Try something healthy and new, high in protein and flavor but low on calories and trans-fats.

BLACK BEAN VEGAN BURGER yield +/- 8 Patties INGREDIENTS:

Can (15oz) black beans, drained Cup Quinoa Clove Garlic Shallot Red Bell pepper Yellow Bell pepper poblano pepper Tsp Cumin Tsp paprika

/2 Tsp Smoked paprika 1 Tbl Tomato powder 1 /2 Tsp Jalapeno powder 1 Cup Green Chili (canned) 1 Tbl Rice Wine vinegar 1 /2 Cup el pato Red enchilada Sauce 2 Cup Sourdough Bread Crumbs 1-2 Tbl Corn Starch — as needed S&p to taste

DIRECTIONS:

• Cook Quinoa and let cool.

• Toast Sourdough and robot coupe.

• Drain Beans and smash by hand about half smashed.

• Combine garlic, shallot, bell peppers, poblano and all dry seasoning and pulse in robot coupe.

• Combine black beans, quinoa, pepper mixture, el pato sause, vinegar and green chili and mix.

• Add bread crumbs and Corn Starch to mixture until it comes together.

• Season with S&p and taste.

• Form patties and freeze.

We have certainly been reminded that even in sunny Scottsdale, we still have winter here in Arizona as January and February had its fair share of frost delays – even as recent as March 1st. We hope we’re through it now and on to a beautiful March and April as we enter the bulk of our tournament season at the Club.

February played host to our stroke play Club Championships, all three of which boasted the largest fields in tournament history and produced well deserving Champions. Congratulations to our 2021 Overall Gross ladies’ Club Champion, Marci DuBois, and our Overall Gross Men’s Club Champion, erik Hanson, on their exceptional play and victories. Mark Reed takes home the honors as our Super Senior Gross Club Champion competing in his very first tournament as a ppCC Member.

All earned a place on the perpetual plaques in the Clubhouse, to which they are no strangers. Marci’s victory marks backto-back championships, as she successfully defended her 2020 title. erik earned his remarkable 14th Club Championship at ppCC! equally impressive, he becomes only the second player in ppCC history to win both the Men’s Senior and Regular Club Championships in the same year since Dave Rudolph, 2000-2001.

Congratulations are also due to all our Club Championship gross and net flight winners on their fine play. Complete results summaries are available in the Golf Shop. A big thank you to all who participated in this year’s Championships!

Our 2021 Compromise Cup (Couples Club Championship) saw paul and elaine Campbell find the winners circle as our Overall net Champions with Doug and pam potter taking home the Overall Gross Championship. now on to round three, Club match play championships are also

in full swing. We congratulate those of you who have been victorious in your first matches and look forward to crowning our 2021 Champions.

March also includes the two premier golf events on our Club calendar: Salida del Sol and Sunset Classic. Both events are fully subscribed, and we look forward to showing off the Club to your special guests.

PLAY FOR PINK 2021:

A GReAT SUCCeSS OnCe AGAin! Thanks to all our generous members for their participation in play for pink, which helped to raise $28,000 for the Breast Cancer Research Foundation.

100% of these funds go directly to this very worthwhile cause.

And thanks to the 110 golfers participating in the 9-hole tournament featuring a hole-in-one contest with a new porsche as a prize. Unfortunately, no winners this year.

For the first time, we had a beat-the-pro contest with Tyler manning the 9th hole and nathan on hole #11. Quite a few golfers walked away with some prize money!

Also new this year, a silent auction featuring wine, tequila, chef’s dinner at the Club and a golf cart for 25 rounds of golf.

nineRS neWS Spring finds the niners celebrating with its two major tournaments in March. plAY FOR pinK, held March 1st, was again a successful "fun/fundraiser" through supporting longer lives and better outcomes for people with breast cancer.

The full field of players took to the greens at scheduled tee times and enjoyed a Covid-distanced dining after. Our thanks especially to Denise Small for chairing this event for a fifth year with her group of great volunteers. She's a pro!!

Originally from Sugar land, Texas, i grew up on a golf course where i learned to love the game of golf. i stayed in the lone Star State for my college years at Texas A&M University and then the University of Houston, and have been in the valley of the Sun now for about 15 years. Our family – my husband, Jeff, and 7-year-old daughter, Jordyn – usually fills free time traveling, golfing, hiking, yoga-ing, coaching Jordyn’s soccer games, volunteering at ABC Animal Shelter and Boxer luv Rescue, and especially, spending quality time with family and friends.

i hope you are enjoying the great Arizona weather and all that our fabulous pinnacle peak Country Club has to offer. As promised, Doc Belitz and i will be communicating after each Board meeting to keep you informed regarding the direction of the Club. Our monthly Board meeting was held February 25, and the following are some of the discussion and action items.

• Members approved the Senior Bylaw change with 91% in favor to allow members to qualify for Senior status without consecutive years of membership. To qualify for Senior status, a combination of age plus years of membership must total 95 or more.

• Currently, the waitlist for membership exceeds 60, and with that in mind, the Board decided, effective March 1, 2021, to increase the initiation fee to $60,000 ($1,000 of which will continue to be equity).

• The big capital project scheduled this year is our bunker renovation; the Board will need to decide by March 30 whether or not to move forward.

The project will begin May 10 on the front nine and then move to the back nine on June 1. The back nine will stay open for play until June 1. One factor that will have to be decided by March 30 will be based on having adequate reciprocal golf opportunities for our members during bunker renovation.

The direction of COviD-19 will govern the availability of reciprocals and our decision. Our early indicators of COviD-19 and interest of area Clubs reciprocating with us are optimistic that the project will move forward.

We will continue to review and inform you all of a final decision in March.

• The ppCC audited financials are now available on the ppCC website.

• The Board approved a change in our fiscal year to September 30, effective this year. This adjustment will allow us to have the audited financial statement available before our annual meeting, which occurs in January of each year.

• it is wonderful to see us setting records each month on the rounds of golf played, and in keeping with that, please be aware of maintaining pace of play. A straightforward way to accomplish this is simply by keeping up with the group in front of you.

Our club calendar for March will once again be jampacked with our Signature Men’s and ladies Member Guest events. The ladies Salida Del Sol will run from March 9 through March 11, and the Men’s Sunset Classic will be held March 24 through March 27. Some of the regular social events have been reduced compared to previous years, and both events will be limited to competitors only to reduce the potential for crowding.

Weather permitting, we hope to use as much outdoor space as possible when conducting these events. please be advised, the Clubhouse (excluding fitness center) will be reserved for contestants only from the afternoon of Wednesday, March 24 through Saturday, March 27.

As the days get longer, our popular Wine Down Wednesday will adjust its hours and commence at 5:00 pM to 8:00 pM. This weekly event provides live entertainment, specialty wines and appetizers. An excellent midweek night out at the Club.

We continue to remind our Members of our dress code, which requires golf shirts to be tucked in at all times, no headwear for men unless in The Grill or on the patios, button-up shirts may be worn untucked. Face coverings are required to be worn over the nose and mouth when inside the Clubhouse until seated and at all times in the Fitness Center.

We sincerely appreciate everyone’s cooperation with these requirements and look forward to seeing you at the Club soon.
