Every pairing is the result of collaboration between Executive Chef Dan Solomon and Sommelier Cory DeLoach, whose shared passion for bold flavor and unexpected harmony drives each experience.

Launching this fall, The Kitchen Sync is a new event series that blends live music, curated cuisine, and small-format hospitality into one intimate night. Designed for just 40 guests per event, the series offers acoustic-style performances by up-and-coming artists paired with a four-course prix fixe meal, complete with thoughtful wine pairings.
But this isn’t just dinner and a show. It’s a creative collaboration where Chef Dan draws inspiration directly from the performers.
“I’m looking forward to drawing inspiration from each artist’s story as I craft my prix fixe menus,” says Dan. “Music and food both carry emotional weight. Bringing them together adds a whole new layer to the experience.”
Guests can expect a rotating lineup of genres and flavors, served in the stylish, relaxing Priest Ranch tasting room — an atmosphere that encourages conversation, connection, and discovery.
Now through September, locals and visitors alike can enjoy Thursday Night Live, a weekly celebration of great wine, great food, and local talent. Recommended Wine Pairing: 2022 Priest Ranch Napa Valley Cabernet Sauvignon
INGREDIENTS
• Double-cut, bone-in pork chops, as desired
• Extra virgin olive oil, as needed
• KPR Mediterranean dry rub, as needed
DIRECTIONS
• Set grill to medium-high heat.
• Take as many pork chops as you like, rub them lightly with olive oil, and season generously with spice rub.
• When the grill grates are hot and ready, season them lightly with an oiled rag (this helps prevent the meat from sticking).
• Place the pork chops on the grill and sear for 3-5 minutes, then flip and repeat.
• Once seared, move the pork chops to a cooler part of the grill and allow them to finish cooking for another 3-5 minutes. (Check the temperature with a probe thermometer. 135F is a nice medium, but feel free to cook to your desired temperature*.)
• Once cooked, allow pork to rest for 5-10 minutes before serving with a bottle of Priest Ranch Cabernet Sauvignon.
*The USDA recommends a 145°F minimum internal temperature, but anything over this will become overcooked and dry.

This dark horse – distilled spirits – unabashedly delights the many visitors to this world-renown wine region expecting to find only wine. Amid wine presses and oak barrels is smattering of copper pot stills. Distilleries, nestled near pristine vineyard landscapes, weathered hills, and winding back roads, dot the charming small towns and main streets of this region, and many will welcome guests for sipping and sampling. Just past rolling vineyard hillsides, on the main thoroughfare, midway between Sonoma and Napa, sits the Hanson of Sonoma Distillery, where the Hanson family has built something unexpected – a certified organic, grapebased line of vodkas right smack dab in the middle of wine country. Founded in 2013 by Scott and Judy Hanson along with their four adult children, Hanson of Sonoma Distillery is a true family affair. The award-winning vodkas are crafted using traditional copper pot stills and a specialized copper column still that eliminates many harsh byproducts of the distillation process to yield a vodka that is astonishingly clean, smooth, and soft on the palate. And, if a simple, smooth vodka wasn’t good enough to enhance a cocktail, Hanson offers an awesome array of infused vodkas, made only from real, organic ingredients like Meyer lemon, grown and harvested just miles away from the distillery. The fresh Meyer Lemon Vodka bursts with natural citrus notes and makes an incredible Lemon Drop. The infusions are among some of the best on the market and include interesting and unique flavors such as pineapple jabañero, cucumber, ginger, and more. Hanson even offers an espresso vodka which will take your espresso martini to the next level. At the tasting room, the staff is friendly and knowledgeable and guests may sample the vodkas straight or mixed into classy cocktails. Husband and wife team, Lorraine and Michael Barber along with Aaron Lee are the trio behind these meticulously crafted spirits which include whiskey, bourbon, brandy, rum, and absinthe, made from a base of distilled white wine. The team serves up cocktails with fun and irreverent names like Little Death and The Big Baller. The libations are concocted using equally unexpected ingredients like sage and beet root powder. With a full cocktail menu, flights of the Barber Lee spirits, plus beer, wine, and small bites, too, you will want to stay a while at Barber Lee.
