Their grass-fed cattle aren’t plumped with unnatural hormones, so it takes extra time and effort to yield a safe, nutrient-rich meat. It was a natural step to fill the barn with other healthy fare: organic produce, eggs, natural healing products and more.

“Finding the right people to partner with is key. We are on the same mission: nutritious, healthier, cleaner food, so you don’t have to think so hard when you shop,” Kip says.

Barb and Steve Willis of Just Farmin’ first began gardening in their West Chester backyard when their son’s health required organic foods. They joined Liberty Farm Market in October, 2017. Barb encourages customers to ask questions.

“When it has to do with your life and your family, you need to ask about what you are putting on your table,” she says.

Liberty Farm Market offers Community Supported Agriculture (CSA), the only of its kind in our townships. Members invest in the farm with an advance payment, then share in the harvest. They enjoy the community of like-minded people almost as much as the fresh foods. Weekly pick-ups feel like parties, with members sharing recipes, ideas and laughter.

“You know who you are getting your food from here. You know where your meat is coming from,” Steve says. “I can make sure my kids and my grandkids— and anybody else’s kids around here—can get safe food.”

One section of the market is reserved for natural remedies and products: vitamins, herbs, essential oils, healing teas, crystals and more. Under the ownership of Christina Begley, Sandy’s Health and Wellness relocated at Liberty Farm Market in May. “It is usually some sort of struggle that leads you to this path,” Begley notes.

“People can look up any human ailment and find a natural, alternative treatment here. Nature has everything that we need.”

TROY’S CAFÉ FIVE CHEESE MAC ‘N CHEESE INGREDIENTS:

4 cups heavy whipping cream 4 oz. shredded cheddar 4 oz. shredded mozzarella and provolone blend 2 oz. shredded parmesan cheese 2 oz. shredded smoked mozzarella cheese 1 Tbsp. salt 1 tsp. granulated garlic 2 Tbsp. of corn starch ¼ cup of cold water 16 oz. of penne pasta (mini penne if you can find it) DIRECTIONS: In a saucepan slowly warm the cream until it comes to a simmer. In a separate small bowl mix your cornstarch and cold water with a spoon or fork until the cornstarch is completely dissolved in the water. While whisking the cream, add the cornstarch/ water mixture to thicken the sauce. Slowly add all the cheese while continuing to whisk.

When the cheese is completely incorporated into the cream add your salt and garlic. Set aside to cool.

Cook the pasta in lightly salted water; drain, rinse and set aside.

In a large mixing bowl add the pasta. Pour the cheese sauce over the pasta and mix with a spoon until completely coated. Transfer the creamy pasta into a casserole dish.

TOPPING:

+ 4 oz. shredded parmesan cheese + 8 oz. Italian bread crumbs + ¼ cup olive oil Mix all the topping ingredients together in a bowl and completely cover the creamy pasta dish with it. Bake at 350 degrees for 45-55 minutes. The sides should start to bubble over Chef Van Tran preps for dinner at Troy's Café in West Chester.

10 YEARS AGO, REAL ESTATE PROFESSIONAL REMI JONES KNEW HE NEEDED TO MAKE A JOB CHANGE IN ORDER TO SUPPORT HIS FAMILY. “That’s how Remi J’s

was born,” says the proud owner with a smile.

While

the

recession

crushed his real estate

business in 2008, Jones says he was searching for alternative ways to make a living and decided to open a food truck.

“My wife wasn’t too happy because food trucks weren’t

popular yet,” Jones says with a laugh. “I was always watching cooking shows and saw food trucks on them. They were booming in California back then, but they hadn’t come here yet.”

Fast forward 10 years, Remi J’s Barbeque is among the oldest in the local food truck scene. Jones and his family live in Liberty Township and frequently attend local events and festivals with their signature smoked meat and gourmet sides—all of which is homemade.

“I cook everything. It’s hard to leave your product in the hands of someone else,” Jones explains. “I’m probably one of the very few barbeque trucks that actually has a wood smoker. I don’t use charcoal or a lighter fluid, we use a real wood smoker. And when people start seeing CONTINUED >

ribs come off that smoker, they know they’re tender and ready to indulge.”

The master chef says his gamble to embark on an entirely new career path has paid off, but it wasn’t without a stressful beginning. His wife was pregnant with their first daughter when they opened the food truck in April 2009, which was originally in an RV. “It was just plain scary,” Jones says of the new beginning.

Though the pair struggled in the beginning, their business took off as food trucks grew in popularity. Today, their two daughters are part of the family business, and soon Jones plans to market his specialty barbeque sauce to local grocers. Though his work smoking meats and creating sauces is a far cry from his time in the real estate profession, Jones says he wouldn’t change a thing.

“I wanted to build a business in the community I was living in,” Jones says of his Liberty Township-based truck. “I love being able to get close to my customers. I know their aunts, their uncles, their kids. And people love food trucks.

You see this truck driving by, it’s all dressed up and you smell real food coming from it. Food trucks really appeal to people’s senses.”
