IN SEASON The autumn and winter months mean we can welcome a few seasonal produce favourites back into our kitchen!

Ensuring that you utilise fresh and nutrient ingredients in your cooking is key to maintaining your health and wellness during the cold snap.

It’s time to throw the apron on & get experimenting with four of our go-to fresh produce items below: GRAPEFRUITS Grapefruit is a tropical citrus fruit known for its sweet and somewhat sour taste. It’s rich in nutrients, antioxidants and fibre, making it one of the healthiest citrus fruits you can eat.

AVOCADOS Roughly mash fresh Shepard or Hass avocados for guacamole, chop it and add to salads, use it as a sandwich spread, blend it into a smoothie, or whip it into a dessert like a chocolate mousse.

CAPSICUMS Capsicums become sweeter when cooked and are great flavour additions to stir-fries, soups, roasts, tacos, or even a barbeque. Use capsicum fresh in salads for a crunch, or make them the hero of your dish by stuffing and roasting them.

ZUCCHINIS Zucchinis are super versatile and can be enjoyed in a salad, savoury fritter, or baked in bread or muffins. Make sure that they have smooth, glossy skin and are firm to touch.

Involving them in the cooking can be a great way to get them excited about meal times and make sure they’re eating every last crumb.

We’ve sourced a few easy, delicious and foolproof recipes to try out in your kitchen.

CARROT MAC & CHEESE BITES

2 tbs extra virgin olive oil 1 large brown onion, coarsely grated 3 medium carrots, coarsely grated 1/3 cup plain flour 3 cups Woolworths milk 1 cup Woolworths Italian inspired cheese 3 cups cooked macaroni 1 bunch chives, finely chopped

Method Step 1: Preheat the oven to 200°C/180°C fan-forced. Grease a 12-hole, 1/3-cup capacity muffin pan.

4 white fish fillets (100g each) 1 avocado, thinly sliced 1 red capsicum, diced 2 tbs coriander leaves 1/2 mango, diced 1/2 iceberg lettuce, shredded 4 Lebanese wholemeal pita breads 4 qukes baby cucumbers, diced 1/4 tsp paprika 1/2 lemon, juiced 1/2 tsp sweet chilli sauce 100ml light Greek-style yoghurt 8 solanato tomatoes, halved

Step 2: Heat oil in a large saucepan over medium heat.

Cook onion and carrot for 10 minutes, stirring, or until softened. Sprinkle over the flour, then stir for 1 minute or until combined. Gradually add milk, stirring to combine. Bring to a simmer, then cook for 10 minutes or until the mixture has thickened.

Remove the pan from the heat. Fold in cheese, macaroni and three-quarters of the chives until cheese has melted. Spoon mixture into muffin pan.

Sprinkle with half of the remaining chives.

Method

Step 3: Bake for 25 minutes or until golden brown.

Cool in pan for 10 minutes. Serve topped with remaining chives.

Step 3: Stir yoghurt and paprika in a bowl to combine

Step 1: Preheat the oven to 180°C and line a baking tray with baking paper. Place fish on tray and drizzle with lemon juice. Bake for 12 minutes or until cooked through. Flake fish in a bowl and set aside Step 2: Meanwhile, for mango salsa, place mango, Qukes baby cucumbers, sweet Solanato tomatoes, capsicum, sweet chili sauce and coriander in a bowl and mix to combine.

Step 4: Place pita bread and serve filled with fish, mango salsa, avocado and lettuce topped with spiced yoghurt sauce.

Get the glue and glitter ready because it’s time to get crafty with the kids!

PAPER PLATE ICE CREAM Supplies: • • • • • • • • •

paper plates brown card stock pink, mint and black paint red pom pom balls sprinkles black markers scissors glue brushes

Directions: Step 1: Draw an ice cream scoop onto your paper plates with a rounded circle top, a scalloped bottom with the sides slightly bigger than the top circle and cut out with scissors.

POPSICLE STICK KITTY CRAFT Supplies: • • • • •

4 popsicle sticks Googly eyes Markers Scissors Glue

Directions:

Step 2: Paint one scoop pink and one mint green and let dry.

Step 1: Cut all 4 popsicle sticks in half.

Step 3: Cut out two triangle shapes from your brown paper with the top being about 4-5″ wide.

Step 2: Put 3 together, then take the middle stick and cut the top off. Cut another piece top off and glue it across the back of the 3 popsicle sticks.

Step 4: Draw a criss-cross pattern onto your brown triangle cones with your black marker. Glue your ice cream scoops onto the top of your cones.

Step 5: Use a small paintbrush to paint on small black dots onto your mint green scoop to look like chocolate chips.

Step 6: Apply glue onto the pink scoop and top with sprinkles (do not eat).

Step 3: Glue 2 popsicle sticks on the bottom for the legs. Cut a stick in half and glue it on the back for the tail diagonally.

Step 4: Glue on the eyes and draw the face/ears. Let it dry.

Step 7: Then, glue one red pom-pom ball onto the top of each ice cream scoop and let your cones dry.

WELLBEING

TO STAY MOTIVATED THROUGHOUT WINTER Raise your hand if your exercise routine has ever been personally victimised by cold winter mornings? Between the sun rising a whole lot later and the temperature dropping a whole lot lower, the temptation to hit snooze when your alarm goes off for the gym and roll over for an extra hour of sleep is at an all time high.

If you’re looking for a bit of much needed motivation to keep you going during this time, Studio Pilates Gungahlin owner Tammy -Jo Hunter has 4 tips that will help you stay motivated to workout through winter.

1. SCHEDULE YOUR WORKOUTS AT THE START OF THE WEEK You would never cancel a work meeting just because you didn’t feel like it, and we shouldn’t treat our workouts any differently. As that old saying goes, fail to prepare, prepare to fail, so get as organised as you can at the start of the week to set yourself up for success. Book your classes at the beginning of the week and schedule them in your diary, so you don’t run into any calendar clashes and remember to pack your gym clothes so you can train at lunch or straight after work, no excuses.

Some people even swear by sleeping in their workout clothes so they can literally get up and go.

3. ENLIST THE HELP OF A WORKOUT BUDDY Skipping out on a workout is easier when you’re the only person you have to justify it to, but having a partner waiting for you will help keep you accountable. The more social and enjoyable you make your workout, the less of a chore you’ll see it as, making you far more inclined to be consistent. The added social benefit of having someone to chat to or grab a post-workout coffee with will also help distract you from how cold it is.

4. TRY A LOW IMPACT WORKOUT In the cooler months, our muscles and ligaments are tighter, which leaves you more susceptible to injury if you don’t warm up properly before exercise. Studio Pilates is a high intensity low impact workout and all classes have been designed by physiotherapists with each exercise performed in a specific order called ‘scientific sequencing’. This not only ensures you don’t overload any muscle group, but also reduces your chance of injury.

2. LAY OUT YOUR WORKOUT CLOTHES THE NIGHT BEFORE When your alarm goes off and it’s still dark outside, hitting snooze and rolling back into your warm bed can be tempting, but if the first thing you see is your workout clothes laid out ready to go, you’ll have no excuses.
