There’s nothing more comforting than a hot meal and a cosy spot on the couch during the cooler months. Whether it’s a nourishing soup to warm up your day or a slow-cooked meal you can set and forget to enjoy later, Woolworths has everything you need to become a chef at home this winter.

Pesto Gnocchi With Spinach & Parmesan

Easy, budget-friendly and great for the whole family, this pesto gnocchi in a creamy spinach sauce with melted parmesan and toasted pine nut is comfort food heaven.

Ingredients

• 1 tbs extra virgin olive oil

• 1 zucchini, halved lengthways, thinly sliced

• 3/4 cup light thickened cooking cream

• 120g baby spinach leaves

• 2 tbs basil pesto

• 500g potato gnocchi

• 40g parmesan, finely grated

• 1 tbs Woolworths pine nuts, toasted

Method

Step 1: Heat oil in a large, deep ovenproof frying pan over medium-high heat. Cook zucchini for 4 minutes, stirring occasionally, or until almost tender.

Step 2: Meanwhile, place the cream and half of the spinach in a food processor and process until smooth and combined. Add cream mixture and 1/2 cup water to the pan and bring to a boil. Reduce heat to medium and simmer, uncovered, for 5 minutes, stirring occasionally, or until sauce has thickened. Stir in pesto.

Step 3: Cook the gnocchi in a large saucepan of boiling water according to the packet instructions. Drain. Add the gnocchi and remaining spinach to the pan, then cook for 30 seconds, stirring, or until the spinach has wilted.

Step 4: Top gnocchi with two-thirds of the parmesan. Grill for 5 minutes or until parmesan is golden and has melted. Serve sprinkled with pine nuts and remaining parmesan. Serves Four

Fast French Onion Soup

A delicious classic, reinvented for winter!

Ingredients

• 2 tbs sherry

• 50g unsalted butter

• 1 tbs thyme leaves

• 1L beef stock

• 8 slices sourdough bread

• 100g gruyere cheese (grated)

• 500g Woolworths diced onions

Optional:

Serves Four

• 2 tbs extra thyme leaves (to garnish)

Method

Step 1: Preheat oven to 200°C. Line a baking tray with baking paper.

Step 2: Melt butter in a large saucepan over medium heat. Add onion and thyme and cook for 10 minutes, stirring occasionally. Add sherry and stock and bring to the boil. Season with salt and pepper to taste.

Step 3: Place the bread on the prepared tray and sprinkle with cheese and extra thyme leaves. Bake for 5 minutes or until the cheese is golden. Pour the soup into bowls and serve immediately with hot cheese toast.

Chocolate Pumpkin Mug Cake

Beat those winter blues with this quick and easy chocolate hug-in-a-mug.

Ingredients

• 4 tsp vanilla

• 4 tsp maple syrup

• 3 tbs cocoa powder

• 1/4 cup Macro almond

• 4 free-range egg

• 200g apple

• 200g pumpkin

Method

Serves Four

Step 1: Place apple and pumpkin evenly into four mugs and microwave each for 3 minutes on high. Remove and mash with a fork in the mugs, leave to cool slightly.

Step 2: Mix vanilla, cocoa powder, maple syrup, eggs and almond, brazil & cashew spread.

Step 3: Divide mixture between mugs, and mix thoroughly with a spoon to combine, scraping down sides. Microwave each mug for 1 minute 20 seconds or until just cooked.
