Jalapeno Popper Chicken Burrito Bowls with Cauliflower Rice (Paleo, Whole30) Ingredients • 1 tbsp olive oil or avocado oil • 5 slices thick bacon • 1.5 lbs raw chicken breast, cut into bit sized pieces • pinch of salt and pepper FOX VALLEY MAGAZINE / March 2019


For the Cashew Sauce: • 1 cup raw cashews (soaked overnight in cool water, or in hot water for 15 min.) • 2/3 cup water or chicken broth • 1/4 cup nutritional yeast • 2 cloves garlic, crushed • 1/2 tsp sea salt • 1 jalapeno diced and seeds removed • 3 tbsp fresh cilantro • 1 tbsp buffalo hot sauce For the bowls: • 4-5 cups cauliflower rice** • 1/2 cup shredded romaine lettuce • 1/2 cup diced tomatoes • 1/4 cup diced red onion • 3 tbsp chopped fresh cilantro • 1 large avocado, diced Instructions 1. Heat up a large skillet to medium heat. Once hot, coat the pan with oil or cooking spray and add bacon. Cook the bacon for 3-5 minutes per side (cooked to your liking), and set aside. Reserve one tablespoon of the bacon fat in the pan and keep the pan hot. 2. Add the chicken to the pan. Let cook for 2-3 minutes per side, or until chicken is cooked through and no longer pink.

3. Meanwhile, in a blender, blend cashews, water, nutritional yeast, garlic, salt, jalapeño, cilantro, and hot sauce. Continue to blend for several minutes, or until mixture is smooth and creamy. You may need to pause several times and scrape down the sides of the blender with a rubber spatula. 4. Reduce the heat on the skillet to low. Add the cashew sauce to the chicken mixture and stir frequently for 3-5 minutes so the cashew sauce doesn’t stick to the bottom of the pan. Once cashew sauce is hot, prepare to serve. 5. Assemble the burrito bowls. Begin with cauliflower rice, top with chicken and sauce, then bacon. Now add in any extra toppings: lettuce, tomato, onion, cilantro, and avocado. Salt to taste and serve. Recipe Notes **For the riced cauliflower, use one large head of cauliflower rice cut into florets. Place inside a food processor or blender and pulse until rice forms. Do not over pulse or it will become mush! Alternatively you can buy already riced cauliflower, 16 oz is sufficient for this recipe.

Seasoned Chickpea Taco Salad with Avocado Ranch Dressing Ingredients: • 1 (15 ounce) can chickpeas, drained and rinsed • 1/3 cup chopped walnuts • 1 teaspoon olive oil • 1/2 teaspoon ground cumin • 1/2 teaspoon paprika • 1/2 teaspoon onion powder • 1/2 teaspoon granulated garlic • 1/4 teaspoon salt • 1/8 teaspoon black pepper • Other optional salad ingredients (enough for 4 servings): Lettuce, corn, red onions, black olives, diced tomatoes, tortilla chips Avocado Ranch Dressing: • 2 large avocados • 1 1/4 cup water • 1/4 cup fresh lime juice, or lemon • 1 tablespoon chopped fresh parsley • 1 teaspoons granulated garlic • 1 teaspoon onion powder • 1/2 teaspoon salt, plus more to taste if needed • 1/2 teaspoon dried dill weed • 1/8 teaspoon black pepper Instructions 1. Heat a large pan over medium heat and add the olive oil and chickpeas. Use a potato masher to slightly mash them up, you want to leave most of them whole. Next add the chopped walnuts and all the spices. Stir and cook until everything is heated through, 5-10 minutes. 2. Make the Avocado Ranch Dressing FOX VALLEY MAGAZINE / March 2019

by adding all ingredients to a blender and blending until a creamy dressing is formed, about 1 minute. You can add more water if you would like a thinner dressing, but you may also need to adjust the seasonings. 3. Assemble the salads by splitting all salad ingredients and seasoned chickpeas into four bowls and topping with desired amount of avocado ranch dressing. Notes The Avocado Ranch Dressing recipe makes more than you may need for 4 salads but it is really delicious to use many other things!

The City of Batavia, Batavia Chamber of Commerce and Batavia MainStreet are presenting Batavia’s seventh annual Restaurant Week, promoting dining in Batavia during Restaurant Madness, March 17-21, 2019. Elgin History Museum March Events Champion Building Historic Loft Tour

Celebrate the 140th anniversary of the Champion Building in downtown Elgin on March 1 and March 2 from 10 am to 4 pm. Elgin History Museum celebrates the 150th Anniversary of Elgin High School with speaker John Devine

Elgin High School history teacher John Devine will honor the history, achievements, and pride of the 150 year old Maroon family at the Elgin History Museum on March 10 at 2 pm. Mr. Devine will explore the story of EHS in 30 year intervals, then host a fun interactive quiz where you can test your knowledge of EHS history! This event is FREE for Elgin History Museum members, and $3 for guests. For over a century and a half Elgin High School has lived up to its simple yet noble standard of “Education for all.” From academics to athletics, from the arts to politics, from good citizens to good people, Elgin High School graduates have spread across the globe to excel and to distinguish themselves in all walks of life.

