In a large pitcher, combine freshly squeezed lemon juice, lavender mixture and water. Feel free to add a drop of blue coloring and a drop of red to mixture to give it a lovely purple color. Chill for at least 2 hours (or expedite by putting in the freezer for a half hour).

Sara Snelling is an innovative, forward-thinking nutritionist with a food science, food service and food safety background. While earning her bachelor of science in nutrition and dietetics at Northern Illinois University, she did a variety of volunteer work within her community. This includes experience with teaching culinary classes, medical nutrition therapy instruction, public speaking and data analysis and research in nutrition across many demographics. What You Need • 3 1/3 C Coconut Milk • 2 TBSP Culinary Lavender • 2/3 C agave nectar (or honey) • 3/4 C Frozen Blueberries Blackberries • 1/4 tsp vanilla

This spring, find a place for this fragrant, relaxing and gorgeous flower in your kitchen. it will smell- and taste- delicious!
LAVENDER LEMONADE This is so refreshing and not at all overpowering. it’s great on its own, mixed with sparkling water or with some prosecco! You can even make popsicles with it! It’s worth the squeeze! What You Need Lavender Simple Syrup • 2 cups water • ½ cup sugar • ¼ cup agave nectar (or honey) • 3 Tbsp dried lavender Fresh Lemonade

• 2 cups freshly squeezed lemon juice • 4 cups water • 1 lemon, sliced (for garnish) What You Do To make the simple syrup, combine two cups of water and sugar in a small saucepan over medium high heat, bringing to a boil and whisking until sugar is dissolved. Remove from heat and stir in agave nectar and dried lavender. Cover for about 15 minutes, allowing mixture to steep. Strain lavender, making sure to release all juices and syrup.
What You Do Heat coconut milk to boiling. Add culinary lavender and remove from heat. Let sit 10 minutes. Strain lavender from milk, and add milk to food processor/blender. Add berries, agave and vanilla- blend. Pour into silicone trays and freeze overnight. When you’re ready for Nice Cream, pop the cubes out into a processor/blender and re-blend. Freeze another hour in glass container, scoop and serve! Suggested garnish: fresh/frozen berries, slivered almonds, shaved coconut, lemon zest, raspberry coulis…use your imagination! LAVENDER BLUEBERRY MUFFINS These are a real guest-pleaser, and they’re vegan (can be made gluten free as well). Have them ready for breakfast, tea or an afternoon snack or glass of bubbly! What You Need • 1 Tbsp. ground flax seed • 2 Tbsp. cold water • 2 cups all-purpose/whole wheat flour or gluten-free flour • 1 Tbsp. baking powder • 1/2 tsp. salt • 1 cup granulated vegan sugar • 1/4 cup vegan butter, melted and cooled slightly • 1 1/4 cups (10 oz.) vegan sour cream • 1/2 tsp. vanilla extract • 1 1/2 cups frozen blueberries, wild if you can find them • 1 1/2 Tbsp. fresh lavender, minced • extra sugar, for sprinkling on top foxvalleymagazine.com

What You Do 1. Preheat oven to 350 F and spray a regular 12 muffin pan with nonstick cooking spray. 2. Begin by placing the ground flaxseed in a small bowl and whisking in the cold water. Place in the fridge and let rest until called for. 3. Whisk the flour, baking powder and salt in a medium bowl. 4. In a electric stand mixer bowl or a large bowl add the flax egg and the sugar and whisk vigorously for about 1 minute. Next, add the butter and whisk until combined. Then add the vanilla, and finally add the sour cream in two steps, mixing only to combine. 5. Add the frozen blueberries as well as the lavender to the dry mixture, and toss to coat. Then, gently fold the dry mixture into the wet mixture until they’re just combined. Be very cautious not to over mix. There may even be some sprays of flour and that’s okay. The batter should be very thick. FOX VALLEY MAGAZINE / April 2018
6. 6.Drop an even amount of dough into the muffin pan. Do not flatten or arrange the batter and do not overfill. Bake at 350 F for about 30 minutes.Rotate the pan at the 15 minute mark. 7. The muffins should be somewhat firm and a light golden brown around the edges at 30 minutes. 8. Once the muffins are done baking, release them onto a wire cooling rack and stand them up right. Sprinkle with sugar if you like, and allow them to cool for 5 minutes. Store in an airtight container. Try some fresh lemon zest or orange zest for a tart little kick!

