Recipe of the Month
By Patrick Fitzgerald, Executive Chef
Traditional Irish Soda Bread
As the spring inches closer, we are still in the cold months where comfort foods hit home a little bit more. St. Patrick’s Day is right around the corner, and those might be some of my favorite comfort foods. From pickling and slow cooking my brisket, cabbage and salt potatoes, to homemade Irish Soda Bread – albeit a pretty basic meal, when done right it’s just perfect!
When it comes to soda bread, I need it to be a little moister than the typical soda bread. I also use currants versus the classic raisins, as well as caraway seed. Please see below for the recipe and I hope you enjoy it!
Ingredients:
• 4½ cup Flour
• 1 tsp Salt
• 1 tsp Baking Soda
• 5 tbsp Butter, unsalted – cubed
• 1¾ cup Buttermilk
• 1 cup Currants
• 2 tbsp Carraway Seed (can use up to 3)
• 3 tbsp Sugar
Method:
1. Pre-heat oven to 400°.
2. Combine all dry ingredients.
3. Combine the buttermilk and the one egg.
4. Cut your cubed butter into the flour mixture, making sure to work the butter into the flour mixture until pea-size butter bits are reached.
5. Add your raisins and caraway seed, combine.
6. Slowly add the buttermilk mixture to the dry ingredients, fold until well combined.
7. Tip bowl over onto floured work surface, and gently need the dough into a round shape.
8. Place on sheet pan or backing try, with a knife score the top with an “X” roughly ½ inch deep.
9. Bake on middle rack for 45-50 minutes, and test with skewer to make sure the middle is cooked through.
10. Remove from oven once done and let cool, until time to eat.
11. Enjoy with your corned beef and cabbage, or just as a snack with some tea of coffee.
A Heartfelt Farewell to Linda Faulk
Dear ICC Members,
With gratitude and a touch of sadness, we announce the retirement of Linda Faulk, a valued member of our Membership Billing and Accounting team, after 17 years of dedicated service to the club. Linda has played an instrumental role in ensuring the smooth operation of our billing and accounting processes, and we will greatly miss her presence.
As Linda transitions into this exciting new chapter of her life, we are pleased to share that Chris Park from Golf will work alongside her during March to ensure a seamless handover. We encourage you to stop by and personally extend your best wishes to Linda before she embarks on her well-deserved retirement.
We will also miss her adorable dog, Polo, who often
joined Linda in the office on Mondays when the clubhouse was closed.
Please join us in expressing our appreciation to Linda for her years of service and wishing her all the best in the years ahead. Her legacy will remain a cherished part of the ICC community.
Warm regards,
The ICC Management Team

Golf Course Update
By Nathaniel Guldseth, Golf Course Superintendent
Dear Member:
March is fast approaching but the golf course remains buried in snow as I write this. While this winter has not been a golfer friendly one, it has been great for the grass.
Turfgrass stays quite green and healthy underneath a good layer of snow during the winter months. When there is no snow cover, the plant turns yellow and is susceptible to crown desiccation. When turf is exposed to the cold, drying winds of winter, the crown of the plant can dry out significantly. This is the part of the plant that produces root, shoot and stem tissues, so if it gets too dry you will actually get winterkill. The forecast calls for more snow and rain, so desiccation should not be an issue this year.
When we can get out there, the maintenance staff has started a few significant projects:
Shifting and expanding #14 white tee. Some of our white tees are woefully undersized and uneven. This will be the first of many white tee up-grades. The basic sub-grade is complete and if we can get back to it, we should have it grassed by mid-March with the hope to open it by late spring.
Softening the slope between #6 green and the pond. In an effort to prevent some golf balls from rolling all the way in to the water, we are adding a layer of wood to the wall at 6 green and backfilling with soil so that we can decrease the grade there. The goal here is NOT to prevent all shots from rolling back in to the water – just some. A wedge struck with too much spin or any shot that lands too near the front of the green will still have a good chance of getting wet.
Removing the fence that runs along #8. This fence has gotten quite damaged over the years from trees and branches. We have attempted to repair and to cover with screens, but it is just impossible to make a chain link fence look attractive. Ultimately, we decided to try removing it entirely, and the resulting look is fantastic. The tree line will be OB and there
will be white stakes to mark it.
When we are not able to work on the course, we are happily preparing for the construction of the new maintenance facility! As you can imagine, a maintenance shop that is 40 years old has acquired a bit of stuff. We have begun the process of cleaning and purging anything we do not use or need. The summer months can overwhelm us with work, so with a project start date of just after Labor Day, we are trying to get everything done now if possible.
Spring will be here before we know it – take care and I look forward to seeing you out on the course.
Retired Men’s Golf Team
By Bob Levin
In March 2024, I led off this Scorecard article as follows:
“Playoffs 2024? ICC’s Retired Men’s Team is poised to earn a playoff berth this year after narrowly missing out in 2023.”
Well, as most of you know, we had a winning record and qualified for the playoffs in 2024. A narrow loss in the quarterfinals ended our season.
In my opinion, winning is fun but it takes a back seat to the camaraderie, low-key competition, and opportunity to play at the courses of other Northern Virginia Retired Men’s Golf Association members.
If you haven’t already indicated your plan to play this year, and you are age 50+, we welcome new players. We have 24 matches scheduled. To join, please contact team President Jim Judkins ( jimjudkins99@gmail. com ) or me ( rlevin4@gmail.com ).

Group Classes (see page 26)
A reminder that group exercise classes are done in three ways: in studio, outdoor and ZOOM online. Most of the classes will have two options such as in-studio (or outdoors) and a Zoom live stream.
The Fairfax Free Book Bus is a 503(c)(3) tax-exempt organization. Our goal is to provide free books to children in Fairfax County to inspire a life-long love of reading. We want to help children have a home library and encourage reading. With our community partners we work to collect gently used children’s books of all genres and plan events with Title 1 schools and other needs-based organizations within Fairfax County to distribute the books. Since FFBB began in 2022, it has collected and distributed close to 10,000 books to local children though events at these organizations.
Did You Know? According to the US Department of Education, children who have more books in their homes tend to perform better academically and are more likely to finish high school and pursue higher education. Having plenty of books at home directly increases children’s literacy. It’s important for children to be able to select the books that they want to read and that they share those books with their family members.
