Wild food - a worthy winter root

New year, new you?

You’ve probably watched a documentary or two which follows a local tribe searching for wild food in some far-flung part of the globe. The men go off hunting antelope or other big game while the women, often with children strapped to their backs, use their knowledge and skills to find nutritious wild plants. I remember watching one such programme, the women had stout, sharpened digging sticks, they’d seen some signs on the ground that completely eluded me but they knew if they dug down there would be food beneath. It was hard work and the hole when they had finished it must have been at least two feet deep but the reward was a whopping big edible root that would, by the look of it, provide a full meal.

The programme struck a chord of recognition and empathy with me as I had been doing the self-same thing the week before. Admittedly I had been using a spade, much easier than a sharpened stick, but the hole was as big and so was the root!

There are a few wild root plants that grow locally in the North East that are worth the attentions of the winter wild food forager but the one I was after here was lesser burdock, Arctium minus.

You’ll find burdock growing in hedgerows, in woodland clearings and edges and on open land. It is a biennial plant, growing over the course of two years. During its first year it grows from seed and then uses its big leaves to store up energy in its roots. Its leaves then die back and it remains dormant for the winter. The following year the plant uses all that stored carbohydrate energy in its roots to grow into quite a sizeable plant sometimes 3ft tall; it flowers, sets seed and then dies, the plants job is done.

The seeds grow together in round clustered burs and have hooks on the ends which attach to your clothing or to the fur of passing animals. When you find them you pull them off and drop them where you are. That’s how it spreads from one place to the other. Incidentally that is also how Velcro was invented; the designers of Velcro were inspired by the tenacious way burdock seed clings to fur and fabric.

Back to food though - it is the ‘first winter’ plant you are looking for – the ones that haven’t flowered this year. For the experienced forager it is possible to look out for the dead stems of second year plants and then search for the dead leaves of the first year plants which won’t be far away, and so harvest them. This is far too risky a thing to try for the inexperienced forager as it could lead to poisoning through misidentification. The trick I teach people on my foraging courses is to go out in late summer or early autumn, before the leaves die back, with a supply of canes with yellow painted tops and mark the locations of the plants you intend to harvest.

The root can go down quite deep; dig down and harvest as much as you can of the big tap root and side roots. Some of it may well be a bit too woody to use but there will be plenty of tender flesh too, particularly on the side roots.

Wash and peel it and slice it in rounds or strips like carrots. Use in soups, stews and stir fries as you would any other root vegetable. It takes a little longer than carrot to cook. You can also wrap in foil and bake in the oven at 200 degrees centigrade. Cooking time varies with the thickness of the root – as a guide allow about an hour for 3cm thick roots. It is very popular in Far Eastern cooking.

Try this spicy stir fry recipe for burdock roots: 250gm burdock roots 250gm carrots One tablespoon of oil Two teaspoons finely chopped garlic One teaspoon finely chopped fresh ginger root Two dried chillies with seeds removed Two tablespoons of dry sherry One teaspoon of sugar Two teaspoons of sesame oil Peel the burdock roots and carrots and slice into thick match sticks.

Heat the oil in a wok or heavy frying pan and stir fry the garlic, ginger and chillies for a minute. Stir in burdock and stir fry for a few minutes then add

the carrots, sherry and sugar and cook until just al dente. Add sesame oil and stir fry for a further 30 seconds. Serve with boiled rice. Should serve two generously.

Just a few very important words of advice before you put on your wellies and pick up your spade: You will need the landowner’s permission to dig anything up on their land; it is illegal otherwise.

Always be careful about where you forage – avoid any obvious

places, or signs, of pollution such as dodgy looking water courses, landfill areas, industrial sites and waste land you don’t know the history of, farm yards and middens, field edges where a crop may have been sprayed with chemicals, busy roadside verges, places treated by some folk as a dog toilet and so on.

