New year, new start, NEW BUSINESS For many people the start of a new year is a time to set in place new plans and hopes for the future. And if your New Year’s resolution is to change the way you work by starting up your own business, there’s a lot of things you need to think about before taking the plunge. If you have a great idea or just want to get to grips with what’s involved in running your own business you need to go about it in the right way and whether it’s something you really want to pursue. A great place to start is by coming along to one of the free ‘Enterprise 4 U’ workshops run by Gateshead Council where you can get the advice and support you need to get started. Details about these are at the end of this article.

You need to find out as much as you can about your potential customers. Questions you could ask yourself (and do research about) could include: - How many potential customers are there? - What type of people are they?

But to get you thinking – there are some key things you should have on your ‘to do’ list that will help you be more focussed when thinking about making such a life changing event.

- Where do they shop?

First of all you need to do a lot of research. Knowledge and preparation is key when assessing whether or not your business idea is viable. And you need to break this down into manageable chunks – be in control of what you are doing, so you are focussed and clear about what you are trying to achieve.

- How often do they buy this product or service currently?

Many ideas have been scuppered by lack of research including a failure to identify the need for it at all! There are lots of issues you’ll need to consider: Will your pricing will work for your target market? How many customers are out there and why would they choose your product or service over a competitor? What is your unique selling point?

- What drives their purchasing decisions? - How much income do they have?

You can do a lot of research yourself – through questionnaires to potential customers, or by looking at what existing similar business offer, and what customers think of them and how they work. You can also analysing data from secondary sources including reports, records or statistics. But what you need to be is flexible; obtain as much information as you can and be prepared to alter your idea to suit what your customer wants. Your research is just the start of what will eventually form your business plan; your blueprint for success. A business plan covers the wider elements of forming a business including setting out your financial needs, your marketing strategy, the legal structure of the business, objectives, contingency plans and much more. So remember: • Do your research • Break down your tasks into manageable chunks • Be focussed and clear about what your business idea will offer • Be flexible – it’s always the customer that drives any business • Get the advice you need to help you move forward I hope this article has inspired you to start pursuing that business idea.

Editor’s page Happy New Year n all that! Part of my work I like is meeting new people. Freshly baked cakes and a cup of tea were the order of the day when I was asked to pop up to Meadowfield park by the estate manager, Teck Tong. She explained that she was leaving Meadowfield park for a new job but wanted to give a gift to the residents and let the local community know how nice a place it is to live. The residents were always hoping for more people to join their community. It was nice to meet you all and have a laugh. See their story on pg 54 and it might be of interest? Barking Mad, run by Carrie is a great idea where pets are sent to suitable families rather than kennels. Having got a dog, “Amber” last year I decided to give it a go when I had a weekend away last month. Great service Carrie and I really felt she was well looked after with all your updates and postcard from the weekend foster family. So if you want your pooch to have a holiday when you do give it a go. Highly recommended!

Meet super slimmer Alex!

Before

Alex Perkins lost weight with her local Slimming World group in Corbridge and has dropped stones in just 14 months. Alex joined Slimming World in October 2013 after becoming increasingly unhappy with her size. She says: “I’ve been overweight all my adult life, I tried other diets but I hate having to weigh and measure everything. Slimming World is completely different, I never have to miss out or feel deprived and after losing so much weight I’m the slimmest – and the happiest – I’ve been in years!” The 32-year-old follows Slimming World’s Food Optimising eating plan, which encourages slimmers to fill up on satisfying yet healthy everyday foods like fruit and veg, lean meat and fish, pasta, potatoes, rice and pulses without having to weigh or measure. She’s cut out many of the convenience foods and sugary snacks she used to rely on, and loves trying out all the delicious healthy recipes she picks up from other members at her Slimming World group. She says: “My family and friends are all amazed how much I can eat and still lose weight. I still eat all the same meals that I did before but now I cook and prepare them differently. My favourite meal is chilli con carne & rice which is free on Slimming Worlds Food Optimising Plan. “I know a lot of people worry about joining a slimming club because they don’t know what to expect. But from the minute I walked into Slimming World, the support I’ve received from my Consultant Laura and the rest of the group has been brilliant,” adds Alex. “At first I was extremely nervous, especially about stepping on the scales, but straightaway I was made to feel welcome and now it’s like a night out with friends. I couldn’t

