A BEHIND THE SCENES LOOK OF A CLUB CHEF

Onething about working in the hospitality industry, particularly in food and beverage that I’ve always appreciated is that no matter where you go in this world, everyone has to eat. Our industry is so vast, ranging from one corner of the world to another. The same can be said about the numerous sectors within our industry that a chef can find themselves in, from private clubs, large resorts, independent restaurants, catering, and so much more.

Early on in my career I made it a point to gain knowledge and experience in as many sectors of the hospitality industry as possible. I was fortunate enough to have worked at some of the highest rated private clubs such as Houston Country Club and Cherokee Town & Country Club, two of the highest rated in the United States. Public resorts such as Bandon Dunes Golf Resort located on the Oregon coast, and large-scale hotels such as Kingston Plantation a Hilton Hotel located in South Carolina. After these experiences, I decided to settle on the private club sector of the industry. The major draw for me to clubs has always been the wide range of responsibilities and outlets a club chef oversees ranging from multiple dining outlets, large scale banquet operations, club events, and the relationships that are built with the membership.

The old perception within the culinary industry was that “country clubs are where chef’s go to die”. Private clubs have become much more attractive to chefs due to many of the reasons mentioned above. Private clubs are no longer an afterthought with some of the most cutting-edge chefs currently running private clubs throughout the country. The size and scope of the club plays a major role in the day-to-day responsibilities of an Executive Chef or Director of Culinary. Some private clubs consist of a smaller membership of a few hundred yet that can turn into a few thousand with multiple clubhouses depending on the operation. Not only must a club chef be innovative with their food, but they must also be great leaders, team builders able to attract, develop, and retain staff and be very organized to handle the day-to-day operation of a busy club.

Managing their expenses to budget and being fiscally responsible are equally important. Many chefs can deliver exceptional experiences with their food, yet many aren’t able to balance their finances and ultimately aren’t successful running private clubs. Another key responsibility of a club chef is understanding and

being present with their membership. Chefs are typically prideful individuals and can often take it personal when a dish that the chef and their team has spent time developing doesn’t work out simply because they don’t have a good pulse on what membership is looking for. Finding that balance of creativity and delivering the expectations of membership is always a fine line.

Being a club chef is one of the most rewarding jobs a chef can have if you ask me. Building those relationships with membership and the staff are two of my absolute favorite aspects of the job, particularly at a club like Ansley that is fortunate to have the best membership and staff around. Although some days are long and can be challenging, for my team and I, seeing a smile on the faces of our membership when enjoying a great meal with us will always make it worth it.

Progress and Planning

I hope your 2025 is off to a fantastic start and that you are in great health as we reflect on an extraordinary 2024 at Ansley Golf Club. This past year brought exciting progress, significant accomplishments, and an unwavering commitment to the Club’s future. I am proud to share this summary as we look ahead to 2025 with optimism and enthusiasm.

A Culture of Community

At the heart of Ansley Golf Club is a unique culture that truly sets us apart. Once again, our Membership and staff demonstrated remarkable resilience, camaraderie, and dedication to one another and the Club. This spirit has been instrumental in maintaining Ansley as a place of connection and refuge, where friendships flourish, and memories are made. Membership engagement remained incredibly strong throughout 2024, with usage levels staying high. Attrition rates continued to stay at historic lows, and our waitlist grew further—a testament to the Club’s reputation as a haven from life’s daily demands.

2024 Capital Investments and Achievements

In 2024, we made significant investments in the Club’s facilities to ensure Ansley remains a premier destination for generations to come. Here are some of the highlights:

• Settindown Creek Renovation: Nearly $3,000,000 has been invested in this monumental project to date, with the revitalized course set to be a source of pride for the entire Membership.

• Beltline Protective Net: A $750,000 investment underscoring our commitment to safety and preserving our facilities.