Never eat anything that you are not 100% certain of with your identification. I recommend ‘The Wild Flower Key’ by Francis Rose to identify what you’re about to eat.

l

Different people may react differently to new wild food stuffs so when trying a plant for the first time eat just a little on the first occasion and if there are no ill effects eat a bit more of it next time.

l

Finally forage sustainably. Be sparing in any one place, never pick

everything that is there, leaving plenty untouched. Only collect if the plant is plentiful. There are plants, protected by law, which it is illegal to pick (see the Wildlife and Countryside Act 1981 Schedule B).

We all know that exercise is good for us but we often make excuses not to do it. So firstly it is important to choose something that you will enjoy. If you have joined different gyms numerous times then maybe the gym isn’t for you. Ask yourself what type of exercise do you like to do? If you haven’t been exercising much don’t try to do everything in the 1st week. You will soon burn out both physically and mentally! Training plans are useful as they deliberately start at a reasonably achievable level and slowly and progressively increase in intensity and duration. You should increase the activity by no more than 10% per week which can be applied to time, resistance and intensity. Building up slowly allows your body to adapt to the increase in load, reducing the risk of injury and maximising your chance of success. Be patient and don’t expect overnight results! It will probably take about 6 to 8 weeks for you to start looking and feeling fitter.

METHOD 1. Preheat the oven to 180°C/160°C Fan/Gas 4.

2. Place the beef, onions, carrots and flour in a baking dish, season and toss to mix well.

3. Pour in the boiling hot stock then add the Worcestershire sauce, baked beans and bay leaves. Stir to mix well and arrange the sliced potatoes on top of the meat mixture.

4. Cover with foil then place in the oven for 2½-3 hours or until the potatoes are cooked and tender.

5. Remove the foil, then turn the oven up to brown the potatoes, or finish under the grill for 5-8 minutes until brown.

New Year: New You?

New Year – New You! shout the various magazine titles. The midnight bells still chiming in the new year when it begins: The multitude of articles, blogs, cover stories and posts on detoxing, juicing, weight loss, ‘dry’ January and much ado about betterment: better hair, better skin, better clothes, better relationships, better sex, better gadgets, better homes, better careers, better meditation(!)… the start of a new year heralds an almost hysterical onslaught of reinvention of an-apparently-previously-inadequate-self.

You, say the aforementioned articles et al., can transform yourself into a slimmer, fitter, healthier, sexier, cleverer, happier and all-round more sparkly version of you.

Now, don’t get me wrong. I’m not bashing appreciating and making the most of yourself, being fit and healthy, having good relationships or seeking meaningful new activities or work. As someone who has also spent the past two decades researching mental health, wellbeing and happiness, I too am always interested in what makes us feel ‘well’ in the most holistic sense of the word. Furthermore, I’m certainly not immune to embarking on a ‘new-year-health MOT’ after indulging in one-too-many chocolates over the festive period. I too, have hoisted myself from that what-day-isit-and-what-am-I-supposed-to-be-doing between Christmas and New Year limbo on a quest to jump into January with goals, plans and visions of a version of ‘me’ more sparkly than the tinsel I was about to take down.

No sooner have the bells announced a new year and I too have parted company with a fair few pounds on juicers, pedometers, smoothie-makers, self-help books, gym subscriptions, gym clothes for aforementioned-nowI’m-a-gym-bunny too! regimes, running magazines, recipe books, yoga mats, mini trampolines, kettlebells, meditation CDs and many other New You! inspired tools to transform myself into an apparently Better Person.

Although I believe there’s nothing essentially wrong with using the new year to kick-start a health and fitness routine, or truly trying to improve areas of your life which cause you unhappiness, there’s something in the plethora of competing voices out there proclaiming to help us to become better versions of ourselves which doesn’t feel quite right. Over the years, I’ve found that the more saturated we become with ideas of ‘betterment’ and the more information-overloaded our lives are, the less content we actually are with ourselves. A little peek on Instagram for ‘healthy inspiration’ (you too can look like me! just follow my 30-day plan – £99 special offer today only!) ends up, half a wasted hour later, in us feeling inferior, duller, drabber, podgier, less sexy, less successful and decidedly less sparkly than before. And yes, we all know about filters. We know social media isn’t real life…but we still do it. We still compare. We still, three weeks into January, on ‘Blue Monday’, sit feeling cold, uninspired, hungry, inadequate, tired and nipping to the Co-Op, coat over our pyjamas for a oh-sod-it giant bar of Dairy Milk and a bottle of Pinot. Then we feel guilty. Another New Year! New You! failed again before February. (Sincere congratulations, by the way, if this doesn’t happen to you, or if you have never fallen into the media-hyped trap of New Year! New You! betterment in the first place).