It’s like having a team of cheerleaders on your side, when you’re doing well they spur you on further and when you’re struggling they keep you going. “I never dreamt I could achieve so much. I’ve dropped dress sizes and it’s made such a huge difference – it’s changed my life. I’ve got so much more energy and I can do things now that I couldn’t before. My fitness has improved – I enjoy being active now rather than thinking of it as a chore. Laura Atkinson who runs the Corbridge group, says: “I’m so proud of Alex. Not only does she look fabulous, she’s improved her health and is bursting with energy. She’s a huge inspiration to everyone in our group and I hope she inspires other people to change their lives in the same way. It can be hard to admit that you need to do something about your weight and to ask for help, but I think Alex shows just what’s possible when you do.”

Warm Asian Chicken Salad

I would just like to begin with wishing you all a Happy New Year! And that you have all had a wonderful Christmas without over indulging too much. Now we have a full year ahead with plenty of recipes and tips that you can all try without too much hassle. The good thing is that by this time in December you’ll all have more cooking experience under your belts.

Cold leftover turkey or any cold meat leftovers you have. If you don’t then you can always roast some legs, thighs or breast. You will need four pieces for this recipe.

After all that indulgence many of you will have plenty of leftovers, and although the emphasis these days is not to have any waste, it is inevitable that you will have some - I know this is sad to say, as so many people around the world today are starving, whilst for others there is a glut. So the upshot of this is, that if you find you have leftovers at any meal, don’t just bin it, look at ways in which you can turn it into another meal in the long run this will also save you money. Yes, I’m aware, that some foods you cannot re use, but you’d be surprised at what you can. Even if you don’t have leftovers from Christmas, make a start this year by thinking ahead and planning meals. For instance, cooked mashed potatoes are an ideal ingredient for leftover dishes, so are vegetables. Sausages make for a delicious leftover meal, so long as you ensure that you have re heated the food thoroughly. A good tip is to make sure the meat is cut up into small pieces. If your reheating chicken or turkey, it is best shredded into smaller pieces, simply tare apart with your hands.

Remember, the smaller the pieces the easier it is to reheat and ensure a core temperature that is safe. However, be careful with foods such as rice, pasta and noodles as they aren’t. These foods are best eaten on the day they’re made. Casseroles, stews and soups are both hearty and fulfilling, and full of goodness too. Once made they will keep for a few days, just pour into an airtight container and refrigerate - reheat when required or freeze. If your reheating any casserole, stew or soup, make sure that you bring it to the boil first, stirring all the time so that the heat is evenly distributed and it doesn’t stick to the bottom of the pan, then let it simmer for a few minutes. These are a few easy steps to follow, and it’s not that difficult either - don’t worry, you don’t have to obliterate the food. If you don’t have any leftovers for this recipe, just cook either chicken thighs, legs or breasts. I prefer thighs and legs as they have more flavour and slightly more fat, which makes them more suitable for dry frying as they crisp up around the edges, which makes for a tastier dish, but you can still use chicken breast. You can either leave the skin on or off - it’s purely down to taste. Pork also works well in this dish. For this recipe you will need a saute pan or a large frying pan, a sharp knife, a wooden spoon or spatula, mortar and pestle or rolling pin, a measuring jug, tablespoon and teaspoon.

1 packet of mixed salad leaves, either rocket, watercress or a mix of each 2 to 3 slices of ciabatta (bread), or any other crusty loaf - unsliced 2 - 3 tbsp white wine vinegar 3 tbsp olive oil a good dash of fish sauce 4 tsp clear honey 3 spring onions finely sliced 3 tbsp cucumber chopped 1 fresh red chilli deseeded and very finely chopped 1 pomegranate 1 to 2 tsp five spice powder 1 tsp fennel seeds crushed Salt and Pepper to season 1 to 2 tbsp olive oil or any oil you have around. If your cooking large quantities of breast meat then I recommend 2 tbsp oil

For the salad dressing 1 tbsp white wine vinegar, 3 tbsps olive oil 1 tsp dijon mustard 2 tsp Harrief (optional)

powder and fresh chilli. Remember if you’re using Harrief in the salad dressing it is also very hot. Set the meat aside - keep warm at a very low temperature in the oven. Cut the bread into cubes and fry until golden brown - set aside in the oven to keep warm. Empty the salad leaves into a large serving bowl along with the chopped cucumber. To make the salad dressing combine all the ingredients in a jug, season with a little salt and pepper and whisk until the mixture is combined. You can also add 1 tsp honey to the dressing if you want it as a sweet dressing - it’s optional. If you don’t like mustard leave it out. Instead add the Harrief to the white wine vinegar and oil, season with salt and whisk. To serve, pour the salad dressing over the salad, add the warm croutons from the oven gently combine with your hands or serving spoon. Half the pomegranate, simply tap one half over the salad leaves and the small red fruits will fall out. Although this is optional, it does make for a delicious salad. Dress the salad with the warmed spicy chicken from the oven.

