AOITORI is the community magazine for Japanese people in Belgium.
We met up with Ae Jin Huys, a South-Korean chef who was adopted by a Belgian family at the age of six. Later in life she rediscovered her Korean taste buds which lead to her journey into rediscovering Korean food. Ae Jin has been traveling yearly to Korea to learn more about the food and food culture. Eventually leading her to set up a career in the culinary world. She published two cookbooks, Kimchi and Proef Korea (Taste Korea, Korea Kuche) and with her company ‘Mokja’ she serves Korean food by catering, take-out, workshops and pop-ups. We had the pleasure to ask Ae Jin some questions about her Korean roots and vision on food.