April Happenings Gail Borden Public Library People are invited to swim with the jellyfishes as deep water has enveloped the Gail Borden Public Library at 270 North Grove in Elgin, Illinois. Swimming with the jellyfishes is offered to visitors as a virtual photo op while the Extreme Deep: Mission to the Abyss exhibit is an engaging, interactive experience that will offer hours of learning fun through August 13, 2018. It is free and open to all when the library is open. Extreme Deep: Mission to the Abyss offers opportunities for hands-on exploration of life at the bottom of the sea. Presented by Evergreen Exhibitions in collaboration with Woods Hole Oceanographic Institution, Extreme Deep is an interactive exhibit that highlights the adventure of deep-sea exploration and discovery. It depicts the mysteries of the ocean’s greatest depths. Newly discovered life forms, thermal vents, close-up views of deep-sea research submersibles, and shipwrecks, including the Titanic, are among the attractions in this deep-sea adventure. Visitors will observe firsthand the technology that has allowed men and women to travel to the ocean floor. Visitors can fly a remotely operated vehicle over a model of the Titanic ‘s deck. They can also test their skill at manipulating Alvin’s robotic arm by picking up lava rocks and clams from the sea floor while peering through a recreation of Alvin’s four-inch viewport window. With the main library being located on the shore of the Fox River, the library will also highlight the nature, recreation, conservation and history of the river. A fishing boat and several river fishes are on loan from Cabelas in Hoffman Estates. Children can “dive” into dramatic play in the boat with toy fishing poles, vests, compasses and, of course, books. There is even be a beaver den for young explorers to crawl into as well as other interactives. During the month of April, a photo display will highlight “The Fox,” Jim Phillips of Oswego, who was instrumental in bringing awareness to the need for FOX VALLEY MAGAZINE / April 2018

Open Elgin 2018 Saturday, April 21, 1 - 5 pm The Enhancing Elgin committee invites everyone to discover Elgin’s architectural gems by touring buildings with award-winning architectural features, fascinating histories, and unique and eye-opening elements at the Open Elgin Architectural Tour. SCI-TECH HANDS ON MUSEUM “COMET-Y” FUNDRAISER Come see tomorrow’s comedy superstars for a benefit for SciTech Hands On Museum. Award-winning comedy improv theatre company Improv Unlimited will present “Satire Night Live!”, ‘an evening of improv comedy and magic’ at Gallery 1904, in Aurora. Proceeds from the performance will benefit SciTech Hands On Museum, located in a historic post office in the heart of downtown Aurora, Illinois. SciTech Hands On Museum encourages visitors to delve into the concepts of science, technology, engineering, arts, and mathematics (STEAM) in tangible ways. “Improvisational comedy should be accessible to everyone,” said Chris Bell, of Improv Unlimited. “By bringing our show to SciTech Hands On Museum, we make improvisational comedy an economic and geographically viable entertainment option for friends and family.” “We’re very excited to have Improv Unlimited performing in our community,” said Ian McCleary, Specialty Program Manager. “We thought the show would provide an excellent form of entertainment and a way for us to raise awareness of SciTech in the community.” Improv Unlimited’s members hail from all the renowned comedy improv theatres in Chicago, New York, LA and Boston. Get Down & Dirty on International Mud Day Yes, “International Mud Day” is a thing. Created at a World Forum conference as a way to unite children around the world and encourage appreciation of the earth beneath our feet, International Mud Day has been a growing global source of connection and celebration since 2009. This year, Hickory Knolls Discovery Center joins in the fun by hosting its first-ever Mud Day event on Sunday, April 29 from 1 to 2:30 PM. Prepare to get dirty with games and activities that encourage kids of all ages to squish, scoop and slosh their way through mud pits and puddles. Very much a hands-on program, participants are encouraged to bring a change of clothes. Go barefoot or wear rain boots! Bring your cameras for fun photo opportunities! There will be trucks and shovels for digging and building, activity stations to make mud pies and even create your own bit of “mud magic.” Kids, and adults, can learn fascinating facts such as what the state soil of Illinois is and how worms help create garden compost. “You can get as muddy as you want,” said Laura McCoy, Nature Programs Supervisor. “It’s impossible not to laugh and have a good time when you know that you’re actually supposed to get dirty.” The fee is $5 per person. Jim Brickman: Not counting piano recitals which I hated, My first tour was about 25 years ago when I was signed to my first label, Windham Hill.. Fox Valley Magazine: How did the Cleveland Institute of Music prepare you as a musician? Jim Brickman: When I was very young, I had a piano teacher who told my mom that I had no talent because I didn’t want to play the music as it was written on the page. The teachers I had at CIM opened a new world of music encouraging me to find my own sound. It was life changing. Fox Valley Magazine: The music business is very hard. When did you realize or have that “Ah Ha” moment that you could do this as a career?