Moylan’s Whisky and Stillwater Spirits features two brands in one house, where the founder and his team have been quietly crafting some of the finest brandy, whiskey, gin, and grappa in Northern California. Founded in 2004 by brewerturned-distiller Brendan Moylan, and joined by distillation expert Tim Welch, the distillery blends old-world technique with modern precision to deliver award-winning spirits. Whether you’re a spirits enthusiast, a curious traveler, or a potential collaborator (custom-distillation services are available), the team at Moylan’s welcome you to come by, tour the facility, and see the magic in motion.
At Prohibition Spirits, the mantra is simple yet bold: “Adventurous spirits for spirited people.” This family-owned and operated distillery is a hidden gem in the heart of Sonoma, where passion for craft distilling meets the rich traditions of Sonoma wine country. In 2008, Prohibition Spirits created its first liqueur, Limoncello di Sonoma. This passion project eventually gave way to more exploration and expansion with Prohibition now offering over 60 spirits and libations. Whether you’re a fan of gin, whiskey, rum, or specialty liqueurs such as nocino, elderflower, and crème de violette, the portfolio from Prohibition will surely contain something that piques curiosity. Prohibition Spirits offers immersive experiences such as the Limoncello-making classes and mixology workshops. If you can’t make it to the tasting room, don’t worry. Prohibition Spirits can bring the fun and flavors directly to you with its “Vintage Travel Bar,” a retrofitted mobile sampling bar, that is sure to elevate any event or private party with spirited fun.
Family owned and operated, Sonoma Coast Spirits is helmed by Jill Olson along with her four adult children. Initially motivated to recreate original family recipes, the Olsens take pride in experimenting with flavors that are inspired by the various herbs and citrus from their family garden in Sonoma County. This craft-cocktail-making family has experimented with an array of citrus, including Meyer lemons, Eureka lemons, limes, grapefruit, and oranges along with pears, apples, cherries, and plums to create its “farm to glass” concoctions. In addition to several vodkas infused with flavors of espresso or jalapeño or lime, the Olsens specialize in RTD (ready to drink cocktails). Try out the offerings from Sonoma Coast Spirits by making an appointment to visit the tasting room or find the products at various local retailers or online
Griffo Distillery specializes in premium spirits that truly are “scientifically crafted.” Starting with a first-of-its-kind customized Vendome Copper Still, straight from Kentucky and built per the doctor’s orders (aka the Griffo Master Distiller), Griffo produces some of the most unique and awarded spirits in the U.S.
Believing the best ingredients help make the best spirits, Griffo strives to buy organic and local, practices that are immediately apparent given that the grains are grown locally, the barrels are coopered in nearby Napa, and even the Meyer lemons for the Griffo Gin come from around Sonoma County. This bright, citrusy spirit called Scott Street Gin was recently dubbed by the Gin Guild as America’s Greatest London Dry Gin of 2025. The distillery supports not only the purest ingredients but further embraces low-impact practices with a focus on local community, partnering with brands such as Equator Coffee and incorporating its fair trade organic blend in the Griffo Cold Brew Coffee Liqueur, or neighboring Lagunitas Brewing Company creating a unique, single malt whiskey using barley and hops from a rare Lagunitas cult-favorite beer.

While Napa may be world-famous for its wine, those in the know make a different kind of tasting stop. Napa Valley Distillery has been offering a hefty dose of vintage vibes, award-winning spirits, and crafty cocktails since 2009. This family-owned business has been running by the mission statement, “Make it Different,” and they do. Known for crafting rare, small-batch spirits and bottled cocktails, Napa Valley Distillery, blends premium ingredients with timehonored techniques to create something truly distinct. Garnering awards and earning loyal fans from near and far, the immersive tasting experiences keep patrons coming back. At the Tasting Salon and Vintage Bar Shop, tucked inside the vibrant Oxbow Public Market, guests are treated to rotating seasonal flights and flavorful pours led by knowledgeable and occasionally cheeky barkeeps (who sometimes look like characters straight out of The Great Gatsby). With an acclaimed selection of unique cocktail bitters, any aspiring home mixologist will discover new ingredients to level up cocktail hour. And for those craving the cutting edge of Napa’s cocktail culture, the ArBARetum delivers. Located downtown, this pretty bar offers an elevated yet inviting experience with excellent service, inventive drinks, and a menu that also includes light bites and the “World-Famous” Muffaletta Pizza. Locals love ArBARetum for its adventurous spirit, hip ambiance, and window seating that opens out onto the sidewalk.