To celebrate Black History Month, the Elgin History Museum’s documentary, Two Boxcars, Three Blocks, One City: A Story of Elgin’s African American Heritage was rolled out on YouTube during the month of February. The 75-minute documentary contains extensive interviews, many never seen photos and in-depth histories that will bring to life the story of Elgin’s African American Heritage. YouTube viewing is free with internet connection and can be live-streamed to schools, churches, and community organizations to start a discussion on African American history, social justice, and civil rights. Project 2-3-1 was accepted as a significant contribution to the National Underground Railroad Network to Freedom, part of the National Park Service, along with interpretive signage on African American history in Elgin’s Newsome Park. The project won five museum awards when it was released in 2015, including national recognition from the American Association for State and Local History (AASLH). The Elgin History Museum, located at 360 Park Street, welcomes visitors Wednesday through Saturday from 12-4pm. The museum highlights Elgin history with two full floors of exhibits an extensive artifact collection and research facilities. Oswego Juniors Host Fourth Annual Fundraiser

OJWC Red Carpet Party Promises to be A Fun Night for A Great Cause The Oswego Junior Woman’s Club (OJWC) is hosting its fourth annual Red Carpet Party Fundraiser on March 9, 2019 at Whitetail Ridge Golf Club, starting at 6:00 pm. Tickets are $75 per person or $700 for a table of 10 and include a plated, two-entree dinner, open bar for the first two hours followed by a cash bar, raffle and silent auction items, and door prizes. Local 80’s rock band, EPIC will be providing musical entertainment as well. All proceeds for the event will go toward college scholarships for local seniors at both Oswego High School and Oswego East High School. In 2017, the Oswego Juniors awarded $8,000 in scholarships and they increased that number to $10,000 in 2018. One of the great traditions and honors of the Downtown St. Charles St. Patrick’s Parade is to be its grand marshal, and this year, the Downtown St. Charles Partnership is proud to announce Shay Clarke as the parade’s grand marshal. Clarke has been heavily involved with the parade and the St. Patrick’s Parade committee wanted to honor his commitment during his long time volunteering and emceeing the event by naming him the 2019 St. Patrick’s Day Parade Grand Marshal. Clarke, whose emceeing skills bring delight

to every parade he has been a part of, said he was completely unaware that he would be asked to be this year’s grand marshal. “What a surprise, I don’t know what to say!” Clarke said after the DSCP staff told him he would be the grand marshal. “This parade is always done fabulously well and I love being a part of it, so being asked to be the grand marshal is truly an honor. I can’t wait to celebrate with everyone.” The St. Patrick’s Parade has seen a multitude of organizers, supporters and attendees that have turned it into the local tradi-

tion for thousands of people of all ages to come line Main Street and watch St. Patrick’s Day themed entries show their St. Patrick’s Day spirit, listen to award-winning local marching bands and Celtic bands, watch elaborate and colorful floats glide down the street, pay tribute to the walking units of veterans and see all the best that St. Charles has to offer. While the DSCP and its parade committee determine the grand marshal, their decision is based on the positive impact that a particular person, group, business or organization has made in downtown St. Charles. This year is no exception. Sponsored by Gerald Auto Group, the St. Charles St. Patrick’s Parade will be held on Saturday, March 9 and steps off at 2 p.m. at Main and 6th Street and continues down Main Street to conclude at 4th Avenue.