So why do (at least a fair few of us) do it? If you’ve read your way through my previous wafflings, you may have picked up on how I have a thing for waggling a finger of blame at social media, and I’d extend that to television, advertising, unquestioning consumerism and the way Those Who Pull The (Purse) Strings make us feel anxious, fearful and inadequate with who we presently are. So, is there an alternative? Does rejecting the New Year!

New You! hysterics mean snuggling deeper into your duvet, buying in

more chocolate and binge-watching Netflix until the clocks go forward and the lambs are all a-skippy in the daffodils? Well, yes…and no. I’m of the belief that this Reinvention of Self that seems to fall upon us each new year can be problematic in two ways: Firstly, from a wellbeing/self-care perspective, perhaps January isn’t the best time for throwing ourselves into radically new routines of reinvention.

The days are short, dark, nippy and the twinkly, cheerful festive lights of December have been packed up and put away. Summer seems impossibly far, and the prospect of miserably puffing our way around the dark, cold, damp streets in the morning/evening and detoxing on cold salads and fibre-absent juices doesn’t do much to fill us with January joy. Gyms may offer some artificial warmth and light, but it can be a big bite into our justafter-Christmas finances and not all of us are fond of the gym for a start/ introverted/prefer exercising outdoors etc. Sufferers of Seasonal Affective Disorder (raises her hand) may find it particularly hard to stay awake or have the physical or mental energy to fling themselves into mediaprescribed physical, emotional and spiritual ideals of ‘betterment’.

Secondly, from a more ‘greater good’ standpoint, there is arguably a growing focus on the ‘internal gaze’, perpetuated perhaps by the current selfie-orientated culture that seems to emphasise an egoistic preoccupation with gratifying our own needs and desires. This focus seems to be exacerbated and exaggerated even more at the start of a new year, where we turn out gaze inwards, analyse ourselves, reflect, introspect and ask how can I be improved, enhanced and bettered? Whilst a degree of self-improvement is undoubtedly beneficial and helpful, are we at risk as a society of becoming too focused on the Self to the detriment of the many forms of the Other? As Thomas Joiner (2017) points out in his timely analysis of the ‘corruption of mindfulness’, this growing societal acceptance of the inward gaze and narcissism is arguably creating a culture of selfimportance and self-promotion over more truly mindful, conscious and compassionate awareness and kindness towards all beings and the world itself.

So, what can be done? It’s certainly not easy to avoid or not be influenced by the way different forms of media and news vie for our attention, taking advantage of our vulnerabilities and insecurities and capitalising on the new year ethos of Betterment of the Self. Yet, perhaps by simply pausing and recognising this is the first step. Secondly, I’d suggest that in terms of our own wellbeing, we can, if we choose, make subtle, gentle sustainable adjustments to our lives that last not only until February, but for the entire year to come. Adjusting slowly to the ebb and flow of the seasons, to a more conscious and compassionate, grateful lifestyle that works for you.

Ultimately, I’d suggest that the opportunities that a new year presents are not about aspiring to be an Instagramed, filtered version of someone else, or reacting to bandwagon-jumping, media-hyping and social-media noise that can make us feel like we’re not ok and need changing. Instead, perhaps the dawn of a new year is an opportunity to go kindly out into the world and reconnect gently with what really matters. To go slowly, peacefully, gratefully and openly. To turn off the computer and stroll in the woods; stand by a riverbank; let that driver out in front of you; mouth a sincere thank you when someone does the same for you; rescue that trapped fly; start a Monday morning work email with a genuine how are you? before launching into the business of the day; smile at the passing stranger in the street; move an at-risk-of-being-squashed snail from harm’s way when out jogging; feed the birds – not just the little ones; spend time alone; spend time with loved ones; spend time doing the simple, sustainable things that spark joy. Go quietly, gently, compassionately, contentedly and peacefully into 2018 – I wish you a truly happy new year to come.