In the heart of charming Calistoga, a row of 19thcentury train cars have been masterfully refurbished and reimagined. The Calistoga Depot, a longtime fixture in town, features immersive dining and sipping experiences where these individually and luxuriously restored train cars include everything from a sparkling wine and caviar car; a chocolate car; a saloon car; and the Casa Obsidiana car, where guests will find bold and authentic Oaxacan flavors of Mexican dining and award-winning tequila.
The relatively new Casa Obsidiana tequila – a Blanco, a Reposado, and an Añejo – was crafted by the visionary tequila making Beckmann Gonzalez and winemaking Boisset families. Whether sipping the Blanco, aged for just over two weeks; the Reposado, aged for four months; or the Añejo, aged for 15 months, these tequilas are showstoppers, if not for the tequila itself but for the bottles – ceramic works of art crafted by famed ceramic artist Adán Paredes.

• 1 ounce Hanson Organic Habanero Vodka
• 1 ounce Hanson Organic Meyer Lemon Vodka
• 1 ounce Tamarind Puree
• ¾ ounce Organic Agave
• Tajin and Brown Sugar (for rim of the glass)
• Tamarind Candy and Lime Wheel (for garnish)
Rim the glass with a mixture of Tajin and brown sugar. Combine all ingredients in a shaker filled with ice. Give a good shake and then strain the mixture over fresh ice in a glass. Garnish with a lime wheel and tamarind candy.
To make the Tamarind Puree: Combine 8 ounces of wet tamarind pulp and 2 cups of hot water. Let it stand for 1 hour, then break the tamarind into small pieces while it is still in the water. Let it soak for an additional 3 hours. Press the tamarind mixture through a sieve, reserving the liquid and discarding the seeds and fibers.
Some of these spirits purveyors may not be jockeying for your attention amid the wineries in this region but most will surely welcome you onsite for sips, samples, and a little unexpected surprise during your foray into Northern California wine country.
While you should definitely do the wine tastings and explore the very thing that likely brought you to this region, be sure to leave time in your day to wander into the unexpected and let the spirit within the moment surprise you.

Tucked away in the little hamlet of Kenwood, in the heart of Sonoma Valley, lies a place that feels less like a traditional winery and more like a sun-dappled Italian village piazza.
VJB Cellars is a postcard from Italy, where every glass of wine and each bite of food savored on the courtyard somehow manages to remind one that life really is sweet.
Founded by Henry Belmonte and owned by the Belmonte Family, VJB Cellars is the centerpiece of a legacy that spans not just wine, but heartfelt hospitality and traditional culinary flavors. Originally from the village of Bonito, Italy, the Belmontes brought their deep-rooted love for food, wine, and family with them when they settled in Sonoma County.
First setting up shop with Caffe Portofino and Belmonte’s Deli, the offerings quickly made the café and deli locally loved favorites. But it was the untimely loss of their beloved son, Victor, that marked a turning point in the family’s journey. In his memory, Victor’s brother, Henry, began VJB Cellars. What began as a tribute to the memory of Victor, and an homage to the family’s treasured Italian heritage, has grown into a welcoming village that would make any culture proud, Italian or otherwise.
Savor the Flavors
VJB Cellars offers a number of wine and food tasing experiences. Indoors, guests may perch at a long bar and sample the impressive portfolio of wines. In between the tasting flight, one might browse La Cucina, a stocked deli overseen by the VJB matriarch, Maria Belmonte, who learned her passion for cooking as a young girl working in the kitchen alongside her mother and grandmother. Made-toorder sandwiches or cheese and charcuterie boards are available at La Cucina and can be enjoyed indoors or in the adjacent courtyard.