Method Heat the oil in a frying pan then add the shredded meat cook for a few minutes then sprinkle over the Chinese five spice powder and crushed fennel seeds crush the seeds in either a mortar and pestle or place on a chopping board, cover with a piece of kitchen role and crush with a rolling pin. Mix the white wine vinegar and honey together in a jug - mix until combined. Add more honey if you want it sweeter or vinegar if you like it sharper, it’s entirely up to you. Pour the mixture over the meat in the pan, add the chilli, spring onion and stir - taste. If you want it more spicy and hot then add more five spice

Life through a lens In my last column I wrote about what to consider when buying a camera. This time I will go a little further and talk about lenses. Most lenses used today are zoom lenses so I will concentrate on them. The chances are that when you buy a camera it will have a zoom lens. It may come as a part of your camera, or, if you buy a camera with interchangeable lenses you will almost certainly buy or receive a zoom lens to accompany it.

Zoom lenses allow you to effectively move in closer to or further away from your subject whilst remaining in the same place. Alternatively, it allows you to get more in the picture or to concentrate on a selected part of a subject or scene. The most useful zoom lenses range from moderately wide angle to telephoto. The strength of the telephoto end can take you a modest three times closer than your wide angle end up to maybe sixty times closer! The sixty times lens may appear to be every photographer’s dream lens and if used carefully can be very rewarding and great 34

fun. However, there are things to consider. A zoom lens is always a design compromise – the greater the zoom range, the more picture quality is reduced. No one has a totally steady hand so we all reach a point with longer exposures where picture quality is reduced by camera shake. The longer the zoom range the more of a problem this becomes.

Reiki - Finding Peace within As the human race has evolved our bodies have become resilient to many conventional medicines and treatments for common ailments. This has lead to a resurgence in alternative or complementary therapies as people seek alternative ways of maintaining good health and being pain free. Theses therapies are not new fangled ideas. They have there roots in traditional healing practices from all over the world. All treatments have a common theme and that is the care of our inner self. Often modern lifestyle mean we try and squeeze more into our lives but in doing so we neglect ourselves. Between the school run, work, karate class, dance class, cooking and cleaning there is very little time left for us to focus solely on ourselves. When we do get the time we inevitably feel guilty because there is a pile of ironing or other work that could be getting done. Pressure pushing down! It is all this pressure that we put ourselves under that then leads to stress, migraines, aches and pains, sleeping issues, etc. We can paint a face for the world to see and mask the niggles our body gives us but their comes a time when actually we need to look at the way we live our lives and think about our inner peace and happiness. It is when we do this that the body can start the healing process. There are many forms of complementary therapies but Reiki treats the whole body and is a favourite treatment of my clients. Reiki is a traditional healing energy that stems from the teachings of Mikao Usui. It is a non evasive treatment and you remain fully clothed at all times. As a client you have a short consultation to find out the areas in your life you wish to improve, you then lay on the bed as the therapist sets the atmosphere to aid your relaxation. The therapist places her hands above your body and works across your body, opening and balancing your chakras so that the body works at its optimum level for self healing. The chakras are what are known as the energy centres of the body. Clients who have regular sessions of Reiki states they sleep better, are more relaxed and able to deal with the daily pressure of life and report that symptoms of many illnesses such as Chronic Fatigue Syndrome, Irritable Bowel, Arthritis etc are eased and in some cases eliminated.

A typical Reiki treatment takes 60 minutes. Reiki can be combined with other treatments such as Indian Head Massage and Natural Face Lift Massage. The use of crystals and colour can also be added to aid the healing process. The feeling of rejuvenation my clients talk about after having a treatment, is what makes my job as a therapist so worthwhile. We all deserve to nourish our inner souls. When we are fit, healthy and happy this radiates out from us. Not only do we feel this but others around us do too!