jingles sounded like songs I thought maybe I could write music and songs that were longer than 60 seconds. The live performance was never my intention. My first record company pretty much said “do it.” So reluctantly I did. Now I love it. Fox Valley Magazine: Why do think of yourself as a composer and songwriter first when you are obviously such a great piano player? Jim Brickman: Yes, when I’m asked on an application for my occupation, i write songwriter. Fox Valley Magazine: You have recorded and performed with quite a few celebrities, what have been some of your favorite vocal collaborations? Jim Brickman: I had a “pinch me” moment when I was recording with the great Johnny Mathis. I’ve always admired him and love his voice. Lady Antebellum, Kenny Rogers... and I got to perform with Kermit the Frog which was quite an experience. Olivia Newton-John and I have become good friends since we first worked together. Fox Valley Magazine: Who would you like to record with or write a song for that you haven’t already? Jim Brickman: I don’t think there’s really an ah-ha moment while you are in the depths of find your way. It was a process. But I think when I first heard my music on the radio I realized that there was a chance it might work! Fox Valley Magazine: How did you segue from writing jingles to having a record deal and then becoming a very successful live performance artist? Jim Brickman: The jingle business gave me a chance to write in so many different styles and genres from country to classical. It also taught me how to pound the pavement to be heard. Jim Brickman: I like to find unknown talent so maybe it’s someone we haven’t heard of yet. Fox Valley Magazine: You perform most of your concerts without backup musicians, it’s just you on piano. Do most of the audiences find this surprising and do you think it brings a certain amount of intimacy to your show? Jim Brickman: Yes, solo piano has a unique sound that is intimate and emotional. When I was first starting out, record execs couldn’t understand how solo piano could possibly work. It’s not surprising anymore. How is it different to be on the other side of the table and be the interviewer? Jim Brickman: When I was being interviewed time after time, it dawned on me that I wanted to ask the questions. 2018 River Park Summer Series Brings Family Fun To Geneva Grab a lawn chair, blanket or even bring a picnic dinner to enjoy four free nights of entertainment along the Fox River during the RiverPark Summer Concert Series. Coming to the Valley April 21 Fox River Arts, an arts collaboration, announces the Inaugural Fox River Arts Ramble, a one day self-guided tour of art in the valley. The Ramble (a collaborative effort of the Fine Line Creative Arts Center, the St Charles Arts Council, and Water Street Studios) is coming to the Fox Valley on Saturday, April 21 from 10 a.m. to 5 p.m. , with some musical performances in the evening. The Event Sponsor is Colonial Café. In-kind sponsors are Fast Color and Cooper-Hong. We thank them for their support of this event and the arts. The Inaugural Ramble features multiple artistic disciplines in over 40 locations in Aurora, Batavia, Geneva, St. Charles, and Elgin, including Open Studios, Galleries, Art Schools, Museums, Public Art Venues/Tours, and Creative Spaces. There will be nearly 20 Art Galleries and 15 Open Studios to visit. Water Street Studios (a headquarters locations) will feature an artist talk with exhibiting artists Jim Jenkins, Lindsay Olson, and Georgia Schwender, print demos by Fast Color Print, Open Sketch, art class demos, gallery tours, and an opportunity to meet their 30 resident artists in their studios. Steve Sherrell, Studio 23 at Water Street Studios, (and also in the WSS Artists Collective) is also participating in the Ramble. He is a career painter from the Chicago school of art. Plus Waterline Writers in the evening. GENEVA Beech Tree Studio offers education in the fine art of colored pencil as well as an intensive curriculum in drawing. The new studio location on Third Street in Geneva will introduce visitors to their instructors and other Beech Tree Studio artists as they demo various colored pencil techniques throughout the