Step onto the sprawling courtyard of VJB Cellars and you’re instantly transported. The relaxed vibe in this sun-kissed piazza channels the relaxed and comfortable energy of a little Italian neighborhood where you are just as likely to bump into your friends or make new ones. Here, friends and families gather around tables, clinking glasses – and even learn a thing or two about the wine along the way. A wine tasting experience at VJB Cellars can be as informative or as casual as the pace of your group. Want to learn all about the Nebbiolo? Great! One of the wine hosts will surely inform and inspire you. But, if you prefer to enjoy a wine fact or two while leisurely sipping a Sangiovese as you wait for a fresh pizza to pop out of the wood-fired oven, then this is your place. Maria also oversees the outdoor kitchen that serves Neapolitan-style pizzas and hearty paninis.
And, no wine and pizza indulgence is complete without a sweet. After all, this whole experience embodies la dolce vita. Not far from the wood-fire pizza oven, right within the courtyard, sits a chocolate shop and gelateria featuring a variety of treats (don’t miss the pistachio gelato!) that will satisfy any dessert craving.
While the atmosphere at VJB Cellars is undeniably a draw, it’s the acclaimed 90-plus point wines that make this a destination in its own right. The family’s passion for Italian varietals is clear in every bottle and the flagship wine, Dante, is a bold blend of Cabernet Sauvignon and Sangiovese, itself reflecting a blend of Italian wine styles melded with grapes grown in Sonoma.

Barrels not only hold wine while it ferments and ages, but they impart the personality of the wood (aka oak juice) directly into the wine. Some do so more gently than others. This is due to wood sourcing, treatment, aging and toasting, with the latter involving many critical components like time, temperature and technique. It’s a complex topic, so we’ll keep this fairly high level. My thanks to Jason Moulton, Director of Winemaking, and to RJ Ballou, Tasting Room Manager, of Whitehall Lane, and to Chris Sorensen, winemaker and proprietor of Caddis Wines for taking the time to walk me through the basics.
First of all, winemakers have lots of choices. American oak is favored for its overt vanilla lactones and its price point compared to French barrels. American oak is often used for varieties like Zinfandel, Petite Sirah, although many wineries would never use American oak at all. Some wine houses, like Ridge, have always relied on American oak from Kentucky. French barrel-making is a high art, with an industry dating back centuries, and many wineries, like Whitehall Lane, use exclusively French. Hungarian oak is favored by those who want a fairly rapid spice infusion at a much lower price point than French barrels.
On the Barrel Head
Each barrel head is stamped with important information that barrel makers (cooperages) use to impart details about the provenance of each barrel.
In the cellar, the winery will generally add their own information, sometimes on 3x5 cards, sometimes with chalk, to indicate what they’ve put in the barrel and when.
Winemaker Chris Sorensen of Caddis gave us this general rundown of the info on the barrel head:
• Cooperage Brand (typically at top): Name or logo of the barrel maker (e.g., Tonnellerie François Frères, Baron, Seguin Moreau, Canton etc.)
• Forest Origin (often at bottom): Wood source, meaning the name of the forest, e.g., Allier, Vosges, Tronçais, etc.
• Toast Level (usually at bottom): Light (LT), Medium (MT), Medium Plus (M+), Heavy (HT)
• Barrel Type (often in liters, not always marked): Size or style (e.g., 225L Barrique, 228L Burgundy, 300L Hogshead)
• Production Year: Year the barrel was made.
• Winery Markings: Logos, vintage, varietal, AVA, or unique barrel details added by the winery
Sorensen says he uses Seguin Moreau and other French oak barrels for his Caddis Cabernet Sauvignon and Merlot, while using Canton barrels for Zinfandel, Malbec, and Petit Verdot. For his Chardonnay, Fumé Blanc, and Grenache Blanc, he uses both new French and American oak.