…how I wonder what you are. So runs the nursery rhyme, but this question has also been asked of the star of Bethlehem that,

according to chapter 2 of Matthew’s gospel in the Bible, led ‘wise men from the east’ to the birthplace of Jesus Christ. Cynics scoff at this account, and even some theologians have said it is unscientific and without historical evidence.

Far from it! The description fits well the behaviour of a comet: it made

a new appearance, moved slowly across the background of familiar stars, and ‘stood over’ Bethlehem – a phrase used widely of tailed comets in ancient literature. The rate of movement (consistent with a journey of a couple of months for the wise men) and the reported directions of sighting initially in the east and later the south (the way from Jerusalem to Bethlehem) agree not only with a comet in general, but with a specific comet recorded completely independently by Chinese astronomers as being visible for about 70 days in the year 5 BC – one of three observed by them in the 30-year period from 20 BC. Who were the ‘wise men’ (also referred to as Magi) and what made

them undertake this journey? The tradition of ‘three kings of orient’ began only about 500 years later and is based on a particular interpretation of some Old Testament verses and the identification of their gifts of gold, frankincense and myrrh for the new-born king.

The gospel account says nothing of kings, nor gives their number or names. They were without doubt religion-based astronomers/ astrologers (there was no distinction in those days, as there was none between alchemy and chemistry in the Middle Ages), who studied the skies and interpreted their observations in terms of significant present and future events. This was a well-known occupation in the area of Persia (modern Iran), Mesopotamia (Iraq) and Arabia; frankincense and myrrh were valued products derived from Arabian plants.

In 7 BC the large planets Jupiter and Saturn were close together (a conjunction) three times in the sky, in the star constellation Pisces, a fact important enough to be recorded on a contemporary clay tablet found near the site of Babylon; this would have signified a forthcoming birth of a Jewish king. In 6 BC Mars joined in to give three planets together, something that happens only once every 805 years and would have been taken as a sign of a great historical event about to happen. So the comet of 5 BC, appearing in the east in the constellation Capricorn, triggered an urgent need to set off and find the newly born special king in Israel. That the wise men went to Herod in Jerusalem is only natural: where else would they expect to find a king? They didn’t follow the star there – it was behind them in the east. It was the Jerusalem priests who identified Bethlehem, from an Old Testament prophecy of the expected Messiah, and now the comet was indeed before the wise men, having moved round to the south in the meantime, as recorded by the Chinese.

As for the date, the comet was visible in the spring of 5 BC; our

celebration of Christmas ‘in the bleak mid-winter’ is a tradition established rather later and not at the time, and Jesus was almost certainly born around the time of the Jewish Passover (near Easter for us), when the milder weather allowed sheep and shepherds to be out in the fields at night as also recorded in Luke’s gospel. Herod is reckoned to have died in 4 BC, and Jesus lived with his family for a couple of years in Egypt as refugees to keep out of his way, before returning to their home in Nazareth. The notoriously cruel Herod (who murdered several members of his own family) had all boys in Bethlehem up to 2 years old killed, fitting with the set of astronomical features he had heard from the wise men.

So it all fits together, and Matthew’s account in the Bible is fully consistent

with what we know from history and from astronomy. Indeed, it serves to fix the data of Jesus’ birth within a period of just a few weeks in the spring of 5 BC. Our calendar, with the change from dates BC to AD (or BCE to CE if you prefer) centred supposedly on this birth, was set about 500 years later and proves to be a few years wrong, but that’s not a bad attempt for its time!

