POSITION OVERVIEW

TheExecutiveChefleadsall culinaryoperations,includingmenu planning,foodproduction,staff supervision,andbudget management,whilemaintaining thehigheststandardsofquality, sanitation,andsafety.Reporting directlytotheGeneralManager, thisroleoverseestheSousChef, GameHouseManager,andall culinarystaff,ensuringefficientand cost-effectiveoperationsthat consistentlyexceedmemberand guestexpectations.

Thispositionrequiresexceptional cookingskills,strongleadership, andaprovenabilitytopairfood andwineeffectively.TheExecutive ChefcollaborateswiththeFood andBeverageDirectoronmenu creationandwineselection, developsrecipes,andestablishes foodpurchasespecifications Ideal candidateswillhaveaCulinary ArtsorHospitalityManagement degreewitheightyearsofrelevant experienceorequivalent qualificationsandademonstrated trackrecordofculinaryinnovation andteamleadership.

JOBDUTIES

Hires,trains,supervises,schedules,andevaluates staffworkinthefoodproductiondepartments

PlansmenuswiththeGeneralManagerforallfood outletsintheclubandspecialoccasionsandevents. Schedulesandcoordinatestheworkofchefs,cooks, andotherkitchenemployeestoensurethatfood preparationiseconomical,technicallycorrect,and withinbudgetedlaborcostgoals

Approvestherequisitionofproductsandother necessaryfoodsupplies.

Ensuresthathighsanitation,cleanliness,andsafety standardsaremaintainedthroughoutallkitchen areas

Establishescontrolstominimizefoodandsupply wasteandtheft

Safeguardallfood-preparationemployeesby implementingtrainingtoincreasetheirknowledge aboutsafety,sanitation,andaccident-prevention principles

Developsstandardrecipesandtechniquesforfood preparationandpresentationthathelptoassure consistentlyhighqualityandtominimizefoodcosts; exercisesportioncontrolforallitemsservedand assistsinestablishingmenusellingprices.

Preparesnecessarydataforapplicablepartsofthe budget;projectsannualfood,labor,andothercosts andmonitorsactualfinancialresults;takescorrective actionasnecessarytohelpassurethatfinancial goalsaremet.

Attendsfoodandbeveragestaffandmanagement meetings

ConsultwiththeHouseandSocialcommitteesabout foodproductionforplannedspecialevents

Cooksordirectlysupervisesthecookingofitemsthat requireskillfulpreparation.

Evaluatefoodproductstoensurethatquality standardsareconsistentlyattained

Plansandmanagestheemployeemealprogram. Developpoliciesandprocedurestoenhanceand measurequality;continuallyupdatewrittenpolicies andprocedurestoreflectstate-of-the-art techniques,equipment,andterminology

Recruitsandmakesselectiondecisions;evaluatejob performanceofkitchenstaff;coaches,rewards,and disciplinesstafffairlyandlegally.

Recommendscompensationratesandincreasesfor kitchenstaff

Establishesandmaintainsaregularcleaningand maintenancescheduleforallkitchenareasand equipment.

Providestrainingandprofessionaldevelopment opportunitiesforallkitchenstaff.

Ensuresthatrepresentativesfromthekitchenattend servicelineupsandmeetings

Motivatesanddevelopsstaff,includingcross-training andpromotionofpersonnel.

Regularlyvisitsthediningareatowelcomemembers. Hoststastepanelstoassessthefeasibilityof proposedmenuitems

Reviewsandapprovesproductpurchase specifications

Coordinateswithaccountingtomaintainaccurate andtimelyinventorypractices.

Monitorstheordering,receiving,andinventorycontrol programforfoodproductsandsuppliestoensure properpurchasequantitiesandprices

Establishesbuffetpresentations

Maintainsphysicalpresenceduringtimesofhigh businessvolume.

Implementssafetytrainingprograms;manages OSHA-relatedaspectsofkitchensafety

Understandsandconsistentlyfollowsproper sanitationpractices,includingpersonalhygiene practices.

Undertakesspecialprojectsasassignedbythe GeneralManager.

RESPONSIBILITIES

Overseesallfoodproduction,includingthatsoldin restaurants,banquetfunctions,andotheroutlets.

Developmenus,foodpurchasespecifications,andrecipes. Supervisesproductionandstaff.

Developsandmonitorsfoodandlaborcostsandbudgetsfor thedepartment

Maintainsthehighestprofessionalfoodqualityandsanitation standards.