There’s so much more to this topic, but I hope this small slice helps you appreciate the individual trees in the forest a little more, and how they, like yeast, are part of the magic that makes grapes into wine.
Let’s look at these barrel tops and see what they reveal
This Whitehall Lane Winery (WLW) barrels bears both the winery and cooperage stamp. The 1875 indicates the year the cooperage was founded; similarly, the 1979 refers to the founding date of WLW. The HT refers to Heavy Toast; the TV to Tronçais and Vosges, which are the two forests used. Whitehall Lane’s Moulton explains that alternating staves comes from the two different forests. The number 20 refers to the vintage year in which the barrel was produced: 2020. This would be considered a neutral barrel at this point. Moulton prefers all barrels for Whitehall Lane to be aged at least 30 to 36 months. “Aging diminishes the harsh oak character, so the longer the better.”
Same cooperage, same vintage year, but here the toast level is Medium Plus and the staves are all from the Tronçais forest. The codes at the bottom of these barrels are specific to the tracking system for this cooperage, and they might harvest date, specific tree, etc. It’s equivalent to a bar code.
This Medium Plus toast French barrel comes from trees between 150 and 200 years of age. Elegance is intended for high-end red wines, and delivers consistent aromatics.
Tonnellerie Ermitage MT + BT 23 36 Month
Again, same cooperage and Medium Plus toast, but this is from the Bertranges and Tronçais forests, with alternating staves. Bertranges is one of the largest in France.
Tonnellerie Baron Premium + R barrel
Moulton explains that the Premium refers to the length of time this barrel was seasoned, likely 36 months, as well as to it being an extra tight grain barrel. The + refers to the higher heat level used while toasting the barrel. Higher heat brings out more pastry and spice notes. The R here means Rouge, meaning suited for reds.
Demptos Cooper Select Oak TG Medium Plus Toast
The TG here refers to Tight Grain. This barrel was aged for 36 months and has thin staves, meaning 22mm thick, which is typical of Bordeaux barrels, which tend to be narrower in width, whereas Burgundy barrels are wider with 28ml staves. The two barrel types have slightly different capacities, noted above.
Tonnellerie Baron Premium - R
Here, the minus refers to toasting at lower heat.
Canton is a top American oak barrel producer. The primary image depicts the Canton Five, the top-of-the-line, 5-year, air-dried barrel from a single Kentucky forest with extra-tight grain wood, meaning at least 10 rings per inch. Also depicted are the Vintage, which is 2-year aged, with Medium Plus and Toasted Heads (TH), the Grand Cru with 3-year dried wood, and the Grand Cru Limited Edition, which is made of 4-year, air-dried wood, aged in a shaded part of the cooperage’s aging yard, near a seasonal stream.

This past March, bud break in Sonoma’s famed vineyards marked the commencement of the region’s 200th harvest and a chance to celebrate all the factors and influences that turn the valley’s beautiful grape clusters into a bottled icon of excellence to be enjoyed for years to come.
Native Americans were the first viticulturists in Sonoma Valley. But, two hundred years ago, Father José Altimira, founder of the San Francisco Mission San Francisco Solano (Sonoma Mission), and Indigenous workers planted the first official vineyard with as many as 2,000 “Old World Mission” varietal grapevines to the North and East of the Mission in Sonoma Valley, California. Those vines yielded approximately 1,000 gallons of wine. At that time, the Mission grapes were primarily used as sacramental and table wine for the missionaries. The land where these original formal grape vines were planted is now part of Agoston Haraszthy’s Buena Vista Winery, and Gundlach Bundschu Winery.
Sonoma Valley’s 200th Harvest will celebrate the bicentennial of this historical event with the de facto governing body for winemaking in the region, the Sonoma Valley Vintners and Growers Association (SVVGA), kicking off the second season of a three-year celebration.
This year, The Year of the Vintner honors the hard work of talented winemakers to guide each grape from vineyard to glass. From nurturing the vines to crafting the wine, their work is at the heart of every bottle.
