Sodexo recently announced that I have the privilege of leading the company’s Government business segment in North America, which is both an exciting opportunity, and a tremendous responsibility. It seems fitting that this happens as we move into a new calendar year, a time when people frequently take stock of their own lives and identify prospects for self-improvement moving forward. It also seems fitting that our inaugural 2022 issue of The Brief, the first in which I get to pen this introductory letter, is focused on the idea of evaluating how we do business, both personally and collectively as a grouping serving the military and government agencies, and how we can leverage resources to improve what we do. Throughout this issue, you will find stories showcasing different ways our operations and our team members are striving to improve. Highlights include a training curriculum promoting operational excellence, an overview of some of the many ways Sodexo invests in our people, a newly developed program to help U.S. Air Force cooks to improve their culinary skills and the many benefits of mentoring, to name a few. This issue of The Brief, like those before it, reminds me of why I’m so proud of the work we do and the outstanding team members I’m now honored to lead.

MENTORING:

Could That Be Your Intention for 2022? By Jodi Davidson, Vice President, Diversity Equity & Inclusion

When it comes to goal setting for a new calendar year, many of us establish resolutions based on the flaws we must resolve to change. An alternative is to focus on setting intentions regarding what we want to achieve. This positive and subtle shift in mindset can make all the difference when it comes to staying the course and truly achieving our goals. As we embark on the new year, now is the perfect time to set an intention for 2022. Perhaps you want to learn a new skill, generate greater fulfillment and purpose, expand your network, or become more resilient. If any of these ring true, mentoring may provide the support you’re looking for. Having a committed listener who can help you achieve your goals… now that can be a game changer, both in times of struggle and celebration! I recently had the pleasure to reconnect with a Sodexo leader who helped us get our mentoring practices off the ground in the early 2000s. I clearly remember him saying, “If you’re comfortable with your mentoring partner, that’s great! But if you’re not comfortable and do the work to become comfortable, you’ll reap even greater results than

you could have imagined.” This same leader accepted my invitation when I asked him to become my mentor and for that I will be forever grateful. Perhaps, like me, a reconnection with a mentor from your past is in order. Or you may want to establish a new mentoring relationship in which case, it may be hard to know where to begin. The best place to start is to scan for colleagues who have the expertise you’re seeking, and just as important have qualities you admire and respect. If no one comes to mind, you can reach out to your entrusted network for recommendations. While it may be a bit intimidating to reach out to a prospective mentor, they’ll likely be flattered and accept your invite. But if you take the plunge and they turn you down, please don’t be discouraged. They may be beyond capacity, have something going on personally, or feel their expertise isn’t fully aligned with what you’re seeking, in which case they could broker another introduction. If you’re resourceful, you’ll surely find yourself a partner! Once connected, remember what my mentor said, “… if you’re not comfortable and do the work

to become comfortable, you’ll reap even greater results than you could have imagined.” So, keep an open mind as you get acquainted. Bringing your whole self to the relationship should not be confused with chronic venting which I think we can all agree will suck the energy right out of the relationship. Instead, build a mutually beneficial partnership by remaining committed, focused, consistent, and trustworthy. Best wishes as you establish a transformational and rewarding mentoring partnership. Looking back twelve months or even 20 years from now, you and your mentor will be grateful for the intention you set at the start of 2022 and for all you accomplished together!

ADVANCED CULINARY TRAINING PROGRAM By Alyce Yokoi, Senior Marketing Manager

One of the many ways Sodexo brings additional value to partners is by leveraging the company’s considerable collective culinary expertise. One of the timelier examples of this benefit in action is the launch of the Learning To FLY: Advanced Culinary Training Program. Learning To FLY is a comprehensive six-month curriculum developed by Sodexo specifically for the United States Air Force. It is designed to provide selected Airmen with additional knowledge and skills to enhance their basic culinary training. Participating Airmen benefit in two separate ways – not only does the program provide them with training and an advanced skillset that allows them to better serve their fellow Airmen in their current assignments, but it also gives them a head start on their post-military career in the culinary arts. Learning To FLY students acquire intensive practical experience with a focus on foundational and fundamental skill development. This informative and engaging course includes: • S ix months of hands on and classroom training with funfilled interactive activities • B i-weekly classes hosted by Sodexo in their local dining facility, with sessions lasting one to two hours. Lessons include training on Knife Skills, Marinades & Rubs, Roasting, Braising, Baking, Presentation Skills, and more. • S tudents will have the special opportunity to showcase their learned skills during a graduation ceremony to base leadership at the end of the course. Congratulations to the first group of graduates at Barksdale, Beale, and Seymour Johnson Air Force Bases!! Learning To FLY was so successful in year one that the team plans to expand the educational program at five additional Air Force locations in 2022. WINTER 2021-2022 |