• Replacement Capital Purchases: Key updates included:

■ $370,000 on new golf carts for Downtown

■ $140,000 on two new shuttles

■ $75,000 on new Ansley Room patio furniture

■ $60,000 on outdoor tennis and pool furniture

■ $55,000 on tennis building awnings and painting

■ $55,000 on treadmills and recumbent bikes for the fitness center

■ $55,000 on utility work carts

■ $25,000 on HVAC system upgrades

■ $15,000 on new payroll time clocks

These purchases are just a portion of the investments made to maintain and enhance the Member experience. Some, like $15,000 worth of payroll time clocks, may seem surprising, but each plays an important role in keeping the Club running smoothly.

We continued planning and design efforts for several key projects in 2024, including:

• The renovation of Midtown’s third floor.

• The ongoing renovation of the Settindown Creek Course.

• Rebuilding the maintenance building.

• A comprehensive refresh of the Settindown clubhouse, including updates to the kitchen, roof, sprinkler system, wet areas, pro shop, and parking lot.

• Focus groups to evaluate plans for replacing the pool and tennis building.

These projects ensure Ansley remains vibrant and well-positioned for the future.

Financial Strength and Stewardship

Our financial position remains a cornerstone of Ansley’s success. We closed 2024 with a balanced budget and over $17.0+ million in capital reserves and zero debt—a reflection of prudent financial management and long-term vision. These reserves earned a 5% return in insured money market accounts. While a significant portion are allocated to our current projects, this strong foundation ensures we can meet future needs while continuing to invest in the Member experience.

Looking Ahead

As we turn the page to 2025, I am confident in the bright future of Ansley Golf Club under the leadership of incoming President Jim Schwarzkopf, Vice President Brian Macaluso, Treasurer Tom Houle, the Board, and our General Manager, Calvin Bolling, along with his exceptional team. Their hard work, combined with the tireless efforts of our Member committee volunteers, ensures that Ansley remains an extraordinary community. Please join me in thanking Calvin, our dedicated staff, and the volunteers whose contributions help make our Club so special.

KEEPING IT SWEET

Welcoming our New Pastry Chef

Maddie Bauer is a dedicated Executive Pastry Chef originally from Kennewick, Washington. After earning an associate’s degree in culinary arts and baking & pastry arts in Oregon, she won the Gold Medal as the Western Region Student Chef of the Year in 2015. This recognition marked the beginning of a successful career in the pastry world.

With experience as the Executive Pastry Chef at the Coronado Club in Houston, as well as roles at River Oaks and the Houston Country Club, Maddie has developed a strong reputation for creating exceptional desserts, as well as delicious breads and pastries. She is excited to join the Ansley team and is looking forward to getting to know our membership while delivering delicious, highquality treats.

Andrew Bate, his wife Sharon & their daughters, Gianna (4) and Victoria (2), are thrilled to be new members at the club. Neither Andrew nor Sharon are natives of Atlanta, but they love living in Ansley Park. Andrew moved to Atlanta to swim for Emory. He left Atlanta for a brief stint to attend London Business School then returned to start his own company, safely.com, of which he is the CEO and founder. Sharon moved to Atlanta for work. She is a stage and screen actor who has appeared in plays, television, and commercials. Six months after moving, she met Andrew. They wed in 2016 and welcomed Gianna in 2020, followed by Victoria in 2022. As a family, they love to travel the world together. They are excited to make memories abroad and at Ansley Golf Club.

Ansley Golfers

The Golf Staff is excited about the arrival of spring weather to Ansley! Warmer weather helps bring the course out of the winter doldrums with the grass transitioning out of dormancy. Soon we will see green grass popping throughout the course! Please remember to take care of the course by sanding divots, repairing ball marks, raking bunkers, and picking up loose tees from the tee box. This will help keep the course in top condition as we round into the playing season.

Listed below are a few reminders about the current golf operations policies. Please feel free to reach out to the Golf Shop should any questions or needs arise. We look forward to seeing everyone on the course soon!

Midtown Tee Time Information

Members may book tee times 7 days in advance via Foretees through the Ansley app. 72 hours prior to your tee time you will receive a notification reminding you to fill in any TBA’s you have in the tee sheet. 48 hours in advance all TBA’s (X’s) will be removed from the tee sheet and be open for other members to book.

