POSITION OVERVIEW

TheExecutiveChefatCorpusChristiYacht Clubservesasthevisionaryandhands-on leaderoftheClub’sculinaryoperations.This keyleadershiproleisresponsiblefor designingandexecutingseasonallyinspired menusthatreflectbothcreativityand memberpreferences

TheExecutiveChefischargedwith developingpurchasingspecifications, standardizedrecipes,andoperating procedurestoensureconsistency,quality, andcostcontrol.Thisindividualwilllead, mentor,andinspireadedicatedculinary andpastryteam

JOBDUTIES

Hires,trains,supervises,schedulesandevaluatesthe workofmanagementstaffinthefoodandpastry productiondepartments

PlansmenuswithF&BManagerforallfoodoutletsin theclubandforspecialoccasionsandevents

Schedulesandcoordinatestheworkofchefs,cooks andotherkitchenemployeestoensurethatfood preparationiseconomicalandtechnicallycorrect andwithinbudgetedlaborcostgoals

Approvestherequisitionofproductsandother necessaryfoodsupplies

Ensuresthathighstandardsofsanitation,cleanliness andsafetyaremaintainedthroughoutallkitchen areasatalltimes.

Establishescontrolstominimizefoodandsupply wasteandtheft

Safeguardsallfood-preparationemployeesby implementingtrainingtoincreasetheirknowledge aboutsafety,sanitationandaccident-prevention principles.

Developstandardrecipesandtechniquesforfood preparationandpresentationthathelptoassure consistentlyhighqualityandtominimizefoodcosts; exercisesportioncontrolforallitemsservedand assistsinestablishingmenusellingprices.

Preparesnecessarydataforapplicablepartsofthe budget;projectsannualfood,laborandothercosts andmonitorsactualfinancialresults;takescorrective actionasnecessarytohelpassurethatfinancial goalsaremet.

Attendfoodandbeveragestaffandmanagement meetings.

Consultswiththeeventplanneraboutfood productionaspectsofspecialeventsbeingplanned Cooksordirectlysupervisesthecookingofitemsthat requireskillfulpreparation.

Evaluatefoodproductstoassurethatquality standardsareconsistentlyattained.

Interactswithapplicablefoodandbeverage managerstoassurethatfoodproduction consistentlyexceedstheexpectationsofmembers andguests

Plansandmanagestheemployeemealprogram Developspoliciesandprocedurestoenhanceand measurequality;continuallyupdateswrittenpolicies andprocedurestoreflectstate-of-the-art techniques,equipmentandterminology

Recruitsandmakesselectiondecisions;evaluates jobperformanceofkitchenstaff;rewardsand disciplinesstaffinafair,ethical,andlegalmanner. Recommendscompensationratesandincreasesfor kitchenstaff.

Establishesandmaintainsaregularcleaningand maintenancescheduleforallkitchenareasand equipment

Providestrainingandprofessionaldevelopment opportunitiesforallkitchenstaff. Ensurethatrepresentativesfromthekitchenattend serviceline-upsandmeetings

Motivatesanddevelopsstaff,includingcross-training andpromotionofpersonnel

Periodicallyvisitsdiningareatowelcomemembers. Reviewsandapprovesproductpurchase specifications.

Establishbuffetpresentations

Maintainsphysicalpresenceduringtimesofhigh businessvolume

Implementssafetytrainingprograms;manages OSHA-relatedaspectsofkitchensafetyand maintainsSDSsineasilyaccessiblelocation. Understandsandconsistentlyfollowsproper sanitationpracticesincludingthoseforpersonal hygiene

UndertakingspecialprojectsasassignedbytheGM Maintainsaprofessionalworkenvironmentatall timesstressingethicalbehaviorwithall employees/members

RESPONSIBILITIES

Overseesallfoodproduction,includingthatsoldin restaurants,banquetfunctions,andotheroutlets.

Developmenus,foodpurchasespecifications,andrecipes. Supervisesproductionandstaff.

Developsandmonitorsfoodandlaborcostsandbudgetsfor thedepartment

Maintainsthehighestprofessionalfoodqualityandsanitation standards.

CANDIDATE QUALIFICATIONS

Bachelor’sdegreeinculinaryartsand/other HospitalityManagementdegreeandeightyears foodproductionandmanagementexperience;or 5years’relevantexperience;oranyequivalent combinationofexperienceandtrainingthat providestherequiredknowledge,skillsandabilities CertificationfromAmericanCulinaryAssociationor otherprofessionalhospitalityassociation.
