As Summer is in full swing, activities a plenty, I am thinking not only about how I am spending my time, but with whom I am spending my time. As we put together this magazine every month, community is the basis for everything we do and create, from telling the stories of our fellow community members, fostering connection, gathering together, and supporting our local contributors who make these stories come to life.
Beyond community, I have also been focused on connection as a through line of the stories we tell, not just this month, but every month. This month we are telling stories of connection to family, music, home, animals, sport, the earth, and even your own body and wellbeing.
As I have been taking photos for our publication for almost a decade, I have met so many amazing people, helped tell incredible stories, and created long-lasting relationships. I am so beyond grateful to be a part of this community. So, as we continue on this year, community and connection are the two words that I keep coming back to as a reminder of how I want to spend my time, because after all, these are the things that bring continued meaning and

As the old adage implies, you often do *not* want to know how the sausage is made. And while the process of creating sausages for Lottie’s Meats is complex, it’s because they’re prioritizing taste, transparency, and responsible sourcing for their high-quality ingredients.
“I can rattle off every single ingredient in every single sausage,” says Chelsey Maschhoff, Co-Founder of Lottie’s Meats.
For those unfamiliar with her work, Chelsey Maschhoff is the former sous chef of the acclaimed Annette, and she trained at the Culinary Institute of America. How it's made isn’t just a point of pride in her work—it’s actually a nod to her roots growing up on a family pork farm in rural Illinois.
Along with her sister and Co-Founder, Cassie Maschhoff, whom she refers to as the “brains and logistics,” Chelsey Maschhoff began the business in 2024. This was not their first sister-led venture, though. From classic childhood lemonade stands to a bakery for the farm employees, the Maschhoff sisters have been entrepreneurial from an early age and credit a lot of their work ethic to their upbringing.
They didn’t plan to get into the family business, and their parents encouraged them to explore other options outside of agriculture. After finding success in the culinary and tech worlds, Chelsey and Cassie Maschhoff felt it was time to come together for their next chapter and to reintroduce pork to America in a fun, new way.
“It felt like a now-or-never thing for us to do this together,” says Cassie Maschhoff. “We told ourselves we can always go back to our former careers, but it will only get harder for us to try.”
In her time at Annette, Chelsey Maschhoff began using the family’s pork to create sausage with whole muscle cuts, like loin and shoulder. Today, these same high-quality cuts create a lean, nutrient-dense, and delicious product that even her twoyear-old son eats almost daily.
“It’s been heart-mending for me,” says Chelsey Maschhoff. “Our grandparents got to see us build something before they passed on—and our parents are finally proud of us.”
The last part is clearly a joke, but thanks to Lottie’s Meats, they get to continue working with and sourcing from the family farm. The Maschhoff sisters love that by doing so, they’re able to bring their consumers 100% traceable products that are sustainable, responsible, and meaningful.
The agriculture industry as a whole finds itself in the middle of the climate conversation, and they welcome that open dialogue and opportunity to learn. Part of the reason they’re so passionate about pork is that it puts off significantly fewer emissions than beef or lamb. Nearly every part is utilized, and there are opportunities for circular use. Here in the US, it’s behind chicken and beef, but globally, it’s the most consumed animal protein in the world.
In bringing Lottie’s Meats to market, it was important to them to speak to female consumers directly. In researching the category, Cassie Maschhoff found that three-quarters of women identify as the primary household shopper, but you wouldn’t guess that looking at the meat aisle currently. Naming their company after their spunky, free-spirited great aunt, who stars in the family lore, felt like a meaningful way to accomplish their goal and keep their family and their farm in the conversation.
They’re a proud member of 1% For The Planet, which means 1% of their sales go to environmental organizations of their choosing, like The Conservation Alliance and World Central Kitchen. These partners help further their efforts to offset their environmental footprint and improve the economics of rural and female-run farms, kitchens, and ecosystems.

in Northern California, the Pacific Northwest, Chicago, Milwaukee, and St. Louis. Each of their expansions has been intentional, dropping into communities they already know and ensuring they can continue to deliver a consistent product, whether you’re ordering a sausage breakfast sandwich at Get Right’s or picking up a pack of Lottie’s Bratwurst from Marczyk’s.