During the renovation of Settindown Creek, the tee times will be continually evolving to accommodate the most member play. Currently, the tee time structure at Midtown is as follows:

• Monday- Nine-hole tee times starting at 1:00 pm

• Tuesday through Friday- Nine-hole tee times from 8:00 am until 11:20 am, followed by eighteen-hole tee times from 11:30 am until 1:00 pm

• Saturday- Eighteen-hole tee times for the entirety of the day

• Sunday- Nine-hole tee times for the entirety of the day

*Guests are currently allowed for golf in Midtown Tuesday through Thursday only. No guest play is allowed on Mondays, Fridays, Saturdays, and Sundays.

This is an exciting new way to introduce your child to the game of golf. Our Beginner Spring Junior Clinics are a combination of learning skills in fun clinics and getting out on the golf course to play for a score. We will cover all foundational characteristics of the game including etiquette, full swing, short game, and fundamentals. We will use games along with instruction to introduce our juniors to golf during the classes. We will have two play days during the spring sessions for our juniors to get out on the golf course (Parents must attend play days on the course with their junior golfer).

Happy Hour Junior Clinics

Parents come enjoy Happy Hour while your children learn fundamental golf skills and mechanics with Junior Golf Leader, Jacob Tilton and Ansley Director of Instruction, Russ Davis, both U.S. Kids Certified instructors.

These Happy Hour Junior Clinics will cover all foundational characteristics of the game including etiquette, full swing, short game, and fundamentals. We will use games along with instruction to introduce our juniors to the game golf.

Intermediate Spring Junior Clinics

The clinics are on Saturdays from 10:00 a.m. - 11:30 a.m.

Drills, Instruction, and Practice Routines. This is an exciting series of clinics throughout the year at Ansley for our intermediate junior golfers. The series will cover more focused and detailed characteristics of the game.

Golf Is Hard, Make It Fun. By using training aids along with instruction in our clinics, juniors will get instant feedback on how their golf swings are developing. These junior golfers have intermediate knowledge of the game and their golf swing. We will develop their full swing, short game, putting, and start to comprehend their overall fundamentals in the game of golf.

ALGA has so many interesting and wonderful members. We would like to take the time to introduce you to some of them throughout the year in our various communications.

Our first ALGA member we would like to highlight is Darlene Nicosia. Darlene played Division 1 softball at The Ohio State University from 1986 - 1988. As catcher for the Buckeyes, Darlene held the record for the number of triples; a record which stood for many years.

Darlene credits her passion for sport, and her drive for competitiveness, in large part to her older brother who played baseball at Dartmouth. She and her brother spent many days together playing sports. Darlene remarked, “He was constantly making up games for us to play and I think that made us super competitive at a very young age. My drive to beat him taught me the value of practice, repetition, and teamwork.”

Darlene’s introduction to the game of golf came to her in an interesting way. While in college, she took a golf class as an elective; in which she earned an “A”. Funny enough, she did not pick up another golf club until she and Lisa joined Ansley Golf Club. Darlene says, “I am thankful that softball gave me a solid swing and good hand-eye coordination so that I could learn this great sport at my age.”

To be an athlete who can compete at the D1 level is quite an achievement; one which is not realized by many who compete in sport. ALGA is proud to have Darlene in our membership.

Stroke of the Week Clinic

Join Coach Nati for our new Stroke of the Week Tennis Clinics. These are hour long clinics where each session will focus on a specific stroke to help you sharpen your skills. The clinics are open to all levels whether you are just beginning your tennis journey or perfecting your game. The format will allow players of all levels to benefit from the drills.

Clinics will be held weekly on Monday at 9:00 a.m. with a $28 fee per participant. A minimum of 3 participants are required for each hourlong clinic. For sessions with sign-ups under 3 participants, will be reduced to a 30 minute clinic.

Pickleball 101: Intro to Pickleball

This beginner clinic is designed to make you feel comfortable being on the court and understanding basic rules in a few short weeks.