Silent Film Nite – $10 – “The Nut” Starring Douglas Fairbanks Based upon a summary in a film publication, Charlie (Fairbanks) has a girlfriend Estrell (De La Motte) who has a theory that if rich people would take a number of poor children into their homes each day, the environment would cause the children to grow up properly. Since Estrell does not know any of these rich people, Charlie offers to arrange a meeting. However, Charlie thinks impostors will do as well as the real rich people, so first he hires some men who turn out to be burglars and gamblers. Then he tries using dummies, but Estell is not fooled and becomes indignant. A wealthy man working as a reporter goes to investigate a report of a man dragging a body which turns out to be Charlie moving a dummy, allowing Charlie to finally meet someone rich. Estell is satisfied and agrees to marry him. And so begins one of the most hilarious cons in musical theater history. Fox River Arts Ramble Coming to the Valley April 13 & 14 Fox River Arts, a collaborative group seeking to promote arts and culture in the Fox River Valley, is pleased to announce the 2nd Annual Fox River Arts Ramble, a two-day self-guided arts tour featuring numerous arts-related locations from Aurora to Elgin. The Ramble (a collaborative effort of the Fine Line Creative Arts Center, the St Charles Arts Council, and Water Street Studios) is coming to the Fox Valley on Saturday, April 13 and Sunday, April 14 from 10 a.m. to 5 p.m. each day, with some musical performances and receptions in the evening. The Ramble features multiple artistic disciplines at sites across Aurora, Batavia, Geneva, St. Charles, and Elgin, including open studios, galleries, art schools, museums, public art venues/tours, and creative spaces. A one-day event in its first year, this year’s event has been expanded to two days to give participants more time to tour nearly 50 participants at approximately 40 locations. Visitors will have the opportunity to meet a diverse group of artists, see their work, and tour public and private spaces that breed creativity. A Ramble brochure and map will be available and widely distributed prior to the event, enabling visitors to select the locations that are of greatest interest and plan their route for the weekend ahead of time. The Downtown St. Charles Partnership are some really smart and savvy people but they can be sneaky too as they surprised me at a podcast recording a few weeks ago and asked me to be the Grand Marshal of this years St Charles, St Patrick’s Day Parade. Of course I said Yes straight away in case they changed their minds, I was equally shocked and honored. I have been the M.C. of the parade for a few years now and I figured this was as good a way as any to get rid of me..... I did say they were smart, but maybe they are also fiendishly cunning.....I’m just kidding, they are a great bunch of dedicated people and I’m really delighted with this great honor for any Irishman. I remember watching our own St. Patrick’s Day Parade in Dublin FOX VALLEY MAGAZINE / March 2019


sitting on my father’s shoulders many years ago never thinking that I would be Grand Marshal of a Parade in St . Charles , Illinois nearly 4000 miles away. It’s a funny old world. In the last 10 days I have visited 5 Irish pubs, 2 in Wisconsin, 1 in Indiana and 2 here in the Chicago suburbs and I only had pints of water in each of them, There, I said it ! I just had to get that off my chest. All of them fine establishments with lovely looking pints of Guinness but I was presenting Tours to Ireland, Greece and Italy and had driving to do afterwards. Only when the tour presentations are at McNally’s Irish Pub do I allow myself a few pints as I have many transport options there. McGuinness’s Irish Pub in Appleton Wi. was jam packed and chockablock when I visited for their Irish Heritage Day and between the Pub Stage, the Abbey Stage and the newly opened Harp Room revelers were spoiled for choice.I was really impressed at this Mini but Mighty Irish event . Seanachie Julianne Stans was both entertaining and informative, Connemara’s Lord of the Dance Brian Cunningham was brilliant and there was Ol, Ceol, Bia ,Craic agus Culture everywhere. Colm Keegan from Dublin, Joe Cullen from Donegal and Ian Gould from Belfast provided the music and the fear an tighe Matt Miller presided over the whole affair with his usual flair. It was great to see so many people getting a jump on St Patrick’s Day activities in such a great venue. I was there to kick off the McGuinness Pub Tour of Ireland on October 15th. In Indiana it was Kennedy’s Kitchen at the Fiddler’s Hearth in South Bend. John Kennedy leads this Musical Tour of Ireland on April 26th and the focus is traditional music in traditional pubs. years and on the night that I was there a seisiun was scheduled and was well attended by some really talented musicians.The Fiddlers Hearth is a comfy pub reminding me of Johnny Fox’s in Glencullen and the food is good too. It was great to see my some friends that i have missed since my Celtic Road Warrior days. Bob Harke and his wife Sherry are going on the trip and Chris O’Brien will be in charge of the Bail Money. A huge thanks to Carol and Terry Meehan for their hospitality, the Fiddlers Hearth is a credit to them. A very quick visit to The Irish Patriot Pub and Restaurant in Orland Park to drop off brochures to Fiona and Vincent Tuohy. Vincent’s “ Fighting Irish Tour the Emerald Isle” is going in August of 2020 and takes in the Notre

Dame v Navy football game at the Aviva Stadium in Dublin . The Irish Patriot Pub is the south side’s favorite. Back up to Delavan Wi. for another tour presentation with Belfast Balladeer Ian Gould , Ian’s” Rocky Road to Belfast Tour “, kicks off on October 7th. and takes in Galway, Sligo, Derry, Belfast and Dublin with Ian entertaining along the way. A lovely bunch of people had me wishing that i was going with them. This event took place in Revere’s Wells Street Tavern and though technically not an Irish Pub it had an Irish feel to it and was packed full on several floors for a Monday night. I was mighty impressed by it. Mc Nally’s Irish Pub in St Charles has been my Tour Meeting Headquarters for many presentations and recently we have hosted “A musical Tour of Ireland with the Dennis O’Brien Band “ on Sept. 20th. and Scott and Suzie McKay’s Europe 2019 which leaves on September 28th.and visits Austria, Italy and Switzerland. Tour information meetings are still to come for my own fall tours to Italy, Greece and Ireland as well as Diane Sheppard’s Hiking Tour to Croatia and Sara Snelling’s Taste of Ireland, a foodie tour.
