DALLASBIGGER hey (as probably defined by locals there) claim that everything is bigger in Texas. And while the truth of the assertion might take a little first-hand investigation, there is this: whatever your interest, exploring Dallas is a lot of fun. It might not be the capital of the state (Austin), nor the largest city in the state (Houston), nor the hipster city in the state (back to Austin). But in terms of quintessential Texas… you got it.

Cue the Dallas theme song. Admit it, you heard it in your head as soon as you read that last sentence if you are even close to old enough to remember who shot J.R. However, cowboy – and rural – driven Dallas might have once been, today is a huge, thriving metropolis with everything one would expect from a city its size anywhere in the country. It's a driver's town, so don't expect public transportation to help you much and don't think you will be able to get around with just a map. This is one of the cities for which you will need Siri or her ilk.

Drivers are fast and aggressive, it's crowded and if you aren't careful, somehow, amazingly, every road you take will get you to the airport. Yes, it's a mystery.

But settle in somewhere nice, plan your itinerary and you are in for a Texas-size dose of entertainment.

So, where to settle in? The glitz and glamor of the Ritz Carlton Dallas is appealing to some. More boutique if no less gorgeous is the Rosewood Mansion on Turtle Creek. The impossibly named Hotel ZaZa Dallas is a full-service spa setting. The Adolphus is stylish and has long had a reputation for elegance. All of that said, Dallas has many accommodations as it does cowboy hats... well, maybe not that many. Since crossing town during high travel times can be a nightmare, the best bet is to choose somewhere close to the parts of town or attractions in which you plan to spend most of your time. Dallas is best enjoyed when one is not commuting.

One's itinerary could be quite diverse. You could spend days exploring Dallas culture. Yes, Dallas has culture – and lots of it. The Dallas Museum of Art is spectacular, taking a full day at least to take everything in. The Morton H. Meyerson Symphony Center is memorable. The same is true of Winspear Opera House. It is entirely possible to plan an entire week in Dallas around the visual and performing arts calendar. Then, for some fresh air, step out to the spectacular Dallas Arboretum & Botanical Gardens or White Rock Lake Park.

If history is your thing, it's hard not to first consider The Sixth Floor Museum at Dealey Plaza, one of Texas' most visited historic sites, The Sixth Floor Museum at Dealey Plaza chronicles the life, death and legacy of President John F. Kennedy. The Museum is in the former Texas School Book Depository building, from which Kennedy was shot.

Let's stick with allegedly shot just to keep the peace. There are numerous related tours if you want to experience the whole route of Kennedy that dreadful day in history. Morbid? Maybe, but is also an essential Dallas experience that will impact your view of one of the most historic events in 20th century U.S. history.

Try Tex-Mex, great ceviches, and eclectic spins at Jose. Upscale that with international influences at Tulum. Go Asian at Namo and get on the latest hipster train and indulge at the amazing Khao Noodle Shop (a must).

Macellaio, a charcuterie-focused spinoff of another local favorite, offers something completely different – a terrific culinary landmark.

All that culture and slightly creepy history might make you hungry and Dallas is a good place to have an appetite. Dallas is a lot more than Texas bbq and steaks. Oh, do understand. The bbq is legendary for a good reason – think brisket in this part of the country. And steaks? Well, those steaks you spend half a paycheck on at home in Miami, in Washington D.C. or New York. Well, search around the Dallas area – or the vicinity of most cities in the orbit of Texas – and you will find a better steak at a fraction of the price crafted by a veteran steak-maker who wastes no time also making quiche and avocado toast. Now, while you remember that, also keep in mind this is a major international city in the West – so from Mexican to Japanese to elegant dining – it's all here.

las proper and in no particular order (hey, I am no fool...), think Peggy Sue BBQ, Smokey's John's Bar-B-Que (save room for the peach cobbler dessert), and the classic Mac's Bar-B-Que. There are many others, many, many others. Skip the chains and go with Nick & Sam's, Knife Dallas or Pappas Bros. Steakhouse for a nice steakhouse.

Or virtually any independent for a more affordable, but more traditional steak experience. It is hard to go wrong. Serve a bad steak in Dallas and well... good luck to you...

After dinner, don't miss Dallas nightlife. It's an energetic, pulsating scene that while For bbq, it's hard to really go wrong and the isn't as artsy or alternative as Austin or as cutting edge as the Coast, is not to be competition is fierce. Without leaving Dal- missed. The ample gay community in Dallas isn't as integrated as it is in Miami – there are distinct gayborhoods, at least for nightlife. Oak Lawn is the upscale district known for Cedar Springs Road, the heart of the city's gay scene. It's lined with lively bars and DJ-driven clubs, country western dancing, drag – and it comes alive particularly on weekends.

Following an eclectic itinerary and weekend nights out in Dallas, you will be well prepared to answer the whole everything is bigger in Texas thing...

STAN & OLLIE ver the years the entertainment industry has given birth to some very beguilingly comedy duos. I'm sure you know some of them; they crop up every decade.

Some disappear as quickly as they arrived, others leave behind them a vague memory, but a few brilliant ones leave behind an enduring legacy.

Unless you've lived under a rock somewhere, you'll know instantly when the "coo coo" music theme begins, you're about to laugh at the misadventures of the little thin guy with perfect timing who constantly messes things up for the long suffering big hulking guy. The team of Laurel and Hardy were quite simply magical.

Through over 100 films the onscreen relationship of these two beloved buffoons have brought audiences huge laughter and melted hearts with their innate pathos.