Gardener’s Cottage Plants Breathing New Life into the Garden Happy New Year! My visits into the garden are getting less frequent with the inclement weather and shorter days. But it’s still up early with the head torch on to feed the chickens. Other routines ,in the daylight, also give me a chance to wander round the garden which usually offers pleasurable glimpses of a wintery scene such as the skeletal remains of the eupatorium and miscanthus, still gracing the garden with structure and majesty, even in its darkest hours. In my last article I was talking about how barley straw can be used as a weedkiller. After applying a thick layer on top of the lawn (and the inclusive weeds) through the summer, the ground is now totally cleared and will be ready for planting in the spring. The straw has broken down and virtually disappeared. Many invertebrates, worms and other beneficial organisms are attracted to the straw as a food source, aiding in its decomposition. To keep the soil organisms active over the winter I have applied a thick layer of spent hops which gives them something to feed on since it has good nitrogen content. This will maintain the cycling action of the microbes converting nutrients to humus which is basically the dead bodies and poo of the organisms – the best and most natural form of plant food. This will contain natural antibiotics which combat bad organisms that cause disease and help to keep plants healthy. Plants will be more able to shrug off pests and disease, and the humus will combine with the soil improving drainage, moisture retentiveness and most importantly, health of the soil, which I believe is a fundamental issue in gardening and for healthy and abundant life on this planet. The barley straw has cleared an area which only 9 months ago was overrun with ground elder - all now totally disappeared. This will be our new Hosta Garden which I shall be planting in the spring. It’s a lovely semi-shaded area beneath one of my favourite shrubs - a guelder rose (viburnum opulus), which has been allowed to grow into a small tree. This casts a cooling semi shade in the summer which will be perfect for the hostas. It’s also quite a dry area which has been a bit of a struggle for the ligularias in hot, dry spells so these will find a new spot in a damper part of the garden of which I have plenty! Old misshapen stones, which came from a local building site, provide the edging for the new hosta border and its adjacent path. For the pathways, I have laid woodchip, obtained from a local tree surgeon. These are all natural materials acquired cheaply or at no cost and yet have masses of character and appeal for the garden. I also often pick up useful materials and equipment for home and garden through the local freecycle scheme. As it says, it is completely free but you have to collect the goods from the person that is offering them. It’s also a great way to pass on items that are still useable and can be given a new lease of life. See https://groups.yahoo.com/neo/groups/ HexhamFreecycle/info. It would make good sense if the council were to display signs about the scheme at their waste transfer sites. One of my latest acquisitions from freecycle is a garden shed. It must be at least 30 years old and was on the brink of total demise with holes in the roof and a rotting base. Some new timbers in the base and roof and a bit of roofing felt have brought it back to life. They just don’t make sheds like they used to and I reckon I can get another 30 years out of this one! Since our garden is very prone to waterlogging I have erected the shed on old milk crates stood on paving slabs. It works a treat and the shed remains dry and cosy inside even when the garden is

flooded. Now fully equipped with brewing up gear and biscuit tin, I have a comfortable retreat where I can relax with a cuppa. Just thought I’d squeeze in one last tip; if like me you suffer from dry skin (gardener’s hands) with painful cracking and sores then try my remedy: mix one teaspoon honey to seven teaspoons water and one teaspoon of lemon juice. The honey aids in the healing of sores and the lemon softens the skin. If available, add a pinch of each of dried chamomile and yarrow as these can help heal skin conditions. Rub into the hands and allow to dry. Rub some skin moisturiser, emollient or vaseline over the top to seal it in. Apply daily. Keep the mixture in the fridge and it will last about a week. Maggi Hambling at National Gallery and Balman Gallery in 2015 Maggi Hambling, CBE, was the first Artist in Residence at The National Gallery and The National Gallery is now showing a series of Hambling wave originals and a painting inspired by Amy Winehouse. We are delighted to have rare Maggi Hambling wave originals on show in Corbridge. Our January show, meanwhile, is led by top sculptor, Simon Griffiths. We have a sought-after new series of prints from leading Scottish artist, Ron Lawson, featuring Skye, a part of Scotland loved by many in the Tyne Valley. And we have superb work from regional artists, including John William Smith and Steve Mayes.