It’s no secret, 2020 and 2021 have been some of the most challenging years we’ve faced in recent history. Few populations are as affected by COVID-19 as service members and their families. These brave men and women are on the frontline battling the pandemic daily, which takes both a personal and professional toll. Recognizing that a little help can go a long way, especially during the hectic and costly holiday season, Sodexo Government team members joined forces with members of HONOR, Sodexo’s military, and veteran-focused employee business resource group, to help make the holidays a little brighter for military families at Fort Lee in Virginia. For the second consecutive year, Government and HONOR jointly supported the Holiday Helper Association (HHA) and its considerable efforts to ensure the holiday season is memorable for wounded warriors and nominated military members facing difficult times. HHA accomplishes this by collecting donated new toys and creating a Fort Lee Holiday Helper Toy Store, allowing qualifying military families to shop there free of charge. Government and HONOR members partnered with the HHA to fulfill holiday gift wish lists on Amazon. The purchased toys are then shipped directly to the Association and are used to stock the toy store. Thanks to generous participants, Sodexo provided more than 100 presents to HHA for military families. In doing so, the company helped the organization meet its goal – that no military child goes without!

WHAT DOES FEDERAL RETAIL DINING LOOK LIKE IN 2022?

While life is starting to feel ‘normal’, even with COVID-19 still very present, many aspects of daily life have changed. Virtual learning and working, increased use of technology, delivery services, and enhanced health and safety protocols create new habits and standards for the way people go about their lives. As the Omicron variant subsides, and return-to-work protocols are redefined, what will a return to a physical office space look like for a workforce that has been working virtually for the last two years? Sodexo, the nation’s largest federal foodservice provider, has been strategizing to ensure it meets the needs of customers, as they return to its dining facilities. Armed with operational best practices from previously reopened locations and supported by a Federal Retail Reopening Task Force assembled to ensure customers are returning to a 10

dining experience that is new and exciting, yet familiar, comfortable, and most importantly, safe, the company is aligned to meet and exceed expectations, despite the challenging circumstances. Safety is paramount to Sodexo’s entire strategy. Customers and employees alike need to feel that they are in a safe and clean environment. Plexiglass barriers, frequent cleaning and sanitizing protocols, social distancing recommendations, and touchless payment options are all key elements of the safety enhancements customers will see when they return. Technology will play a big part in how they dine as well. With customers’ increased awareness and comfort level in using mobile apps to order and pay, patrons will have the ability to utilize Sodexo’s BITE app to do just that in dining locations. Additional features of


FEDERAL RETAIL Reopening Task Force It’s early 2022, which means much of Sodexo’s federal retail business has been closed for nearly two full years due to COVID-19. Not a group to rest on its laurels, the company developed a Federal Retail Reopening Task Force, a team that has been eagerly preparing for these units to reopen in early 2022. This team, comprised of subject matter experts from: Marketing, Culinary, Health & Safety, Finance, Human Resource, Training, Senior Leadership, Systems, has been working diligently to design a plan that allows for the strongest possible reopening strategy. The task force has been meeting weekly to discuss various topics

Ordering ahead also addresses the previous element, safety, by reducing the time any customer needs to be in the café. And of course, the food!! Sodexo will offer a new dining experience in onsite cafes with Kitchen Works Co. and EAT. These two solutions look to give customers menus with familiar favorites and just enough variety and creative spark to keep things lively and interesting. These branded restaurants are custom designed for each location

including health and safety measures, culinary and operational updates and efficiencies, café environment updates, technology enhancement, unit targeted ramp up plans, and communication schedules to share this information with Sodexo clients and customers. Detailed training plans are also being designed to ensure that managers and employees are onboarded and provided the tools for a successful reopening. Health and Safety is a priority, with various new personal protective equipment and cleaning protocols being incorporated to the everyday operation. Units will be rebranded with updates such as Kitchen Works Co and

with speed, convenience, value, and health & wellbeing in mind to address customers’ top priorities. Reopening strategies are designed in partnership with each client agency and are complementary to their overall strategy for their employees to return to work, incorporating their own timelines and procedures. Sodexo continues to adapt and revise its plans for each unit based on this information and several additional factors including labor and supply chain challenges, and COVID-19’s continued unpredictable nature.

Technology is being designed to include new point of sale with self-checkout capabilities and the Bite App with Mobile Ordering and contactless payment. Additionally, the task force monitors the status of each unit with clients weekly to ensure that Sodexo’s phased reopening approach best fits client and customer needs, with plenty of support from internal resources. This task force and its talented members developed an approach that ensures Sodexo is fully prepared to give its team members, clients, and customers the best possible reopening experience!

The company eagerly awaits the opportunity to welcome customers back to operations and is working diligently now to ensure they are ready to do so.

