The team composed of Samuel Sirois and Gilles Herzog, cooking teachers at the Institut de tourisme et d’hôtellerie du Québec (ITHQ), completed by Léandre Legault-Vigneau, clerk and graduate, officially qualified for the grand final, finishing in 2nd place at the Bocuse d’Or Americas, behind the United States and ahead of Chile. This international component took place on July 13 and 14 in Santiago, Chile.

service and in shopping centres. In the dining room, it can be used at the reception desk or to assist waiters in setting and serving tables.

We saw them a lot in Asia and in some countries of the Arabian Peninsula, and now robots are also coming to North America. In Québec, the number of restaurants with such a device is still very small, but could grow within the next few years. A local company, CLS Info, has decided to tackle this new market.
“We do most of our business with take-out orders. We are often overwhelmed in the evenings and the staff doesn’t always have time to properly service the tables. It makes our job easier for sure! Pudu (the name they gave it, which is the name of the company that produces the unit) is a great Forhelp!”Lachapelle, the robot is also a good way to attract customers.
“We’re a sushi restaurant, so we like everything Japanese, especially new technology,” she says. “We think it’s also a good way to differentiate ourselves.” TECHNOLOGIES
While the vast majority of customers are thrilled with the idea of being served by a robot, Gauthier says many people are still uncomfortable with technology doing the work of a human being.

“In some cases, the staff on the floor can be somewhat reluctant to have a robot come in, but their attitude quickly changes when they realize the help the robot can bring. And the robot doesn’t ask for its share of the tip,” jokes Frédéric Gauthier.

As labour shortages hit the restaurant industry hard, more and more establishments are turning to robots to fill the void.
Up to now, the Saint-Constant-based company specialized in point-of-sale systems, sales recording modules, cash registers and software solutions for the restaurant industry. It recently added robot waiters to its range of services. The devices quickly became very popular.
The cat-like device is able to bring in food and beverages and return the dishes. The robot, which is about one metre tall, has four floors equipped with sensory receptors. “People are often surprised to see a robot. The kids really like it. Some customers come back to show the robot to their child or their friends. However, some customers don’t like being served by a robot. This sometimes affects the amount of the tip. But in general, the customers appreciate it.”

Anne-Marie Lachapelle, manager of the Hiro Sushi restaurant, located in Chambly, Sheagrees.explains that the establishment she manages acquired this type of machine two months ago, to help the staff in the dining room. Since then, it’s been a great help in the dining room.

CLS Info offers two models of robot waiters that range in price from $10,000 to $20,000. According to CLS Info president, Frédéric Gauthier, they are an invaluable aid to the staff on the floor.
The robot waiter is not only a tool to help in the dining room, but also a wonderful marketing “Customerstool.are often intrigued by the robot, especially children,” says Gauthier. “People come in and take pictures and post them on Instagram. It’s a way to attract customers and many come back to the restaurant for that reason.”
As ingenious as the robot is, it does have its limitations: it cannot serve drinks, give customers their meals or replace missing tableware.
“There are now robots for sanitation, dish washing, bar service or kitchen service,” explains Frédéric Gauthier. In a few years, most establishments will have this type of equipment. It’s definitely the future!
“Whether it’s a green salad, a lunch salad or a poke, you can track the use of ingredients,” explains Dave Johnson.
“At first, it will be used in non-commercial or large-scale environments, such as healthcare facilities, cafeterias, commisary, convention centres, and catering and take-out services, he says. This robot is not intended for fine dining, but rather for high-volume production settings.”
“There are limits,” explains Frédéric Gauthier. “I don’t see a large dining room with only robots at the moment. We have to see it as a tool that can help the staff. Waiters will always be important. It’s just a new technology to make their job easier.”
WHAT ABOUT THE WAITER’S JOB?
“Because you know exactly what was used in the dishes, you can compare it to your inventory. You measure what you’re selling in a tangible way, so you can identify shortcomings like waste or poor Dexaitrimming.”isdeveloping robots that will perform other kitchen tasks related to grilling, baking, blending and beverage preparation. In particular, the Boston-based company is considering versions of robots that can handle grilling, pizza, drinks and plating. Dave Johnson is currently working on a robot that can turn a grill on, place food on it and flip it as it cooks. Then, topping a pizza and assembling the ingredients for a salad are not so different.