day. Republic of Letters is a new literary center, bookstore, and publisher. They invite “Ramblers” to come by their store to peruse their curated selection of books, as well some art and poem pairings. They will also be offering seminars during the day. School of ART believes that everyone has something to gain from learning and practicing art. The school is designed to teach all ages a variety of mediums – everything from basic drawing and painting through full interactive animation and robotics. ST. CHARLES Fine Line Creative Arts Center (a headquarters location) has two galleries with local artisan pieces and a supply shop. Fuseneo, The Keep, and the St Charles Arts Council’s Ramble Pop-Up Gallery are all clustered in the North 2nd Street area of St. Charles. Fuseneo and The Keep are two more creative co-working spaces in STC, and the Pop-Up Gallery is one of two juried galleries that the SCAC is operating for the Ramble. Fine Line Creative Arts Center New Exhibition at Fine Line The Kavanagh Gallery at Fine Line Creative Arts Center has hosted many amazing gallery shows. April will see “Biomimicry- Redefining Nature Through Art” grace the walls and pedestals of this light-filled gallery. This juried exhibition has drawn over twenty five artists both local and out of state. One such artist is Sharon Wright. Sharon is an Illinois fiber artist whose work is based on examination and analysis of bird pelts and flora in her studio. Hands-on research and collection of specimens play a key role in her design and composition. Thus, with a deep sense of respect for the materials, choice not chance determines the outcome of her work. Birds threatened by habitat loss, commercial harvesting and illicit trade have been a theme echoing throughout her pieces. Another artist showing in this exhibition is Sarah Misa from California. Sarah’s work is imagined species of plants, using contemporary technology (digital image manipulation of historical illustrations) and the rudimentary tools of the early botanist (scalpel, tweezers, dye). The three-dimensional collages are new hybrid species of non-existent flora presented in the aesthetics of the early specimen case. Some of the plants fade away to monochrome, questioning what is gained and lost as biodiversity ceases to become a natural phenomenon and instead becomes a manmade institution. Herbaria have always been invested with human passions and biases - now natural collections are laden with a contemporary urgency as ecological literacy requires embodiment, empathetic FOX VALLEY MAGAZINE / April 2018
Fox River Arts Ramble The Fox River Valley has a rich history of arts. We even have our own Art Hall of Fame which now, with this year’s inductees, has 62 members. As part of the Fox River Valley, Fine Line Creative Arts Center has teamed up with the St Charles Arts Council and Water Street Studios to spearhead the first Fox Rivers Arts Ramble. This one-day event will take place on April 21st between 10 am and 5 pm, and will feature multiple artistic disciplines in over 40 locations. In Aurora, Batavia, Geneva, St. Charles, and Elgin, there will be Art Schools, Galleries, Open Studios, Museums, Public Art Venues/Tours, and Creative Spaces.

‘Fermilab’s artist-in-residence: Lindsay Olson & Jim Jenkins” and “Homestead National Monument artist-in-residence: Georgia Schwender” Water Street Studios’ Dempsey Family Gallery will display the work created by two of Fermilab’s artist-in-residence, Lindsay Olson and Jim Jenkins. Fermilab is America’s national laboratory dedicated to particle physics research. To initiate and stimulate communication and interactions among scientists, artists and the public, the Artist-in-Residence program was founded in 2014.
The opening receptions will be held on April 13th from 6:00-9:00 p.m. In addition to viewing the work and meeting the artists who created it, there will also be small selection of appetizers by Gaetano’s Batavia, a bar featuring beer from Solemn Oath Brewery and wine. before mortgages and family demanded a more “regular” profession. Anyway, here I am years later back in business of organizing and guiding tours to Ireland and Europe and beyond and I’m loving every minute of it.