As with strings of archaeological discoveries in the Middle East over

many years, here history and science support the Bible’s account previously scorned by experts lacking this evidence. January 6th is the traditional day for celebrating the coming of the wise men to Bethlehem, and it’s neither a nursery rhyme nor a fairy tale.

UPHOLSTERY CLEANING

In humans. Tart cherry increases melatonin, and also the duration and quality of sleep in controlled studies. In a number of other clinical studies it raises mood, increases serotonin (the brain’s mood-boosting signal), decreases stress (lowering the stress hormone cortisol) and is a key antioxidant. In a controlled study, wild cherry improved vascular function, such as lowering blood pressure (which is associated with sleep) in 27 volunteers. It also relieved pain in several controlled trials.

In the lab. There are only a few studies to explain its action to date. It improves working memory and is also antioxidant and anti-inflammatory, actions now associated with good brain health.

Key ingredients. Melatonin, tryptophan and serotonin. Rich in anthocyanins, responsible for red/purple pigment (such as asterin and prunetin) which are anti-inflammatory, antioxidant and reduce cholesterol.

Building Natural Immunity - Part 2, Our Immune System Starts Developing in the Womb Our body is made up of trillions of microbes including bacteria and viruses, all of which form your microbiome and play a key role in how healthy you are. The microbiota in the gut especially plays an integral role in health and disease. The healthier your gut, the better your health. The direct connection of the gut to the brain means that your gut has a significant role to play in the function of your brain too.

So how do we develop our microbial populations and what influences

result in imbalance in our microbiota?

There are two main mechanisms whereby babies initially establish their

microbiota, and it all starts in the womb. The first mechanism is by internal vertical transmission from mother to foetus. The second mechanism is by external transmission through mode of birth and breastfeeding.

the composition of the microbiota of two-year-old human children. They found that the microbial communities in the gut of babies who were more withdrawn and less expressive around strangers were distinctively different from those of children who were more outgoing and expressive. Though the researchers admit that those characteristics in young children do not specifically relate to the development of anxiety and depression in later years, they hope to more conclusively explore that idea over the next three years of their study.

In part 3, we will begin to explore what causes aberrations in the development

of the human microbiome, and how disruption in the balance of the microbiota as early on as in the womb for the developing foetus can potentially lead to long term health consequences.

Contrary to commonly held belief, the womb is not ‘sterile’ - human

amniotic fluid, foetal membranes, cord blood and placenta have been shown to harbour unique microbial communities which are transferred from the mother to the unborn child and which may provide the initial inoculum for gut colonisation in the baby.

Research analysing the meconium of full term babies has also demonstrated that the new born gut has microbial populations that are already established, and the notion that the new born gut is sterile at birth is also an outdated concept.

External transmission of microbes occurs from the mother to the baby

via passage through vaginal birth, and as the neonate exits the birth canal it is further colonised by faecal microbes. There is evidence to suggest that maternally transferred vaginal or faecal microbes are unique in their ability to elicit immune maturation in the neonate, reducing their risk against developing allergic rhinitis, asthma, celiac disease and type 1 diabetes.

maternal microbial transmission. According to a study at UCLA published in JAMA Paediatrics, the researchers found that 30% of the beneficial bacteria in a baby’s gut come directly from breast milk, an additional 10% comes from skin on the mother’s breast.

Research has also shown that the balance of bacteria (or lack of it) in the intestine is a key factor in determining a person’s susceptibility to immune related diseases – and for example children who suffer with type 1 diabetes have demonstrated abnormalities in their gut microbiome.

However, with no leaves on the trees, sometimes it can be a bit easier to spot birds and animals amongst the branches.

January is a great time to spot red squirrels, as it is the start of the breeding season. Females need to weigh at least 280g to be able to breed, so it is crucial that they’ve managed to find the food stores that they diligently hide away in previous months to get them through the lean times. Females are only in heat for one day and all the males living nearby will come together and follow her, sometimes for several hours. Look for red squirrels running up and down trees and crashing through the branches in a mating chase. My favourite place to spot reds is the red squirrel hide at Kielder Waterside.
