The autumn and winter months mean we can welcome a few seasonal produce favourites back into our kitchen!
To stay healthy and well, it’s important to use fresh and nutritious ingredients in your cooking. So, put on your apron and try experimenting with these four go-to fresh produce items.
GRAPEFRUIT
Grapefruit is a tropical citrus fruit known for its sweet and somewhat sour taste. It’s rich in nutrients, antioxidants and fibre, making it one of the healthiest citrus fruits you can eat.
CAULIFLOWER

A versatile staple for roasting, blending in soups, or just eating as a side dish baked with cheese and herbs.
CAPSICUMS
Capsicums become sweeter when cooked and are great flavour additions to stir-fries, soups, roasts, tacos, or even a barbecue. Use capsicum fresh in salads for a crunch, or make them the hero of your dish by stuffing and roasting them.

ZUCCHINIS
Zucchinis are super versatile and can be enjoyed in a salad, savoury fritter, or baked in bread or muffins. Make sure that they have smooth, glossy skin and are firm to touch.

MINI WONTON QUICHES

Ingredients
• 1 tbs olive oil cooking spray
• 12 wonton wrappers
• 200g solanato tomatoes, roughly chopped
• 3 free range eggs, lightly beaten
• 3/4 cup light tasty cheese, shredded
Method

SAN CHOI BOW BOWLS
Ingredients
• 100g dried vermicelli rice noodles
• 1 tsp cornflour

• 1 tbs salt-reduced soy sauce
• 1 tbs oyster sauce
• 3 cloves garlic, thinly sliced
• 1 tsp sesame oil
• 500g lean beef mince
Perfect for work lunches
Step 1: Preheat the oven to 220°C/200°C fan-forced.
Step 2: Spray a 12-hole, 1/3-cup capacity muffin pan with cooking spray.
Step 3: Place 1 wrapper in each hole. Divide tomato among holes.
Step 4: Top with egg and sprinkle over cheese.
Step 5: Spray with oil. Season with pepper.
Step 6: Bake for 15 minutes or until golden. Serve.
• 225g canned sliced water chestnuts, drained, finely chopped
• 2 spring onions, thinly sliced
• 2 baby cos lettuce, leaves separated
• 2 carrots, cut into long strips
• 1 long red chilli, thinly sliced
• 1/2 bunch coriander leaves, leaves picked
Method
Step 1: Soak noodles in a large bowl of boiling water for 2 minutes or until soft. Drain and set aside.
Step 2: Combine cornflour and 1/4 cup water in a small bowl. Stir in sauces and garlic.
Step 3: Heat oil in a large frying pan over medium heat. Cook mince for 5 minutes, breaking up lumps with a wooden spoon, or until browned. Add chestnuts, onion and sauce mixture. Cook, stirring, for a further 5 minutes or until sauce has thickened slightly.
Step 4: Arrange lettuce in bowls. Top with noodles, beef mixture, carrot, chilli and coriander. Serve.

Fussy eaters? Fear not, these quick and easy meals are kid approved and sure to impress little tastebuds!
Involving them in the cooking can be a great way to get them excited about meal times and make sure they’re eating every last crumb.
BANANA & CARROT MUFFINS

Ingredients
• 1 banana, mashed
• 1 carrot, grated
• 1 cup self-raising flour
• 1/3 cup macro organic low fat milk
• 1 egg
• 2 tbs honey
Method
Step 1: Preheat oven to 180ºC, line a 6-hole, 1/3-cup capacity muffin tin with paper cases.
Step 2: Place 1 cup wholemeal self-raising flour in a large bowl. Combine 1 banana, mashed with 1 egg, 1/3 cup milk and 2 tbs honey. Add to flour mixture with 1 grated carrot and stir to combine.
Step 3: Divide between cases. Bake for 15 minutes or until golden. Cool. Pack 1 muffin into lunch box.
VEG-PACKED ‘FRIED’ RICE

Ingredients
• 2 tsp extra virgin olive oil
• 200g chicken breast fillet, finely chopped
• 2 spring onions, white and green parts separated, thinly sliced

• 2 cloves garlic, crushed
• 1 cup frozen peas, corn and carrot
• 1/2 bunch broccolini, cut into 1cm pieces
• 1 red capsicum, cut into 1cm pieces
• 1 cup cooked brown rice
• 1 tbs reduced-salt soy sauce
• 1 tsp sesame seeds, toasted
Method
Step 1: Heat oil in a large frying pan or wok over medium-high heat. Add chicken and cook, stirring for 3 minutes or until browned. Transfer to a bowl and cover to keep warm. Set aside.
Step 2: Add white part of spring onion and garlic to pan. Cook for 1 minute or until fragrant. Add vegetables to pan and cook for 4 minutes or until tender.
Step 3: Return chicken to pan with rice and soy sauce. Cook, stirring, for 5 minutes or until heated through. Spoon between bowls. Serve topped with remaining spring onion and sprinkled with sesame seeds.