The big difference of course is that apart from being older and wiser, I now get to bring tours to my native Ireland as well as to my favourite destinations in Europe. I had no idea as I drove the highways and byways of Ireland’s provinces that I would be inviting visitors to come to Ireland with me. The years of experience, the memories, the history, geography, culture, language, art, and literature, all the things we immigrants hold dear, I can now share with those who travel home with me. I have never really left the travel business behind as I have been putting together Irish tours and itineraries for friends during most of the 30 years that I’ve been in America. It’s only last year when an annual Irish Tour became 3 tours that I realized I have been heading in this direction for some time.
Happy Trails with Shay I retired from McNally’s Pub on New Year’s Eve and began another chapter in this adventure of life. You might say that I’ve come full circle as I am back in the travel business where I began my working life back in 1968 with Ireland’s leading tour operator, Joe Walsh Tours. I took to it like a duck to water and traveled extensively through the resorts of Europe and further afield. Spring in Music City Flowers begin blooming and the sounds of music fill the air. It can only mean one thing: spring has arrived in Music City. The changing of weather provides an opportunity to get outside and mix it up. Music City has indoor and outdoor offerings to satisfy all interests – from music and art, to sports and adventure. MUSIC Around Town Nashville’s weather isn’t the only thing heating up this spring. Music City is home to over 180 live music venues and numerous musical attractions featuring new exhibits and interactive tours. The Country Music Hall of Fame and Museum houses over 2.5 million artifacts including, stage costumes, musical instruments, the Wall of Gold Records, and more. Opening on May 25th is the “Outlaws & Armadillos: Country’s Roaring ‘70s” exhibit which features untold stories and artifacts from “outlaws” such as Willie Nelson, Waylon Jennings, Kris Kristofferson, Jessie Colter, and more. Other notable musical attractions in town include the Ryman Auditorium, Historic RCA Studio B, the Grand Ole Opry, and the Musicians Hall of Fame and Museum. Stop by the Rolling Stones Exhibit at the Musician’s Hall of Fame and Museum. The Rolling Stones Exhibit has stopped in London, New York City, Chicago, and Las Vegas. And it’s making its final stop in Music City at the Musicians Hall of Fame and Museum. The Rolling Stones Exhibit tells the story of the most influential rock band in history through more than 500 artifacts and memorabilia from the past 54 years. OUTDOOR ATTRACTIONS Cheekwood Estate & Gardens Enjoy the outdoors and arts at Cheekwood Estate & Gardens, a 55-acre botanical garden and art museum located on the historic Cheek estate. Cheekwood in Bloom marks the beginning of spring when over 150,000 spectacular blooms take over at the estate. The event lasts through April 15th and hosts family-friendly programming, live music, and a beer garden

Visiting after the end of Cheekwood in Bloom? No worries, Cheekwood has plenty of additional spring activities, including Australian artist Amanda Parer’s Intrude exhibit featuring larger-than-life glowing inflatable rabbits on Cheekwood’s scenic landscape, which will be on display from May 1 – May 27.
The Sounds Fun Zone is located in the Plaza is perfect for children and families. The area features a large slide, a giant blow up chair, a speed pitch, and more.