Maggi Hambling’s Wave Paintings Maggi Hambling’s wave paintings are intense, energetic and passionate - partly inspired by her experience of huge waves crashing onto the sea wall in a violent storm at Southwold, Suffolk, where she lives. ‘It was extraordinary – I’d never seen waves like it,’ Maggi Hambling recalls. ‘They were beautiful but terrifying – it was the force of nature thundering on the wall – it felt very subversive.’ It’s rare to see such a collection of this major artist’s work outside of London. We also have Hambling’s famed portraits of Stephen Fry and George Melly on show.

Simon Griffiths’ Sculptures Renowned sculptor Simon Griffiths is known for his dynamic recreations of wild birds and animals. Simon is inspired by his passion for the natural world: ‘I like to think that every one of my sculptures has some of the soul of the animal within it,’ he explains. We have a superb range of Simon’s work in the gallery from January, which will appeal to art and nature lovers alike.

We are pleased to be showing work from rising artist, John William Smith. Like the late Spennymoorborn Norman Cornish, John is influenced by growing up within a mining community. John has a people-watcher’s eye for spotting the everyday details of miners’ lives - and then recreating them with a touch of real magic on canvas. This is an excellent time to collect Spennymoor-born John’s work – his last show sold out.

Architectural photographer Steve Mayes has the knack of capturing what the eye sees every day - and challenging the viewer to see it anew. A lover of Newcastle, Steve is inspired by North Eastern landmarks: ‘When I moved to Newcastle, the iconic architecture that I found myself surrounded by - old and new seemed to be the final spark that turned photography into a real passion.’ Art-lovers who share Steve’s passion for Newcastle will appreciate these photographs.

The Irritable Baby Many times parents bring their infants to see me because their baby seems unsettled, irritable and colicky and they just don’t know what else to do.

In addition to re-establishing normal neurological communication between the child’s brain and their body, other aspects of the infant’s wellbeing may need to be addressed such as whether the baby is breast or formula fed, and what the mother is eating as this can have an effect on the baby via the breast milk. Also, the use of antibiotics by the mother during labour for conditions such as Group B strep, or if given to the baby directly, will have a significant impact on the health of the gut contributing to an irritable baby.

- Sleep issues - Breastfeeding issues - Digestive issues such as excessive wind and/or pain, perhaps constipation - Excessive crying - Extreme sensitivity - Startled and jerky movements - Reflux - General discomfort Babies, especially in the early months should be relaxed, happy, feeding well and sleeping well. So what is happening when your baby isn’t like the chilled out little dude your friends have, and you feel demented with frustration and fatigue as a result. In many cases these issues may be the result of irritation to the brainstem. The brainstem is a very sensitive area of the nervous system and it’s an area that may be negatively affected by the birth process, especially if there has been mechanical intervention such as excessive pulling on the baby’s neck during delivery either vaginally or through C section, or if forceps or ventouse have been utilised. Intrauterine constraint is another possibility to consider as this may cause pressure on the baby’s spine or cranium during later development. Intrauterine stressors can occur in ‘overdue’ babies, larger babies, or if the mother has pelvic/ spinal imbalances which cause tension in the soft tissues of the uterine and abdominal region. Having the baby checked by a chiropractor for stress on the brainstem is the first ‘port of call’. A chiropractor can evaluate many aspects of the nervous system and quickly establish if there are cranial or

In terms of what you can do at home to help, it is vitally important for the baby not to be over-stimulated and dampening the sensory input is the key to a happier baby. Swaddling your infant with arms contained will help restrict the often rapid and irregular arm and leg movements frequently displayed in a colicky baby. Restricting movement this way helps to quieten down the baby’s nervous system. Parents should also be encouraged to soothe the baby by cradling the baby with one arm and gently patting the bottom with the other hand as this affects the parasympathetic nervous system which will to settle rather than stimulate. Holding a baby over the shoulder and patting its back will have a stimulating effect instead. Decreasing external stimulation, including light and sound is important as both light and sound enter the brainstem which only serves to excite the baby further, and therefore limit exposure to bright lights or TV when attempting to settle the baby. Rocking your baby can have a positive effect on an unsettled infant. There are numerous devices that can rock or vibrate the baby’s bassinet, some have sensors

that will only start the motion if the baby starts crying and will stop again once the baby settles. Breastfeeding technique is also important here, and making sure the baby doesn’t feed too greedily or quickly as this may result in an excessive intake of air. Variations in posture can really make a difference. In your baby is bottle fed, experiment with the teat - bottle combination that works best for your child so that air isn’t swallowed whilst feeding which will contribute to issues with wind.
