Happy New Year! Our new year started on a Saturday, and what better way to celebrate than with a delicious brunch menu! We featured Chicken and Waffles, Eggs Benedict, Balsamic Grilled Salmon, and of course, some of the traditional New Years sides to pair with it. Transactions: 8,285 Sales: $10,139

Martin Luther King Jr. Day On January 17th, we paid tribute to Doctor Martin Luther King Jr. with our dining facilities decked out in patriotic décor and a special lunch menu offering Airmen and guests Cajun Chicken with Peach Chutney, Lemon Dill Cod, Pork Chops with Onions, along with an array of delicious sides. New Menus On January 24th, we launched a menu refresh across all our locations for the hot entrée station, breakfast station, and salad bar. The entrée station now features a Mindful by Sodexo entrée plate four times a week during lunch, which features a lean center of the plate protein with healthful sides that is 600 calories or less. For more info about the Mindful program, check it out online here. Each Mindful plate sign features the ingredients, nutrition, a photo of the plate, and a MyFitnessPal barcode. We introduced new breakfast specials featured each morning and a new Beyond Meat Breakfast Gravy. The salad bar now rotates four new Seasons themes that incorporate featured toppings and composed salads. These themes include Mediterranean, Southwestern, Asian, and Italian.

Limited Time Offers We continuously build variety into our menus by offering limited-time offers (LTOs) at our deli, grill, pizza, and graband-go stations. Last month we provided statistics on how the variety throughout the year includes upwards of 35% healthy offers and these LTOs are no different, with two of the LTOs being plant-based and two from our Mindful recipe collection. Below you can see a comparison of January’s LTO’s transactions compared to the last time they ran. A majority performed similarly, except for the usual favorite, the Nashville-Style Hot Chicken Sandwich. We will evaluate and continue to make changes as our Airmen let us know what they want to purchase.

Recognition and Awards We are celebrating and congratulating Mary O’Neal, who is celebrating 35 years of Food Service at Barksdale AFB! We are honored to have such a dedicated and hard worker on our team! Thank you, Mary. We are proud to have you on the team!!

Congratulations to Ryan Gonzales and Josh Graham at Dover AFB! Josh was awarded Chef of the Quarter and 2021 Chef of the Year, and Ryan was awarded Chef of the Month in November for his outstanding performance during the holiday meal. Great job, Ryan and Josh! Thank you for all you do!

Congratulations to our Food Service Professionals of the Month in January, A1C Veronica Meza and Rachel Poch at F. E. Warren AFB. Thank you for your hard work and dedication!

We are excited to introduce a new recognition program that will help our teams build increased morale, recognition, and pride on a daily basis in our dining facilities. The idea is simple, with a small identifier card beside our entrees featuring the cook of that dish with their photo, name, and their favorite cuisine. Examples of the program launch at Seymour Johnson AFB are featured here.
