In preparation for this year’s South Beach Wine & Food Festival, I sat down with three-time James Beard nominated Chef Timon Balloo, who taught me how to cook his delicious octopus 14 years ago when we met for a Wire Magazine "Inside the Chef ’s Kitchen" editorial at SUGARCANE. Timon has a degree in culinary arts from Johnson and Wales University, worked internationally with 2 Star Michelin Chef Dominique Michou at Hotel Métropole Brussel in Belgium, followed by working with some of Miami’s most eminent chefs such as James Beard Award Winners Chef Allen Susser and Michelle Bernstein. Timon then continued his culinary career and eventually became the chef of acclaimed restaurants Sushi Samba in New York City, and Domo Japones and SUGARCANE in Miami. Timon’s national culinary distinctions included being recognized by The New York Times as one of the ‘16 Most Influential Black Chefs in America,’ 2020 James Beard Nomination for ‘Best Chef South’ and 2020 recipient of the Johnson and Wales Honorary Doctor of Culinary Arts. Today, The Katherine, located in Downtown Fort Lauderdale, is the newest restaurant of Chef Timon and his wife Marissa Katherine, after Timon’s previous eatery Balloo: Modern Home Cooking. The Katherine is an intimate neighborhood spot showcasing a menu inspired by Timon and Marissa’s travels around the world over the last twenty years and their combined heritages. Their dishes focus on seasonal ingredients and sustainability, the menu changes often, and their beverage program focal point is natural and organic wines. Rafa Carvajal: What do you enjoy the most about participating in the SOBEWFF®? Timon Balloo: The Festival brings so many of us together. I love seeing chefs from around the country and sharing our love for the South Florida culinary scene with them. RC: What SOBEWFF® events are you involved in this year? TB: Kosher Dinner with Friends, Bobby’s Triple Threat, and Farmers Market Brunch. In addition, my menu will be featured with our partners at American Airlines in the Flag Ship Lounge pop up at the main tasting tents from Friday through Sunday. RC: Tell our readers what is new in your career as a chef. TB: Expanding my brand into Broward and outside of Miami with The Katherine Restaurant and TB Culinary Consulting. RC: What type of cuisine are you focusing on these days as a chef and why? TB: My focus remains on our Caribbean and Southeast Asian culture as we are most passionate about teaching people about those flavors. RC: What are your top projects as a chef for 2024? TB: Expanding The Katherine and looking for locations to relaunch Balloo. RC: Is there anything else you would like to share with Wire Magazine readers? TB: Chef Timon’s Thai Red Curry Yellowtail was just named one of The New York Times top ‘23 of the Best American Dishes of 2023’ in December. In late November, Yelp also voted The Katherine #13 on Yelp’s 2023 top 100 restaurants.

The SOBEWFF® stupendous Drag Brunch returns Sunday, February 25, 12-3 p.m., at the Miami Beach Bandshell, 7275 Collins Avenue, in Miami Beach after its great success last year. Guests will join notable cookbook author and chef David Burtka and five-time Emmy winner actor Neil Patrick Harris, who will be hosting the Drag Brunch once again. This famous duo will be accompanied by beloved drag queens Ms. Alaska5000, Willam, Cynthia Lee Fontaine and Mistresses of Ceremonies Athena Dion, who is the host and producer of Miami’s Best Drag Brunch at R House Wynwood every weekend. The Mission Statement of the National LGBTQ Task Force is ‘to produce world-class fundraising events benefiting LGBTQ organizations while creating memories for attendees, volunteers, and our community.’ The Winter Party Festival (WPF) is one of those outstanding yearly events, taking place February 28 to March 5 with the Royal Palm South Beach as its host hotel in Miami Beach. I sat down with WPF Fundraising Director Walter Castaneda to chat about what guests will experience at this year’s Festival. Rafa Carvajal: Tell our readers why they should attend the 2024 Winter Party Festival. Walter Castaneda: Our community is under attack, especially here in Florida. Now more than ever we need to come together, be visible and celebrate who we are. At Winter Party we live free, play hard and give back. For a few days we create a magical experience and bring together that community to experience love and joy. Attendance at Winter Party supports the important work of the National LGBTQ Task Force to fight back against those attacks here in Florida and around the country. RC: What's new for the 2024 Winter Party Festival? WC: This year's Festival is happening from February 29 to March 5, 2024. Be prepared for something new at Saturday's Under One Sun event. Step into the sun and raise your hands up for DJ Derrick Carter — a pinnacle of the Chicago nightlife and queer party scene loved for his free-flowing sets that traverse outside of classic-house club sounds, seamlessly incorporating old-school disco, soul, jazz and other genres world-wide! It's a time when people from all over the world come together with their chosen family to celebrate life and love. For many, this event is the only place where they feel truly accepted and supported. RC: What are you looking forward to the most about this year's Festival? WC: I'm super excited about Saturday night's event: Fire and Ice. Two of my favorite DJs, Calagna and Abel, are spinning at the iconic M2 (formerly Mansion) nightclub in South Beach. Get ready to be mesmerized as Calagna takes over the decks with their dynamic and captivating sounds. Whether you want to heat things up or cool things down, this DJ has got you covered. of happy beats and lots of vocals! A very #gspinthemix signature sound. RC: Why should our readers attend the Winter Party Festival? GSP: Winter Party is not just another circuit festival. Is a festival with a cause. The National LGBTQ Task force has given back more than $3.3 million and supported nearly 90 community organizations in South Florida since 2005. These funds are very essential in empowering and elevating the community. This wouldn’t be possible without the help of all the attendees, so if you wanna have an amazing time in a top-quality production festival, and also help contribute to this amazing cause, you should attend Winter Party. RC: What are you looking forward to the most about DJing at this year’s Winter Party Festival? GSP: The main reason I am a DJ is to make people happy. There is nothing that makes my heart more full than seeing people happy dancing on the dancefloor forgetting about everyday difficulties and coming together to have a great time and embrace and support our community. This is the biggest reward to me, so this is what I am looking forward to and, since The Beach Party is a mammoth of an event attend-wise, it amplifies the excitement.

Since its founding in 1994 as a dance party on the beach, Winter Party Festival has featured outstanding DJs, including DJ GSP for this year’s Beach Party. GSP is a London-based, International DJ/Producer who has has been DJing in Greece for many years in the best know events and major clubs, and who is now considered one of the best European Circuit DJs. I interviewed GSP about DJing at the 2024 WPF Beach Party. Rafa Carvajal: What does DJing at the 2024 Winter Party Festival mean to you? DJ GSP: Winter Party Festival has always been a dream of me to DJ at. I had attended Winter Party and also DJed at the Palace Block Parties in 2016 and 2017. Headlining the Beach Party this year along with my dear friend and colleague Dan Slater is achieving a milestone. I always admired the cause of this Festival and being part of it is something that warms my heart. RC: What type of sets should attendees expect to experience from you at the 2024 Festival? GSP: I consider myself a DJ that will adapt their sound to the occasion. This is a day party on the Beach under the sun, so I will be delivering an appropriate journey with lots 18 WIREMAG.COM #1 2024

RC: Is there anything else you would like to share with Wire Magazine readers? GSP: I am returning to Winter Party Festival after so many years. I have prepared so much new music for this event and I will be spinning back to back with Dan Slater for the first time.