Sodexo Government is Continuing its Work to Exceed Customer Expectations! By Joshua M. Saine, Senior Operations Support Manager

While new calendar years often mark a start to new things, Sodexo Government is continuing its work to exceed customer expectations which began in 2020 and continued into 2021 with the Mise en Place initiative. Named for the culinary term which translates to “everything in its place,” Sodexo’s Mise en Place (pronounced Meez ahn Plas) is an internal campaign developed by the segment to ensure optimum performance of contract requirements, fiscal responsibility, health and safety, and quality food programs. The training program focuses on the seven steps of the Culinary Planning Process (CPP) to establish universal standards to support the contract. The goal of the program is to drive customer satisfaction while managing the middle of the page. Mise en Place is truly an operational mindset – the kind of approach that requires managers to live and breathe the process. Therefore, a key component is

the extensive training process Sodexo managers are required to attend and be actively engaged in. Throughout 2021, as the program launched and took wing in United States Marine Corps operations on both coasts, the Government Marketing team assembled training cohorts that required manager participation. In October 2021, the fourth cohort successfully completed Mise en Place training. This cohort featured 44 participants from the West Region of Sodexo’s USMC operations, representing 19 individual West Coast mess halls. Each participant completed the required 12-hour training session, totaling 528 hours of service-driven training. A major commitment of time focused on self-improvement and operational excellence. In total, the Mise en Place program has trained 165 mangers from the bi-coastal regions. Participants have dedicated 1,980 hours of cumulative time while the four facilitators have provided 336 hours of training. Mise en Place will continue into 2022. Not only is the fifth cohort coming soon, but plans are in place to expand the program to retail contracts.

U.S. Capitol

Gingerbread Replica In December 2021, Sodexo celebrated the 5th annual presentation of the U.S. Capitol Gingerbread Replica from its talented team at the U.S. House of Representatives. The Gingerbread Capitol was situated outside the House Majority Leader’s office at the Memorial Door in the U.S. Capitol Building.

The 2021 replica was made in record time, being built by the team in under one week out of the Longworth House Office Building Catering kitchen. The team included Area General Manager Fred Johnson, Area Executive Chef Saipin Kumlor, Catering Cook Thidarat Nidjhoho, and guest pastry chef Stephani Charns (who has helped in previous years). 14

The replica was an impressive structure – more than five feet long and three feet tall. The 2021 edition also included a replica of the U.S. Capitol Tree in front, surrounded by celebrating gingerbread people and nutcracker statues. The replica made its debut on Monday, December 6, 2021, and was on display until the end of the month. Although the Capitol Building was closed to the public during that time, the replica was on display for all members and staff to enjoy.

Two d e s a B t n a l P s e p i c e R From the Humane Society of the United States Event at Marine Corps Air Station Miramar By Jesse Kraft, Senior Area Culinary Manager Last May, Sodexo’s U.S. Marine Corps (USMC) West Coast operations hosted an event at Marine Corps Air Station Miramar in California which brought together 18 foodservice professionals from all six USMC installations in the region, including two active-duty Marines, for a special plant-based recipe training session and tasting led by the Humane Society of the United States (HSUS). All recipes made during the training session were vegan, most of which substituted plants for animal proteins. For instance, a lobster salad tostada used hearts of palm instead of lobster. The event was a tremendous success – resulting in attendees learning about and making 20 plant-based dishes for the 45 people fortunate enough to attend the tasting at Miramar’s Mess Hall 5500. Two of the most popular dishes were the Lobster Salad Style Ceviche Tostada and the Shiitake & Scallion Soba Noodles. For those wanting to incorporate plant-based dishes into their diet or are just curious to try something new, these two dishes are fun and delicious starting points.

DIRECTIONS 1. Bring 4 gallons of water to rolling boil 2. Add pasta to boil water. Stir while returning to a boil. Reduce heat and simmer for 5 to 6 minutes or until just tender. 3. Drain pasta well and place in an ice bath, remove and drain well, toss the pasta with 1-1/2 oz of canola oil and first listed sesame oil. 4. Reserve for remaining steps. 5. In a large sauté pan heat 2nd listed sesame oil and canola oil over medium-high heat 6. Add ginger and garlic. Sauté until fragrant, stirring frequently, about 30 seconds. 7. Add Shiitakes and sauté, stirring often, about 3 minutes.

8. Add water, soy sauce, sugar and sriracha. Cook for another 2 minutes, until liquid starts to evaporate. 9. After mixture reduces slightly, add cabbage. 10. Cook and stir occasionally, until cabbage is softened but still has a crunch to it and sauce clings to the vegetables, about 2 minutes. 11. Add vegetables to the bowl with the soba noodles and toss well. 12. Place 10 oz of noodle in serving bowls, Sprinkle with sesame seeds and sliced green onion. 13. Serve

It is hard to believe that it has already been two years since Sodexo’s

Government segment launched its Employee Spotlight weekly recognition program. The initiative was born out of a desire to recognize and appreciate employees and teams for their contributions to each other, Sodexo customers, and communities served we serve during the initial impact of the COVID-19 pandemic. The Employee Spotlight has evolved over time to capture and showcase segment safety programs, team e ngagement competitions, new employees, special messages from leadership, recognition from clients and much more. The Employee Spotlight succeeds because it is a simple, virtually effortless approach that highlights teams and their inherit value to the organization vs. just recognition.

I t ultimately showcases the considerable worth each honoree brings to the Government team.