For his new culinary concept, the Crudo Cart mobile raw bar, Denver chef and caterer Dane Hiett sourced a 1940s horse trailer through a vintage dealer and asked Wyoming-based Tipped Tavern Trailers to design its interiors. Clean yet visually striking with glossy white subway tile, wood accents, and navy blue cabinetry, Crudo Cart is the petite version of a modern seafood restaurant you’d find somewhere along the Atlantic or Pacific. “It functions beautifully while still looking elevated,” Hiett says.
A Seattle native, Hiett grew up with a love for seafood and a passion for the creative energy of the hospitality industry. The Crudo Cart is his love letter to both. “It’s all about creating connection,” he says. “I love the idea of setting the tone for people’s most meaningful moments.” Hiett’s mobile raw bar brings fresh oysters, lobster, and ceviche dishes to weddings, cocktail parties, and more across Denver, Boulder, and the Western Slope. Here, Hiett chats more about his vision for Crudo Cart.
WHERE DID YOU FIND INSPIRATION FOR CRUDO CART?
Crudo Cart came from a mix of wanting to bring a luxury raw bar experience to unexpected places and my love of coastal food culture. Growing up in Seattle, we had access to some of the best oysters and seafood. I wanted to bring that same freshness to Denver, but in a way that feels distinctly Colorado.
We always try to source what we truly love and would want to eat ourselves. From Northwest Pacific oysters to Santa Barbara uni, our West Coast offerings are all about freshness and flavor. We also bring in East
Coast standouts like Beau Soleil oysters to round things out. It’s a thoughtful blend of both coasts, with an emphasis on quality and seasonality.
Absolutely. We tailor it to each event and client, from classic oyster bars to more adventurous crudo options. That said, there are a few staples that people always request: East and West Coast oysters, chicken liver pâté with bacon jam, lobster steam buns, and at least one signature crudo.
Weather and transportation are two of the biggest challenges, especially when you’re dealing with raw seafood. We’ve built in systems to keep everything cold, safe, and visually beautiful, even in tough conditions. It’s taken a lot of testing and fine-tuning, but we’ve created a setup that’s mobile, reliable, and built for Colorado.
We’ll go just about anywhere: Denver, Boulder, Aspen, Telluride, Vail, you name it. We’re used to operating in all four seasons, so we adapt our logistics depending on the terrain and weather.
It’s more than just a food station — it’s an experience. The visual presentation, the freshness of the seafood, and the personal interaction with our staff all help elevate the event. Guests are always drawn to it, and it becomes a natural conversation piece. It brings a little East and West Coast magic to the mountains or wherever we’re parked.

Local darling Portal Themaculture has popped up behind Nurture Wellcare Marketplace in the Highlands, located at 2924 Federal Boulevard. A perfect addition to the already robust offerings of Nuture, which includes strength training, yoga, pilates, halotherapy, and now, sauna and cold plunge.
Portal was founded by Rory MacMurdo and Will Dresher, who focus on clean, beautiful design and creating spaces that
foster healing, relaxation, and community. The two met through a sauna club in Minnesota and wanted to share the many benefits of contrast therapy with more people. In addition to the Highlands pop-up, the duo is planning additional pop-ups in Rhino, Boulder, and Boise.
Sessions at Portal are generally one hour long, and Dresher recommends three 15-minute sauna sessions (these saunas are extremely hot, with temperatures exceeding 200 degrees Fahrenheit) with 2-3 minutes spent in their custom-designed cold plunge pools in between.
Come for the heat, stay for the tunes. Macmurdo comes from a music background, and the whole place is designed to feel like a dream pop natural high.
Originally a Scandinavian tradition that is now popular all over the world, sauna culture, whether in homes or public places, involves much more than simply bathing. In a sauna, people cleanse their bodies and minds, embracing a sense of inner peace.
Traditionally, the sauna has been considered a sacred space to rejuvenate and reset. Saunas come in many forms but are basically cozy wood-lined buildings or rooms heated by wood, electricity, propane, or infrared.
Said to aid in metabolism, weight loss, pain reduction, skin rejuvenation and mood—as well as improve immune function, sleep, stress management and relaxation—the sauna may not be the only reason that Finland has repeatedly ranked first in the UN’s World Happiness Report, but it is certainly a factor worth exploring.
