tees can be fun, see how low you can go, see how vulnerable your game is as you get close to the hole. Set a target score and once you beat it move back a tee…Do this until you reach all your goals and see how fast your game improves.

GREENS AND GROUNDS

Golf Course Update The winter time is thought to be the “off season” or the “slow” time of the year, however, that is not the case at all. During the winter, we are just as busy as any other time of year. The bermudagrass greens require special attention during the cold months, much like bentgrass greens require extra attention during the heat. Our greens thrive in the heat because bermudagrass is a warm-season turfgrass. Our main goal is to keep them alive through the winter. Winter survival of bermudagrass greens requires extra care, input, and attention. It starts with a raised height of cut to act as extra insulation, or a buffer from the cold. We also focus on moisture and nutrient management to get us through the cold. We are fortunate enough to be able to cover greens to maintain tolerable soil temperatures when the air temperatures drop drastically. Covering greens takes place when the temperature is 25-27 degrees Fahrenheit or lower. Lastly, fungicides are used to protect the plants from disease during their most vulnerable time period. One major piece of the puzzle for winter survival of greens is moisture. Because the greens are not actively taking up water through the roots, we have to make sure the plants stay hydrated. Desiccation will occur if the plants dry out. We have to watch humidity levels, air temperature and soil temperature, wind speeds, and also monitor the moisture in the top three inches of the greens using our moisture meters. It is important to water the greens before and after covers are used. We also continue to use wetting agents in the dormant season. These chemicals help with penetration, holding, and moving water into and throughout the subsurface of the greens. It is always important to never stop feeding the plants even though they might not be growing. If we were to have a warm spell in the middle of winter, the plants would actually wake up from dormancy and use some of the nutrients that they have stored. We do not want the nutrient supply to ever run out, so we spoon feed the plants either from foliar sprays, or granular applications so that there are always available nutrients. When the greens are dormant, the chlorophyll exits the leaves and nutrients are stored in the roots and stolons. This is why the rest of the golf course turns brown. In order for the greens to remain green throughout the winter, we use pigments to give them their color. Pigment is different than paint in that the pigment program is started while the plants are still actively growing. The plants actually take in the pigment, unlike paint which is just that, paint on top of the leaves. The pigment also helps with heat retention, much like wearing a black shirt in the middle of July. See you on the course, MARK SCOTT Golf Course Superintendent

TENNIS

From the Baseline Providence Country Club Members, It is hard to believe that 2023 is coming to an end, and what a year we had! It was a record breaking year in many aspects here at PCC. This year we had the most court reservations we’ve ever had with 24,000 bookings. We also had a robust team tennis season with a total of 68 teams playing throughout the year. Along with this, the PCC tennis facility also underwent a facelift! Some of these improvements included our beautiful new fences, LED lighting and painted poles on every court, and brand new logoed windscreens. However, what made 2023 an amazing year was seeing the tennis community out playing and involved in all the events that took place. We truly have the best community in the city and we can’t wait for what 2024 has in store! Once again our continued goal is to have something for everyone and to keep these courts bustling. Whether you are new to the game, or you’re a seasoned veteran, we plan on having options for every tennis player at the club. November Cookie of the Month RUSSIAN TEA COOKIE RECIPE SAM TESSMAN, LINE COOK AT HOLSTON HILLS COUNTRY CLUB “My mother makes these cookies every Holiday season and it is just one of those things I look forward to each year. They are so tasty and are one of my absolute favorite things about the Holidays”. INGREDIENTS 2 Cups Butter, softened 1 Cup Powdered Sugar 2 TSP Vanilla 4 1/2 Cups Gold Medal™ All-Purpose Flour 1 1/2 Cups Pecans, finely chopped 1/2 TSP Salt Powdered Sugar for Tossing

DIRECTIONS Mix vanilla, 1 cup of powdered sugar and butter in a large bowl until combined. Stir in flour, nuts and salt and continue mixing until soft dough is formed. Preheat oven to 400°F. Roll dough into 1/2 inch balls and place on ungreased baking pan lined with parchment paper 1-inch apart. Bake for 10 min until cookies are set, but not browned. Transfer to a wire rack to cool slightly. While cookies are still slightly warm toss in powdered sugar. *Notes* Walnuts may be replaced for Pecans.

December Cookie of the Month ITALIAN RICOTTA COOKIE RECIPE EMILY MONTIMURRO, PASTRY CHEF AT PORTERS NECK COUNTRY CLUB This is my version of the Italian wedding/holiday cookie called “Tadal” which is traditionally flavored with Anisette and has a drier, crumbly texture. My Noni always made them, to the adoration and praise of family and friends. My grandmother was a painfully humble woman who shied away from any sort of compliment. Whenever she’d receive praise for these confections, she just shook her head and mumbled that they were just “stupid cookies.” Our family now refers to them exclusively as “stupid cookies” to this day. So as a pastry chef, this is my personal interpretation of them. I make them on holidays in reverence to that modest, selfless lady who was the first chef I ever idolized. To make them more shelf-stable and palatefriendly to adults and children alike, I created a recipe where ricotta cheese keeps them soft and chewy, and flavored them with vanilla. They lend themselves to any holiday, happy occasion, or cup of coffee. INGREDIENTS GLAZE INGREDIENTS 1 Pound Butter 8 TBSP Milk 3 1/2 Cups Sugar 3 Cups 10x Confectioners Sugar 4 Eggs 1 TSP Almond Extract (optional) 30oz Ricotta Cheese DIRECTIONS 4 TBSP Vanilla Cream butter and sugar. Add eggs, ricotta and vanilla. In a separate bowl, combine flour, baking powder and baking 8 Cups All-Purpose Flour soda. Add dry ingredients to the ricotta mixture until fully incorporated. Chill & scoop; Bake for 12-15 minutes at 2 TSP Baking Powder 350°F depending on size. Allow to cool on sheets before transferring. Mix glaze, making sure it’s not too drippy. 2 TSP Baking Soda Spoon glaze over each cookie and don’t forget to add desired sprinkles or décor before it dries!

I have been at PCC for 4 years! I enjoy working in the Food and Beverage Dept. as Lead Bartender. Something you may not know about me is that I have never been on a plane. I do enjoy dining out at the New Zealand Café, my favor meal is Sushi and on occasion I do enjoy an Elijah Craig on the rocks. A few of my hobbies are Fantasy Football, Singing and going to Whiskey tastings

I have been at PCC for 11 months. My favorite vacation spot is Germany. My family is of German descent, and when we visit Disney World we always have to eat at Biergarten Restaurant (Yum). However, my favorite food is pizza and a skillet cookie. Something you may not know about me is that I used to be a gymnast. I enjoy Chess, Sudoku Puzzles and Video Games.