What no one ever saw though were the actual behind the scenes lives of the duo. The relationship that made up the hard work and long hours it took to make their antics look natural and hilarious. This sweet, gentle true tale about them successfully addresses that relationship, not at the height of their fame, but rather at the end of it, and it's drawn to perfection by the inspired performances of Steve Coogan and John C. Reilly.

After a scary slow start, the show becomes a huge hit, however buried tensions threaten to destroy their life-long relationship.

With the support of their wives Lucille (Henderson) and Ida (Arianda), who aren't particularly fond of each other, the boys re-discover their love of performing, as well as for each other, eventually securing their place in the hearts of an adoring public.

Director Jon S. Baird succeeded here in creating as genial and touching a portrait of these legendary comics as is humanly possible. My hat's off to him, he should be recognized for this work. However, as good as Baird is on this film, it pales in comparison to the amazing spot-on performances by Coogan and Reilly. Their seamless performances never for a moment betrayed the monumental effort it must have taken to bring their characters to totally believable life. The two actors weren't there, Stan and Ollie were.

That's brilliance.

Add to that some big laughs and some very touching moments and you have a very entertaining film that anyone can enjoy.

My take… this is a wonderful film filled with humor, joy, triHere's the storyline… umph, pain, and the glory of In 1953, Laurel (Coogan) and friendship. It deserves to be seen Hardy (Reilly) facing a fading and enjoyed. Don't miss it.

Besides his TV career, Ted also works with several charitable organizations, including the James Beard Foundation. He also supports the Point Foundation, Share Our Strength/No Kid Hungry, the Food Bank for New York City, and the Washington D.C. Ted lives in Brooklyn with his husband, interior designer Barry Rice.

To date, the five-day Festival has raised more than $28 million in support of its mission to "EAT. DRINK. EDUCATE." Wire Magazine sat down with Ted Allen to talk about his career and preview this year's SOBEWFF. Rafa Carvajal: Why did you decide to pursue a career in the culinary industry?

Ted Allen: I've loved cooking since I was a kid, but never got farther professionally than washing dishes in a French bistro, and making baked potatoes and fries at Ponderosa. In my early 30s, I got a job as an editor at Chicago magazine, which, like most city magazines, devoted a great deal of attention to the city's restaurants.

Reading that coverage taught me a lot, and, eventually, I joined the critics' team myself. I find it so, so interesting to think honestly and critically about whether a chef is delivering what he or she is promising, whether it's the finest of fine dining, or a hamburger.

RC: Why did you choose to go into television media as part of your culinary career?

TA: After Chicago magazine, while still based in that great city, I got a contract as a writer for Esquire. When you're working for an NYC-based magazine and you don't live in NYC, it's a good idea to get face time with the boss whenever you can. Meanwhile, I had heard about a casting call for this Queer Eye show, and thought, what the hell? I remember the first day of the casting sessions, in a steamy conference room on 7th Ave., near Madison Square Garden.

Lots of recognizable gay faces were in that room. I also remember the moment Carson walked into the room in a blousy pirate shirt, hibiscus-printed linen pants and Gucci slides. He threw his duffel on the conference table and announced, "I think it's hilarious that any of you bitches think you're gonna get my part." He wasn't wrong. We later learned that Carson and I were the first two people chosen for the pilot. We went on to shoot either 99 or 100 episodes, depending on who you ask. And we won an Emmy!

RC: How did your background as a journalist/writer prepare you for your TV hosting jobs?

TA: Journalism is a lot like teaching, which is what we did on Queer Eye. As far as doing TV, I had zero experience, other than appearing on Chicago news shows to promote the magazine. The great thing about my job is that I'm really not performing. I'm just being my dorky self.

RC: What are you most looking forward to during the South Beach Wine & Food Festival?

TA: I don't hate the weather, have to admit – it's 26 degrees outside my window right now. The beach, tasty food, getting to hang with other Food Network folks, and to hang with fans, is always fun.

RC: What is it like hosting three shows on Food Network and what do you enjoy the most about doing so?

TA: The best thing about my job is the tight relationships I have with my fellow Chopped cast members, and with other Food Network pros like Sunny Anderson and Jeff Mauro.

We've worked together for a long, long time now. We really enjoy each other's' company – which is a good thing; our shooting days are about 12 hours long. That's one episode.

RC: What was it like being a judge on Food Network's Iron Chef America?

TA: That is a job I would definitely recommend! You have spectacular chefs, who are given only one mystery ingredient, never anything gross, and who also have two sous chefs assisting them. Then, they make five courses or so, all of it kept nice and hot.

Such creativity and excitement – and then, you have to make an often-difficult decision about which chef's career arc is about to dramatically improve. I loved it.

RC: How did being the food and wine specialist on the Queer Eye help pave the way for your continued career on television?

TA: Well, QE made me well-known enough for Food Network and Top Chef to want me as a judge; I became a regular on both shows. I like to say that every job I've ever had was necessary for the job I have now – it's really true. I don't write the scripts, but I edit them every morning. I interview the chefs much more than you see in the final edit. Along with the judges, I'm explaining cooking techniques and ingredients to the audience. It's not exactly journalism, but working as a journalist is where I learned to do all of those things.

RC: What did you enjoy the most about being on Queer Eye? TA: I have never laughed so hard in my life as I did when we were shooting QE – much of it from material far too filthy to be usable RC: What motivated you to write them and what was the most fun part of writing a in the show, or even printed in a magazine! cookbook?