You will learn all the rules, how to keep score, the basic grip and stroke instruction along with executing the various shots: dink, volley, serve, return, drive, and 3rd shot drop. After you can execute the basics of scoring, positioning, and fundamental play, you will be ready to move into the intermediate clinics to learn more tactics and work on more skilled shot-making.

Junior Tennis Program

Tennis is a lifelong sport. We are dedicated to developing a program that will offer a wide range of opportunities for all juniors. Whether they want to learn the basics or compete in tournaments, the focus will be on learning in a fun environment. Our staff at Ansley has over 50 years of combined experience working with juniors of all levels and are ready to help reach their goals at an individual level. The junior program at AGC is based on three pillars, Fun, Fitness and Knowledge.

TINY TOTS: AGES 4-5

This clinic will work on hand-eye coordination and balance through a fun game environment. The goal of this clinic is to get kids exposure to tennis at an early age and progress them into the next group.

Acceptance is based on passing a skills test.

Now Introducing EMS Body Relax

What

is the EMS Body Relax Program?

The Body Relax Program utilizes EMS at a frequency of 100 Hz for 10+ minutes, designed to provide full-body relaxation, muscle recovery, and improved blood circulation. This program is perfect for meditation, yoga, stretching, breath work, and pain relief. The stimulation is like electric stim that you would receive from a physical therapist, but you get to have it on your whole body! It feels very therapeutic. This would be perfect for the golfer or racquet sports player to go out and hit for a while or play a round.

We strive to help all ages learn how to swim, so they can stay safe around water and learn the skills needed to make swimming a lifelong pursuit for healthy living. In the January/February edition of the Ansley Gram, we reflected on the storied history of the Ansley Sharks, celebrating the traditions and memories that have shaped our team. At the conclusion of the last swim season, the Board of Directors along with Club Management concluded that a reinvestment in the Ansley Sharks was in the best interest for both the member experience and continued success of our Team.

more coaches for consistency and growth, and bringing in alumni coaches who grew up in the program. These alumni, having poured their sweat and tears into the team, can reignite excitement and minimize adjustment periods. The goal is to enjoy summer as part of a large, social community, where younger swimmers can learn from older teammates, and older kids can take on leadership roles. It’s about more than swimming—it's about being part of something bigger.

PRACTICE CHANGES

Coach Chris and our new Swim Team consultant, Liz Gray, have also made some changes to the practice schedule for the 2025 season. The 6U and 7-8 age groups will practice separately, allowing for a better coach to swimmer ratio and an increased focus on skills specific to their age-groups. Lanes will be assigned based on skill level (beginner, intermediate, advanced) with two coaches per lane, ensuring one coach is always in the water (for 8&Under practices).

Morning practices are prioritized for their quieter, more focused atmosphere, while afternoon sessions are reserved only for those unable to attend in the morning. Practices will rotate content throughout the summer, including starts and finishes, stroke technique, etc. Each session will include a 15 minute overlap for dryland, discussions on meet performance, upcoming events, and preparation.

The coaching team will consist of six assigned coaches, with Coach Chris available to float as needed. Attendance is encouraged Monday through Friday, with incentives like ring pops for attending at least four weekday morning practices per week in June. Practice times are tailored by age group: 6U (45 minutes), 7-8 (60 minutes), 9-10 (60 minutes), and 11&Over (1:15).

The Jr. Sharks program will feature three 30-minute groups led by one head coach and two assistants through the month of May and two morning groups in June. An adult head assistant coach will oversee the Jr. Sharks program, ensuring synergy and consistency with the broader Sharks program.

WELLNESS & AQUATICS

VOLUNTEER REQUIREMENTS

If you’ve been an Ansley Shark parent for a while, you’ve likely received an email begging for volunteers to help run the meet. Volunteer roles are mandated by the league, and unlike some clubs that pay for these roles (increasing member dues), the Sharks rely on parent participation to keep costs low. Over the past few seasons, we’ve received feedback that the dayof-meet volunteer requirements have become challenging for many families, and have unfortunately resulted in a loss of swim team participation. We want you to know we hear you. The swim team is introducing updates to the volunteer requirements to encourage participation and ensure efficiency. This year, there will also be opportunities to fulfill volunteer requirements outside of meet days (more to come from our Volunteer Coordinator, Caroline Wainright).