This robotic revolution will also bring changes in the kitchen. Robots have a place there too. The American company, Dexai Robotics, has recently developed a long-armed robot called “Alfred” for large-scale salad production and bowl Inpreparation.theshortterm,
Dexai founder and CEO Dave Johnson envisions “Alfred” doing many other menu-related tasks.
The robot uses a camera and learning modules, so it knows the difference between different types of cheese, vegetables and salad. It always selects the right ingredient. Integrated scales portion each ingredient according to the operator’s recipe.
It’s fair to assume that this phenomenon is here to stay and will probably even permeate the entire restaurant industry.
If this type of device is here to stay, so is the waiter’s job. While Anne-Marie Lachapelle is pleased with the help the robot gives her, she says nothing will ever replace a professional waiter.

ARQ Requests to Parties
The ARQ wants the Government of Quebec to permit restaurants to directly sell wine bottles they have in stock on site, as wine merchants do in France. After all, 71% of Quebec consumers would like to buy retail wine directly at the restaurant, according to an evaluation from the Montreal Economic Institute in 2020. 1
To combat the labour shortage, the ARQ is asking the future government to extend eligibility to simplified processing of foreign worker applications. It is advocating for the creation of an international recruitment program
Your Association is calling on the future government to abolish the duty stamp that must be affixed to all alcoholic beverage containers. In 2018, Bill 170 was to mark the end of this archaic method of control, but against all expectations, the duty stamp was reinstated in a bill passed in March 2020. Quebec is the only province in Canada to operate with such a system. In the midst of a labour shortage, it is highly counterproductive to have to assign an employee to individually verify the 200 bottles ordered from the SAQ to ensure that a state employee has not forgotten to stamp a bottle.

Firstly, the ARQ wants the future government to grant restaurateurs the right to establish tip-sharing agreements, if they so wish. Since 2003, section 50 of the Act respecting labour standards establishes that only employees receiving a tip can decide whether or not to introduce tip sharing in an establishment. The employer cannot participate in discussions on a tip-sharing agreement, they can only suggest an agreement. For many employers, adopting this practice would alleviate the wide disparity between the remuneration of kitchen employees and those in the dining room which is contributing to fuelling the labour shortage affecting our sector.
The ARQ is also asking for the 100% refundable tax credit on reported tips to be reinstated and for payments to be quarterly. Quebec is the only province in the country that considers tips left freely by customers as a salary. This means that employers must pay social contributions on tips. In addition to representing a tax disadvantage compared to the rest of Canada, there is a serious issue in budgetary predictability for employers, as tips are left randomly at the discretion of customers. No other industry than our own has to juggle this kind of variable factor that can profoundly affect a company’s annual budget, and over which the employer has no control.

To reduce environmentally harmful plastic waste, the federal Minister of Environment and Climate Change, Steven Guilbeault, issued regulations on June 20 to eliminate the use and sale of six categories of singleuse plastic items. To this end, checkout bags, cutlery, foodservice ware, ring carriers, stir sticks, and straws— made entirely or in part of problematic plastics that are difficult to recycle—will not be permitted to be manufactured in or imported into Canada as of next December. Sale of these items will be officially prohibited one year later in December 2023.
Additionally, to support Canadian businesses in transitioning to the prohibition on these single-use items, the federal government has provided two guidance documents, available online for consultation. The first guide, entitled Technical Guidelines, helps companies better understand the regulations, while adapting to them. The second document, entitled Guide for selecting alternatives, suggests more sustainable solutions to replace various single-use plastic products.
In recent months, many environmental measures to combat climate change have been announced by various levels of government. Several of them will affect the restaurant industry in the coming years, including the expanded deposit for all beverage containers between 100 ml and 2 L, coming into effect in May 2023, and the prohibition of some single-use plastics in Montreal as of March 1, 2023. The Government of Quebec also adopted the Stratégie de valorisation des matières organiques in summer 2020, which will be implemented in the coming months.

These measures may include maintaining a sufficient number of employees at all times, implementing a structured and adequate employee training plan, implementing an effective supervisory system, installing signs prohibiting consumption outside the terrace, etc.
Maintaining such measures will help control your customers on the terrace and prevent an offence from being committed, in addition to allowing you to be able to defend yourself if required.