Nashville Zoo at Grassmere Take a stroll through the Nashville Zoo at Grassmere and experience over 370 different animal species. Recently, the zoo has added four new exhibits, including Expedition Peru: Trek of the Andean Bear, which opened on March 15th. The exhibit features an unobstructed view of the Andean Bear from a Peruvian lodge. The lodge will also contain educational displays and feature a 16-foot aquarium with fresh stingrays and other species from the Peruvian Amazon Basin. Once leaving the exhibit, visitors will be greeted with the world’s smallest deer, the pudu, and the viscacha, a cute rodent. Other new exhibits that can be found at the Nashville Zoo include a Spider Monkey Exhibit, Sumatran Tiger Exhibit, and White Rhinoceros Exhibit. Or, you can check out the zoo from an elevated angle on the Soaring Eagle zip line. Nashville Sounds & First Tennessee Park Whether you’re a baseball-fan or not, everyone can enjoy a night out at First Tennessee Park. Home to the Nashville Sounds, AAA Affiliate of the Oakland Athletics, First Tennessee Park has top-notch food and drink offerings at multiple vendors or at The Band Box. The Band Box in right field features several entertainment options including ping pong, cornhole, putt-putt, foosball and shuffleboard, with the baseball field serving as the primary backdrop. With a laid-back atmosphere, this outdoor bar and restaurant is ideal for socializing with your friends or colleagues, while FOX VALLEY MAGAZINE / April 2018
NASHVILLE PARKS Springtime in Nashville is the perfect opportunity to enjoy the warmer weather in the urban and rural green spaces that the city has to offer. Nashville is home to many public parks and Greenways which connect to neighborhoods, shopping areas, open spaces, and other points of activity. Centennial Park is 132 acres and features The Parthenon, a full-scale replica of the Athenian original. Centennial Park also has a one-mile walking trail, and many other historic shrines to see. Bicentennial Capitol Mall State Park, in Germantown, is a great area to enjoy the outdoors and discover Tennessee’s rich history. While you’re there, make sure to stop by the Nashville Farmers Market which features 19 restaurants and shops, farmers, artisans, crafters, and specialty merchants in season. Take a walk through Music City Walk of Fame Park to see the stars from different genres who have contributed to the music industry, and hold a special connection with Nashville. Inductees include Elvis Presley, Jimi Hendrix, Reba McEntire, Emmylou Harris, Little Richard, Hank Williams, Vince Gill, Kings of Leon, Keith Urban, and more. The Warner Parks (Edwin and Percy), in West Nashville, combine to make 2,684 acres to include picnic areas, hiking trails, running courses, and so much more. Other suggested parks in Nashville include Eastlast Park, Shelby Bottoms Park, Fannie Mae Dees Park, Cumberland Park, and Riverfront Park. Nashville B-Cycle is another fun way to explore
the city of Nashville and get outdoors. B-cycle is a fee-based bike-share program where bikes can be rented at 36 B-stations throughout the city for a minimal cost. Looking for a dog-friendly park? Warner, Shelby, and Centennial Parks are dog-friendly. FESTIVALS AND EVENTS Cherry Blossom Festival The 10th Annual Nashville Cherry Blossom Festival will celebrate springtime and Japanese culture on Saturday, April 14th at Nashville’s Public Square Park. It kicks off with a Cherry Blossom Walk, followed by festivities that include demonstrations and exhibits of Japanese culture, the Ginza Marketplace with Japanese products, Taste of Japan with food from local Japanese restaurants, youthful Japanese culture, and live entertainment. Nashville Comedy Festival Experience Nashville with a laugh. The Nashville Comedy Festival, featuring some of the funniest comedians in the world, takes place in Music City April 16-22. This year’s lineup includes Jeff Dunham, Tim Allen, “Weird Al” Yankovic, and more. St. Jude Rock n Roll Nashville Marathon & ½ Marathon In April, more than 30,000 runners, walkers, and wheelchairs will attempt the annual Rock ‘N’ Roll Nashville Marathon & 1/2 Marathon through the streets of Music City lined with 26 stages as live bands perform the soundtrack of the day. The main marathon will take place on April 28, with a KiDS Rock race on April 29 and a 1-mile race happening April 26.
Craft Fair at Centennial Park is the place for you. Kicking off on May 4th, the annual crafts fair serves as a market for fine crafts, a conduit for demonstrations and hands-on opportunities, and also offers the chance to meet and talk with professional craft artists. The three-day crafts festival attracts more than 45,000 people to view the craftsmanship of more than 200 exhibitors. Nashville Film Festival The 49th annual Nashville Film Festival will showcase over 300 films from across the globe from May 10th-19th at the Regal Hollywood Stadium 27 in Nashville. Festival-goers enjoy a plethora of works including documentaries and narrative features, as well as animated and experimental shorts. Panels and workshops are also offered for those looking to enrich their knowledge beyond the screen. Iroquois Steeplechase Benefitting the Monroe Carell Jr. Children’s Hospital at Vanderbilt, Iroquois Steeplechase is the premier spring race meet in American steeplechasing and Music City’s traditional rite of spring. Seven races are held throughout the day and the event typically attracts more than 25,000 spectators decked out in their finest spring wardrobe, including the biggest and best hats in the South.