This upcoming season, we will have age group coordinators for each age and gender, providing consistency and clear points of contact during the meets. The coordinators are well-versed in meet logistics and den organization and will be there to help new den parents learn the ropes. To streamline efforts, den parents will focus more on younger age groups, with fewer needed for older swimmers. Parents are only allowed to volunteer for a den in which they have a child. Our hope is that this will lead to more ownership and excitement in volunteer participation. Positive incentives, such as designated parking spots and drink tickets, will be awarded to thank dedicated volunteers. Volunteers will be rotated to maintain engagement, and den parents will play a key role by nominating swimmers for positive behavior through a new "star behavior" initiative. These updates aim to create a more efficient, engaging, and rewarding volunteer system for parents and swimmers.

ANSLEY SHARKS MERCHANDISE

We are also introducing some new Ansley Sharks gear. This season’s lineup offers a range of stylish and practical items for swimmers and supporters alike. We will continue to offer the customized Ansley Sharks backpacks. The team shirts will be heather green, while Champion-brand hoodies in deep charcoal add a cozy option. Custom towels, black lululemon shorts, and Nike shorts will all be part of this year’s collection. Accessories, including Goldeneye trucker hats, shirts, visors, Goodr sunglasses, bracelets, and necklaces, will also be available for sale at the tennis shop. Swim families will have an opportunity to order many of these items at the March 23 swim team “Grab and Go” event. 2025 ANSLEY SHARKS EVENTS

The Ansley Sharks have an exciting lineup of events planned for the season. As mentioned above, on March 23, there will be a "Grab and Go" event at Ansley to order suits and gear. On April 27, registered swimmers and their families are invited to the Shark Fins First Pool Party, featuring a DJ and exclusive pool access; the pool will open to the general membership the following Saturday. Also new this season is SHARKFEST, an inter-squad meet that will be held on May 27 in lieu of our bye week. SHARKFEST will be run like a typical

meet but exclusively featuring Ansley swimmers competing against each other, with added excitement from surprise events such as a 25-yard freestyle for our Seniors (14-yearolds) and mixed-gender, mixed-age group relays. Additional events will include a bingo night, hosted by the Sharks, for the general membership and a trivia night with mixed-age teams to foster inclusivity. Age group event parties are also being planned, including a dive-in movie after the Cherokee meet on June 16 for the 11-14 age group. Each age group will have one outing organized by their coordinator to build camaraderie.

As we look ahead to the 2025 Ansley Sharks season, we’re excited to combine tradition with fresh ideas to strengthen our team and community. The Ansley Sharks have a proud legacy, and we’re committed to making this season an exciting new chapter in our story.

YOUTH

Dinner And A Movie

For the month of March, we will have four dinners and a movie every Friday night in the Shark’s Den. Children can wear their pajamas and bring sleeping bags or blankets and pillows to use during the movie. Make your reservations early because these nights fill up quickly.

Etiquette Class

Our winter series begins in January in the Ansley Room. The children learn how to set the table, use each piece of silverware, and general table etiquette. Each class builds on the last class, but there is a review. Your child does not have to attend previous lessons, but repetition is encouraged.

Summer camps

On March 1 reservations open for Summer Camps. Preschool Camps are for 3–5-year-olds and include tennis, Playball, and lunch with Arts and Crafts. Sports Camps are for ages 6 and older and include golf, tennis, swimming, and lunch with arts and crafts. Sports camps are divided into 6–7-year-olds and 8–11-year-olds (depending on the participants for the week). Both camps are $300 per child and are 10am-2pm.

Preschool Camps- June 3-6, June 17-20, July 22-25, and July 29-Aug 1

Sports Camps- June 10-13, June 24-27, and July 8-11, and July 15-18.
